Victorio Food Strainer and Sauce Maker – Best Investment Ever for Homemade Applesauce and Tomato Sauce!

I’ve always known all of you were smart. You’ve proven it to me once again.

Last year, while I was making applesauce and experimenting with ways to make the process easier, many of you suggested that I get a Victorio Food Strainer. Before that day, I had never even heard of this gadget. And I’ll admit, I really questioned – would a Victorio really make the process of making applesauce go any faster? I mean, there are apple cores and bad spots to deal with. No matter how easy the process, you still have to prepare the apples. I’m usually dealing with several bushels of apples at one time. It takes time. It takes work. There’s no way around it.

Or is there? (There is! There is!)

I’m so excited after making 13 quarts of applesauce yesterday, I could do flips. And guess what? Since I invested in a Victorio, I still actually have the energy to do flips! (Not that I can or will. I’m not that coordinated.)

But it’s true. The Victorio DID made the applesauce making process much faster and easier. Like hours easier. I can’t believe how much time I saved compared to how long it used to take me to make applesauce.

I’ve tried all kinds of methods of making applesauce:

  • Coring, peeling, cooking, blending applesauce (lots of work and time, and not as healthy)
  • Coring, cooking, Foley Food Mill, Strainer pink applesauce (a little easier)
  • Coring, cooking, blending, food processor (yet just a little easier)

Yes, I’ve been making applesauce for years, using all varieties of methods to save myself time. This is why I feel like I have a leg to stand on when I say that using a Victorio Food Strainer is by far the easiest, fastest, most efficient way to make homemade applesauce – especially if you are making large amounts! (I’m also very sure this is going to save time while I make tomato sauce, though I don’t have enough tomatoes ready yet to give it a try.)

With the Victorio, you wash the apples, halve or quarter them, cook them down, then run them through the Victorio. You don’t core them. You barely touch them. My hands didn’t even turn brown – and I did loads of apples!! And this is why I want to turn flips.

I even figured out how to put it together all by myself. Aren’t you impressed?!

Here’s a little tutorial to show how easy this process was. You wash your apples (or in my case, you ask your children to wash the apples while you are working on other jobs in the kitchen).

You halve or quarter your apples and put them into a big stock pot. I simply halved mine since they were small.

Add a little water to the pot to keep the apples from scorching, then you cook them for 15-25 minutes until they are soft (while you go do something else!). Then you run the soft apples through your Victorio. The process barely even challenged my arm muscles it was so easy.

All the core and skin comes out the shoot, leaving bowl after bowl full of beautiful, smooth applesauce.

I had enough applesauce yesterday that after we all ate as much as we wanted, I canned 13 quarts using the water bath method. Awesome!

The jars are still sitting on my countertop so that I can admire them for a little while longer before putting them away. You know I always have to do that right? ;)

I have to say that the Victorio Food Strainer was a wonderful investment. Anything that saves me time in the kitchen, especially during the fall season when all the garden produce threatens to overtake my kitchen, is a life saver. It is very reasonably priced for such a handy appliance.

Air Soft, Chocolate Cake, and Movies

Our boys have been all about making fun plans with their friends this summer. I’ve loved watching them take initiative by making the phone calls themselves, setting up baseball games, soccer games, and basketball shoot-arounds. They’ve even “written and directed” several movies and invited friends over so that they could “shoot footage”. One mom commented, “It sure has been great for Justus to be the Activities Event Coordinator for all of our kids this summer.” :)

Today, the choice event was a game of Air Soft. As they were making the phone calls yesterday to prepare for this, the idea came to them that maybe they could also do some baking so they would have something tasty as a surprise to serve to their guests. After all, it’s always a great idea to serve cake to your friends after you’ve spent an hour and a half shooting at them, right?! 

Upon hearing their idea, I quickly squashed down my instinctive protests about them turning on the oven when it was 105° outside. If they want to treat their friends, who am I to argue? (Especially when they were leaning toward making something chocolate and I would get to be the taste tester.)  I did suggest, however, that they make their baking plan, prepare their ingredients, and then wait to actually bake in the evening when the temperature cooled to a more comfortable…98°. Ha!

Well, one brainstorm turned into another, until what had once been an idea to bake a simple treat turned into an elaborate plan to bake and decorate a layered Chocolate Fudge Cake. In addition, they decided that while they were making the cake, they should also make a movie such as they’d seen on Cake Boss on Netflix. Did I mention I had some produce I was in the middle of chopping and preserving during all of this? To suggest that my kitchen was a little bit of a (hot) hubbub of chaos may have been an understatement. Apparently, my family thrives on messy insanity.

