BLT Wraps – The Perfect Summertime Meal

Nothing says “I’m a humble cook” like shouting really loudly that this is the best recipe you’ll ever eat!  My bad. What can I say? There’s bacon in it. And cream cheese. The goodness of this recipes has nothing to do with me, and everything to do with the amazing mixture of ingredients all rolled up in a tortilla.

This recipe is so easy that my kids made it on their own for our family to eat on Mother’s Day. These can be made ahead of time – or at the very least, you can cook the bacon and prepare the tomatoes and lettuce so that you can put them together right before serving time.

The best part? Well…the bacon, duh. Yeah, but the other best part? These wraps really hit the spot on a hot day. There’s minimal cooking involved, so the house won’t heat up. Serve these with a variety of fresh fruit like pineapple, watermelon, or strawberries. Set out some sweet peppers, sliced cucumbers, and carrot sticks. What a wonderful, nourishing meal.

Ingredients
  • 4 ounces softened cream cheese
  • ½ cup mayonnaise
  • 8 slices cooked and crumbled bacon
  • ½ cup chopped tomatoes
  • ½ cup shredded spinach, romaine, or green leaf lettuce
  • 3 eight-inch whole wheat tortillas
Instructions
  1. Mix cream cheese and mayonnaise until smooth.
  2. Stir in bacon crumbles and chopped tomatoes.
  3. Spread mixture onto tortillas.
  4. Sprinkle shredded lettuce on top evenly.
  5. Roll tortillas up tightly.
  6. Cut each into 5 diagonal slices.
  7. Chill until ready to serve.

Tip: Make the cream cheese filling ahead of time and store it in the fridge. Then simply fill your tortillas at meal time, wrap, and serve! These work great for brunch, lunch, party, snack…pretty much any time.

Bacon Wrapped Cream Cheese Chicken – A Family Favorite Freezer Meal

I don’t think it would matter how much I of this Bacon Wrapped Cream Cheese Chicken I made – my family would keep asking, “Can I have another piece of chicken?” I definitely never can make enough.

Ah bacon and cream cheese…two of life’s happiest ingredients. Today, I made a batch of this chicken – serving half for lunch and freezing half for another day. It’s a super easy freezer meal to make, and great to pull out and cook quickly. You can even cook it from its frozen state – so having it on hand can save your neck if you forgot to thaw anything for dinner.

Bacon Wrapped Cream Cheese Chicken

What a great way to finish out this week’s freezer cooking challenge! I served this at lunch today with peas and smoothies (full of spinach, strawberries, peaches, and mango). It was a super easy lunch, packed with nourishment for my family. I’m excited to have more of this chicken in my freezer for another meal soon.

Cheeseburger Soup – for $1 per person {31 Days of Real Food Reality ~ Day 10}

How about some Cheeseburger Soup for less than $1.00 per person?

It’s a real food recipe that most everyone will love. It’s full of nourishing goodness. After all, there’s chicken broth and carrots in it, not to mention delicious beef, cheese, milk, and sour cream. It’s a full meal all on its own. Just like all of the recipes I share, this one won’t appear to anyone as “health food.” It’s simply delicious food. Comfort food. And yep, it just so happens to be healthy.

I found that this recipe yielded six hearty servings. I did the math on it, and can declare it to be a Dollar Menu Dish. Technically, it cost me just over a dollar per person to feed this to my family. I decided, eh, it counts. :)  So what does it mean that this meal costs about a dollar per person? It means that healthy eating doesn’t have to be expensive! I love it that there are so many economical ways to feed a family well.

If you don’t mind adding a little extra expense to this soup, and you really want to make it appealing to those among you who just might be afraid of anything healthy – try adding 1/4 – 1/2 pound of chopped, cooked bacon. Then it becomes Bacon Cheeseburger Soup, and who wouldn’t want to eat that? By the way: Bacon is real food.  Hallelujah!

Cheeseburger Soup - for $1 per person {31 Days of Real Food Reality ~ Day 10}

Serves: 6
Ingredients
  • ½ pound ground beef
  • ½ cup chopped onion
  • ¾ cup shredded carrots
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 3 cups chicken broth
  • salt and pepper to taste
  • 1½ cups milk
  • 5 cups potatoes cut into chunks
  • 2 cups shredded cheddar cheese
  • ¼ cup sour cream
Instructions
  1. In a large pot, brown hamburger meat with onions, carrots, basil, and parsley.
  2. Once thoroughly cooked, add chicken broth and potatoes.
  3. Salt and pepper to taste.
  4. Bring to a boil, then reduce heat to medium while potatoes cook, about ten minutes.
  5. Once the potatoes are tender, add milk, stirring and cooking until bubbly - about two minutes. Remove from heat.
  6. Add cheese and sour cream, stirring until melted. Serve.

Bacon Cheese Muffins

I believe bacon is the language of love when it comes to most males, and I happen to like bacon too. You want to know the best way I’ve found to get all of my men-folk out of bed in the mornings? Make bacon. Hoooah! <—that was me grunting out a manly sound, did you hear it? That’s the sound that typically follows the word bacon in our house. “Mmm, bacon. Hoooah!” Based on this idea, I created Bacon Cheese Muffins.

I usually stick with turkey bacon, but it really is hard to beat the taste of the pork bacon I can get from our local farmer. It’s a wonderful, occasional treat at our house – and yes, it does drive the boys out of bed in the morning.

These Bacon Cheese Muffins are easy and delicious – perfect for a holiday brunch. (You may remember seeing this recipe in our free Healthy Breakfast Made Simple eBook.)

Bacon Cheese Muffins

Ingredients
  • 1½ cups whole wheat flour
  • ¼ cup sucanat or brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ¾ cup milk
  • ¼ cup melted butter or coconut oil
  • ½ cup bacon
  • ½ cup shredded cheese
Instructions
  1. Using kitchen shears, cut bacon into bite sized pieces.
  2. Brown bacon pieces in a skillet until thoroughly cooked.
  3. In a mixing bowl combine flour, sucanat, baking powder, and sea salt.
  4. Add egg, milk, and butter. Fold in cooked bacon and shredded cheese.
  5. Scoop batter into 12 paper-lined muffin tins.
  6. Bake in a 400° oven for 15-20 minutes or until muffins are golden brown.

Family Vacation, Part 3

Okay, okay…we didn’t really get to go to a U-Pick Chocolate Farm after our U-Pick Blueberry Farm and U-Pick Peach Farm visits. Chocolate doesn’t grow on trees, ya know. (And if you are one of my sons, you will now say, “Well actually Mom, cocoa beans grow on trees which means that chocoate really does…”)

Anyway, we DID stop at the next best thing! Right along the way to the peach farm, we spotted Vineyards Gourmet Chocolate. Matt looked over at me in the van with his eyebrows raised as if to say, “You want to stop there next don’t you?” Who am I to say no an offer like that?

Ooh, and they kept giving us samples to try. We are now friends forever.

We got to watch one of the owners make a HUGE chunk of fudge. It was so cool.

They were featuring a new item:  Chocolate Covered Bacon!!! We figured that the chocolate draws in the women…the bacon draws in the men and everyone wins!

For the record…we tried some Chocolate Covered Bacon and it was rather tasty! Who knew?
