I love seeing your menus. Do you always stick to them? Seems like every week I have at least 1 meal that just doesn’t go like I’d planned either due to schedule changes or children’s refusal to eat what I’ve prepared…

Naw, I hardly ever stick to them exactly! I always plan with the best intentions of keeping up with the week, but something usually comes up that changes things a little bit.

I do the same thing! My veggies change a lot because I look at what is on sale and what looks good! Last week I couldn’t find broccoli that looked decent so I sauteed some cabbage in a little butter. So good!

I made your lasagne casserole for lunch today, we had hubby’s parents over for lunch. My son, my husband and his dad are all whole wheat pasta haters and yet they all had 3 or 4 servings EACH! I am so glad I doubled the recipe!

Thanks for the link to Say Mmm. I decided to check it out, and I love it. We recently moved from Tennessee back to Florida. It looks as if I may have to go back to work, at least for awhile, and this will be very helpful. I can plan menus, and it will make it easier for my oldest daughter to help me out by cooking dinner. It will all be laid out for her on a nice menu.

Mmmm your menu looks delicious! My husband was just talking to me today about making that italian pasta dish, but he didnt know what it was called and I didn’t know how to make it, lol.

Will definitely be trying some of your recipes.

I make a meals list. My husband gets paid every 2 weeks so I shop for 2 weeks at a time. I look over the calendar for the next 2 weeks and see if there are specific needs for specific nights. But generally I just shop for 14 meals and decided every morning about 7am what we’re having that day from my list. And we have carrot sticks a lot for veggie because it’s the one I can get all 3 kids to eat. *sigh*

I love looking at all your recipes and use several of them, however, I run into the same issue here, there are only 2 of us and I only have my refrigerator freezer, not an extra one. Suggestions?

I’d suggest cutting the recipes in half when you make them…that way you won’t have too much left over!