Fantastic as they are, our boys don’t always work well together in executing a plan, but I’ve got to hand it to them:  The cake mixing and measuring went off without a hitch (with only a small amount of batter landing on the floor…twice). They took turns. They worked together. They even sort of cleaned up after themselves.

After the cake cooled (the next morning), they took turns decorating it with Fudge Frosting. As you can imagine, it was always a pity when they got frosting on their fingers. What could they do but lick it off?

 I was just pleased that the frosting bags didn’t explode. 

 They were so proud of the finished product. And so they should be.

Then, my yard and house became a center of excitement as a total of nine boys came in and out, making me wonder all morning long why in the world I was continuing to run my air conditioner. I’m pretty sure all of our guests must surely think that the only phrase I know how to say is, “Close the door please!” 

Oh, and how did the guests like the cake? Based on the fact that the only thing left in my kitchen when they were finished was a bunch of chocolate cake crumbs, I’d say they liked it just fine.

Then they headed right back outside to shoot each other again. You’ve gotta love it. :)

{Well, if you can believe it, after I had this post written and ready to go up, Justus showed me the finished movie they had put together. I got quite a chuckle out of it since 1) he said a lot of similar things in the movie that I said in this post, and 2)  It’s an awful lot like the actual show Cake Boss, with a Coppinger twist, of course. Therefore, I decided to post the movie to share with you, if you care to watch it. You’ll especially appreciate it if you’ve watched the actual Cake Boss show…or if you are an aunt or loved one who just can’t help but think that my boys are cute. This just features three of our boys since our oldest is at camp.}

Gratituesday: My Date With the School Books

Maybe it’s been the heat, maybe it’s been the lack of routine, I really don’t know. But for some reason, for the first time ever, I had not been as eager as I typically am about the arrival of this upcoming school year. 

Why would I feel that way when I love school time with the kids? I’m pretty sure it’s just because starting school means that I need to be a bit more disciplined and organized. I’ve enjoyed our “take it day by day” schedule this summer. What can I say?

However, with school starting for our family in just two weeks, I finally made the time to sit down will all of our books and began to get myself organized. Once I sat down, I believe it took about 3.2 seconds for me to get excited. Books! History! Fiction! Non-fiction! Goals! Fun! 

I am once again feeling like I can get into the home schooling groove. Not only that, I am super excited about what the kids and I will be learning this year. (Yes, the kids and I…because I usually learn as much as they do. It’s a huge perk to home schooling. I, the mom, get soooo much smarter. Although please never, ever ask me to be a participant on Jeopardy.)  :)

As I made out our schedule, I was pleased to see that it actually seems to work on paper. We never carry out our schedule perfectly, but sometimes I can’t even get it to work on paper, much less in real life. This year, I believe I figured out what might work. (And if I’m wrong, we’ll just tweak it as needed.)

I am so grateful for the opportunity to learn along with our kids, the chance to read loads of excellent books with them, and the privilege of being with them for so much of the day. 2012-2013 school year – here we come! (But not for two more weeks. For now, I’m going to stick to a non-schedule, thank you very much.)  ;)

Menu Plan for the Week…and Are You Having Trouble Leaving a Comment On My Posts??

I’ve heard from several of you that you’ve tried to leave a comment on a post sometime in the last couple of weeks, but my site hasn’t let you. How very rude of my site to not let you say what you would like to say. I’m so sorry. We’ve tried to get to the bottom of this, with little success. So, the only thing we can think of is that, since my site has recently been upgraded (on the back end), many computers are remembering my site as it used to be, and is therefore not letting you leave a comment.

Doesn’t that just totally make sense? No? That’s okay. I know what I mean. Sort of.

What I recommend to you is that you “clear your computer cache“. Hopefully that will take care of the problem. Because I reallllly want you to be able to leave comments when you want to leave comments. I always love hearing what you all have to say.

Not sure how to clear your cache? Here is a “how to clear your computer cache” tutorial, which is very helpful.

Don’t you wish there was some method of clearing your brain cache when you’re feeling bogged down and overwhelmed? If I ever find a tutorial for that, I will be sure and let you know. (Although I suppose prayer would do the trick, wouldn’t it? God is always good to take a load off our hearts and brains.)  :)

I am loving this time of year, with so many great, fresh fruits and vegetables available!! Can’t get enough! We are focusing on having two or three fruits and vegetables for each meal. It’s awesome!

Super Healthy, Freezer Friendly Chicken Sandwiches

My wonderful friend Jenny shared this recipe with me. I love that these are so full of good protein, and have veggies in them too! What a great way to get more nutrients packed into a meal.

