In honor of all the big fat contradictory fatty information out there, I’d like to ask us all to pause and have a moment of simultaneous screaming.

I get very weary of hearing fat information that contradicts. I used to think fat was bad. I used to feel terrible guilt anytime I ate anything with cheese or butter and heaven forbid if I ever indulged in french fries.

So, what’s the truth? IS fat bad?

Well, that depends on who you ask…and it depends on which fats you’re talking about…and it depends on which research was done to prove that the fat was good or bad…and it depends on who’s trying to make money by telling you the information and it depends on…

I’m just going to share where I’ve landed on the matter and of course I am of the opinion that I am right. :)  But as we all know, I am a normal (and often scatterbrained) mom who often carries her own light saber around for protection. I’m not a fat research specialist…so you can take this information or leave it.

From what I’ve read, heart disease and obesity did NOT begin to be a big problem in the US until right about the time we began to switch out butter with margarine and our whole fat with low fat. The less saturated fat we have eaten as a nation, the unhealthier (and heavier) we have become, even though saturated fat is blamed for bad health. Most vegetable oils (those low in saturated fat) sold in the store are rancid before they even make it to our kitchens and rancid oils tend to freak out our insides. These are the  oils that most restaurants use.

Oh and also, most low fat products have quite a few artificial flavors and lots of sugar added to make up for the taste that is pulled out along with the fat. Hmm.

So are fats bad for us? Yes, some of them most certainly are. But does that mean we should all “go low fat”? Choosing the right fats for our health is important. In fact, my research often tells me that eating a nice amount of fat (the good ones) is actually necessary for good health.

So which fats are the good fats? Here are my favorites and the fats I feel best about eating and cooking with:

Butter –  I’m talking about real butter, not margarine. People interchange the names of the two, but margarine isn’t butter, it’s nasty, so just make sure you know that I’m talking about BUTTER here.

I love that butter is pure with only one or maybe two ingredients:  Cream and Salt. I’d recommend that you buy the “Unsalted Butter” but watch out because unsalted varieties usually have other additives labeled as “flavorings”. Grr, don’t add flavorings (aka MSG) to my butter!!! Give me the pure stuff!! So, if I can find an unsalted butter that is ONLY cream, I go for it, otherwise I go with salted. Butter made from raw, pastured cream is THE BEST EVER for your health if you can get your hands on some.

Butter is great for baking items such as cookies and biscuits. Plus of course, butter is also great spread on bread or waffles or pancakes or muffins…

Coconut Oil – When it comes to healthy oils, it doesn’t get much better than coconut oil. Find out here how to receive a free book about the benefits of coconut oil. There are two main varieties of coconut oil:  Unrefined and Virgin. Both are good for you, especially when you buy them from a good source like Tropical Traditions or  Mountain Rose Herbs. Unrefined Coconut Oil has a very mild taste and does not taste like coconut, which makes it good for frying (when you don’t want your chicken nuggets to taste like coconuts). Virgin Coconut oil has a fabulous coconut flavor and is great for baking!

Coconut oil does not go rancid when heated to high temps, so all that stuff you hear about “never deep fat frying anything”? It’s true…except for when you fry foods in Coconut Oil!! Or when you fry it in…

Palm Oil or Palm Shortening – I am so excited to find that Palm Shortening can be used to make a fabulous and healthy pie crust!!! I often melt some palm shortening into my electric skillet to fry donuts or french fries. There is no flavor in this shortening so your french fries taste like french fries…only better! Yeah, who doesn’t love a french fry that tastes better than a french fry!!

Olive Oil – Of all the controversial fats, Olive Oil stands up to the test on both sides of the fence. I use olive oil to stir fry my veggies, to cook chicken and to make salad dressings. I prefer organic, and always try to find it in a dark colored bottle as the sunlight does compromise it’s quality.

Full Fat Dairy – Oh yes, bring on the whole milk and rich cream. More about dairy another time, because wow, this post is getting long isn’t it?

Homemade Healthy Poptarts

Yay…the promised homemade poptart recipe!!

I truly don’t like boxed poptarts…blech. But these I DO  like…which is why I hesitate to even call them poptarts. Can we call them Delightful Little Jelly Pastries? Maybe we could call them Flaky Fruity Melty Yumminess?

At our house, I suppose I’d have to call them “Gone“. Or “The Empty Plate“. They don’t last long. :)

For the crust, I found that using the same recipe I use for my Homemade Pizza Pockets and Mini Apple Pies works the best. Buttery and flaky…and oh so easy.

