Low Sugar Super Moist Chocolate Cake (That Doesn’t Taste Low Sugar)

There’s a chocolate cake recipe our family has been making for years. It’s one of our favorite of all cakes – mostly because it’s not dry like many homemade cakes can be.

But – you know how my body won’t let me eat much sugar anymore? I mostly don’t even want it – but sometimes I just get a hankering for something chocolaty. That’s what inspired the invention of Chocolate Whipped Cream, Coconut Fudge Bars – and now this – a Low Sugar Chocolate Cake. I decided to try making our favorite chocolate Texas Sheet Cake recipe with less sugar to see how it would turn out.

You guys!!!!!! Why in the name of a diabetic coma do recipes (including many of mine) call for so much sugar???!?! Originally, this recipe includes 6 cups of sugar. SIX. That’s 2 cups in the cake and 4 cups in the frosting and none of us can possibly imagine that cutting out so much of the sugar would still produce a cake that actually tastes good.

Well neener, neener to all of us. I just recreated this cake to include a grand total of 1/2 cup of sugar. Yes, that is one-half cup. Total. Neener. 

I love this cake like nobody’s business. But what do I know? I’m the one who can no longer tolerate much sugar, so even the barely sweet stuff tastes quite sweet to me. The true test was serving this to my children. They still love their sugar (what kid doesn’t?) and they are used the “the regular way” we’ve always made the Texas Sheet Cake. Would they feel like the cake wasn’t sweet enough? I mean, going from 6 cups to just 1/2 cup of sugar – that’s a big drop.

Two things:

  1. Yes, they could tell.
  2. No, they didn’t care.

They ate the cake, they liked the cake, they had seconds on the cake (which was only allowed because of the low sugar content). This makes me think that we could likely drastically cut the sugar in most cake and cookie recipes and everyone would still enjoy the treats. Why yes I will be testing this theory. And I will share my results with you – one recipe at a time.

One thing to note: The brand of stevia you use in the frosting really does make a difference. Some stevia has a stronger, more bitter taste than others. My family prefers NuNaturals Alcohol-Free Stevia. It’s much less bitter. But no matter what brand you use – if you overdo it, the taste goes from sweet to bitter. A little goes a long way – don’t forget! (More info on stevia here.)

Ingredients
  • 1 cup melted coconut oil
  • 1 cup water
  • 4 Tablespoons unsweetened cocoa powder
  • 2 cups whole wheat pastry flour
  • ½ cup sucanat
  • dash of sea salt
  • 1 teaspoon baking soda
  • ½ cup sour cream
  • 2 eggs
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, and baking soda.
  2. Set aside. In a saucepan, bring oil, water, and cocoa to a boil.
  3. Pour liquid mixture into the bowl with the dry ingredient mixture.
  4. Stir well.
  5. Add sour cream and eggs, mixing well.
  6. Pour batter into a 9x13 inch baking pan.
  7. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Allow cake to cool completely before frosting.

Stevia-Sweetened Cream Cheese Frosting

2 cups heavy whipping cream
2 Tablespoons softened butter
8 ounces softened cream cheese
1 teaspoon vanilla extract
Liquid stevia to taste (I use about 20 drops)

In a large bowl, whip cream until soft peaks form. Add softened butter, cream cheese, vanilla, and stevia – whipping until well combined and smooth. Spread over cooled cake. Store in refrigerator. Makes about 20 servings.

Low Sugar Super Moist Chocolate Cake

Part of what makes this cake so moist is the use of sour cream. It doesn’t hurt that we use an entire cup of coconut oil. Bring on the healthy fat! You can use regular whole wheat flour if you like, but whole wheat pastry flour (ground from soft white wheat berries) really helps make this cake less dense.

So here’s to this amazing Low Sugar Chocolate Cake. Now we can have our cake and eat it too and not even have a sugar crash afterward. Of course, we will also still be eating our veggies with this lovely side of chocolate. Amen and amen.

Whole Wheat Stuffed Cheesy Bread

Homemade, soft, pull-apart bread stuffed full of melted cheesy deliciousness? Oh yes.

What inspired this recipe, you ask? It was pure and total selfishness and that’s the truth.

See, I was serving salad as a main dish for our lunch. The salad was to include mixed greens and other veggies plus flavorful chunks of chicken, so I knew all my men would enjoy it. But I also knew that if I didn’t feed them something a little more substantial with their salad, I’d be hearing the “now what can I have to eat” question right about the time we finished putting salad bowls into the dishwasher.