You can make up a big batch of these and freeze them for a quick meal another time. You know I love recipes like this that help me avoid a panic attack on busy days!

Chicken Patty SandwichesYum

3 boneless skinless chicken breasts
2 cloves of garlic or 1 teaspoon garlic powder
3/4 cup shredded carrots
1 medium onion, chopped
6 eggs
sea salt to taste
Coconut Oil or Palm Shortening

In a food processor, grind raw chicken, garlic, carrots, and onions together. Add eggs and salt, blending all ingredients together well. Spoon mixture (about two tablespoons at a time to form a patty) into hot oil, frying on both sides for about 4-5 minutes each, or until chicken is cooked thoroughly. (I use Palm Shortening from Tropical Traditions because heating it for frying purposes does not compromise its health qualities. I also sometimes use Expeller Pressed Coconut Oil as it is just as healthy.)

Makes about 10 patties.

These patties taste great without a bun, topped with a tomato and sandwiched between pieces of lettuce. We also really like them with sprouted wheat buns we get from Azure Standard. Oh, and melted cheese on top is pretty tasty too!

Chicken Patty Sandwiches

Allow leftover patties to cool, then place them in a freezer bag for another meal. Rewarm in the oven or toaster oven for about 10 minutes.

I realize the following picture doesn’t look super pretty, but I wanted to show you the nice stack of chicken patties I was able to put into the freezer! You can’t even tell there are carrots in there. ;)

When served with lettuce and tomatoes, and a fruit smoothie or another side dish of fruits and veggies, this is one super healthy meal!

Be Efficient in the Kitchen – {Eat Healthy ~ Save Time}

I am often asked, “How do you do it all?” 

Oh my. Without a doubt, my answer to that question is always, “Mercy, have you seen my closets?” (or cabinets, or laundry pile, or toilets, or pick your messes depending on the day…)

I don’t do it all. I don’t even do half of it all. In fact, it’s almost 6 pm as I’m trying to write this. I still haven’t done my breakfast dishes and I haven’t started to make dinner. For the first time today, I finally got a chance to sit down and work on my website at 5:35 – and I’ve had three interruptions since I started. I think I forgot to have the boys put the laundry into the dryer, which means that the clothes might start to smell sour soon. I didn’t make my bed this morning. I didn’t hang my dress up after wearing it on Sunday. My hair looks kinda funny. And it seems that I have misplaced all of the pens that are supposed to be in my cute pen basket in the kitchen. (FYI:  It does not work to write a check with a fat sharpie or an unsharpened pencil.)

But for all of my unmade bed and missing pen issues, one thing I feel that I am getting figured out is efficiency in the kitchen. I believe that one of the reasons I am able to feed my family a (mostly) healthy diet while keeping up with a very busy schedule is because I try to make very good use of my time in the kitchen. I’m not sure I could make it work otherwise. (Although some days, no matter what I do, nothing works, of course. Those are my pancakes and creamy mac and cheese fall back days.)

Here’s what works for me:  Hardly ever do I just stand and do one thing at a time. I grind flour while I’m washing dishes; prepare a casserole for dinner while I’m making lunch; bake breakfast muffins while I’m finishing dinner; chop veggies while I’m waiting for butter to melt; shout out spelling words while I’m stirring noodles; get out ingredients while going back and forth to the stove to brown meat…

(And if my boys are capable of doing any kitchen or cleaning chores that need to be done – and at their ages, they definitely are capable of much! – I pull them in with me to help cook or cleanout the dishwasher, or send them upstairs to do some cleaning. It’s multi-tasking at it’s finest! Those of you with little bitty ones, hang in there. It does get easier as your children get older!)

Want to know one of my favorite ways to save time in the kitchen? Make one big mess. (This sounds sooo efficient doesn’t it?)  What I mean is – there are some kitchen tasks that are pretty messy or take a while to clean up after. Take homemade peanut butter for example. Making peanut butter isn’t difficult at all, but I have found that washing my food processor afterward takes quite a bit of time. Therefore, I have begun to make two or three or even four batches of peanut butter while I’ve got the food processor already peanut buttery. It keeps just fine in the fridge, so if I’m going to make a mess, why not make plenty of peanut butter so that I don’t have to wash the food processor as often? Makes sense to me. (Kinda sounds like my lasagna making process, huh?)

Oh, and since we are on the topics of peanut butter and kitchen efficiency, you will be glad to know that while my peanuts are whirling about in the food processor becoming peanut butter, I am busy stirring up a batch of muffins, slicing fruit for a salad, or standing on my head trying to get a pyrex dish out while it sits at the bottom of a heavy (and slightly unorganized) stack of dishes in the cabinet. Why not? The peanuts don’t need help turning themselves into peanut butter. A watched food processor never boils you know. Or at least I believe that is how the saying goes.

