How To Make Pizza on the Grill

I’ve always left the grilling up to Matt. He would head outside and cook the meat, I would be in the kitchen making the side dishes, and all was well.

But one day several weeks ago, I felt like cooking something on the grill for lunch. It just sounded good, you know? But Matt wasn’t home. It was then that I realized that I had no earthly idea how to even turn on the grill. Duh. But it’s true.

Why, yes I do feel ridiculous admitting that to you. And hey, if you want, I could list off all kinds of things I have no clue about.  Nah, how about we save that list for another day?

Well anyway, when he got home later that day, I asked my loving husband to teach me the fine arts of turning on a grill, which involved, as most of you probably already know, the push of a button and the turn of a knob. Wow, do I ever feel so much smarter than I did before.

With my newly found knowledge, I have become a little bit addicted to the grill. It is as if a whole new world has opened up to me. And this is why, after mastering burgers, hot dogs, bbq chicken legs, Italian chicken breasts, and several other varieties of meat,  I decided to try making pizza on the grill. I had heard it was great, so why not?

The good news:  Pizza on the grill tastes incredible and my whole family loves it. The bad news:  Pizza on the grill takes more time and effort than a hot dog or even chicken on the grill. Shucks. But hey, it sure beats heating up the house by baking it in the oven. And well, it tastes so good that I think it is worth the effort. 

How To Make Pizza on the Grill:

1. Make pizza crust – I used my favorite Whole Wheat Pizza Dough recipe. Roll it thin, and keep it small.  Individual sized pizzas are best for the grill.

2. Freeze the unbaked pizza crusts on a cookie sheet lined with parchment paper. This will make your crusts much easier to work with on the grill. 

3. Prepare all pizza toppings. It is important to have this done before you begin cooking your pizzas. Really, really important.

4. Get your grill hot and ready. (If you need my husband to come show you how to turn on your grill, he is very nice and I’m sure he would be happy to walk you through this step.)

5. Place crusts on the grill on low heat, as many as your grill will hold. Close the lid and allow the crusts to cook on one side for about three minutes.

6. Remove the crusts from the grill. Turn them cooked side up and fill with sauce and toppings of your choosing. Go easy on the sauce, unless you want soggy pizza. 

7. Place the topped pizzas back on the grill, close the lid, and cook for another 3-5 minutes or until cheese is melted.

Not that I personally experienced any moments of absolute insanity my first time making these, but be aware that you may be forced to deal with a bit of craziness while feeling like everything needs to be done at once and everyone needs to get out of your way and not ask you any questions while you are trying to grill the crust, top the crust, grill the pizza, and not burn anything along the way. Just so you know. (It does get easier after you’ve done it once.)

And that is why it is very important that your pizza toppings are prepared and ready ahead of time. I am so not kidding. ;)

Gratituesday: The End of My Cell Phone Rebellion

Hello Laura, and welcome to 2012. 

Ladies and Gentlemen, last week, I got my first cell phone.

I know, I know.  While I know I’m not the last person in America to get a cell phone, I do believe I am among the last. And I am very okay with that. I’ve never been one to do something just because everyone else is doing it. In addition, neither Matt nor I ever buy something without seeing the big picture and recognizing the big need. He has had a cell phone for several years and has made very good use of it. But me? I really didn’t feel that I needed one, and admittedly, I’ve been rebellious about getting one. I’m home (with a land line) most of the time and ultimately, when I’m away from home, I have been very glad to have a bit of silence. No one can call and ask me where their shoes are? Sweet. My inbox isn’t screaming at me while I’m at Wal-mart? Okeedokee. I’ve been just fine without a phone.

Until recently.

As our children get older, as our schedules outside the home get busier, as my business grows…the need for a cell phone seemed to be coming up more frequently. And at times, I’ve even had moments of frustration that I haven’t had a phone with me when I’ve really needed it.

And so, last week, Matt and I headed downtown to check out our options. While I was fine to stick to something very basic, Matt was assessing my needs and looking at how a nice cell phone with great perks would benefit me and make my life much easier. We spent the good part of that afternoon asking questions, discussing our options, and considering the financial picture. And wow did we get an incredible deal! (It pays to spend three hours making a decision, apparently.)

Friends, my husband didn’t just get me a cell phone. He shocked me and got me a cell phone with some bells and whistles. One that truly will make my life easier in all kinds of ways. To be able to check and answer email during half time of one of a million soccer games this fall? To be able to moderate comments on this site while waiting to pick up a boy from practice? To be able to quickly text Matt to find out where he is and to ask what time we should meet him after a game? Well, instead of being a nuisance to me like I had once felt a phone would be – I suddenly felt that I’d been given a third hand and a few more hours in my day. (If only the cell phone could clean my house…)

Oh, and for those moments when I don’t want anyone to call and ask where their shoes are, and I don’t want my inbox screaming at me while I’m at Wal-mart? There’s a lovely little “off” button on the side of my phone, and I’m not afraid to use it.

