Gratituesday: The Decision

I tell you what ~ it has been one wild ride having a senior in high school. I had no idea all that went into this year, not to mention the emotions that would smack me over the head without warning.

God has been so good to love me so gently this school year. As I talk to other moms who have graduated or are graduating their kids, I’m learning that I am quite normal. This is good to know. Home school mom, public school mom, private school mom – it matters not. We are Mom. We are loving our kids through making giant decisions all while preparing to launch them into all that God has planned for them. We cry a lot, not necessarily because we are sad. We cry because we’re happy. Because we’re excited. Because we’re a little bit weary. And because we couldn’t be more proud of our graduates.

Well anyway. That’s been my year in a nutshell. That, along with helping my senior through some very difficult online college courses all while trying in vain to keep up with other aspects of life like dust and laundry.

You know how some kids just know what they are going to do after high school? Our kid wasn’t one of them. He’s been searching for God’s answers all year long, not feeling confident in making a final decision for his immediate future.

The wrestling. That’s been tough to watch. And yet, it’s also been beautiful. For the first time, our 17 (almost 18) year old found himself faced with many great options and four thousand questions about what would be best. Had the answers just fallen into his lap back in September, I don’t believe the he would have experienced God’s work in his life in such a life-changing way. He had to learn to block out all the other voices and only listen to God. Then and only then did the right answers come.

As of last week, the decision has been made. Asa sees it as the one God has laid out for him in a very exciting way. And would you believe, after all the wrestling, everything came around to Asa choosing to go five minutes down the road to our very own York College? (Matt and I met and graduated from this Christian school in the 90’s.)

Indeed. He is YC bound. While doors were closing on the other options, God kept paving the way to YC. The soccer coach recruited him and offered him a scholarship. The choir director recruited him and offered him a scholarship. The admissions director saw his grades and granted him an academic scholarship. In those ways and many more, God just kept making it more clear that this is the school for him.

He plans to pursue a degree in Business Communication. This is a great fit for him as he continues to develop his skills in videography to perhaps run his own video business someday.

He has decided to be on the soccer team and in the concert choir. He will live in the dorm – and hopefully sometimes he will sleep. While Matt and I loved our YC experience, we were very open to other options God might have for Asa. Now that he’s chosen York College, we’re rather excited that we can be a fly on the wall during some of the events he participates in on campus. We’ll get to meet more of his friends. He can come home to do laundry and raid the fridge.

Yes, we’re all very excited. Most of all, we’re so grateful to see how God worked to pave out the path for Asa and to make it so clear to him that this is the way he should go.

And now, we carry on with the final few weeks of the school year. It’ll be a bittersweet ending this year, full of gorgeous new beginnings. God is faithful through every season of life. How exciting it is to see all He has in store for us all in the tomorrows.

Gratituesday: The College Class

Our oldest son is taking his first college class.

asaWe’ve homeschooled Asa since he began kindergarten (yesterday). We decided that now that he is a junior in high school, helping him get a few college credits under his belt while giving him some classroom experience would be ideal for him. The classes he takes at the college while he’s a high school student will serve as dual credit classes (meeting requirements for both high school and college). Sweet! Plus, as a high school student, he receives a healthy discount on one class per semester at our local college. Saving money, knocking out a few classes, starting college in two years with several credits already out of the way? It’s all good.

I really didn’t give it much thought at first. We filled out all the paperwork to get him enrolled. Sure, it was weird helping him fill out a college application already (he’s 16) – but we had a plan and we were ready to execute. He was ready. Application accepted, class chosen, necessary information obtained. He was to be at his Basic Speech class on the York College campus on Tuesday, August 24 at 8:30 am.

It wasn’t until I dropped him off the first day and saw him walking across campus – the very campus I walked across during my four years of college, the campus where I met Matt, the campus that holds so many dear memories – that I forgot how to breathe. When did he get so tall-smart-handsome-mature-grown up? Overnight, I promise.

It’s a great feeling, knowing that he’s able to handle a college level course. So far, he’s rockin’ this class. He’s off to a great start! :)

Gratituesday: Soccer Girls With Paintbrushes

I’ve always loved cooking for them. Preparing hearty and healthy meals that fill the college soccer girls in the midst of hard core pre-season training has always been a joy. Blessing them by giving them home cooked meals – especially for those who are away from home for the first time – has always been my goal.

But I have to say, this year a little extra love has been stirred into the gravy. Why? Because this year, the team is returning the blessing by helping us paint our house. Truly, I don’t need anything more from them than their “thank you so much, this food is awesome” and I don’t even need those words of affirmation since their smiles say it all. But since helping us paint worked into their pre-season schedule (team bonding with paint brushes!) – I couldn’t be more pleased.