Homemade Healthy Poptarts

Serves: 15-20
Ingredients
  • 3½ cups whole wheat flour
  • 1 teaspoon sea salt
  • 1 cup melted butter
  • 1 cup plain yogurt
  • About 5 ounces of 100% fruit jelly or jam - any flavor you like!
Instructions
  1. Begin by mixing the flour, salt, butter, and yogurt.
  2. Knead the dough just a little bit to make it nice and workable.
  3. Roll out the dough on a large, well floured surface.
  4. Use a knife to cut the dough into the desired poptart size you would like.
  5. Place about a ½ teaspoon of jelly on ½ of the dough rectangles (squares?).
  6. Spread the jelly around, leaving the edges free.
  7. Find a second square or rectangle or thingamajigger that matches closely with each jellied one.
  8. Place it on top and use a fork to seal the edges.
  9. Lay each poptart in a single layer on a baking sheet.
  10. Bake in a 350° oven for about 25 minutes or until the crust is lightly browned.

This recipe makes around 15-20 poptarts, depending on how big you make them.

I have found that making them ahead of time and then putting them in our toaster oven to re-heat makes for a very fast and popular breakfast! These CAN be frozen as well. Bake them first, let them cool and the freeze until you’re ready to re-heat and eat!

Is it just me, or is it more than a little bit tempting to reach through the screen to lick the jelly oozing out of that poptart?

Edited to add:  Many of you who are new to this site are commenting that while this is a healthier poptart, this isn’t necessarily a healthy breakfast. Sure, good point. I totally hear what you’re saying. This was a reader requested recipe. Many are taking baby steps toward better nutrition and working their way “out of the box” when it comes to feeding their families. If you’re looking for a healthier variety of Poptart…this is your recipe. If you’re looking for a special treat for your family…here you go. If you’re looking for a well balanced diet…don’t eat these Poptarts for every meal. :)

Kitchen Therapy

Would you like to hear about how I was on the phone all morning, mostly on hold listening to horrible elevator music because I was trying to resolve an insurance issue? And how after all of that, I’m right back where I started because insurance keeps telling me to call the billing company and the billing company keeps telling me to call insurance? And how while all that was going on my breakfast dishes sat dirty and my laundry sat unfolded and my littlest kids scattered without doing their schoolwork? And how I almost cried while talking to Greg, the billing guy?

No, you really don’t want to hear about all that.

But what I will tell you about is how after such a frustrating morning of feeling incredibly unproductive…I was very much on edge. My kids were at each other, some of them had bad attitudes about their school work, and three out of four didn’t want what I was making for lunch. It is times like this that I struggle with showing my kids how to be godly in the face of frustration. I would never allow them to scream and throw things when they are angry, so in a effort to be a good example, I decided against using their lunch plates as frisbees, and resisted the urge to wad up school papers and shove them onto the floor. 

I pretty much told them, “Guys, I’ve had a really frustrating morning on the phone so please work very hard not to cause more frustration. That school work needs to be done whether it’s your favorite thing to do or not, so you’re gonna need to just deal. This is lunch, eat it. And no one…NO ONE will touch each other right now. Is that understood?”

It was understood. In fact, I think we went through an entire five minutes without anyone touching anyone.

After lunch, everyone left the kitchen to finish work or make messes elsewhere and I decided that I needed something to help me get out of my funk. Trust me, I’d been praying since the phone calls began…now I needed to exert some energy on something positive. I flipped on my very much needed Christian radio station and did what I always do for therapy:  I cooked.

I had been feeling like we didn’t have any snacks and I was out of some basic stand-bys (like peanut butter) so I got out bowls and started taking out some frustration on bread dough. 

Now, not only do I feel like a new woman…I have food prepared for my family. I can’t think of a better therapy session, can you?

I ground some fresh flour in my Nutrimill and got some Honey Whole Wheat Bread started.

In the meantime, I made Peanut Butter, Rice Crispy Treats (with chocolate chips!), 
Cream Cheese Salsa Dip and Chocolate Chocolate Chip Muffins.

I had found a good sale on cream cheese, plus I’m getting a lot of apples in my
Azure Standard order this week, so I made a big bowl of Caramel Apple Dip.

And then the Honey Whole Wheat Bread was done. And I felt better.

Now, when Matt gets home from work, not only am I going to be a lot less grumpy, the house is gonna smell like I’ve been baking.

The moral of the story is this:  When you are frustrated, work very hard not to take the frustration out on your family…do something productive with that energy instead. And then go eat some fresh bread with butter. Lots of butter.