Menu Plan for the Week

If you recall, three out of four of our boys were at their grandparent’s house for several days last week. I missed them like crazy. But I sure did get a lot of work done! I helped Matt paint the front of our house (leaving the high ladder parts up to him). And I was able to spend hours writing a new eBook that I’ve had tons of requests for. This felt like a great accomplishment, as I’ve been working on this book here and there for almost three years. More details coming, just as soon as I feel I’m far enough along in the process to get my hopes up about ever finishing it. ;)

Our boys are all home, so now all is right in my world. A great friend of ours got married this weekend. We are so excited for her and her new husband! Here’s a shot of our family, taken just before the wedding started.

Is it just me, or do any of you married gals feel a little sense of “vow renewal” after attending a wedding? I always leave a wedding with all kinds of sappy feelings of newly married affection toward Matt. Eighteen years and four kids later, I remember how I felt on the day of our wedding so clearly. They tell you on your wedding day that your love will continue to grow. At that time, you can’t imagine that it’s possible. But wow, it’s so very true. Okay…just needed to share all of that since I’ve been feeling all kinds of mushy since yesterday. :)

Moving on to talk of food, since this is my menu plan post, let’s talk homemade chicken nuggets. I find that if I prepare (cut and bread) several batches ahead of time, then freeze them – grabbing them out to make for a quick lunch is super easy!

In case you were wondering, I had served the nuggets with
peas and Creamy Mac and Cheese the day of this picture.

Grilled marinated Italian chicken, grilled potatoes, tossed salad, peas
Grilled hotdogs, carrot sticks, watermelon (We use all beef, organic Applegate hotdogs that we get from our health food co-op, Azure Standard.)

Homemade chicken nuggets, peas, cantaloupe
Hamburgers, green beans, watermelon

Tuesday, July 10
Coconut flour banana muffins, applesauce
Tuna salad with tomatoes, cottage cheese and pineapple

Putting Up Green Beans From Our Garden

Our green bean plants are beautiful this year. Matt and the boys have been picking beans like crazy. I guarantee that when they bring a bucket of green beans in to me, I display a much more excited reaction than if they were to bring me a bouquet of flowers. Garden produce makes my heart flutter. :)

Here was our counter-full of beans last week once we picked, snapped, and blanched them for the freezer. (Don’t you worry. We ate a bunch of them too.)  :)

You can learn more about how we prepare green beans from the garden here. Even if you don’t grow your own beans, I’d recommend looking into purchasing fresh beans from your local farmer’s market or another resource near you. They are soooooo good!

Fruits and Vegetables – The Ultimate Convenience Foods

No time to eat healthy? I beg to differ.

However, I do completely understand the desire to grab a cookie (or three) on the fly, rather than an apple. What is it that draws us to choose the less nutritious treats, instead of simply grabbing a piece of fruit? Yeah, yeah, it’s likely the chocolate and the sugar. I know. The stuff is addicting and it tastes sooo good.

But we’re deceiving ourselves if we think we don’t have time to eat healthy food when ultimately, fruits and vegetables are the easiest, most convenient food items ever. Really. Did you ever stop and think about that?

We all like food that is fast to prepare and easy to eat. We often need to eat on the run or in a short amount of time. Does food get any easier than a banana? It’s pre-packaged for goodness sake! And the list goes on for dozens of delicious, grab and go fruit choices.

Now vegetables – that’s a different story. Often they take a little bit of time to prepare. But how about baby carrots, sugar snap peas, or grape tomatoes for a grab-and-go snack? And really, it just doesn’t take long to throw frozen vegetables into a pot and steam them to accompany your lunch or dinner.

I would say, in my experience, the most time consuming vegetable preparation involves those that I have to clean, peel, and slice…then steam or stir fry. But even that takes a max of about ten or fifteen minutes of brainless work.

Yes, fruits and vegetables are convenient, easy, delicious, and packed with wonderful nutrients our bodies crave. If you feel that you really don’t have time to eat a healthy diet, I encourage you to at least be intentional about eating several fruits and vegetables each day. You can do it!

~TIP~ Spend a few minutes after you get home from the store washing and preparing your vegetables. Slice, peel, dice, and put in air tight containers in your fridge for easy access all week long. You’ll be amazed at how easy it will be to then add great vegetables to your meals or to grab raw veggies from your fridge for a snack.

This is one of our favorite treats, packed with lots of nutrition –
Strawberry Peach Slushies (with hidden spinach!).
This takes about five minutes to prepare.

Icey Lemon Limeade

Pardon me for being boring and talking about the weather, but wow – it’s hot outside.

In an effort to avoid having melting children, I experimented one day recently by putting crushed ice into some homemade Lemon Limeade. The result? The children didn’t melt and they all loved the treat. The adults didn’t mind the refreshment either.

Iced Lemon LimeadeYum

8 cups cold water
2 Tablespoons lemon juice
2 Tablespoons lime juice
1/4-1/2 cup real grade b organic maple syrup
2 cups of ice

Place all ingredients into a blender. Blend on high until ice is crushed and ingredients are well blended. Serve immediately.

