Wedding Memories – Question #68

July 30, 2010 by Laura 97 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

This weekend, we are attending the wedding of a girl near and dear to our hearts. She is marrying a wonderful young man and we couldn’t be happier for both of them.

As I’ve been putting together our wedding clothes (Yikes! Do my boys have ANY nice pants without holes in them?!), my own wedding has been on my mind. Matt and I are going on 16 years (awwwww). All those wedding details were so important to me 16 years ago when I was planning my wedding and I knew I would never forget any of them.

Yeah, I forgot.

I can not remember the song playing when our grandparents walked down to the aisle. I can barely remember who was in attendance (um, if you happened to be one of the people that came, of course I remember that you were there). I can barely even remember who all was in our wedding party until I carefully look at the pictures. Good grief.

What I do remember is the look on Matt’s face as I started walking down the aisle. And how my dad could hardly perform the ceremony because he was crying too much. And how Matt and I were also crying the entire time and we only had one sorry little kleenex to share between the two of us.

I remember how beautiful my mom looked. And how beautiful her voice sounded when she sang (our family had pre-recorded many of the songs played during the ceremony).

I remember that the best man seemed to have “misplaced” my ring in an effort to freak out the bride. I’ve mostly forgiven him. ;)

I remember how happy and excited I was when we were pronounced “Mr. and Mrs. Matt Coppinger”!!!!!

I remember that our colors were navy blue and rose. I still love those colors.

So, I have a very simple question for you if you care to share:  What were the colors you used in your wedding? (Or if you aren’t married yet, what are the colors you might like to use someday?)  And…if you remember any other details about your wedding, we’d love to hear them!

Inexpensive and Fun Summer Activities: A Guest Post

July 29, 2010 by Laura 2 Comments

Please welcome Jolene of A Random Woman’s Life. She has four boys and has some wonderful ideas to make summer time a blast!

Summer is here and I have the daunting but delightful task of entertaining 4 young boys day after day. My sons range in age from 3 – 9 years of age and their interests are just as varied. I often find myself struggling to find ways to engage and entertain all four at the same time, especially on rainy days.

I know there are a multitude of craft type projects I could do and that would work for a little while. However, one thing I have learned about my boys is that their attention span for craft type projects is limited. They are boys…they need physical activity. They are not content with being motionless for very long. A Disney movie is about their limit and even then we don’t always make it through a whole film before we start to squirm and complain of boredom. I took them to one of those indoor inflatable playgrounds one day with some friends and their sons – 10 boys in total – and within an hour and a half my eldest was complaining of boredom. So what’s a mom to do?

Here are some of the frugal things I have found to do. See if similar events/specials are available in your area.

~    Visit the local nature center. There are usually a number of trails that you can walk on, some paved some not. Take pictures and put them in a special scrapbook.

~    Check out your local library for free playgroups, or reading program which challenges the children to read a designated amount of hours in order to earn some prizes.

~    I have found a number of free music nights and free movie nights in nearby parks. Some are weekly events, some are monthly but most allow you to bring your own treats and beverages so you can make an evening out of it.

~    Try a monthly home movie night when a new family friendly movie is released on DVD. It helps if you can find someone who has already purchased the movie and borrow it from them for movie night. Make homemade pizza and popcorn, turn down the lights and off you go!

~    Potluck play dates. Get a few of your friends with children together at a local park. Make it after lunchtime if possible then you only need to bring a snack to share and some beverages.

~    Join a local moms group. Most have a yearly cost around $20 – $30 for memberships. Many also have regular kids activities. A great way for your children and you to make some new friends. Two sites to start with to find a group(s) near you:  www.weplaygroup.com   &  http://moms.meetup.com

~    Try Letterboxing. LETTERBOXING is an intriguing pastime combining navigational skills and rubber stamp artistry in a charming “treasure hunt” style outdoor quest. A wide variety of adventures can be found to suit all ages and experience levels. Basically you get clues to find a box or container in your area in a public place such as a park. The containers usually have some goodies to look at as well as a place for you to place your own special family stamp and sign the book, putting it all back in place for the next group to find. A great place to get started is www.letterboxing.org  Your family can take a trip to your local craft store and pick out a great stamp & fun inkpad to use in your adventures!

~    Catch lightning bugs! Get a jar or two together and have your little ones catch them at dusk…pair that with making s’mores and you have a great and nearly free night of entertaining, just don’t forget to release the little bugs so you can catch them again another night!

~    Back yard camp. If the thought of going to a campground is not all that appealing, or if time is an issue, camp out for a night in your backyard! Cook out on the grill or fire pit, have a cooler full of drinks, grab your flashlights & sleeping bags and pitch the tent. You get the ambiance of camping with the comforts of home nearby in case they are needed.