See? It was selfishness.  I did not want to hear that question. I am over that question. That question makes all mothers want to run in unladylike fashion to the far corners of anywhere but the kitchen. Am I right? I am right.

So I searched online for a fun new kind of bread to go with our salads. The boys all thought I made the bread to treat them to something special. Don’t tell them otherwise. Yes boys. I was June Cleaver delighted to make you this special treat for lunch. (And also, I am very, very selfish and wanted to keep your bellies full until the next actual meal time so that I wouldn’t hear the question.)

Now that my confession is out of the way and you understand the heart behind the recipe, you too can be selfish and make this for your family. This might be the best selfish act you and I will ever commit.

Whole Wheat Stuffed Cheesy Bread (adapted from this recipe)Yum

Dough

1 teaspoon honey
3/4 cup warm water (about 110°)
2 1/4 teaspoons active dry yeast
2 Tablespoons melted butter or coconut oil
2 cups whole wheat flour (I use freshly ground flour from hard white wheat)
3/4 teaspoon sea salt

Cheese Filling

2 cups shredded cheese (I used Colby jack for this)
1 Tablespoon grated Parmesan cheese
1 teaspoon garlic powder
1/4 teaspoon sea salt

In a large mixing bowl, stir together honey, water, and yeast. Allow mixture to sit for about 10 minutes until it becomes foamy. Add melted butter (be sure it’s not too hot so it won’t kill the yeast). Stir in flour and salt until well combined. Knead dough on a floured surface for about 5 minutes. (Here’s a video showing you how to knead dough.)

Place dough back in bowl, cover, and allow dough to rest/rise for about one hour. Meanwhile, mix cheese filling ingredients in a bowl.

Heat oven to 450°. Divide dough in half. Roll each half into an 8″ square. Scoop about 1/2 cup cheese mixture onto one side of each square. Fold the dough over the cheese and press edges lightly together. Use a sharp knife to slice the dough into 6-8 one-inch strips, stopping just before the folded edge. Sprinkle remaining cheese evenly over the top of the prepared bread.

Bake for 12-15 minutes or until bread is golden brown. Serve right away. Makes 16 Cheesy Bread Sticks.

Note:  In the following pictures, you’ll notice that I doubled the recipe.
Instead of 2 cheesy breads, I made 4. I didn’t want to run out. Remember the selfishness.

And there you have it. A delicious act of selfishness. This was a perfect side with our salads. This bread also tastes great dipped in pizza sauce.

Low Sugar Peanut Butter Cake with Peanut Butter Cream Frosting

Hallelujah, this peanut butter cake has less sugar than most breakfast muffins! This isn’t difficult, of course, because who decided it was a good idea to stir a bunch of sugar, corn syrup, and white flour together and call it “breakfast?” My apologies to all the donuts, poptarts, and poofy-puffs out there who just got their feelings hurt. It’s really not your fault.

Indeed, not only do I serve this for desserts or snacks, I have been known to serve it for breakfast.

Now I know what you’re thinking. “This girl makes cake for breakfast all the time!” Okay fine. You caught me. (Other breakfast cake recipes: My Original Breakfast Cake and Pumpkin Breakfast Cake)

We do quite a few breakfast cakes around here, and I keep inventing more ideas. This is because breakfast cakes are easy and filling. My current favorite way to make breakfast is to bake a cake the night before, frost it with stevia sweetened frosting, then wake up to a ready-made meal. Pull out applesauce and fresh berries, and breakfast is served.

Here’s a little known secret about muffin and quick bread recipes: The batter can usually be spread into a 9×13 inch pan and baked into a cake. If you sub out white flour with whole wheat, replace the large amount of white sugar for a smaller amount of sucanat or honey, you have yourself a delicious and fun breakfast.

Serve meat or eggs with your cake if you need additional protein to start your day. Always serve fruit with your breakfast. (Sometimes I’m bossy.)

1/4 cup butter, softened
1/2 cup natural peanut butter, softened
8 ounces cream cheese, softened
1/2 cup heavy whipping cream
1 teaspoon vanilla extract
Liquid stevia

Whip together all ingredients until thick and smooth, sweetening with stevia to taste. Spread over cooled cake.

Low Sugar Peanut Butter Cake with Peanut Butter Cream Frosting

Before anyone else can say it, I’m going to. “Did you see how much fat is in that frosting?!?!”

