Santa’s Big Batch Drop Cookies

It’s our 2024 Christmas Brunch: Santa’s Big Batch Drop Cookies recipe!

You’ll use four sticks of butter with this one, but it’s worth it. Why? Well, because these are delicious. But even better? You’ll end up with enough cookies to enjoy at home and share with others too.

The best thing about these cookies is that they are a wonderful sugar cookie – but without all the work of rolling out and cutting out dough. We love the tradition of making cut-out cookies too. But when Santa is busy, this is where we turn.

You’ll get about 40 cookies with this recipe!

Santa’s Big Batch Drop CookiesYum

Serves: 3-4 dozen
Ingredients
  • 2 cups melted butter
  • 2 cups raw sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 4 cups flour
Instructions
  1. Cream butter and sugar together.
  2. Stir in baking soda, vanilla, and eggs.
  3. Add flour until well-combined.
  4. Drop scoops of cookie dough onto cookie sheets two inches apart and bake in a 350 degree oven for 8-10 minutes.
  5. Remove cookies from pan when they look slightly underdone so that they are soft in the middle.

You can roll balls of dough in colored sugar before baking if you want to make them more festive. We find that a fun Christmas plate offers all we need to fancy these up!

The last time we did this was back in 2014! Ten years later, we’re bringing it back. You’re invited to our (virtual) 2024 Christmas Brunch!

How I wish every one of you could physically come into my home for a delightful time of food and fellowship. We’d hug, cry, laugh – probably all at the same time.

We’d sit around our table and talk about our families, show each other pictures…then probably cry some more. God is good and it’s good to share Him together.

This Heavenly Homemakers Community has been around since 2007. Since its beginnings, at whatever point you joined us here, we’ve all become family. I am so thankful for you.

So let’s have brunch together again, shall we?

Since we can’t all meet in person, this will be the next best thing. Each day, December 16-20, 2024, I’ll share a new Christmas Brunch recipe with you. Then, as we end our celebration, on December 21, I’ll hand out gifts. YES! FOR EVERYONE!

How to Make Christmas Cookies with Little Kids

If you want to make Christmas cookies with little kids without losing your mind, here are some tips!

Let’s see now. Do I have much experience with making cookies with little kids? Bah! Just a little bit. ;) I wish I had more cookie-making pictures from our first round of kids, but here are a few that I found:

Multiply those pictures times a few dozen-hundred and now let’s head into the 2020’s in which there are seven new little kids two enjoy cookie-making experiences with. I now take all that I learned whilst making Christmas cookies with Round 1 of kids and enjoy keeping things simpler with Round 2 of kids.

As if making Christmas cookies with kids can every really be called “simple.” But at least we can make it less hard if we practice some of these hacks…

How to Make Christmas Cookies with Little Kids

Tip #1: Break up the cookie-making tasks into two or even three separate days. As in:

  1. Mix up the cookie dough one day, refrigerate. Done.
  2. Roll out, cut out, and bake cookies a different day. Freeze cookies to frost a different day. Phew.
  3. Frost and decorate cookies. Treat!

All three of these tasks make a nice mess, and take some effort and time. So I’ve found that if I divide each part of the cookie-making process into different days I’m not as exhausted, frustrated, and overwhelmed by bowls, pans, cookie cutters, frosting, sprinkles, flour, flour, flour (you KNOW what I’m talking about).

Tip #2: Wash your kids’ hands before you get started, then pretend you don’t see them licking the flour off their hands, touching each other with cookie cutters, and wiping their frosting on their pants.

Listen, I’ve decided that all the slobber and germs that go onto the cookies bake away in the oven. This is a scientific…fact that my mom-brain decided was true and I stand by my findings. It’s way too difficult to keep a 3-year-old’s hand out of her mouth during the cookie-making process. And if you’re like me and baking cookies with kids ages 9, 8, 5, 3, 3, and 2 all bets are off.

Keep reminding them to keep their hands clean, but otherwise don’t worry about them doing what they ultimately can’t help. Keep telling yourself, “this will bake off in the oven, this will bake off in the oven…” Smile at your kids, shake the flour off your hands, and move on.

Tip #3: Use only one cookie cutter at a time.

That is to say, when we roll out and cut out cookies, I don’t let my kids have a free-for-all. I control the cookie cutter, helping each child take a turn cutting out a cookie, then I hand it to the next kid for a turn. Everyone gets a turn with the star, everyone gets a turn with the tree, and on we go.

Often, I use the hand-over-hand method to help them cut their cookie so that it goes all the way through the dough and so that they don’t cut their cookie right in the middle of the dough.

Tip #4: After the kids get tired of cutting out cookies, I give them a little bit of dough to roll on their own, cut, smash, lick, drop on the floor…

THIS does not go into the oven, but instead into the trash. I have my limits. But it does keep them busy while I finish rolling and cutting cookies to finish off the job and clean up.

