A Nourishing Way to Warm Up

Cold? Hungry? Need some energy? I have the magic potion.  And there are three variations to the recipe!

Have you tried my Warm Vanilla Soother? It’s the first of the three soothing drink recipes I concocted. Drinking this is like being wrapped in a warm blanket on a cold day, and I always feel nourished and energized afterward.

Once I realized how wonderful the vanilla drink was, of course, I had to try making a chocolate variety. Thus, the Warm Chocolate Soother was born. It’s like drinking a brownie that is warm right out of the oven. (Be careful that you don’t trip on the kids while rushing to make this. Yes, it’s that good. But your kids might need dinner or a diaper change first.)

Last, I created a Warm Pumpkin Soother.  It’s a holiday party in a mug. Ahhhhhh…..

So, let’s review. Delicious, satisfying, warm, nourishing, filling, chocolate, chocolate, chocolate. Or pumpkin. Or vanilla. Take your pick.

Gratituesday: John 14:27

“Peace I leave with you; My peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.” John 14:27

Those are words from Jesus, and they speak life and truth to me. The comfort and love in those words are enormous. Is there trouble in this world? Yep. Is Jesus bigger? Absolutely. Do we put our trust in people or things or ourselves? No way. We trust the One who gives abundantly more than anything this world has to offer.

I love everything I read in the Bible, but it is the words of Jesus that I’m feasting on.

It works well for me to print out verses and put them up in my house so that I can see them often. In case that works well for you too, I made this to share:

Making Holiday Preparation Easier

Sometimes I wonder why I don’t make big turkey dinners more often. After all, the food is so delicious and basic:  Meat, potatoes, veggies, rolls, dessert. But each year as I’m prepping the food, I’m reminded why I only make it once or twice a year. It’s a lot of work compared to putting together a casserole and serving it with a salad!

You’ll be glad to know that along with my every day getting ahead tricks and recipes, I’ve figured out many ways to get ahead for the big Thanksgiving meal as well. I usually start a week or two in advance, making good use of my freezer. Does our Thanksgiving meal taste like I’ve frozen and defrosted it? No way. It tastes fresh, because I’ve learned tricks to get ahead and keep the food tasting great!

First, I make my turkey ahead of time. I love getting the big chore of cooking and deboning a turkey out of the way ahead of time.

Easiest Way to Cook a Turkey

Once I’ve got the turkey cooked, I then have several jars of rich turkey broth that I can use to make Turkey Gravy for the big day. I freeze the broth to be used Thanksgiving day.

Potatoes? Well – I don’t make my mashed potatoes ahead of time. But, the day before, I wash a large amount of potatoes in the dishwasher so that they are ready to go. I also find that it works well to peel and cut the potatoes the night before Thanksgiving. I put the prepared potatoes in a pot of room-temp water. When it’s time to cook and mash them, all I have to do is move the pot of prepared potatoes to the stove and begin the cooking process. Such a Thanksgiving day time saver!

How about homemade rolls? We have two favorite recipes, one of them being these Whole Wheat Butterhorns. They can be made ahead of time, then set out to thaw in the morning and baked at meal time. Easy!

No Knead Rolls

The countdown to Thanksgiving is ON! It is around this time every year that I realize just how much I love everything about food. Cooking it, planning for it, shopping for it, staring at it, and eating it. I have a gigantic turkey in my freezer that I will be pulling out soon to cook (to get ahead). Read how I cook my Thanksgiving turkey here.

The One Hour Whole Wheat Yeast Rolls (pictured above) might be a great addition to your Thanksgiving meal. Even if you’ve never made yeast rolls before, even if you’ve made them before and not had success – you will find this recipe so easy! In fact, we had a college student over last week who had never made rolls before. I handed her this recipe, and she turned out perfect rolls – her first try!

Here’s what our menu looks like this week:

Sunday, November 17
Instant oatmeal packets, fruit
Italian pasta bake, tossed salad, green beans
Small group – Sloppy joes on one hour whole wheat yeast rolls (others bringing sides)

Monday, November 18
Scrambled eggs, creamy orange cooler
Tuna salad on pita bread, fruit salad, carrots
Chicken pot pie, tossed salad

Tuesday, November 19
Simple whole wheat pancakes, blueberries
Hamburger cream cheese dip, tortilla chips, veggies
Chicken noodle soup, tossed salad

Wednesday, November 20
No knead whole wheat bread, smoothies
Easy noodle stir fry with broccoli and carrots
One dish meat and potato casserole, tossed salad

Thursday, November 21
Pancake and sausage muffins, apples
Pigs in a blanket, oranges, carrots
Beefy vegetable soup, whole wheat butterhorns

Friday, November 22
Homemade poptarts, applesauce
Leftovers
Chicken fried steak strips, mashed potatoes, gravy, peas

Mom, I Think Your Yeast is Ready

Recently when I was making a batch of Honey Whole Wheat Bread, I mixed the yeast, water, and honey in a jar. Then I walked away and got distracted by any number of activities that may have included helping to solve a math problem, answering a knock on the door, or switching a load of laundry.

