Here’s the promised Chocolate Snowball recipe. I like that these aren’t super rich or heavy…just kind of like a little ball of chocolate cake.
Chocolate Snowballs
3/4 cup butter, melted
3/4 cup rapadura or sucanat
1/4 cup cocoa
1/4 cup milk
1 egg
1 t. baking powder
1/2 teaspoon sea salt
1 teaspoon vanilla
2 cups whole wheat flour
powdered sugar
Cream butter, rapadura and cocoa. Add milk and eggs and stir well. Mix in baking powder, salt and vanilla. Stir in flour. Chill dough for at least two hours. Roll dough into teaspoon sized balls and place on cookie sheet. Bake at 350 degrees for 8-10 minutes until the tops are cracked slightly. Roll balls immediately in powdered sugar.

So, you do use powdered sugar! What can you tell me about this stuff? I use organic – does that make it ok?! These look delicious – as does everything else you bake / cook and show to us. I make a lot of your recipes and my kids ask for them over and over again!!! (We had Layered Beef Enchiladas on Saturday – YUM!)
Yeah, I use powdered sugar sometimes for things like this. I use organic too…which doesn’t make it much healthier…but at least it isn’t bleached!
