Real Food Recipe Makeover: Heavenly Homemakers Edition

You’ve heard of the show, Extreme Makeover:  Home Edition right? I’ve only seen it a few times, but I enjoyed seeing the amazing changes a crew could make in a home – changes that would improve a family’s quality of living in an extreme way. 

Well, this new feature on our site may not change your life in an extreme way. Nor will we be all standing together to shout, “MOVE THAT BUS!” each time a new recipe is revealed. (Although that would be way too much fun.)  There are likely to be fewer tears at the end of each of these posts compared to the tears typically shed at the end of each Extreme Makeover television episode. 

But, since I am constantly receiving email requests from people, asking me to take an old family favorite recipe and remake it into something a little less “processed” and a little more “real food” – I decided to add this fun new feature. 

Now introducing:

Do you have a recipe in a cookbook or in your recipe file that you haven’t made for years because it calls for ingredients you just don’t feel good about using anymore? Have you seen something fun online that you’d love to make, but it’s too white sugary, white floury, canned cream of soupy, or corn syrupy for your liking? Send it this way and we’ll see what we can do.

I’m not going to make any promises that I will be able to fix every single recipe out there and make it into a wholesome, nutrient filled delight. But hey, I’ll do my best. And we’ll all have loads of fun in the process!

Shucks, maybe we will actually shed a few tears. (Or maybe my family will if/when I try to makeover a recipe that just doesn’t work out the way we might all hope. Yikes. God bless the taste testers.)  ;)

Healthy Crock Pot Recipes: Chocolate Chip Peanut Butter Cake

While searching for crock pot recipes, I came across one for a Chocolate Chip Peanut Butter Cake. Cake in a crock pot?  With peanut butter and chocolate chips? Sweet…sign me up! I was excited to recreate this recipe using healthier ingredients.

Without a doubt, this cake is delicious. But aren’t crock pot recipes supposed to save me time? Isn’t that the point? This recipe took extra steps and caused me to have to stand on my head while pulling a muscle to search in the back of my corner cabinet so that I could find a baking dish that would fit down into my crock pot. And then it took four hours to bake. 

FYI:  Laura does not make recipes that take lots of time. Laura likes to eat healthy and save time.

And apparently, Laura occasionally talks in third person like Elmo.

Anyway, while this cake recipe is very easy to mix up, I think it would be even easier if I threw it directly into a cake pan and baked it in an oven.

When might I want to make this cake in a crock pot? Maybe if I need to go somewhere and want to come home in four hours to a freshly baked cake. Or maybe if I’m having company and am busy, I could get the cake put into the crock pot so that I could then focus on the roast beef. Or, I could see the crock pot being an option if it’s really hot outside and I don’t want to heat up my house by using an oven. Yes, those would be the times I would use my crock pot for this. Otherwise, it’ll be a conventional oven at 350° for me.

Here is the recipe, with both crock pot or conventional oven options. (Because Laura thinks it’s nice to have options.)

Chocolate Chip Peanut Butter CakeYum

1/2 cup butter, melted
1 cup sucanat
1/2 cup natural peanut butter (I use homemade peanut butter)
3 eggs
3/4 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
2 1/2 cups whole wheat flour
1 cup chocolate chips (I used Enjoy Life Soy Free Chocolate Chips)

Cream together melted butter, sucanat, and peanut butter with an electric mixer. Add eggs, sour cream, and vanilla. Blend in baking powder, baking soda, sea salt, and flour until well combined. Fold in 3/4 cup of chocolate chips.

To Bake in a Crock Pot:

  1. Line crock pot with foil. 
  2. Pour batter into a 2 1/2 or 3 quart baking dish that will fit inside your crock pot. Spread batter into the baking dish, then set it down inside the crock pot. 
  3. Sprinkle on remaining chocolate chips. 
  4. Cover loosely with 4 layers of paper towels, leaving the lid off the crock pot. 
  5. Cook on high for four hours, testing doneness with a toothpick.

To Bake in a Regular Oven:

Pour batter into a greased 8×8 inch baking pan. Sprinkle on remaining chocolate chips. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

And now, I can not get the sound of Elmo’s voice out of my head. 

Laura is not a big fan of the sound of Elmo’s voice.

Raw Cookie Dough Bites (somebody stop me from eating them all!)

I happened upon this Raw Cookie Dough Bites recipe today over on The Nourishing Home. Since I had all the ingredients and since the thought of eating cooke dough bites made me very happy, I decided to surprise the boys and make these for a snack.

My goodness these things are good. They took just a few minutes to put together, plus they are packed full of goodness. What an awesome, healthy snack to have on hand!

Best of all, for those of you with food allergies, these are egg, dairy and gluten free!!! (Sorry nut allergy friends, these do have nut butter.)  They call for ground flax seed, which I ground in my food processor. And they call for coconut flour, which is one of my new loves. I used my mini soy free chocolate chips and found that these little bites are super addicting. I decided you needed to know about these so that you could also become addicted. Wait – that’s not what I meant. Really, I just wanted to share a new, great snack recipe idea with you because I’m nice and helpful like that. Yes, that’s it.

Pumpkin Pecan Pie Squares

I recently found this great recipe, then played with it and adapted it to create a healthier dessert! It is very tasty!! Simple and sweet – and just a little nutty (which are some of the exact characteristics I strive for in my life). ;)

I love the crust part the best. But I also love the filling the best. The topping was also very, very good. And of course, I always love the fresh whipped cream the best. Oh, such a great combination of lots of yummy tastes. Try it for yourself and see which part you like best!

Ingredients
  • CRUST:
  • 1 cup whole wheat flour
  • ½ cup oats
  • ¼ cup sucanat
  • ½ cup butter
  • FILLING:
  • ¾ cup sucanat
  • 2 cups pumpkin
  • 1 cup heavy whipping cream
  • 2 large eggs
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon ginger
  • TOPPING:
  • ½ cup pecans, chopped
  • ¼ cup sucanat
  • Whipped cream
Instructions
  1. For Crust: Combine flour, oats, sucanat and butter. Mix until crumbly. Press on bottom of ungreased 13 x 9-inch baking pan. Bake for 15 minutes at 350 degrees.
  2. For Filling: Combine sucanat, pumpkin, cream, eggs and spices in large bowl. Beat at medium speed for 1 to 2 minutes; pour over crust. Bake for 20 minutes.
  3. For Topping: Combine pecans and sucanat in small bowl. Sprinkle pecan topping over filling. Continue baking for 20 to 30 minutes or until knife inserted in center comes out clean.
  4. Cool completely in pan on wire rack. Cut into bars. Top with whipped cream (just a dollop).

If you recall, I don’t usually like recipes with nuts in them. I surprised myself by liking the pecan topping.