Gratituesday: Coppinger Sister Symposium

I am blessed beyond words. Not only did I marry a great man – part of my marriage package includes a great set of in-laws.

As a part of this prize package that I acquired upon becoming a Coppinger, I received two sisters-in-law: Matt’s sister, and Matt’s brother’s wife. Blessing upon blessing – all three of us get along.

Actually, to simply say that we “get along” may be an understatement. Our relationships are so much deeper than that. We laugh, we cry, we pray, we share…and oh my…we shop.

Which is what the three of us did for several days together last week. Don’t worry, we did much more than shop. We laughed, we cried, we prayed…and we ate cheesecake. It was awesome. Our get-away time together is something we started probably around eight years ago (none of us can remember exactly). Since the two of them live in California, and I live in Nebraska, we rarely see each other. Therefore, we’ve been intentional about meeting up for a long weekend every two or three years.

We now lovingly call our get-away time the “Coppinger Sister Symposium”. Sounds so much more fun and official than just a simple “sister weekend”, don’t you think? ;)

I flew to L.A. on Wednesday, and the fun began. (As did the lack of sleep. There was too much fun to be had!) 

Here we are at Malibu beach one evening. Oh my word – I couldn’t get over the beauty. And joy upon joy, with bare feet in the glorious sand – I took off for a short run. Walking and jogging on the concrete of Nebraska may never be the same again after the exhilaration I felt during and after that run. Wowza.

Oh, and we saw dolphins! And as we watched the tide roll in, we sat on a blanket and shared – praising God for our marriages and children. The shopping, the partaking of awesome California food (can you say fresh strawberries?!) was all wonderful. But that time together on the beach, I will be gushing about forever.

I came home tired, yet incredibly refreshed and encouraged. I thank God for putting these wonderful gals in my life. (And a big shout-out goes to our three husbands who willingly and sweetly took over in our homes while we enjoyed our “CSS”.)

I am blessed to have just arrived home after a lovely three day get-away with my sisters-in-law. I’ll tell you all about it on Gratituesday, but in the meantime, take a look at where I was on Friday:

Matt and the boys managed great on their own, eating much of what I had stocked away in the freezer. Now that I’m home, I’m anxious to get back in the kitchen. The break from the norm was refreshing, but now I feel the need to cook something. :)

Staying Fit While on Vacation

Many people that I talk to share how they can be on a roll in their fitness routine, then go on vacation and everything falls apart. It makes complete sense. While on vacation, we’re out of the “norm”, we don’t have the same equipment, we’re on a different time schedule. I think these are all very valid reasons to struggle to keep up with working out. But is there any way to avoid falling off the workout wagon while on vacation?

Because I am getting ready to go on a short vacation soon with two of my sisters-in-law, this has been on my mind quite a bit. I asked Jen, my workout buddy from Getting Fit With Jen, to give me some pointers on ways to avoid losing the workout momentum we’ve had for so many months. Here’s what she had to offer. (And I have to say, she makes it seem so simple. I do believe I was making it more complicated than I should have.)

1. Go with a plan.  

If you don’t plan some workout time into your vacation and travels, it will be very easy to let it slip. Figure out how and when you can fit exercise into your trip. Make a plan, be prepared to be flexible, and do what you can to make your plan work. 

2. Make modifications to the norm.

You may lift weights when you’re at home, but taking dumbbells in your suitcase isn’t very practical! How about packing your resistance bands instead? You may take long walks or do workout videos at home, but your vacation may not allow time for either. How about taking advantage of short breaks between your travel activities to squeeze in a shorter walk or some crunches, lunges, squats, and/or push-ups?

3. Recognize that some of your vacation is likely to involve exercise, intentional or not!

You’ll get great exercise while you’re walking through an airport, swimming in the pool, taking a stroll with the family – even shopping! Hopefully your vacation will include plenty of rest, but don’t discredit the exercise you’ll be getting while participating in some really fun activities.

4. Give yourself a break.

Hey, you’re on vacation. Enjoy some down time. If you regularly work out pretty hard, your body may appreciate the rest and recovery period. 

5. Get right back into your workout routine once you get home. 

The longer you wait to get back into a regular workout routine once you get home, the harder it will be to get it going again. Be intentional about starting your exercise program within a day or two of settling back in. Your body will appreciate you for it!

And with that, I feel like I’m ready to head off for my vacation. I will power walk through the airport, shop till I drop, and without a doubt, I will eat cheesecake at the Cheesecake Factory. What?  Did you or did you not read number four above?  ;)
