Last week, on a whim, I decided to put together a bowl of Tammy’s Chicken Pasta Salad after breakfast. It was a warm day, plus we had soccer games that evening. I can’t tell you how grateful I was that I had quickly made this salad that morning. Just before game time in the late afternoon, we all dished out bowls of salad, then headed out to the soccer field. It was convenience food at it’s finest! That meal is a perfect example of how you can”Eat Healthy and Save Time“. :)
Tonight for High School Huddle, I decided to try a variation of these Oatmeal Butterscotch Chip Cookies. I mixed up the recipe as directed, except I added chocolate chips instead of butterscotch chips. Then, I spread the batter into a 9×13 inch baking pan and baked them for 25 minutes. They were a hit!

Anything fun on your menu this week?
That salad is one my family had every week in the summer when I was growing up! Always a favorite. My mom even made it when we went camping. Delicious! I haven’t had it in years, so I think I know what’s going on the menu next week!
The one thing I have on our menu this week is making PB&J “sushi” rolls. I think it might be fun! :)
I’ll have to try the pasta salad you posted it looks yummy!
Hi Laura,
I’m a little confused about an ingredient in Tammy’s Chicken Pasta Salad…are the Ranch and Italian salad dressings powdered (dry packets) or creamy (bottled)? Thanks!
It is the bottled – although I use my homemade dressings! :) https://www.heavenlyhomemakers.com/recipes-2/condiments
That pasta salad does look delicious and quick!
My kids love that pasta salad, I too have made it for years, we always add cheese, and sometimes use nitrate free salami instead of chicken, such a versatile yummy go to cold pasta!
Those oatmeal chocolate chip bars look pretty amazing! I may attempt to modify those for our diet, gluten and dairy free.
