Menu Plan for the Week

As I mentioned in last week’s menu plan, our family will be hosting a marriage class each Sunday morning and a high school youth group meeting “Huddle” each Sunday evening. I’ll be preparing a light breakfast for our marriage class (7-8 couples) and a big dinner for Huddle (30-35 people). This week, I decided to make Homemade Ice Cream Sandwiches for our Huddle dessert. I made smaller sandwiches than explained in these directions. Just to be sure they tasted good, we all had to try one. They were approved by the whole family. Ah, you’ve gotta love having the job of “quality control”. :)

Here’s our menu for this week:

Sunday, September 25
Crystal’s Pumpkin Chocolate Chip Muffins (with healthy ingredient substitutions), coffee, juice
Easy chicken burritos, green beans
“Huddle” – Lasagna (x4), tossed salad, bread (provided by my friend), homemade ice cream sandwiches

Monday, September 26
Whole wheat waffles, blueberries
Pigs in a blanket, carrot sticks with homemade ranch
Orange chicken and rice, peas

Tuesday, September 27
Turkey sausage, hashbrowns, strawberry-peach slushies
Tuna salad on homemade cheese crackers, fresh tomatoes, peaches
Three cheese garlic chicken pasta, tossed salad

Wednesday, September 28
Whole wheat soaked biscuits with butter and honey, pears
Black bean taco salad, apples
Easy breakfast casserole, orange muffins, fresh peaches

Thursday, September 29
Vanilla muffins with cinnamon crumb topping, bananas
Alphabet soup, leftover muffins
Pizza casserole, tossed salad

Friday, September 30
Peanut butter honey toast, pears
Turkey ranch pinwheels, apples
Pizza, green beans

Saturday, October 1
Scrambled eggs, oranges
Leftovers
Potato soup, carrot sticks, sweet peppers

What are you eating this week? And have you tried making Homemade Ice Cream Sandwiches before? Then you could also do a little “quality control” before serving them. :)

    I Just got back from the commissary (we’re military) where I did my grocery shopping. I’ve been trying to do a little stocking up each time, so I’ll have a full pantry. I have everything I need for my meal plan this week and I’m so excited! I was also excited to discover that I didn’t have ANY processed food in my buggy (if you don’t count the dog food) and I managed to stay around the perimeter of the store! I was so happy to see all the whole grains and good food in my buggy! It’s the little things, you know? :)

    What about the perimeter of the store?

      Supposedly in MOST grocery stores, if you stay in the perimeter of the store, you will avoid most of the processed foods…but that is not always the case…but I guess, another way to look at it is that the NON-processed food will be found in the perimeter. Not all of the grocery stores in my area abide by that though. But that is the idea.

        Yep… the breads and stuff is in the same aisle as the dairy. The frozen foods should be in the dairy aisle. (at least the frozen veggies!) And of course as you are walking out of the dairy aisle you walk thru the BAKERY.

        And the bottled water is in the candy aisle. Yeeeeeeeesh! I can’t take kids w/me to the store. lol

      I am interested in your substitions as well. 2 cups is more sugar than I would like to use. My ods has high blood pressure and high triglycerides that his ped says is genetic (my dh has both as well).

    Hi Laura– My husband needs a healthy (and inexpensive) alternative to the cold cereal that he usually eats as a bedtime snack. I love all your recipes so I thought you might have some ideas for us! I’m thinking maybe a muffin or some other filling grain ? I’m definitely interested in making something that I can do in batches and freeze. Looking forward to your input!

      Jenny,
      I make up a double batch of granola and my husband eats a bowl of it with
      yogurt every night before he goes to bed.

    We have tuna every Tuesday for supper :)
    I spent the weekend cooking ahead! You can read all about it on my blog. I linked to this blog as it has been very inspirational and helpful. We’ve slashed our grocery budget quite a bit. Initially it was to help save $ for our special needs adoption, but a frindge benefit has been an increase in healthy eating!

    Talk to me about your pans there Laura. Is that a 1/2 sheet Nordic or?? I’m curious because I’m in the market and had purchased 1/2 sheets on Amazon (I did go through a random HH link to support your site!). They are set for delivery today, but now I see my Kroger has Nordic on sale. So I’m curious… Do you use a 1/4 or a 1/2 sheet and what kind?

      Yikes, I have no idea. I’ve had that pan forever. It’s probably a 1/2 sheet and I don’t think it’s a Nordic – see how helpful I am?! :)

    Laura, I just love your weekly menu plans. Such an inspiration and I read a lot of blogs for recipes, because I LOVE trying new recipes, but yours is the one I most relate to because I tend to cook similarily to you.

    Those ice cream sandwiches look awesome as we are currently dairy free due to family health concerns and I’m really missing ice cream!