With some imagination and input from your kids you are sure to find some fun, easy and frugal ways to entertain the entire family!

Clean Air?

July 28, 2010 by Laura 15 Comments

When is the last time you changed the air filter in your heater/air conditioner? Can’t remember? Yes, I understand. We’ve been the same way. I can hear some of you right now. “You mean we’re supposed to CHANGE those?!”

Yes, you see, nasty stuff gets pulled in through your duct work and the handy-dandy filter catches it before it gets to your heating/air system. If the filter gets too full of the nasty stuff, the system gets bogged down and is way less efficient. (I don’t know about you, but when I get bogged down, I am also way less efficient.)  ;)

Maybe some of you have some sort of plan in place to remember when it’s time to change the filter in your heating and air unit, but I’m guessing that the majority of us don’t. For us, it is hardly even on our radar of things to think about. There are SO MANY THINGS to think about every day, you know?

And then when we finally do think about it, we have to figure out what size filter we need and figure out who carries the filter we use, and it’s just sort of a headache.

We’ve recently been in contact with Prime Time Filters.com. They are a fantastic company for many reasons, but the best one is that they take all of the brain cell usage out of changing your air filter! I don’t know about you, but I feel very maxed-out on my brain cell usage. Please, please don’t make me keep track of one more thing!!! Prime Time Filters becomes your brain when it comes to changing your air filter! Hallelujah!!

Here’s how it works:  You create a subscription with Prime Time Filters. You let them know what variety of filter you need and how often you need to change your filter. You let them know the size you need. THEN, Prime Time Filters (your new air filter brain!) will automatically send you the filter at the designated time. It comes right to your door step without you having to order it or think or anything. Then, when the nice delivery man hands it to you, you realize that it is now time to change your air filter. You change it, and then you promptly forget all about air filters because, thanks to Prime Time Filters, you are now able to free your brain cells to remember other important facts (like the names of your children). You will not have to think about changing your air filter again until another one arrives on your door step a few months later according to the time frame you set up in your subscription with Prime Time Filters. What a lovely (and clean) concept!

Not only does Prime Time Filters make changing your air filter incredibly convenient, they are affordable. Ooh, and you know what else they do? They allow you to set up a subscription for someone else…like your parents or grandparents or an elderly neighbor who needs the service but might not be able to set it up themselves.

I love that Prime Time Filters is a family owned and operated company. I’ve worked with them both via email and over the phone and they are kind, helpful and knowledgeable. We had a stink of a time figuring out what filter size we needed. They worked patiently with us and were finally able to figure out the exact size. These people know what they’re doing.

Here’s what the owner of the Prime Time Filters has to say:

The biggest reason people are signing up for the service is the convenience but they are quickly recognizing the benefits of cleaner air, less dust, lower utility bills and peace of mind because we’ve taken the headache out of this important task.

I highly recommend that you check out Prime Time Filters because on so many levels, they make it possible for you to breathe easier. ;)

gratituesday

I know I just talked about Asa and how proud we are of him LAST Gratituesday…but he becomes the topic again this week. ;)

Asa came home from camp with a lot on his mind. He spent a lot of time talking one-on-one with Matt. He kept finding ways to just hang out with me in the kitchen. He had a lot to talk about. It’s a pretty awesome thing when your teenager wants to spend lots of time with you.

Asa was ready to make a commitment.

And so on Wednesday, with many of our family and friends there with us, Matt baptized Asa…

(It’s very hard to hear anything Matt is saying…but it sure is wonderful to watch!)

I’m not sure I ever wore a smile as big as the one I wore on Wednesday night. We are so proud of Asa and thankful for his commitment to being a part of God’s kingdom. It’s a great time for rejoicing!

What are you thankful for this Gratituesday? Write about it on your blog, then come link up with us here. If you don’t have a blog, be sure to leave a comment letting us know what you’re grateful for!

If you are linking up a blog post for Gratituesday,
please copy and paste the following sentence into your post! Thanks!

How I Freeze Food

July 25, 2010 by Laura 40 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I’ve had many requests to show you how I freeze food. Silly me. I tell you all about what foods I make and freeze. Perhaps I could also tell you how I freeze the food. That would be nice of me wouldn’t it?!

