Fresh Thyme Farmer’s Market – My New Favorite Grocery Store and Pics of This Week’s Food

First let me say that sometimes, but not always, when I take pictures on my phone, they upload upside-down to my computer. I edit them to turn them right-side-up, and they appear as such here on my blog. But if you are a subscriber, you will see that they still appear upside-down in the newsletter. This is because I am a professional and always do things professionally.

Some of you are seeing this first picture right-side-up. Others of you are like, “Why are the peppers and avocados spilling out all over the grocery store? Who is going to clean that up? Why did Laura do that? This is not okay.”

That right-side-up-upside-down picture was taken on Friday when I was introduced to what may now be my favorite grocery store. A brand new Fresh Thyme Farmer’s Market just opened up in Lincoln. Since Elias and I had doctor appointments there last week, we stopped in. I decided that this store is a cross between Trader Joe’s and Whole Foods, with prices that beat both places. I filled my cart in a way that made the cashier question my sanity (what’s new?) and I left super pumped up.

“Elias!! Wasn’t that so much fun! That is my new favorite store! Didn’t you just love that!?!?!?”

He was like, “It was a store.”

Ok fine. Not everyone geeks out when grocery shopping. But 88¢ for huge and beautiful red peppers, people!!! Chicken for $1.57 a pound! Strawberries for $1.50!

The beauty of this is that while I don’t go to Lincoln very often, I can price-match this store’s produce prices weekly at my local Walmart. I am going to save so much money!

Elias and I hit Aldi while we were in Lincoln, then went to Fresh Thyme, then ran into Walmart when we got back into town. We are well stocked up now. Here’s the breakdown, but as you can see…

Fresh Thyme Farmer’s Market was the most fun.

  • Aldi – a case of organic salsa, 4 packages of brown sugar, 1 cantaloupe, and 8 cans of knock-off rotel
  • Fresh Thyme – tons of butter, lots of chicken breasts and thighs, a beef roast, full-fat yogurt (a great treat I can’t find locally), 12 pounds of strawberries, 2 bunches of asparagus, 5 huge red peppers, 4 packages of organic prepped hashbrowns (because they were a great price and will be a fun treat), and 6 kiwi (for a dollar!)
  • Walmart – 5 bottles of 100% apple juice (because I could Price-match them for 98¢ and like to have juice on hand for company/treats), 2 huge blocks of cheese, half-and-half, and 3 buckets of ice cream (not pictured) for our homeschool basketball banquet dinner.

Saturday I was actually home for the entire day – something that hasn’t happened in quite a while! I baked bread and got caught up on some work, made a menu plan, and had my kids help me grate one of those huge hunks of cheese in our food processor. Not that you were asking, but my two favorite ways to use my food processor are:

  • Grate Cheese (It took about 10 minutes from start to clean-up to grate a 5-pound block.)
  • Make Peanut Butter (I also make it this way sometimes to make it more spreadable.)

My kids do not miss grating cheese by hand.

This week we’ll be eating:

  • Roast with carrots, potatoes, and gravy
  • Real Food “Velveeta” Rotel Dip
  • Spicy Mac-and-Cheese
  • Homemade chicken strips and fries
  • Easy Noodle Stir Fry with asparagus, carrots, broccoli, and zucchini
  • Italian Grilled Chicken with grilled veggies
  • BLT Chopped Salad

With all of this, we will be eating lots of strawberries and other fruit. I have plenty of different veggies and greens on hand. It’s shaping up to be a very tasty week!

Menu Plan for the Week (a real one this time)

Yay, this week I’m making an actual meal plan! The past two weeks have been a blur of fun and hard work as we fed the YC ladies soccer team, had them help us paint, sent Matt off for three practices each day with the team – all while trying to keeping up with regular daily work and school.

I’m tired.

But, we are now able to settle back down into a routine, and as long as I continue with my morning quiet time, all will be well. I’m also really focusing on asking my boys to help more. Sometimes I find myself in a rut of feeling that it will be easier if I just do a job myself instead of calling a boy to help out. Why do I do that? Silliness.