Tip #5 Avoid cookie cutters with appendages.

It can be devastating for kids and frustrating for parents when Santa arms and reindeer legs break off over and over. I’ve learned through the years to never use cookie cutters that have long, skinny parts.

Even the snowmen you see in this photo were a bit challenging. So we didn’t make very many and instead made lots of trees and stars!

Our kids LOVE making Christmas cookies so all of the effort is worth it so that we give them great memories. Try these tips and see if they help you enjoy the process too.

12 Christmas Cookie Recipes

Is there anything better than a plate full of Christmas cookies? This is a great time of year to spend a Saturday making several different types of cookies, wrapping them up, and gifting them to your friends, family or neighbors!

1. Low Sugar Frosted Christmas Cookies

Some might say that Christmas desserts are treats that should not be messed with. Perhaps whole wheat flour does not belong in a Christmas cookie. Maybe “low sugar” should not be included in a Christmas cookie title. It’s a treat, right? Can’t we just leave it well enough alone?

Sure.

But the more I experiment with cutting down the sweetener in my baked goods, the more I’m discovering that treats still taste like treats even with the sugar cut in half or more!

Try these cookies, you won’t even miss the sugar!

2. Christmas Spice Cookies

I LOVE the way these cookies make my house smell! Spiced with cinnamon, nutmeg, and cloves they are oh so tasty!

3. Homemade Peppernuts

These tiny, old-fashioned cookies are one of my favorite holiday treats! They’re great to package up in small bags to give as Christmas time gifts to coworkers and neighbors.

4. Sweet and Simple Cranberry Cookies

I’m not a big fan of raisins in my cookies. But adding dried cranberries to this simple butter cookie? Well, that takes them up a notch without adding any effort.

5. Low Sugar Pumpkin Spice Roll-Out Cookies

While I’ve shared that I just can’t get behind Pumpkin Spice Coffee (typing it actually makes me shudder just a little bit), I most certainly enjoy making many Pumpkin Spice treats this time of year – to eat while I drink my (plain, non-pumpkin-spice) coffee. If my house smells of nothing but Pumpkin Spice from now until Christmas, there will be much joy in the holiday season.

6. Easy Low Sugar Almond Melt-Away Cookies

These lightly sweetened cookies taste amazing with a steamy cup of coffee or a cold glass of milk. Ah, life’s simple pleasures. :)

7. Sweet and Simple Butter Cookies

The combination of butter and sugar in this recipe makes for a perfectly sweet and rich cookie that melts in your mouth. Don’t worry though. The ratio of butter to sugar is such that these are only lightly sweet, but deliciously buttery. I’d still consider these a dessert, but I think they fit in the “low sugar treat” category.

8. Reindeer Cuties

These simple cookies are a hit. Fun to make…fun to eat. I like that they are made with honey and whole wheat. And they really don’t take much time at all.

9. Orange Cream Cheese Cut-Outs

These are one of my favorite Christmas cookies. And this recipe makes a lot of them…which is why it’s a good idea to have lots of people in mind to share them with!!  Because having them just sitting around the house screaming at me to come eat them is a bad idea.

I’d like to give in to the notion that since they have orange juice in them, they’re good for me and just packed with vitamin C.  Oh, if only.

10. Chocolate Snowballs

I like that these aren’t super rich or heavy…just kind of like a little bite of chocolate cake.

11. Cream Cheese Cookie Cut Outs

The cookies have cream cheese in them and the frosting is made with cream cheese. Let’s just say these cookies are soft, rich, and I have to work hard to keep myself out of them.

12. Whole Wheat Gingerbread Men

A Christmas classic! Your kids will love helping you make these sweet, Whole Wheat Gingerbread Men!

Low Sugar Chocolate Cookie Cutouts

Look at these fun and festive Low Sugar Chocolate Cookie Cutouts! What a fun way to make a Christmas treat you can feel good about eating!

These cookies are delightfully good with a cup of coffee or tea. And if you want the non-chocolate version (what is wrong with you, ha?!), you’ll find that here. It’s fun to make a batch of both so you can display them in a pretty way on a tray!

Low Sugar Chocolate Cookie Cutouts

Low Sugar Chocolate Cookie Cutouts

Serves: 20-30
Ingredients
  • 1 cup melted butter
  • ½ cup sucanat or raw sugar
  • ⅓ cup unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3½ cups of whole wheat flour (give or take)
Instructions
  1. Stir together melted butter, sugar, and cocoa.
  2. Add eggs, vanilla, and baking powder.
  3. Stir in flour until a solid ball of dough forms.
  4. Cover the bowl and place it in the refrigerator to chill for about an hour.
  5. Roll chilled dough on a well-floured surface and thin or thick as you like.
  6. Cut with cookie cutters and place them about a half inch apart on a baking sheet.
  7. Bake in a 350° oven for about 12 minutes or until cookies are lightly browned.
  8. Makes 20-30 cookies depending on the thickness and size.