I use these basic supplies:

  • Cookie sheets and parchment paper
I often “flash freeze” food on parchment paper lined cookie sheets. Some examples would be Chicken Fried Steak Strips, Popcorn Chicken, Burritos, Meatballs, Turkey Sausage, Chocolate Chip Cookie Dough Balls or Pizza Pockets made into mini pizzas:
  • mini_pizzas

Once the food is frozen, I transfer it to…

  • Freezer Bags
I mostly use the gallon sized freezer bags. Unless I’m freezing raw meat, I wash out the bags and reuse them over and over. Beyond the food mentioned above, I usually use gallon sized freezer bags for baked goods like hamburger buns, breads, muffins and cookies.

how_to_freeze

  • Pyrex Dishes
I have six or seven pyrex dishes with lids, most of them are 9×13…but Matt surprised me with this last Christmas, so now I have a nice variety of other sizes too. I LOVE freezing food in these dishes as they stack so nicely in my freezer. If I make a casserole, this is what I freeze it in.

how_to_freeze_two

  • Jars
Are you surprised? Don’t I use jars for everything? Just be sure if you freeze food in jars, you only fill it 3/4 full, or it will expand in the freezer and crack the jar. Also, be sure the food in the jar has completely cooled before you put them into the freezer. Cracked jars are sad.  :(My favorite jars to use are wide mouth quart jars (for cooked rice and beans and hamburger meat) and half gallon jars (for broth and soup).
  • Seal-a-Meal

One last thing I’ll tell you about is something I use A LOT this time of year while I’m freezing produce. A couple of years ago, a friend of mine bought me a Seal-a-Meal. I LOVE this thing. With the volume of strawberries, peaches, corn and green beans I freeze each year (usually a year’s supply of each), this Seal-a-Meal has been a wonderful way to make my freezer food last longer (cuts way down on freezer burn). Plus it is a HUGE space saver!! The Seal-a-Meal sucks all the air out of the bag so that I can get WAY more food in my freezer than I used to be able to when I just froze the food in freezer bags.

green_beans_seal_a_meal

See how the air is all sucked out of the bags!?! So cool!!
I’ll try to do a video tutorial of this process sometime!

I think that if you just do a small amount of freezing foods…a small hand-held vacuum sealer is a great option. (I think Ziplock has a $5 variety at Walmart!)  But if you do a large amount of freezer preserving like I do a Seal-a-Meal is the way to go! By the way, I buy rolls of bags and cut them to the size I need them. They are a bit pricey (again, worth it to me since I am able to freeze SO much food and keep it good in my freezer this way). Lately I’ve been using my Swagbuck earned Amazon cards to buy big rolls of bags!

Hopefully, I have now answered many of your freezing questions…but did I forget anything?!

Food I plan to freeze this month:

  • Soft Pretzels
  • Giant Breakfast Cookies
  • Lasagna Casserole
  • Bean and Cheese Burritos
  • Popcorn Chicken
  • Turkey Sausage
  • Hashbrowns

Menu Plan for the Week + Homemade Ketchup Update

    July 25, 2010 by Laura 7 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

Ever wonder what in the world happened to my homemade ketchup making experiments? Yeah, me too.

I’ve told you several different times that I was experimenting with a good ketchup recipe. Many of you have sent me wonderful looking recipes. And still…I have nothing to share with you. I figured I should at least offer a little update, for all of you who have been eagerly sitting there with a hamburger in your hand waiting for me to tell you how to make ketchup to garnish it.

Here’s what happened:  I tried two different recipes several months ago. We sort of liked one and really didn’t like the other. I thought maybe after they sat in the fridge a few days, we would like them more, but we didn’t. Then you sent some recipes and they looked really good and I picked out a few to try…but then I never did because there are just SO many things to do and recipes to try and posts to write and children to watch flying off the stair railing.

And so I just keep getting this kind. And I like it. And all it requires is opening a bottle and squeezing.

I make almost everything from scratch. I have decided to give myself a break on the ketchup and buy it for now. Until I can catch-up. I will leave “homemade ketchup” on my list of reader-requested recipes…but for now…if you’re sitting there with your hamburger waiting for the homemade ketchup, I’ll have to apologize and say…go ahead and eat your burger. :(  I think that I thought making a tasty homemade ketchup would be easy…and it’s kinda not. I wanted to make it easy for all of us, you know?

On another, happier note though…you know our little corn crop that got pummeled by the wind? You were all right in your comments. It DID perk itself up and we have been able to save most of it!!! We were so excited that Matt did a little corn photography:

    corn

The purtiest corn we ever did see.

And now…on to the menu plan for this week!