Here was this morning’s crew. Another eight will show up tomorrow, and then Wednesday…

For several mornings this week, the army of girls will come ready to work – after their morning workout and before their afternoon practice and wow these girls are tough, hard workers. This is why they need loads of good food. :)

I’ve said it before, I’ll say it again: I’m so thankful that our family can be a part of the lives of these young women. They’re great with a soccer ball at their feet, and have proven themselves to be quite handy with a paint brush. Blessings all around!

Preparing to Feed the York College Soccer Team

The family menu plans I usually share with you each Sunday will be put on hold for this week and next. I have plenty of prepared meals in the freezer that I’ll be pulling from during these busy few days, so instead of preparing and following a menu plan, I’ll simply feed my family whatever falls out of my freezer first. Muffins perhaps?!

This was our simple, but delicious lunch today of Chicken Salad, Whole Wheat Butterhorns, and lots of fruits and veggies. I love this time of year!

As is our well-loved tradition, our family will be feeding our Ladies’ York College soccer team several meals beginning at the end of this week. Matt is one of the coaches for this team, and we are blessed to be a part of the girls’ lives. One of my roles is to love on the team by serving them hearty meals during their pre-season days. The athletes come to campus several days before classes begin, and while the cafeteria is willing to feed them, the cost really gives the slim soccer budget a hit. I can purchase groceries and cook for less, plus, what college student wouldn’t prefer home-cooking to the cafeteria?

I’m working on serving yummy, low cost, and simple-to-put-together meals. Here are the plans I’ve made so far:

Thursday (meal for approximately 60)

I’ll be feeding the cross country team along with the ladies’ soccer team for this meal. I’ve reserved our church fellowship hall for this.

The meal plan:  Italian Pasta Bake (x6), tossed salad, French bread (from the store), fruit salad, butterscotch bars (x4)

Saturday

This and the rest of the meals will be for approximately 32 people (our family included). We will serve these meals in our own home, which makes preparing the food much easier than when I have to lug it all to the church kitchen. I have a large roaster, so when I say “crock pot,” I really mean “huge roaster plugged into my wall.”

The meal plan:  Crock pot barbecue chicken, cream cheese corn, green beans, baby carrots with homemade ranch dressing, chocolate chip cookie bars

Sunday

This was a team favorite last year. I’ve added homemade butterhorns to the mix though. I think they’ll love ’em!

The meal plan:  Roast, carrots, potatoes, gravy, whole wheat butterhorns, oatmeal chocolate chip cookies

Monday

These enchiladas go together so easily, and freeze well so that I can be prepared in advance!

The meal plan:  Cheesy salsa enchiladas (x4), tossed salad, grapes, brownie fudge sundaes (these brownies, this hot fudge sauce, store-bought vanilla ice cream)

Tuesday

This is a new favorite of ours – chicken breasts marinated in my homemade Italian dressing. So easy and good!

The meal plan:  Italian chicken (in the oven), baked red potatoes (in the roaster), steamed broccoli and carrots, watermelon, crustless cheesecake cups

In preparation, I spent several hours Friday evening baking desserts. Here we have a double batch of brownies, a double batch of oatmeal chocolate chip cookies, and a quadruple batch of butterscotch bars. These are all cut, sealed in freezer bags, and put into the freezer to get out in time to thaw and serve for each meal. Easy!

Saturday morning, I browned meat, boiled noodles, and put together all the casseroles needed for two different meals. They are now in the freezer, ready to go.

Later on Saturday, the boys helped me make the cheesecake cups, which are now in the freezer. I also made a double batch of butterhorns so that all I have to do before baking time is let them thaw and rise. (Somehow I didn’t get a picture of the butterhorns.)

Now that so much of the food is prepped and frozen, the rest of the work will be much easier! And since I don’t begin serving the food until Thursday, the beginning of this week can now be focused on getting school work done with our boys. :)

Oh, and by the way. I need to admit that I now have added four more Pyrex 9×13 dishes to my collection. It had to be done. I edited my “how many Pyrex dishes do you really have” post, so you may need to go re-read it with my updated Pyrex numbers…

Gratituesday: A Change in Seasons

Now that soccer season is over, our family should now have all kinds of free time on our hands.

Haha, that may be one of the funniest sentences I’ve ever written.

But compared to the busyness of soccer season – now that Matt isn’t scheduling his life around college practices, games, and road trips – and now that our days aren’t dictated by which boy has a game to play or referee at what time – I find myself taking a relaxed sigh of relief.

Some of the projects that have taken a back seat to the soccer schedule can now be pulled out and worked on. Some of the ministries we have felt called to do can now be executed. The people we have wanted to have over and spend time with? We might be able to fit that in a little more easily now.

