Just a Typical Morning..

Okeedokee….

Just thought you’d love to hear about my morning.

I was trying to get through the breakfast dishes, while scooting homemade valentines around on the countertops so that they wouldn’t get wet…when Justus (who turns 8 tomorrow!) came in and said,

“Mom, I can’t get this off my finger.”

And I, being the attentive mom that I am, said,

“Okay, just let me finish these dishes real quick first.”

So he waits patiently and tries to get the thing off of his finger while I work on the dishes.

And then I actually LOOK at my child and realize…ooh, that thing doesn’t look like it wants to come off any time soon.

Oh, brother.

So, I took off my rubber gloves and decided that maybe this was a priority over the dishes. 

However (bless his heart), I REALLY wanted to take a picture of the hand because I know the making of a good blog post when I see one. 

So he rolled his eyes and held out his hand in front of the camera like the dutiful son of a blogger.

And then, I tried to get the wooden ring off. And I tried. And I tried some more. And I felt like I was going to tear the poor kid’s finger off!

And it wouldn’t budge.

And then Asa hollered in to me that Malachi needed to go poopoo.

And then Elias hollered in at me that the little 10 month old that I babysit for was stuck somewhere (I didn’t hear where…probably better that way)…

And Justus is still standing there with this orange ring around a soon to be blue finger.

Eeek!

So, I say,

“Asa, can you please take Malachi potty…Elias can you help the little guy get unstuck…Justus will you go get out the butter?…(or get the phone so I can call the fire department?).”

So they all did, and I smeared butter all over Justus’ finger. And it STILL didn’t want to come off.

Oh My Goodness!!! Take a deep breath. 

Justus was super calm through the whole thing, only asking me once,

“Mom, have you ever heard of someone getting something on their finger and then NEVER being able to get it OFF?!?!?”

And I said,

“Yes.”

“But don’t worry. We’ll get it off somehow.” (Even if I have to call Daddy to come home and get out the chainsaw…or something just as sharp but significantly smaller.)

Well, I kept wriggling the thing and feeling so bad, because it HAD to have hurt. Tough ‘ol guy.

And the thing FINALLY came off.

Without firemen, chainsaws or emergency rooms.

Then Justus held up his hands for an “after” picture and ran off to play like nothing ever happened.

“Uh, Justus…come back here and wipe the butter off of that ring and GO PUT IT WHERE IT GOES AND PLEASE don’t do that again ever.”

Then, I went to go retrieve the baby that Elias had gotten unstuck (without the help of butter) and then went to go help Malachi finish up in the bathroom and then went to help Asa with his math, as he had been asking for help long before this all started.

Sooooooo…..

Nothin’ like a CRAZY morning to make one temporarily forget that they miss eating SUGAR!

Take the NO SUGAR Plunge: Pt. 3

Here we are…another day. 

Take a deep breath!

If you pulled it off yesterday (eating NO SUGAR)…hooray! You did it!!!!!!!

If you tried, but struggled and didn’t quite pull it off……hooray! You tried!!!

If you’re trying to decide whether or not to join us today…hooray! You’re thinking about it!

It’s a huge struggle! Just getting through one day is hard, when we are soooo used to eating sugar. 

Today is a new day. No matter how yesterday went for you or what your goals for yourself are, today is a new day. 

YOU CAN DO IT!!!

Donna asked if I would share a few things about WHY sugar is so bad for us…you know to motivate us in that way. We know it’s bad, but if we hear some reasons, maybe our brains can catch up to our hearts on the matter. Great suggestion!

So, I pulled out my “Nourishing Traditions” book, written by Sally Fallon. Awesome resource! Everytime I read about sugar in this book (and many other things!) I am convicted about better ways to treat my body. As I shared with Donna, MAYBE I should read it three times a day….to convict myself constantly about abstaining from sugar! 

If you read Lilly’s comment back on Pt. 1 of this series, she reminded me of the fact that almost all foods have some form of sugar in them. I had written that I’m elliminating “all forms of sugar from my diet”. I was really just talking about the refined sugars and natural sweeteners (like rapadura, honey, etc.). I am not taking out carrots and peas and other whole foods that have “natural sugars”. 

So, that leads me to:  Foods such as fruit, vegetables and whole grains do have some kind of chemical in them that ends in “ose” which is a sugar. HOWEVER, those are whole and in an unrefined state. And because they are whole, they are linked together with all of their vitamins, minerals, enzymes, protein, fat and fiber….which mean that they can digest properly and our bodies can utilize them right away for good!

Kinda makes me want some broccoli…right now! 

On the other hand, when a carbohydrate is refined (such as to make whole wheat flour into white flour, or whole cane sugar into white sugar, or corn into high fructose corn syrup), the process strips it of alllllll it’s vitamins and mineral…thus leaving them empty. Empty calories.