Gratituesday: Awesome Quilt and Painted Toes

Over the weekend we were blessed to go to Kansas for a family reunion. This reunion happens once a year and has become one of my favorite weekends. We always look forward to catching up with aunts, uncles, and cousins. The kids run and play non-stop during the entire reunion. It is awesome!

One of the best parts of the reunion each year is the “craft auction”. Each family brings items they have made, and we all drool over them for hours before the auction starts. (I took some of my Homemade Vanilla!) My dad happens to be an auctioneer (very handy!), so on Saturday we all fight over who gets to buy what he auctions off each item. The money raised during this event pays for the reunion food and facilities, as well as provides extra money to give small scholarships to college aged cousins. It’s a perfect idea and we all enjoy it so much.

Well, one of my aunts had worked for months creating this incredibly fun Disney quilt, and was generous enough to donate it for the auction. There’s something so sweet about taking home items hand-made by a loved one. And when I saw this quilt, I couldn’t take my eyes off of it. We love Disney at our house, and I know my aunt must have spent hours making this treasure. I was so happy when I won the bid that I almost felt like a little girl. I stared at it all the way home…

Instead of trying to figure out which of the boys gets to have this quilt, I believe I have decided that the quilt is mine, made just for me by my Aunt Millie. I may be nice enought to let the boys look at it from time to time though. ;)

And hey, look what else I got at the auction…

I have a cousin who offered to paint a special design onto the big toes of whomever won the bid. I have never gone to have my toes done, and well, the thought of having my cousin do it for me was just too much fun to pass up! Therefore, as soon as the auction was over, I got to plop my feet down into her lap and have a lovely visit while she made my toes pretty. It was a blast! 

I am so grateful for our weekend, and even more thankful that I am a part of such a wonderful family.

Our (Non) Menu Plan for the Week

I have decided to give myself a week off from menu planning. Why? Because three out of four of our boys are at their grandparent’s house right now. This means that I only have three people to cook for. The three of us remaining at home do still have to eat, and in fact, since it’s just Matt, Asa, and me, I may even make some extra special meals. But I see this as being a very laid-back week. There’s not even a little piece of me that feels like making a plan. And so…I rebel. :)

Do you ever feel that way when some of your family members aren’t home? Planning and cooking a big meal three times a day just doesn’t seem as necessary when the whole family isn’t here, for some weird reason.

Since I’m down three kids, I plan on taking a little vacation from the “norm”. What kind of vacation am I taking, you ask? The kind of vacation that includes painting a house, getting extra writing done, cleaning out closets and cabinets, and you know – other very “vacation-y” type activities that can be done much more easily when you are neither cooking for a crowd nor doing boat-loads of laundry.

Kudos to my dad and his lovely wife, Tacy, for being the ones who are making it all possible this week. I already miss my kids so much that I find it’s best if I don’t think about it too hard. Denial about my true feelings is a happier place to be. I know they are having a wonderful time with grandparents. (And they are probably enjoying ice cream every night before bed…)  :)

Asa did request Homemade French Fries this week saying,
“It will be much easier for you to only make fries for three of us instead of six…” 
He’s so thoughtful. 
And yes, all three of us will enjoy not having to share the fries like we usually do!

Right now, my non-menu making self is going to take a nap. I figured that would be a good idea before I started my painting and writing filled vacation… :)

A Safe Way to Keep Bugs Away (Giveaway from MadeOn)

It is that time of year again. I love warm weather and everything that comes with it – except for the bugs and bug bites.

I really only planned to be outside long enough to give some direction, so I didn’t take the time to use the Bug Block. Mistake. I ended up staying out longer and helping more than I had intended, so one hour and several mosquito bites later, I came back inside.

While I tried not to scratch, I asked Asa how the Bug Block had worked. His response was, “Hmm. I don’t think I got bit at all while I was out there. Maybe there just weren’t any mosquitoes?”

Oh no. The mosquitoes were there. I didn’t see them either, but I felt them. Remind me to put on Bug Block next time. It totally kept the mosquitoes away from Asa.

And that’s my Bug Block story. It works and it’s completely non-toxic and safe for you and your kids. :)

Back Aches, Laundry, And a Little Something I Learned About Marriage

Today, I am excited to have a post featured over at The Heart Of Simplicity. Here’s just a snippet… 

He put his dirty clothes in the hamper. How incredibly rude and unthoughtful.

Yes, really. Just wait until you hear my story and you will surely feel as sorry for me as I feel for me.

Now that I am almost 39, I have decided that getting in shape and playing sports with my husband and kids is an excellent idea. This is all well and good and I feel better than I have felt in years. If I keep this up, turning 40 (and beyond!) won’t be so bad, right? Right. Except for the fact that while I am now working my way toward being in great shape, each time I do something outside of my normal workout routine and decide to play soccer or basketball with my family, I have a very hard time walking the following day (or three). It is amazing the different muscles that are used when you are trying to kick a soccer ball out of the goal and well, who am I to think I can possibly keep up with my 7, 10, 12, and 15 year old soccer playing sons? Ah, but you’d better believe that I do try. And it sure is fun…before it starts hurting. :)  

Which leads me to the day I found my husband’s dirty clothes in the hamper.