Gratituesday: Christian Radio Stations

We don’t live in a big city. We don’t live in a heavily populated state. There are many things we just don’t have here in small town Nebraska (like crazy traffic…a Gratituesday post in and of itself). 

But something that we do have, which my family continues to be grateful for, is the option to listen to Christian radio stations. Not every small town can tune into Christian radio. We can actually get two stations to come in…and on a good day…three. :)

Not to mention that we can listen to the radio online if we want to.

To some, this little item won’t seem like a big deal. It may seem silly that I would dedicate an entire Gratituesday post to Christian radio stations. But for us, it IS a big deal. We love to have music on when we’re in our vehicles and we love that our kids love the same music we love.

I have a kitchen radio and I promise you that God uses that thing to speak right to me some days. On the occasions that I feel overwhelmed with work and dishes and schedules and life…I flip the radio on and pray for God to quiet my heart and fill me with His truths so that I will not allow myself to hear Satan’s lies about how “I’ll never get all my work done” and “There just aren’t enough hours in the day” and “I can’t keep up with all of this, what is the matter with me?” Lies. Combated by truth. The truth that comes through Christian music.

And it’s available 24/7 right through the radio.

Sometimes I need it more than water.

And it changes my entire attitude and heart.

In family news, Asa has his first basketball game this week. Basketball has been a learning curve for him as he’s so used to playing soccer! We’re really proud of  how hard he’s been working, as he picks up his basketball to practice with it every spare minute of the day. You’ve gotta love the sound of a kid dribbling through the living room and into the kitchen. Especially when all the brothers pick up their basketballs right behind Asa and form a big dribbling parade.

You know I gave up on a quiet house long ago, right?

Favorite Blender?

If I had to pick a kitchen appliance that I can’t do without, a blender might be at the top of my list. (Right up there with my Nutrimill Grain Mill, my Electric Skillet, my Food Processor…)  I use a blender every day. And in the summer and fall while I’m making tomato sauce and applesauce and tomato soup…I use it constantly.

We use our blender daily to make milkshakes, slushies, smoothies…and shucks…now we even use a blender to make powdered sugar!

Which brings me to a sad, sad story (okay, it’s not that sad). Last week, my blender broke. It was made of glass and out of nowhere, there was suddenly a great big crack running through it. I’m sure it wasn’t really out of nowhere, but I’m not really sure out of where it came. Regardless, unless you want glass shards as a main ingredient in your smoothie, I don’t recommend using a cracked blender.

Normally, Matt and I give some thought to a purchase like this one. We’d consider our options and look around for the best deal. We might look into using some of our Swagbuck earned Amazon cards to purchase one online. We might put it on our Christmas list.

But this was a blender. With this lovely fall weather, I was still making tomato sauce last week with the last of our late tomato crop. I needed a blender in five minutes and I did not have time to wait or consider my options. My only option was:  Go to the store RIGHT NOW and buy a blender.

Before I headed out, Matt and I did take the time (like an entire two minutes) to talk about whether or not we should invest in a  higher dollar blender, or just settle once again for a cheap one. He left it up to me, depending on what I might find in the blender aisle.

I know you’re all on pins and needles (like you normally are when I tell these really exciting stories about my broken blenders, which is never). 

I ended up buying a cheap one.  I couldn’t help it. I think one day I’d like to save for a high quality VitaMix. But at that very moment, I couldn’t bring myself to spend much. I instead went for a much cheaper blender:  a Hamilton Beach Wavestation Express Dispensing Blender. Everyone at home was thrilled when they saw it and begged me to make milkshakes right away…

Is that FUN or what!??!? With all the milkshakes and slushies we make around here…it does not get any easier (or more fun) than our cool Hamilton Beach Wavestation Express Dispensing Blender. For a cool $20.

It doesn’t have much in the way of fancy settings or buttons. All I truly need is a lid  and an on/off switch and I’m good. But wow, isn’t that little dispenser something else? It doesn’t take much around here to make us excited.

So there you go…that’s my little review of my new Hamilton Beach Wavestation Express Dispensing Blender. For $20. With a dispenser. That is so cool.

I often get emails asking which blender I prefer and if I recommend a VitaMix. I’d love to here all of you offer a little review on which blender you have and like. And if you have a VitaMix, can you tell us whether you’re pleased with your investment?

