Menu Plan for the Week

We have had one FULL weekend. Our house was overflowing with company from Wednesday through Saturday. We got to see lots of friends on Saturday and Sunday who had come into town for York College Homecoming. We have had so much fun! Now it’s time to wash lots of sheets and towels and play catch-up. And yes, I had a nap this afternoon. :)

Freezer cooking proved to be a life-saver these past few days. Putting meals on the table for lots of people was super easy since I had made all of the main dishes and many of the baked goods ahead of time. I got to enjoy my company, and didn’t have to worry about trying to hold a sensible conversation while cooking since we all know that doesn’t work for me. :)

Creamy Orange Cooler

We have lots of soccer games this week, but otherwise, I think our schedule slows down just a little bit again. Here’s what we’ll be eating:

Monday, October 14
Oatmeal bars, apples
Potato soup, carrots
Italian pasta bake, tossed salad, green beans

Tuesday, October 15
Easy breakfast casserole, creamy orange cooler
Grilled cheese sandwiches, tomato soup, veggies
Chili on crock pot baked potatoes, veggies

Wednesday, October 16
Homemade instant oatmeal, oranges
Creamy mac and cheese, peas
Turkey sausage and red bean stew, tossed salad

Thursday, October 17
Homemade grape nuts cereal, blueberries
Pizza boats, applesauce, baby carrots
Chili mac, steamed broccoli and carrots

Friday, October 18
French toast, pears
Tuna salad on lettuce and tomatoes, fruit salad
Bacon cheeseburger casserole (in Make-Ahead Meals and Snacks ebook), tossed salad

Saturday, October 19
Scrambled egg sandwiches, oranges
Leftovers
Beefy vegetable soup, cornbread

    I also, cannot hold a sensible conversation while cooking. One of these things will not be completed successfully! (Yes, once while conversing with guests I even shook a full bottle of soda before I “served” it to them…..)

    I have always tried to work a little harder to put extra food away, especially when I was making what I would consider to be a meal that requires a little more work. The blessing later is always worth the amount of extra effort put forth to make a little more (or double, or triple).

    But this weekend, the blessing was extended to someone else. We had a friend of one of my sons over for the afternoon. She has just had her mom pass away (who was also, biologically, her grandmother, since her first parents abandoned her). Our hearts have been so heavy for the loss that this family was experiencing. Although I had heard that our church has really come around them to offer support, I found out while she was here that they had not received any meals. Well, I was already serving my own guests this weekend, and honestly did not have the time and energy to make another meal, but then I remembered a foil pan of chicken broccoli bake that I had placed in the freezer earlier in the month! So I was able to bless someone else in a time of need, without pushing myself to the point of exhaustion!

    Thanks, Laura, for your encouraging, practical, and transparent thoughts that you share everyday. Although I don’t know you personally, I am really blessed by your words.