    Sunday, July 25
    Oatmeal, pears
Italian stew with green beans, corn on the cob
    Grilled cheese sandwiches, strawberry milkshake

    Monday, July 26
    Strawberry bread, applesauce
Chicken nuggets and french fries, peaches
Cheesy beef and rice, steamed broccoli

    Tuesday, July 27
    Honey whole wheat bagels, cantaloupe
    Pizza, apples
Three cheese garlic chicken pasta, steamed carrots

    Wednesday, July 28
    Scrambled eggs, fruit-kefir smoothies
    Taco Potatoes, watermelon
    Cheesy Salsa Enchiladas, tossed salad

    Thursday, July 29
    Giant breakfast cookies, bananas
    Hamburgers, fresh tomatoes, onion rings
BBQ meatballs, baked potatoes, green beans

    Friday, July 30
    Peanut butter honey toast, applesauce
Strawberry chicken salad (found in this free book), watermelon
    Tacos

    Saturday, July 31
    Homemade donuts
    Leftovers
    Cookout with friends

How Much Does Your Tooth Fairy Leave? Question #67

    July 23, 2010 by Laura 89 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

We’ve had an extra little boy staying with us off and on all summer. He’s great to have around, he fits right in with our sons, he eats whatever I put in front of him and he says “Yum, Laura – that was good”. Yes, he can stay anytime.

The other night as I was reading to the boys as they were winding down for bed (The Great Turkey Walk…ever read it? EXCELLENT book!!)…anyway…the other night while I was reading to the boys suddenly our young house guest sat straight up in bed and presented us all with his freshly lost tooth! The book was quickly set aside, Kleenexes were fetched, and the gaping hole in the mouth was proudly displayed. There was much tooth loss celebration all around.

Everyone finally settled back down and I picked the book back up again to start reading. Our house guest, however, sort of just sat there holding his tooth in his hand with a puzzled look on his face as if to say, “Um, what am I supposed to do with this now?” I’m sure if he was at his own house, he would have put it right under his pillow and laid down to dream of the soon-t0-be monetary exchange for his hard earned tooth pulling endeavors. But what’s a kid to do at someone else’s house? Would the tooth fairy even know where to find him since he was in a completely different house in a completely different town?

I stopped reading and suggested that he go ahead and put the tooth under his pillow. He shrugged, nodded and stuck it under the pillow, then lay down to listen to the book.

I continued to read, but suddenly in the back of my mind I began to contemplate what should be done. We were happy to be the tooth fairy for him…but um…when the tooth fairy comes to our house, she is incredibly, totally and absolutely stingy. A tight wad. Barely leaves a thing. Guessing that we may be the cheapest tooth fairy on the planet, I began to grow a little concerned that our friend may be less than excited in the morning when he stuck his hand under the pillow and in exchange for his tooth, he found…a quarter?! Is that IT? After he’d gone through so many years of wearing that tooth and brushing it and chewing with it and smiling with it? Seriously, a quarter?

It was too late to call his mom to ask what she would have done. Plus, I didn’t really want our kids to have any idea that the tooth fairy could actually bring more than a quarter for a lost tooth. As far as they know, the tooth fairy only owns quarters.

We have four kids, which is a total of 80 lost teeth. We’re happy to give them more money for things such as mowing a lawn, but just for losing a tooth? We (um, the tooth fairy part of we) plan to be boring and cheap and continue to always and forever leave a quarter. Our kids never complain. Money is money.

I had no need for worry. Our guest happily presented his quarter the next morning (either he was just being polite, or he was truly happy to have it). But it did cause me to wonder:

How much does the tooth fairy leave for lost teeth at your house? Are we the cheapest tooth fairy people on the planet?

Um, my kids may need to avoid talking to your kids about this subject for obvious reasons.

    Sniff…

    July 22, 2010 by Laura 44 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

If you recall, this is what our corn looked like just a few weeks ago. Matt babied it and worked so hard to keep it weed free.

    garden_four

You can imagine, then, our despair when we woke up one morning this week after a big rain and wind storm to find this:

    corn

I saw it first…and I HATED to tell Matt about it. It was probably only a couple days away from being ready to eat. sniff

We learned a little bit from this experience about creating good hills around the base of the corn to prevent this. Of course, we are glad that it was just a small part of our garden and not our livelihood. But still…

We are now about two days out from this unfortunate corn flattening and since the plants are still alive, it would seem that we may still be able to eat some of the corn. Maybe?!

And while I’m whining, I may as well show you this, which ALSO happened this week:

    broken_jar

Apparently I had filled it too full of broth when I put it in the freezer because it cracked quite a lot. Which means that not only did I lose my beloved jar, but I also lost a half gallon of nutritious broth. I mean…maybe I could have strained out glass pieces from the broth…but did I really feel like taking a chance that one of us would have a tiny little piece of broken glass in our chicken and rice? Um, no.