Mm-hmm. If it isn’t obvious to you by now by reading posts from this butter and coconut oil loving girl, it should be very clear to you how important I believe it is to eat plenty of healthy, real fats. Our brains need fat to thrive! (Why yes I have researched this for hours and hours.) It just so happens I’m nourishing my brain by eating this cake with a thick layer of frosting.

The low amount of sugar in this cake (which I cut into 24 pieces, by the way) combined with whole grains and healthy fats makes for a very nourishing treat. In case you’re wondering, the reason I use cream cheese and cream in my stevia sweetened frosting recipes is because when whipped together, those cream products provide bulk (taking the place of three cups of powdered sugar). Also – it’s cream cheese and cream! Does life get any yummier?

So there you go. If you haven’t served cake for breakfast yet, do this. Tell your kids I said, “You’re welcome.”

Simple Pumpkin Pancakes

It might be apparent to you at this point that I am on a big pumpkin kick right now. First Pumpkin Breakfast Cake, then Pumpkin Cheesecake, now Simple Pumpkin Pancakes. It’s just one more way to add vegetables to our table, plus it’s delicious – so why not? That, and I have oodles of pumpkin puree at my house right now, so I’m making everything I can think of. My family rejoices.

It is important to note that I often use butternut squash in many of the pumpkin recipes I am making. Pumpkin and butternut squash are interchangeable in recipes. Many a pumpkin pie at my house is actually butternut squash pie, but don’t tell.

Want to know how to easily cook a pumpkin (or butternut squash)? Cooking them whole is the easiest way I’ve found to cook them to make puree. Once pureed, I use it right away or freeze it until I need it. Awesome, nutritious goodness!

These Pumpkin Pancakes stir together in just a few minutes and taste fantastic. Veggies for breakfast…woot!

Simple Pumpkin PancakesYum

1 1/2 cups whole wheat flour (I use freshly ground hard white wheat)
1 teaspoon baking powder
1/4 teaspoon sea salt
1 teaspoon ground cinnamon
2 eggs
1 cup pumpkin puree
1 1/4 cups milk
1/4 cup melted butter

Whisk ingredients together until smooth. Cook on a hot, buttered griddle, flipping once the pancake becomes bubbly on the first side. Serve with applesauce or real maple syrup. Makes about ten 3-inch pancakes.

Pumpkin Breakfast Cake with Stevia Sweetened Cream Cheese Frosting

If it’s made with whole grain, is low in sugar, includes an entire cup of healthy fat, has 4 eggs, and one of its main ingredients is a vegetable – you can use the words “cake” and “breakfast” in the same title. Of course, nothing is stopping you from using the word “birthday” and “cake” in the same title for this very recipe. After all, who says birthday treats have to be loaded with sugar? I just love that this recipe is healthy and filling enough to be a great breakfast option. I serve this with a side of applesauce and my family loves it!

You might look at this recipe and think that it is surprisingly similar to my Pumpkin Chocolate Chip Muffins recipe. That’s because it is.  ;)  I took the recipe, and made it into a cake with a stevia sweetened Cream Cheese Frosting. See? It’s not so hard to be creative in the kitchen.

Pumpkin Breakfast Cake2

Pumpkin Breakfast CakeYum

3 cups whole wheat flour (I used freshly ground hard white wheat)
1/2 cup sucanat
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon sea salt
1 teaspoon cinnamon
4 eggs
2 cups pureed pumpkin (or one 16 ounce can)
1 cup melted coconut oil (or butter)

Stir together flour, sucanat, baking soda, baking powder, salt, and cinnamon. Add eggs, pumpkin, and melted coconut oil. Spread batter into a 9×13 inch baking pan. Bake in a 350° oven for 25-35 minutes or until a toothpick inserted in the middle comes out clean. Allow cake to cool before frosting.

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Spread over cooled Pumpkin Cake. Store in the refrigerator.

As you can imagine, I will be adding some pureed spinach to this cake next time I make it. Why not, right?

Cream Cheese BLT – The Best Sandwich You’ll Ever Eat

We had decided to go on an unplanned road trip. I was determined to avoid the grocery store and instead work with the abundance of food we had on hand to put together a meal we could take along with us and eat in the van. However, I had no bread, no lunch meat, no tortillas, and no cheese. It was time to get creative.

I quickly made a batch of One Hour Whole Wheat Yeast Rolls. Seriously, these rolls practically make themselves. (Although they are terrible about washing their own dishes.)  I almost always have a supply of bacon and cream cheese on hand because those are staple foods at the Coppinger house, along with butter and cocoa, of course. Therefore, I decided to take my BLT Wrap idea and turn them into sandwiches.