Easy Alfredo Sauce

High Five Recipes 2

I love a good alfredo sauce. Want to know why this recipe is so good and rich? It’s full of butter and cream. Indeed, this recipe is neither fat free nor dairy free. I am very much not afraid of real and healthy fat. For those of you who need to eat a dairy free diet, I’ll try to come up with something a little less “cow” next time. ;)

Easy Alfredo SauceYum

Easy Alfredo Sauce

Serves: 6 servings
Ingredients
  • ½ cup butter
  • One pint of cream (2 cups)
  • 1-3 garlic cloves
  • 2 Tablespoons cream cheese
  • ½ cup grated parmesan cheese
Instructions
  1. Bring the butter, cream, garlic and cream cheese to a boil.
  2. Turn down the heat, simmer and stir for about two minutes.
  3. Add the grated cheese and stir until melted.
  4. Simmer the sauce for 15-20 minutes until it becomes "thick and saucy", stirring occasionally.

Into the pot go the butter, cream, cream cheese and garlic…

The parmesan cheese is shredded and ready to add once we’ve boiled the other ingredients for a couple of minutes.

Here’s our sauce, simmered and ready to serve…

Are you wondering about the pasta I served with our Easy Alfredo Sauce? It looks like WHITE pasta, doesn’t it? Ah, but it isn’t!! Now, you can of course add chicken to this dish if you like. Just saute a little chicken in some olive oil and toss it into the sauce. For that matter, that steamed broccoli I served on the side tasted great stirrred right into the sauce and noodles on our plate!

Eat Less Sugar

You know why I’m writing this post? Because I need to hear it.

While our family has made huge strides over the past few years in Our Healthy Eating Journey, my one major struggle remains:  I really like sweets.

Yes, I’ve given up all forms of soda and have switched to healthy beverages. Yes, I’ve switched from white sugar to sucanat, honey or real maple syrup. So in those ways, of course I’m eating much healthier. But still, while these are healthier sugars and are much better than processed sugar…they are STILL sugar.

Too much sugar (in any form) can suppress our immune systems, mess up our blood sugar and insulin levels, make us feel sluggish, cause depression. Sugar can cause heart issues. Sugar can make us gain weight. 

Sugar tastes really, really good.

And sugar is addicting.

I’m not really convinced that any one of the Steps Toward Healthy Eating is more important than another. I truly think that each little (or big) thing you can do to improve your health is a step in the right direction whether it’s eating more fruits and veggies or switching to whole grains.  But doesn’t it sort of make sense that if you make all kinds of healthy changes, but you’re still eating a lot of sugary foods…you’re kind of taking some steps backward health-wise?  Our bodies are busy trying to make good use of all the healthy foods we’re feeding it, and sugar sort of sets us back one sweet morsel at a time.

Am I saying that we need to give up sugar altogether? Good grief, I hope that’s not what I’m saying. 

No indeed, I just had a meeting with myself and I have decided that we do not all have to give up sugar entirely. In fact, while giving up sugar entirely would be good for us in some ways, it may cause us to have an “all or nothing” mentality as in…eat no sugar for several days or weeks, then finally cave in and eat a whole bag of chocolate covered sugar with sprinkles, and a side of ho-hos.

I think that if we can achieve a healthy balance when it comes to sugar, our bodies will thank us, and so will our sweet tooth.

  • If you are in the habit of eating sweets during a certain time of the day, make a conscious effort to DO SOMETHING ELSE during that time period. Pray, read your Bible, call a friend, play a game with your kids, exercise, paint your nails…anything to distract you from your habit of sugary temptation. 
  • Eat fruit to satisfy sweet cravings. Fruit tastes so much better when your palate isn’t covered in sugar.
  • Instead of cookies and cakes, make sweet treats that are lower in sugar like muffins or a biscuit with a little honey drizzled inside.

Allow yourself some of your favorite treats every now and then. But you’ve gotta make those sugar calories worth it. Don’t settle for sour gummy goobers if you don’t even like them. Say NO to the sweets that you aren’t really big on and savor your favorites every once in a while.

Gratituesday: Picnic in November

I can NOT get over the weather we are having this fall. Usually in my area, we have fall weather for around three hours, then it becomes very cold. This fall however, we have had WEEKS of beautiful weather. The boys have been able to play outside, the garden produced longer, our home improvement projects have been possible…

Today, November 8, we were actually able to eat our lunch outside. This NEVER happens in November. We were all sitting outside visiting and enjoying the sunshine…all six of us. It was time to eat and Matt suggested that we bring our lunch outside. In a very short time the men had a table and chairs set up and we were eating our roasted chicken with the works out in our front yard. Only one lady bug joined us, so I’d say it was quite a successful picnic!

I didn’t get a picture because I was hungry. :) 

I think that for as long as the weather holds out, we should eat our lunches outside again. What a great way to enjoy God’s fall blessings of beauty and warmth! After that, I suppose we could have picnics on the living room floor around the fireplace?