So there you have it. And you thought you visited my blog for a daily dose of encouragement.  Instead, you come visit and Laura is whining about her fallen corn and her broken jar.

Let’s see…maybe I can come up with some encouragement for you:

    • Sometimes jars break and corn falls over. When this happens you have to throw away a bunch of good broth and bear the bad news to your husband that a lot of his hard work just went to waste. It’s a chance to practice being a good help meet. (That was not at all encouraging.)
    • Sometimes jars break and corn falls over. Broth kinda looks neat with glass floating in it. (Better?)
    • Sometimes jars break and corn falls over. At least the corn all laid down the same way in the garden so as to be consistent. (I’m trying.)
    • Sometimes jars break and corn falls over. It’s a good thing two of my kids aren’t big on eating corn on the cob anyway. (Right?)
    • Sometimes jars break and corn falls over. When I poured the broth onto the ground (in an untraveled area) I bet some raccoon had a really great and nutritious feast lapping it up later. (Always good to help the coons build strong bones and better immune systems.)
    • Sometimes jars break and corn falls over. Eh, I don’t really like jars that much anyway. (Yeah, right.)
    • Sometimes jars break and corn falls over. It’s a delightful chance to talk to your kids about how when we don’t stand with our feet firmly rooted in the strength of Jesus, we just blow over when a strong wind comes. (And then they will look at you with a blank stare because today the wind isn’t blowing.)
    • Sometimes jars break and corn falls over. Basically, you just have to get over it and move on. (Which is real encouragement because it’s the truth.)

And there you have it. ;)

Chatting With Lisa Whelchel about “Friendship for Grown-ups” + a Giveaway!!

    July 21, 2010 by Laura 380 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

This post wraps up my interview time with Lisa. If you missed them, be sure to catch the rest of the interview posts:

    • Chatting with Lisa about raising little ones
    • Chatting with Lisa about raising teenagers
    • Chatting with Lisa about marriage

Here is the final question I asked…

    Me:

I’ve been reading your newest book, Friendship for Grown-ups. I’ve really enjoyed how you’ve opened up and shared your story and your struggles with being real and honest about your feelings and needs with your friends.

Why do you think women are so afraid to be real and open and vulnerable with other women about their struggles and sins?

    Lisa:

We feel like we’re supposed to be perfect like Jesus. We act like everything is fine because we think it’s the right thing to do. We feel like we’re letting God down if we admit failure. But when we do this, we miss out on connection and grace. Are we trying to earn salvation through works, or are we accepting that we are sinners who need grace?

Laura’s follow-up thoughts…and also, let me tell you about Lisa’s new book…and also, maybe you could even win a copy! ;)

    whelchel

I thoroughly enjoyed reading Lisa Whelchel’s latest book, Friendship for Grown-ups! I anticipated that it would be a book to encourage moms to maintain great friendships as we raise our kids. Yeah, I was wrong. It really didn’t have anything to do with maintaining my friendships while I’m raising my kids. This book really is about what true and godly friendship is all about, no matter what season you are in your life.

Friendship for Grown-ups is about breaking down walls. It’s about being real. It’s about setting boundaries. It’s about being a friend and accepting friendship. It’s about being open and honest.

Oh my, is it ever about being honest. Being honest with yourself, and being honest with the people God puts in your life to love on you. Lisa shares some of her biggest struggles through her years as a child star and how that shaped who she became as an adult. Through the years, Lisa built some gignormous walls that were ever so hard to break down. But she…

Wait a second.  I think I’m saying too much. I think I should stop and just really, really recommend that you read Friendship for Grown-ups.

As Lisa shares her story in her latest book, you’ll find that you get to know her on a much more personal level. While reading this book, I felt like Lisa became my friend, even as she taught me what godly friendship should be about. That happens when someone opens up and shares from the deep, painful places in her heart. That’s exactly what Lisa did. You will be blessed by reading her story and by hearing how God worked in her life and gently led her into whole and healthy friendships.

I just so happen to have five copies of Friendship for Grown-ups to share!! (Well, I actually have six copies but one of them is mine and I’m keeping it to re-read another few times during the next few years!!)

If you are interested in winning one of the five copies of Friendship for Grown-ups, by Lisa Whelchel…please leave a comment at the end of this post! Receive extra chances to win by subscribing to my blog, or tweeting/blogging/facebooking about this giveaway, or by becoming a fan of Heavenly Homemakers on facebook. Leave a separate comment for each entry!

I’ll draw five random winners on Monday!

I’d like to give a big thank you to Thomas Nelson Publishing for this great opportunity to read Friendship for Grown-Ups, visit with Lisa on the phone and share more of her books with my readers!!

    This giveaway is now closed…thanks!