Want to frost your Low Sugar Chocolate Cookie Cutouts? Here are some fun (and low sugar) options:

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Frost cookies just before serving.

Low Sugar Chocolate Frosting

1/2 cup butter
4 Tablespoons cocoa powder
2 Tablespoons milk
2-4 Tablespoons honey (sweeten this to your taste)
1 teaspoon vanilla extract

In a small saucepan combine butter, cocoa, milk, and honey. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly. Removed from heat. Stir in vanilla. Spread over cooled cookies.

Cream Cheese Cookie Cutouts

In preparation for a Christmas Cookie Exchange with several of my friends tonight, I made our favorites – Cream Cheese Cookie Cutouts. The cookies have cream cheese in them and the frosting is made with cream cheese. Let’s just say these cookies are soft, rich, and I have to work hard to keep myself out of them.

Cream Cheese Cookie CutoutsYum

1/2 cup melted butter
4 ounces softened cream cheese
1 cup sugar (sucanat works, as does brown sugar)
1 egg
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
2 cups flour (I use freshly ground hard white wheat flour)

Stir together melted butter, softened cream cheese, and sugar. Add egg, baking powder, and vanilla. Stir in flour until well combined. (Use a little less or a little more flour as needed.)  Place dough in the refrigerator for at least two hours.

Once dough is chilled, roll on a well floured surface and cut out into desired shapes. Bake in a 350° oven for 10-15 minutes or until cookies are lightly browned. (I prefer mine just barely done so that they stay soft!)  Allow cookies to cool completely before frosting.

Cream Cheese Frosting

1/2 cup butter, softened
8 ounces cream cheese, softened
4 1/2 cups unbleached organic powdered sugar
1/2 teaspoon vanilla extract

Whip butter and cream cheese with beaters until fluffy. Add vanilla and powdered sugar and beat until mixed thoroughly.

Makes about 30 cookies.

My (poor, deprived, starving) boys were not very happy with me when I told them that most of the cookies were  going to the Christmas Cookie Exchange. Not to worry, I told them. They could have all the broken cookies. Considering the fact that I am not a perfectionist, I’d say they made out just fine with a lovely assortment of broken stars, branchless trees, and torn stockings.

Fun {healthier} Holiday Baking

What with all the butter I hear you’ve been going through lately, it sounds like there’s a lot of fun Christmas baking going on out there! I actually haven’t even started doing my baking yet, but I will start soon. Oh yes, the butter and sucanat are going to start flying around here.

As I began to make my baking plans, I put together a list of some of my favorite holiday cookies and treats. All of these are made with healthier flours and sugars (usually honey or sucanat). I won’t be making all of these treats, but  I’m really hungry right now, so I just kept adding to the list.

Smells Like Christmas Cookies! Reindeer Cuties

These simple cookies are a hit. Fun to make…fun to eat. I like that they are made with honey and whole wheat. And they really don’t take much time at all.

Easy Reindeer Cookies

Reindeer Cuties Yum

1 /2 cup butter, melted
1/2 cup natural peanut butter
1/2 cup honey
1 egg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon vanilla
2 cups whole wheat flour

tiny pretzels
chocolate chips
red hot candies

Stir together butter, peanut butter and honey. Add egg, baking powder, baking soda and vanilla. Mix in flour. Chill dough for about an hour.

Roll dough to 1/4 inch thickness on a well floured surface. Cut circles using a small drinking glass. Place on cookie sheet. Use fingers to squeeze the circles in the middle.

 Place two pretzels at the top for antlers, two chocolate chips on for eyes and one red hot candy for a nose.

Bake for 10 minutes at 350 degrees. Allow reindeer to cool 2-3 minutes before removing from cookie sheet.

Allergic to peanut butter? Simply make your favorite sugar cookie recipe and create reindeer that way instead!

Smells Like Christmas Cookies: Chocolate Snowballs

Chocolate Snowballs
Here’s the promised Chocolate Snowball recipe. I like that these aren’t super rich or heavy…just kind of like a little ball of chocolate cake.

Chocolate SnowballsYum

3/4 cup butter, melted
3/4 cup sucanat or brown sugar
1/4 cup cocoa
1/4 cup milk
1 egg
1 teaspoon baking powder
1/2 teaspoon sea salt
1 teaspoon vanilla
2 cups whole wheat flour
powdered sugar

Cream butter, brown sugar, and cocoa. Add milk and eggs and stir well. Mix in baking powder, salt and vanilla. Stir in flour. Chill dough for at least two hours. Roll dough into teaspoon sized balls and place on cookie sheet. Bake at 350 degrees for 8-10 minutes until the tops are cracked slightly. Roll balls immediately in powdered sugar.
