Summer Lunch List of Ideas

School is ending. This means that we need a Summer Lunch List. Why? Because children cannot live on sandwiches alone. We’re sure to lose our meal-planning brains by June. And we all just need a cheat sheet. Here it is!

Summer Lunch List of Ideas

  1. Bean and Cheese Burritos – Make a big batch and freeze them to rewarm quickly as needed.
  2. Meat and Cheese Burritos – Make a big batch and freeze them to rewarm quickly as needed.
  3. Black Bean Salsa – Take a few minutes to put this together, refrigerate, then pull it out and serve with chips.
  4. Cheesy Salsa Enchiladas – These only take about 15 minutes to put together from start to finish. Make them ahead and bake as needed.
  5. Chicken Salad – Serve on bread, crackers, or tortillas.
  6. Tuna Salad – Serve on bread, crackers, or tortillas.
  7. Sloppy Joes – Serve on buns or with tortilla chips.
  8. Taco Salad – Let everyone build their own as they like.
  9. Simple Chicken Cheeseballs with a Kick – Perfect with these smoothies.
  10. Black Bean Chicken Nachos – These come together surprisingly fast.
  11. Grilled Pizza Tortillas – Fast and easy!
  12. Quesadillas – Add torn spinach to these to “sneak in veggies.“
  13. Easy Cheesy Bean Dip – I love it when lunch includes a chip and a dip.
  14. Pizza Boats – You can grill these if you want to avoid the oven. :)
  15. Creamy Mac and Cheese – Have you tried making it this way? Amazing.
  16. Beanie Weanies – A kid favorite at our house.
  17. Guacamole – With chips. And smoothies. It’s lunch and I love it.
  18. Simple Last Minute Nacho Plate – Perfect when they’ve played outside all morning and come in starving.
  19. Sliced Ham – Tastes so good with potato salad.
  20. Simple Crock Pot Pizza Casserole  – Take 5 minutes to put this together in your crock pot during breakfast; then serve it at lunchtime!
  21. Turkey and Cheese Melts –  Use leftover bread or buns, top them with lunch meat and cheese, then melt them under a broiler for 2-3 minutes.

Convenience food back-up ideas:

At this point in my life, I try to keep some of these on hand for super quick meals:

  • Hotdogs
  • Frozen pizza
  • Chicken nuggets
  • Sandwich makings

Keep any or all of these on hand for easy lunch sides:

  • Baby carrots (I like the petite carrots – they are sweeter and easier to eat!)
  • Grape tomatoes
  • Mini sweet peppers
  • Sugar snap peas
  • Strawberries
  • Blueberries
  • Blackberries
  • Raspberries
  • Unsweetened Applesauce
  • Bananas
  • Grapes
  • Oranges
  • Clementines
  • Fresh Spinach or Mixed Greens
  • Sliced apples
  • Sliced peaches or nectarines
  • Steamed peas (frozen peas cook very quickly!)
  • Sliced cucumbers
  • Sliced sweet peppers
  • Raw broccoli “trees”
  • Cut cantaloupe
  • Watermelon wedges
  • Sliced pears
  • Pineapple chunks
  • Steamed green beans (frozen green beans take just a few minutes, but can cook themselves while you get the remainder of lunch ready)

Bonus Tips:

If you have Homemade Ranch Dip (storebought works too!) or Hummus on hand, these can be thrown onto the table quickly to help get the veggies down!

These smoothies go with just about any lunch and are super refreshing in the summer.

Tired of Sandwiches? 10+ Easy Summer Lunch Ideas

I shared these Summer Lunch Ideas on Facebook Live a few hours ago, and today I’m sharing the written version with recipe links!

I’ve mentioned before that our family rarely eats sandwiches. The cost for the bread, cheese, and meat can really add up since we’re such big eaters! We typically save sandwiches for travel, packing them to take with us when we hit the road. It’s funny. Sandwiches have kind of become a “treat” for us since we don’t have them very often. We like to load them up as if we’re at Subway. (I’ve learned to love sliced cucumbers on mine!)

For my own benefit and yours, I’ve put a list together of more than 10 great lunch ideas that work well during the summertime. None of these require an oven, and very few even require a stove-top. Most have options for you so you can work with whatever you have in your freezer or with leftovers you need to use up.

Family Friendly Real Food Summer Lunches

Here’s to having a list so that we don’t have to think so hard when the kids ask, “What’s for lunch?”