Or, shall we call them “negative” calories. Because, when we eat them, they give us nothing that our bodies can use, so our bodies have to draw from it’s reserves (which are precious), and eventually we have nothing left in our reserves if we aren’t feeding it whole foods…and then we are left depleted.

Ah, I have felt depleted before, haven’t you? It doesn’t feel good.

Are you still with me? I have more information, like several pages worth…do you want to hear it? You may need to eat a spoonful of peanut butter or something while you read…just to keep you alert.

Okay, now. We have in our bodies a pancreas, and hormones from glands such as thyroid and adrenal. These guys work together in our bodies to regulate our blood sugar.

When we eat whole, unrefined foods, along with their proteins and fats, they are digested s l o w l y and the sugars from them enter our bloodstream at an even rate over a period of hours. 

But when we eat refined sugars, especially without the fat and protein, the sugar enters our bloodstream in a rush, making our pancreas and it’s friends kick into high gear to get our blood sugar levels acceptable. Eventually, this system is going to get worn out from doing this. 

(Picture a pancreas, all sweaty and exhausted, sighing from frustration at being unable to keep up and do the job it was created to do. Probably looks something like I do at the end of the day trying to keep up with these kids!) 

And, don’t forget about all the vitamins, minerals and enzymes we’re missing out on too when we eat these unrefined sugars. Not only is our sugar-regulating system all worn out from working 80 hour weeks, we’re not feeding it any vitamins, etc. to help give it energy. 

Alright, enough information for now. Chew on that for a while (while you chew on your broccoli). 

Are you ready for today?!?! It’s gonna be great! All those yummy, whole foods God made for us to enjoy! Enjoy them as He gave them to us! Whole and real!

The NO SUGAR Plunge: Pt. 2

Okay everyone…how’s it going? We’ve had several “takers” on this NO SUGAR challenge! WOOHOOO! 

For those of you who have gone without sugar all day….are ya hanging in there? Is it hard? Do you feel okay? (Are you mad at me?!)

But hey, sugarless people, you are NOT alone! Several of us have ditched the sugar today with you! 

For me, Day 1 was the hardest to get through! Just so ya know.  Get through today and you will feel so impressed with yourself tonight! And you’ll feel more motivated to do it again tomorrow!

Have you read all the encouraging comments from Take the NO SUGAR Plunge? If not, you HAVE to go read them. Even those who haven’t taken the challenge are really cheering us on and that’s awesome! 

Several of you have told me what good timing this is for you and how grateful you are…so, you’re welcome…but REALLY, YOU are helping ME!!! This has been great to help hold me accountable and ease my temptations. 

I’ve had several questions come in about how strict to be about this, what counts as sugar, etc. Great questions! 

So here are some tips and suggestions for some do’s and don’t’s of the NO SUGAR Plunge. But hey, this is what is working for ME, so if you don’t like it, that’s okay! Do whatever works best for what YOU NEED to do this thing. You may need to be less strict about it to make the goal more attainable for yourself. Or, you may need to cut back on more than just sugar. Do what works for you to help you meet your goals!

1. Don’t replace your sugar with artificial sweeteners. From what I’ve read, those are even worse for you than sugar. And, they don’t help you to stop craving sugar!

2. Don’t let yourself go hungry. Eat wholesome meals that are rich with nutrients that fill you up. If you are hungry, you’re more likely to want something snacky and sweet.

3. Eat fruit! But don’t overdo it. Even though it’s natural sugar, it’s still sugar. Eating fruit does help with sugar cravings though, so let yourself have some. And WOW, doesn’t fruit taste so sweet and good when you aren’t eating other sugary foods! (Go, God!)

4. Don’t drink too much fruit juice. Even the 100% juice isn’t great for you, as the bulk of the enzymes from the fruit are stripped away, leaving mostly the fructose (sugar). And, the amount of juice that you get from one piece of fruit is far less than what you get in a big glass of juice. So, drinking a big glass of juice can provide you with the amount of sugar from several oranges, apples, or whatever.

5. I’ve chosen to avoid sugar in any form, which includes, honey, maple syrup, molasses and the like. If you chose to avoid white sugar, but not natural sugars, great…just watch out not to overdo!

6. Fill in the time that you normally eat sugary foods or crave snacking on sugary foods with something else, so that the struggle isn’t so hard! Exercise, call someone on the phone, read your Bible, play a game with your kids…do SOMETHING so that you aren’t as tempted to fall back into your sugar eating patterns.