In the back of my mind, I knew I was in the middle of baking bread, but it’s really amazing how time flies while yeast is activating in a jar. One of my boys finally noticed the growing monster on our kitchen counter and announced with a grin, “Mom, I think your yeast is ready.”

Oh yeah, ya think? Sure enough, I do believe that mixture is alive and active and ready to be added to the rest of the bread ingredients. As you can imagine, my bread dough rose really well that day. I do believe I will forget I’m baking bread more often.

Easy Homemade Nacho Cheese Pretzel Dip

Obviously, this nacho cheese pretzel dip can be eaten with other foods beyond pretzels. I’m thinking tortilla chips, steamed veggies, popcorn chicken…

But with these Homemade Soft Pretzel Bites? So delicious!

What’s fun about this recipe is that you can make it as spicy or as mild as you like. In fact, our family made individual bowls of the cheese dip, then added as much hot sauce as we each preferred.

Easy Homemade Nacho Cheese Pretzel Dip

Ingredients
  • 4 ounces cream cheese
  • 8 ounces cheddar cheese, cut into cubes
  • 1 to 1½ cups milk
  • hot sauce to taste (we like Cholula)
Instructions
  1. In a medium saucepan, slowly melt cream cheese and cheddar cheese cubes on medium low heat, stirring constantly.
  2. Once melted, gradually add milk and whisk together while continuing to heat.
  3. Once the sauce reaches the consistency you desire, remove from heat and serve - adding hot sauce to taste.

My boys were so impressed that I was able to make something that tasted so much like the canned fake cheese dip. But never fear – because this is made with real ingredients, it tastes much better than what comes out of a can.

Let’s take a vote: Who likes the cheese stuff that pours out of a can?  Love it? Hate it? Don’t feel bad admitting that you like it. We all have our lingering non-food cravings (says the lady who still chooses Nacho Cheese Doritos when given the opportunity).

But speaking of Doritos and Velveeta (which we weren’t actually speaking of but hang with me here). If you want to avoid cheese from a can and cheese from a box – but you really love Nacho Cheese Dip – I have a recipe you are going to love!

After years of trying, I came up with Real Food “Velveeta” and Rotel Dip.

You guys. This recipe changed my life and I now make this dip every couple of weeks because we love it so much. I exaggerate frequently and am sarcastic often – but I am very serious about this dip.

We Chose a Girl

When we were invited to be a part of the ministry with One Child Matters, one of the first items on our agenda was, of course, to pick a child to sponsor.

Now, you click over and take a look at all of the hundreds of precious faces of children in need, and you tell me – how is it possible to choose??! It’s only possible with prayer, that is for sure. And that is exactly what our family did. We prayed for God to help us make a decision.

First, we agreed that we would choose a little girl. Why? Well, we couldn’t help ourselves. Matt and I have no daughters. Our four sons have no sisters. Nobody complains even a little bit, because we understand that God knew exactly what he was doing when he filled our home with boys. But in the instance that we could choose, we felt drawn toward a girl – one younger than everyone in our household.

With tears in my eyes, it is my pleasure to introduce to you our little Honduran sweetheart, Gladis…

Her eyes get me every time. And that smile. What a beautiful little darling.

Her pictures have a permanent place on our refrigerator door. Seeing as we eat a lot of food at our house, we see her face dozens of times each day – reminding us often to pray for her and for her family.

I am humbled by the knowledge that our God blesses this child because of a small donation our family makes each month on her behalf. I am in awe of the power of prayer, knowing that God protects and meets the needs of this little girl who lives miles and miles away from us. The Spirit moves, Gladis comes to mind, we pray for her, and God works. Oh, the power. The beauty. The complex simplicity of it all.

Above you see Gladis holding the “art work” we created as we first introduced ourselves to her. Leave it to us to send a poster bigger than the girl who received it. Hey, we just wanted her to feel the love. ;)

Because of our partnership with One Child Matters and the $34 donation we send each month, Gladis is guaranteed to receive schooling, guidance, nourishment, medical care, and Bible teaching. Because we are connected through prayer, we know Gladis and her family members are being loved on and protected by our Father.

It is so cool to be a part of this!! I hope you will join our family in this ministry! Pray together about it. Get your kids involved. Through One Child Matters, we have the ability to help a child out of poverty. 

I believe God connects our hearts with these children through the power of prayer. I can’t describe with words what this feels like. You have to experience it to know.

Remember The Pot of Stew article I shared? One Child Matters is a way I feel called to serve with my family – not instead of my family. We provide our small piece of the puzzle, God does the rest. These children have needs we can be a part of fulfilling by the grace of God.

Our hope is that many Heavenly Homemakers readers will join this ministry. If you do choose to sponsor a child, please take some time to introduce us to him or her! We want to know which one God helped you fall in love with.

As for us, our hearts are all in. Gladis is our girl. Those eyes get me every time. I dare you to look into them without smiling. (Or getting teary eyed, because I still haven’t mastered that one.)