10 + Summer Lunch Ideas

1. Meal-type Salads

This is the best way to get my family to eat lots of greens. Our favorite salads are:

  • BLT Chopped Salad
  • Taco Salad
  • Chef Salad that we make with leftover grilled chicken or chopped up ham

2. Baked Potatoes in the Crock Pot

These are amazing because I can bake many potatoes at once and we can top them with whatever I have on hand at the time. Some ideas are:

  • Taco fixin’s
  • Nacho Cheese/Meat Sauce
  • Ham, Cheese, and Sour Cream
  • Leftover grilled chicken, cheese, and sour cream
  • Leftover grilled steak, sliced and sauteed with peppers and onions

3. Chicken Salad or Tuna Salad

We eat this on a bed of lettuce, with crackers, on a tortilla, or sure – on bread like a sandwich. ;) We like making fruit smoothies with this meal because the combination is so refreshing!

4. Sloppy Joes

I usually make several pounds of Sloppy Joe meat at one time, then freeze it in meal size portions. We usually skip the buns and eat this with tortilla chips – sometimes with salsa and cheese sprinkled on top.

5. BLT Wraps

These are completely amazing. Bacon and cream cheese with lettuce and tomato in a tortilla? Every bite is excellent.

6. Chicken Tacos

This is such an easy meal because you just dump chicken and salsa into a crock pot. Everyone can build their tortilla however they like and I feel like I haven’t even cooked (because I pretty much haven’t!).

7. Grilled Hot Dogs or Brats

It’s a little bit hard to find great quality dogs and brats without having to fork out the big bucks, but occasionally we’ll grab a good nitrite free, beef variety to grill. We all love these, and since we eat them with a bunch of raw veggies and fruit I don’t feel too bad about them not being the most nutritious food option. :)

8. Pasta Salad Bar

This meal is great because again, everyone can fix their bowl however they like it!

9. Hearty Dips

We typically think of serving Homemade Guacamole or Black Bean Salsa as a side dish – but since both of these are pretty filling and nourishing, they make a good “main dish” at lunch sometimes. Smoothies or fresh fruit, along with raw veggies (also good for dipping) makes it a complete meal with little effort.

10. Pizza on the Grill

If I already have homemade pizza crust in the freezer, or if I’ve purchased them from Bountiful Baskets – it is super easy for everyone to build their own pizza with their favorite toppings, then we heat it for a couple minutes on the grill. Admittedly, we prefer our pizza baked in an oven. But on a hot day we make the sacrifice. :) We’ve also made Pizza Boats on the grill, which is even easier.

BLT Wraps – The Perfect Summertime Meal

Nothing says “I’m a humble cook” like shouting really loudly that this is the best recipe you’ll ever eat!  My bad. What can I say? There’s bacon in it. And cream cheese. The goodness of this recipes has nothing to do with me, and everything to do with the amazing mixture of ingredients all rolled up in a tortilla.

This recipe is so easy that my kids made it on their own for our family to eat on Mother’s Day. These can be made ahead of time – or at the very least, you can cook the bacon and prepare the tomatoes and lettuce so that you can put them together right before serving time.

The best part? Well…the bacon, duh. Yeah, but the other best part? These wraps really hit the spot on a hot day. There’s minimal cooking involved, so the house won’t heat up. Serve these with a variety of fresh fruit like pineapple, watermelon, or strawberries. Set out some sweet peppers, sliced cucumbers, and carrot sticks. What a wonderful, nourishing meal.

Ingredients
  • 4 ounces softened cream cheese
  • ½ cup mayonnaise
  • 8 slices cooked and crumbled bacon
  • ½ cup chopped tomatoes
  • ½ cup shredded spinach, romaine, or green leaf lettuce
  • 3 eight-inch whole wheat tortillas
Instructions
  1. Mix cream cheese and mayonnaise until smooth.
  2. Stir in bacon crumbles and chopped tomatoes.
  3. Spread mixture onto tortillas.
  4. Sprinkle shredded lettuce on top evenly.
  5. Roll tortillas up tightly.
  6. Cut each into 5 diagonal slices.
  7. Chill until ready to serve.

BLT Wraps

Tip: Make the cream cheese filling ahead of time and store it in the fridge. Then simply fill your tortillas at meal time, wrap, and serve! These work great for brunch, lunch, party, snack…pretty much any time.