7. I know I already mentioned to not let yourself go hungry, but it’s worth saying again in a different way! You’re cutting out sugar and desserts, now focus EATING other really good foods! I have found that I’m eating much more at mealtimes and REALLY enjoying my food! It tastes sooo good. I am amazed at how good food tastes when sugar is not coating my palate, or when I haven’t snacked the afternoon away. I am lovin’ that cow in my freezer!

Making Homemade Soft Pretzels

Brace yourself. The Soft Pretzels recipe I am about to share with you is INCREDIBLE!

Whole_Wheat_Soft_Pretzels

Ask anyone who’s ever tried them. People have even called me the “Pretzel Lady”. (I’m sure they’ve even called me the “Beautiful Pretzel Lady” and the “Unbelievably Intelligent and Witty Pretzel Lady” behind my back.)

I used to sell these at our local farmers market each week. On my best week, I sold over 100 of them in less than 17 minutes (yes, I timed it).

Here is the recipe and the step by step tutorial on how to make Laura’s Amazing Soft Pretzels:

Whole Wheat Soft Pretzels

Making Homemade Soft Pretzels
 
Save Print
Author: Laura
Serves: 20-24
Ingredients
  • 1 cup water
  • 2 Tablespoon yeast
  • 2 teaspoon honey
  • 2½ cups milk
  • 1 stick butter
  • ½ cup honey
  • 4 teaspoon sea salt
  • 8 cups whole wheat flour (more or less as needed)
  • butter
  • salt
Instructions
  1. In a large bowl, mix 1 cup warm water, yeast, and honey.
  2. Stir this together and kind of mush the yeast around.
  3. Let this sit for a few minutes while you do the next step.
  4. Melt a stick of butter in a large saucepan.
  5. Add honey, butter, salt, and milk. Heat this to 120 degrees.
  6. Pour milk mixture into yeast mixture and stir.
  7. Stir in 8 cups of flour, 2 cups at a time. (add more if you need it)
  8. Knead the dough for 5-10 minutes.
  9. Plop it into a bowl, cover it and let it rise for 1-1½ hours.
  10. Pull it out of the bowl and knead it a few times to get the air out.
  11. Pull a ball of dough, about the size of your fist off and get ready to make your very first pretzel!
  12. Roll it into a long snake.
  13. Twist the ends together, then twist it again (pictures below are helpful)
  14. Pick up the ends and pull them down to the bottom.
  15. After you shape each pretzel, put them on a cookie sheet about an inch apart.
  16. Bake for 20 minutes at 350 degrees.
  17. Melt a stick of butter in a saucepan.
  18. Right when you take the pretzels out of the oven, slather them with butter. Lay it on thick. Don't hold back.
  19. Sprinkle salt over the buttered pretzels.

(You can make these with white flour and white sugar if you want to have a delicious mound of empty calories…but I have found that using these healthier ingredients does not make us like these pretzels any less!)

Please make no snide remarks about my blueish, boney hands. It is always a little cold in my house and my hands are never quite warm AND I inherited my Nana’s boney hands and I know my Nana would have never allowed her hands to be put on a blog while she lovingly told you how to shape a pretzel because she was ashamed of her boney hands, but I’m okay with it. I’m not embarassed at all. Not one bit.

After all the pretzel twisting, it should look like this. If it doesn’t, just undo it and try again. By the time you get to the end of shaping your big blob of dough into pretzels, you’ll have the hang of it and be able to talk on the phone, make a grocery list, check your email, tie someone’s shoe AND shape a pretzel, ALL AT THE SAME TIME!

If at all possible, eat one right out of the oven. They are good two days later too, but OH MY GOODNESS, you HAVE to eat one right out of the oven!

Take the NO SUGAR Plunge!

I have just challenged myself and I was wondering…anyone want to take the challenge with me?!?!?!

Please?

Pretty please with sugar on top?

OH WAIT! NO, NOT with sugar on top!

That’s what this challenge is about!

I have decided that I eat ENTIRELY TOO MUCH SUGAR.

I pride myself on eating well and feeding my family well. 

And here I am eating valentine candy like a junky. (I tell myself that if I eat it, the candy won’t be around for the kids to eat…oh I’m such a good mother…thinking of the health of my children.)

AND, I also realllllly love to bake and have goodies on hand. I make them with unproccessed sugar and whole wheat flour so they are better…but it’s still sugar.

Sugar is so stinkin’ good. (as in yummy…not as in good for you)

And it is VERY addicting. Our bodies begin to crave it and that’s a fact.

So, in an effort to cleanse my system and feel great, I decided to challenge myself.

I started off with a small goal:  Don’t eat sugar in any form for one whole day.

For those of you who go for days at a time without sugar, just never mind okay? Just leave me alone. 

I don’t want to hear how easy that goal might seem to you. 