The end of last week, a couple of us headed to Lincoln for appointments. While we were there, we got to go to Trader Joes. See the bread?? And the hamburger buns? While I usually make those myself, picking some up at Trader Joes will help me put together some easier meals since this week is very full. (Let’s see, quiet time with God or kneading bread this week? I’m picking God time. Thank you Trader Joes.)

Homemade pizza, tossed salad

I Can’t Find Healthy or Organic Foods Where I Live! {No More Excuses}

I live in a small town in rural Nebraska. I am surrounded by smaller towns, and tiny towns, and lots and lots of big, huge corn fields. We can drive to Lincoln to a Trader Joes in one hour, or to Omaha to a Whole Foods store in two hours. Neither of those options is convenient since we don’t make trips to Lincoln or Omaha very often.

Therefore, I just assumed that eating healthy foods would be out of the question for our family. Where was I supposed to buy high quality food without having to drive 100 miles to go shopping? And then, would I even be able to afford the food at those specialty stores?

For our family – thinking outside the box when it comes to finding healthy food resources has been a very good idea. There are healthy food options all around us – we just had to go about our grocery shopping adventure a lot differently than what we considered to be “normal”. We do purchase a few items at our local grocery stores and at Walmart – like bananas, clementines, and a few other organic produce items that they might carry occasionally. Otherwise, here is how our family now purchases groceries:

We order from a health food co-op.

Azure Standard has been wonderful for us. We order online once a month, then pick up our food when it is delivered right here in town. Their prices are unbelievably good. I encourage you to look into joining a health food co-op as a way to find whole foods at a reasonable price. If Azure Standard doesn’t deliver to your area, look through all the comments on this post to learn of a health food co-op option that might be available where you live.

Here’s a sample of what our food co-op order looks like.

We order food online.

Ordering groceries online has been an incredible help and money saver for us. Not only has this been super convenient, it saves us money and gives us all kinds of wonderful whole food options – right at our fingertips. And having groceries delivered to our front porch – it does not get any easier than that! Tropical Traditions, VitaCost, Mountain Rose Herbs, Cultures for Health, and Amazon
are our favorite go-to online resources. We watch for sales and free shipping deals, and have learned the best way to get good prices while shopping online. Here is a detailed list of what food we purchase from each of these online resources.

We buy food from local farmers.

We are blessed to have friends and farmers around us who raise animals in a way we appreciate (grass fed, free range, no hormones or antibiotics, etc). Our eggs, milk, beef, lamb, and chicken all come from sources close-by. North Star Neighbors is located a bit far away compared to our milk and eggs sources, but our town happens to be right on their delivery route. Yep, for a small delivery fee, North Star Neighbors delivers meat right to our doorstep. We pick up our milk and eggs once a week from friends. In addition, we take advantage of our farmer’s market each summer and fall. If you’re looking for local healthy food options, I encourage you to check out LocalHarvest.org to see what resources are available where you live. Also, start asking around to others who you find are interested in healthy eating to see what their food sources are. You might get a few crazy stares from people, but hey, you might also find out who sells raw milk or grass fed beef in your area!

We grow food in our own garden.

Our garden provides us with green beans, tomatoes (for sauce and soup), peppers, potatoes, corn, and a variety of other yummy foods that are simple to preserve. Also, if we don’t have space to grow something, but others around us do, we aren’t afraid to make a trade or work out some sort of deal in exchange for picking some produce in their garden or on their fruit trees. Again, it never hurts to ask! Often, we get garden/tree produce for free when people have an abundance. Then, we get to work, canning, freezing and dehydrating all the produce. We work with our local grocery stores to special order food.

Have I mentioned that it never hurts to ask? In the past, we’ve talked to our local grocer about special ordering cases of food for us, and they’ve been happy to accomodate. They have even given us a good deal on these purchases since they know that since we’re buying the entire case, none of that food will spoil on the shelves.

As always, remember that we are all different, our food sources are all different, and we all have different family sizes and budget amounts. We’re all on the same team here, just looking for ways to encourage one another on our healthy eating journeys.