Soccer season is fantastic – and because of our involvement with soccer in the community and at our local Christian college – we feel that soccer in and of itself is a ministry that our family is blessed to be a part of. We love being able to be around so many families and college students. Matt’s ability to coach young kids and young adults alike  is quite a gift. (I love watching him coach.)

But today Matt was able to help an elderly friend pack his home to move – and since he didn’t have to be back in time for soccer practice – he could stay until the job was finished. Tonight we got to go to the college to support our men and women’s opening basketball games – just because we wanted to. This Sunday, we get to start hosting High School Huddle again.

I love how different seasons provide different opportunities. And I love how the changes bring refreshment. Are we going to be less busy now? Probably not. But our involvement with people will be a little different than it has been during the past few months, and I find myself looking forward to it.

And maybe, just maybe, I am just a little bit relieved not to have to make any more trips out to the soccer complex to drop off, pick up, or cheer on a team…until the spring season starts. Then I’ll be all over it!

Gratituesday: Homecoming Weekend

I look forward to it…long for it even. Homecoming weekend here at York College always brings lots of house guests, soccer games, and festivities. All throughout the weekend, we run into so many friends that we love catching up with. Often, we don’t know who will be coming, so bumping into people we love all throughout the weekend is always so much fun!

One of the highlights of this weekend was that Matt was able to talk his former YC roommate – the best man in our wedding – into making the trip from Texas. They played soccer together, traveled to church camps together during summer breaks, and have been wonderful friends from the time they first met. Having him here for the weekend was fantastic. The only thing that would have made it better is if his family could have joined him. Next year. (Cindy, that was a hint.)  :)

Here they are after playing in the alumni soccer game. Watching my guy play in that game is a highlight of my year – probably because it is a highlight of his. Why yes, he did score a goal that day.  :)

Before all the running around began, we were able to sit in the living room and play games together. Love this.

I had the most fun making meals for all of our guests. I’m thankful I had so many meals made up ahead of time so that I was able to relax and enjoy my company. Our friend Lisa was celebrating her birthday while she was here, so the Cake Boys rose to the occasion. That episode will be coming soon, I’m sure.

Lisa loved the cake. Well, we all did, as a matter of fact.

The hugs, the visits, the fun – they all filled me up and left me refreshed. I am so thankful for all of the wonderful people God has put in our lives to encourage and sharpen us.

Gratituesday: Long Awaited Visits

First, let me say that I’m so disappointed that I have no pictures to document what I am about to share. :(  I guess I was thinking about that hugs instead of the camera.

There is a big camp, called Soul Quest, hosted by our local Christian college, which took place last week. We always love being a part of this, making a point to go each evening to worship with the hundreds of youth and adults that are on campus. (Asa, our oldest, goes as a camper and loves it!)  One of the best parts of Soul Quest is seeing many friends that we rarely get to see. It’s like a big reunion and it’s wonderful. :) 

Then on Saturday we picked Asa up from Soul Quest and dropped him off at church camp where he is serving as a counselor this week. (Yes, Asa is just a little bit busy this summer. Ah to have the energy of a 15 year old!) 

I had heard that my friend Donna, whom I haven’t seen for way too long, was going to be at camp this week with her boys. Therefore, I hoped that when we dropped Asa off I might have just a small chance to hug her neck and catch up for a little while. Well guess what? Donna was the first person I saw when we arrived at the camp ground. And then guess what else? We actually got to visit for over an hour while as our boys played (and got filthy) together. :)  And then guess what else? (Why yes, I am excited about my weekend.)  After I had visited with Donna for a while, her mom showed up and I got to hug and visit with her too! Donna’s mom has always been a lovely encouragement to me.

I left camp with my cup overflowing. 

(I also left with a few ticks, but let’s definitely not talk about that…)  ;)

Gratituesday: So Far, So Good

I always intend to take lots of pictures. I always think it will be fun to document the entire week with its mountains of food, grateful soccer girls, helpful boys, dirty dishes – the whole thing.

But year after year, as I’m feeding the YC ladies soccer team, the pictures never happen. Occasionally I have half a brain and snap a shot, but generally I’m too busy to remember to get out the camera.

So far, I’ve taken exactly one picture. (Brace yourself for the excitement.)  I made eight loaves of Honey Whole Wheat Bread and loaded them (sort of) into my cake container to transport to the church building where we’ve been serving the meals.

The meals have gone wonderfully so far and the YC ladies are so sweet and appreciative. It’s been great to grab hugs from returning students and to get acquainted with new students. I am so thankful that our family has this opportunity to serve the team this way and that Matt is able to help coach. We love being a part of York College (our Alma mater) and being a part of these girls’ lives!