YOU JUST DON’T KNOW HOW IT IS! IT’S HARD, OKAY? 

(Wow, sounds like someone is having a little sugar withdrawl and is a little grouchy.)

Anyway,  I went all day yesterday without sugar of any form. And I went to bed feeling great!

So then I decided to increase my goal:  Don’t eat sugar for one week.

Maybe, just maybe, I’ll increase my goal after this week. I’m trying to be realistic with myself and not bite off more than I can chew (of course I’m not biting off anything that’s chewy, ooey, gooey…).

And then I decided that I needed help to do this thing, which is why I’m telling you about it.

And I also figured there might be others who want to take the challenge with me.

Any form of the challenge. One day, one week…even just cutting back to less sugar.

C’mon…we’re all sweet enough as it is. It’ll be good for you.

So give it some thought.  I know you can do it!

If you decide to take the challenge…leave a comment or email me! Tell me what goal you have set for yourself. Maybe you have a different “health goal” you’ve set for yourself. Let us know about it.

If nothing else, leave me a comment and tell me what a good job I’m doing and how I’ll be so glad that I did this and I’m gonna feel so much better and have so much more energy… But whatever you do…do not mention chocola…

Just Five Minutes…

There’s no getting ahead when it comes to dishes:

“Hm, perhaps I should get ahead by washing these clean dishes that we are about to eat on before we eat, so that I don’t have to do it after we eat.”

Nope. It doesn’t work that way. (But if it did, I would SO be doing it!)

SO, my kitchen tip for today is this:

Set your timer for just five minutes and clean like crazy and see what you can get done! 

 There have been times when I was baking something and there was five minutes left on the timer before I could take it out of the oven, so I would start washing some dishes while I waited. And I couldn’t BELIEVE how much I would knock out of my stack before the timer went off!

Just five minutes!

It helped me to know that many jobs that LOOK overwhelming and make you feel like you’ll NEVER catch up, REALLY DON’T take very long to do. 

It’s a work in progress. And, it’s just a matter of getting in there and doing it. 

Okay, so go tackle those dishes for five minutes! And you just see what you can get done!

GRATITUESDAY: I Love it!

 Because Valentine’s Day is upon us, and we’re all thinking about LOVE…I decided to use this Gratituesday to tell you about some of the things I love. 

1. I love it that I am married to the person who completes me, makes me better and is my best friend.

2. I love the fact that God has allowed me to be what I’ve always wanted to be when I grow up:  a wife and mother.

3. I love that I am a mother to four of the sweetest, handsomest, funnest, bestest boys in the world.

(I love that you read my blog even when I doesn’t use good grammar or speel word write.)

4. I love having friends who care, help, share, cry, laugh, feel joy, and hurt with me.

5. I love that all of my needs are met, all of the time, in abundance.

6. I love the peace I feel knowing that I have a Savior who loved me enough to die so that I can live eternally with Him one day, even though I don’t deserve it. 

Now THAT’s love.

A Work In Progress

This weekend I was talking to my sister in law who:  is going through the  adoption of my precious baby nephew…and she has a bad cold…and she’s taking care of my precious baby nephew…

(She’s doing an awesome job of being a mommy, I might add.)

When I asked her what she was doing for the weekend, she said, “Oh, I need to…my house is…well, my home is not really a haven right now.” (Hey, at least she’s been taking time to read my blog!)

She told me about the piles of this and the stacks of that and all the things that she was having a hard time getting around to.

And then she told me of a dream she had recently had (when she was actually able to get more than two hours of sleep in one chunk):

“I dreamed that I was living in a tree house all by myself with no one to take care of and no one even knew where I was…and I STILL couldn’t get everything done!”

Ooooohhh doesn’t that dream paint a great picture of what we all feel as women at one point or another! Especially if you have a newborn! 

So my encouragement to all mothers and homemakers out there is to just keep on keepin’ on…

Making our homes a haven is a WORK IN PROGRESS.

The work never ends. And that can feel discouraging. 

We can catch up on all the laundry, and that night, everyone takes off their dirty clothes and there is more laundry to be done and you don’t feel caught up anymore.

Toys that have been picked up get back out again. Dishes that have been washed get dirty again. Mail that has been sorted through begins to pile up again.

In about five minutes.

You can choose to do one of two things:  feel discouraged and throw up your hands…or dig in again and start going through the mail.

And you can remember that you aren’t alone. And that just because your house isn’t perfect all the time (or ever), you aren’t a failure as a homemaker.

Just do what you can with the time that you have and don’t give up. It’s amazing what you can pick up, clean up or throw out in a five minute time period. (Aren’t you glad I stopped that pattern and didn’t say “throw up”!)

God bless you as you make your home a haven…remembering that it is a work in progress.
