Easy Taco Salad Recipe

I sort of shared this “recipe” back in 2010 when I first posted my Homemade French Dressing recipe. Since then I’ve had several people tell me that they’d prefer me to write out an actual recipe. It’s only taken me 6 years to do it. Therefore, if you have any requests, ask now. First come, first served – I shall answer your requests by 2022.

I hope I’m kidding.

A key player in this salad is the French Dressing. I used to toss this with bottled Catalina Dressing, but the homemade variety is easy and better for us. If I don’t happen to have time to make the French Dressing, we just dump in a little salsa. It changes the taste of this salad, but it’s still a great meal!

I shall now attempt to write down measurable quantities of salad fixin’s to provide an actual Taco Salad recipe. If in fact you don’t follow this recipe precisely, you will still turn out a fabulous Taco Salad. For that matter, since everyone in my family has specific preferences (some like tomatoes, some don’t; some like beans, some don’t) I often lay out all the salad makings and let everyone build their own bowl however they like!

Easy Taco Salad Recipe

Serves: 4-6
Ingredients
  • 1 pound hamburger
  • 2 Tablespoons taco seasoning mix
  • 1 head lettuce, any variety (we prefer red leaf, green leaf or romaine)
  • 1 cup shredded cheddar or Colby jack cheese
  • 15 ounces (or 2 cups) of pinto, chili, or black beans
  • 1 cup diced fresh tomatoes
  • 1-2 cups crushed tortilla chips
  • 1 cup French Dressing (give or take)
Instructions
  1. Brown hamburger meat and season with taco seasoning mix (recipe link below)
  2. Chop or tear lettuce into a large serving bowl.
  3. Add cooked meat (cooled), shredded cheese, beans, tomatoes, and chips.
  4. Toss with French Dressing.
  5. Serve.

Other fun Taco Salad toss-in options are:

  • Black olives
  • Guacamole
  • Salsa
  • Onions
  • Peppers

I recommend making this Taco Seasoning Mix to have on hand for recipes like this. Easy and delicious!

I hope you are having a wonderful day celebrating the resurrection of our Savior! Happy Easter to all!

We are keeping our plans very simple today, focusing on worship and rest. After a weekend of travel, we wanted a nutrient filled (but easy to make) lunch. Therefore, we put together Easy Taco Salads and ate outside in the sunshine. Awesome!

Easy Taco Salad with homemade French Dressing

Sunday, April 20
Instant oatmeal packets with dried fruit
Easy taco salad, sweet peppers
Small group potluck – I’m making Black bean salsa with chips, a bowl of grapes, and a veggie tray

Monday, April 21
Whole wheat waffles, fresh blueberries, whipped cream
Tuna salad on lettuce and tomatoes, sweet peppers, peaches and cottage cheese
Cheesy Beef and Pasta Casserole (recipe in {Healthy} Make-Ahead Meals and Snacks eBook)

Tuesday, April 22
Strawberry cream muffins, scrambled eggs, bananas
Spicy avocado dip with chips, fresh pineapple, carrot sticks
Bacon wrapped cream cheese chicken (recipe in  {Healthy} Make-Ahead Meals and Snacks eBook), tossed salad, green beans, creamy orange cooler

Wednesday, April 23
Dark chocolate almond granola, kiwi
Popcorn chicken, ranch potato wedges, peas, sweet peppers
Calico beans, tossed salad, cantaloupe

Thursday, April 24
Poppy Seed Bread with Orange Glaze (recipe in {Healthy} Make-Ahead Meals and Snacks eBook), fried eggs, apple slices
Easy cheesy bean dip with chips, pineapple, cucumbers and carrots with ranch
Baked three cheese chicken pasta, tossed salad, steamed broccoli and carrots

Friday, April 25
Easy breakfast casserole, clementines
Lamb burger patties, sweet potato fries, creamy coleslaw, strawberries
Grilled barbeque chicken, baked potatoes, tossed salad, roasted asparagus

Saturday, April 26
Scrambled cheesy eggs, fruit and kefir smoothies
Leftovers
Italian pasta bake, tossed salad, corn, green beans

Homemade French Dressing

I figured out a French Dressing recipe that includes only real food ingredients and avoids high fructose corn syrup! It also means I can enjoy Taco Salad the way I used to – again without the high fructose corn syrup. Mmm, real food. I love revisiting my favorites and eating them in a healthier way!

Back in the day when I didn’t know what high fructose corn syrup was or understand that it was bad for us…I used to make a killer taco salad with Catalina Salad Dressing. Man that stuff tasted good!

I’d mix up a big bowl of lettuce, taco seasoned meat, shredded cheese, chopped tomatoes, chili beans, crunched up tortilla chips – and toss it all with Catalina. Such a perfect summer supper (or dinner, or whatever).

After a little experimenting, I came up with a yummy homemade French salad dressing that tastes even better than the store bought ever tasted! It’s so easy to put together, it’s inexpensive to make, and it tastes wonderful in my taco salad! It’s a blast from the past, only better.

Ingredients
  • ¾ cup ketchup
  • 2 Tablespoons sucanat (you can substitute brown sugar if you want)
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon garlic powder
  • ¼ teaspoon liquid smoke
  • 1 Tablespoon ground celery seed
Instructions
  1. Put all ingredients directly into a pint sized jar.
  2. Put the lid on and shake it well.
  3. Refrigerate.

I recommend Muir Glen Organic ketchup because guess what? It doesn’t include high fructose corn syrup.
