Raw Cookie Dough Bites (somebody stop me from eating them all!)

I happened upon this Raw Cookie Dough Bites recipe today over on The Nourishing Home. Since I had all the ingredients and since the thought of eating cooke dough bites made me very happy, I decided to surprise the boys and make these for a snack.

Yum

My goodness these things are good. They took just a few minutes to put together, plus they are packed full of goodness. What an awesome, healthy snack to have on hand!

Best of all, for those of you with food allergies, these are egg, dairy and gluten free!!! (Sorry nut allergy friends, these do have nut butter.)  They call for ground flax seed, which I ground in my food processor. And they call for coconut flour, which is one of my new loves. I used my mini soy free chocolate chips and found that these little bites are super addicting. I decided you needed to know about these so that you could also become addicted. Wait – that’s not what I meant. Really, I just wanted to share a new, great snack recipe idea with you because I’m nice and helpful like that. Yes, that’s it.

    Oh my! YUM! I was just about to make an Amazon order and I might just have to get some coconut flour! I’ll have to see if I can squeeze it in the budget!

    These look amazingly delicious! I went over and looked at the recipe, and I’m wondering what kind of honey you used. I’ve seen “raw” honey that looks just like regular honey, and “raw” honey that is opaque and lighter in color than regular honey. What type of honey should be used in this recipe? Thanks so much for all your super recipes!

      I used raw, local honey. You can use any honey at all for these, but if you use raw honey, you’ll get the full effect of the healthy enzymes from the honey since this is a no bake recipe.

      Yes, I saw on her page that she said that peanut butter could also be used. I’ll be trying that next too.

        so, would sunbutter also work then? We have a nut allergy in our home, so almond butter is not an option!

    Since I don’t have coconut flour and am not GF, could I use wheat or some other grain like buckwheat, barley, or oat flour?

    It’s the sugar that gets me….I am done with it so I will try these with splenda or xylitol….then they will be mega healthy! Thanks for the great recipe!

      From the research I’ve done, it seems that xylitol is a good choice, but I’ve not heard anything good about splenda since it is an artificial sweetener. :)

        Just be careful with the xylitol.. A lot of any sugar alcohol can cause, er, digestive distress. And since these are rather addictive.. ;)

        Splenda leaves a bad taste in my mouth. Matter of fact all those artificial sweeteners do. Not sure how anyone can use them to bake with.

        FYI, I just found out xylitol help prevent tooth decay, you can even brush with it. Splenda is really bad for you. There is no sugar in these so I wouldn’t replace the amazing nutrients of raw honey for anything else.

      If you are concerned about the sugar (I’m diabetic, so I am!) you can try sage or tupelo honey. I have read that they don’t have the big spike in blood sugar that other types may cause. And you are still getting the good stuff from the honey and not using anything artificial. Just a thought…

    A friend of mine brought us a meal that included brownies with cookie dough pressed on top. Those were SOOOOOO good. I think I’ll try this recipe with that one! Mmmmmm. Any excuse to eat cookie dough!

      I’ve tried coconut palm sugar and I LOVE IT!. We make a treat with the sugar and lucuma powder and almond butter and coconut milk – tastes like butterscotch/carmel. We also add oats sometimes for butterscotch oatmeal cookies – kind of like these raw cookies.

      I bet you could use her donut recipe and add pumpkin, you may just need to add a little extra flour or a little less milk. They look so yummy!

      I usually keep mine in the freezer, but found that it stays good for months and months!

    Just found myself craving ice cream but came to the realization that I have none in the freezer and no car for the night! Made a half-batch of these instead and cannot wait to indulge after the kiddos are in bed! I think they’ll be better than ice cream…

    Also, I tried oat flour instead of coconut flour.

    Just tried this with ingredients on hand…

    I used sunbutter, brown rice syrup and I also used wheat flour instead of coconut flour and flax seed. (didn’t have any, but I would like to get some since I hear flax seed is great for you!)

    They were super yummy, but not as healthy as these!

    Laura,

    When I make the raw almond butter like you were describing, I add a pinch of sea salt, some sucanat, and melted virgin coconut oil. It makes is a whole lot better. I don’t measure it so I don’t know how much to tell you. Just go by taste and looks.