What makes a BLT even better? Cream cheese, of course. This “to-go” meal was a hit, though the sandwiches were a tiny bit messy. Eh, that’s what napkins are for, right?

Cream Cheese BLT

Cream Cheese BLT SandwichesYum

8 ounces softened cream cheese
1/2 cup mayonnaise
8 slices cooked and crumbled bacon
Tomato slices
Lettuce

Mix cream cheese and mayonnaise until smooth. Stir in bacon crumbles. Spread mixture on bread or buns and top with lettuce and tomatoes. Delicious!! This mixture makes enough for 10-12 sandwiches.

The best news of all is that you can add this Cream Cheese BLT Sandwich idea to your Make-Ahead Lunch Box list. Simply make the bacon/cream cheese/mayo mixture ahead of time, prep your lettuce and tomatoes, and put it all together on bread, buns, or tortillas when packing your lunch box. It’s a great change of pace from a regular ol’ sandwich.

Whole Wheat Pumpkin Donuts

After months of trial, illness, starvation, exhaustion, and many other forms of misery (encouraging post so far, Laura) – the Pilgrims and the Wampanoags came together for a great feast on what is now known as The First Thanksgiving. These incredible people had much to celebrate, no doubt.

On their table there was an abundance of lobster, rabbit, chicken, squash, chestnuts, hickory nuts, onions, leeks, dried fruits, radishes, and cabbage – all of the traditional foods you and I always serve to our families on Thanksgiving, right? (I always tear up a little during the carving of our traditional Thanksgiving Lobster.)

Quick question: How did the above First Thanksgiving menu give way to boxed stuffing and canned cranberry sauce that plops out onto a plate? Don’t answer that. But what I do what to know is this:  Where have these Whole Wheat Pumpkin Donuts been all my life? These need to be added to everyone’s Thanksgiving menu: turkey, green bean casserole, sweet potatoes, relish tray, mashed potatoes and gravy, homemade rolls with butter, and a big, huge platter of Pumpkin Donuts. Oh, and don’t forget the Lobster.

These Pumpkin Donuts scream, “Fall is here! Be thankful! Inhale deeply the scent of cinnamon spice! Eat me already!” This is a fall treat that ranks right up there with all things amazing. This donut recipe stirs up quickly, rolls out easily, and fries up into fantastic goodies that might make you pass out. They are great with a cup of coffee or apple cider.

Ingredients
  • 3½ cups whole wheat flour (I use freshly ground hard white wheat)
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ½ cup sucanat (or brown sugar)
  • 2 Tablespoons melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • 1 cup pumpkin puree
  • Oil for frying (I recommend coconut oil or palm shortening for healthy frying)
  • GLAZE:
  • 2 cups powdered sugar (I use unbleached powdered sugar)
  • ⅓ cup buttermilk
  • ½ teaspoon vanilla extract
Instructions
  1. Stir together whole wheat flour, baking powder, sea salt, ground cinnamon, nutmeg, and sucanat. Add melted butter, eggs, vanilla, buttermilk, and pumpkin puree - mixing until all ingredients are well combined.
  2. Roll dough on a well-floured surface.
  3. Cut out donuts and donut holes (makes about 15-20 of each).
  4. Fry dough in hot oil for about 3 minutes or until donuts are golden brown.
  5. Whisk glaze ingredients together and drizzle over warm donuts before serving.

You might laugh at this recipe for several reasons. It is a little different from those I typically share.

First of all…hot dogs?

Yes, hot dogs. Remember how I’ve told you that I really love me a good, all beef hot dog? It’s true. I love sweet peppers, apples, strawberries, and asparagus better. But a good quality beef hot dog tastes really yummy to me. What can I say?

Second reason to laugh at this recipe:  This is not exactly the most inexpensive recipe I’ll ever suggest that you make. I didn’t find my hot dogs on sale, and I got the best quality dogs I could find at the store that don’t contain nitrites. So…cha-ching.  I used real cheese, not American cheese slices, which is obviously, more expensive because it’s real.

I did save by making my own whole wheat tortillas. But other than that? I’m not telling you how much each of these Lazy Dogs cost me. I’ll do it better next time by waiting for a sale on hot dogs. So if these Lazy Dogs are a little more on the pricey side, why am I sharing this recipe with you? Because these Lazy Dogs taste good. Because they are still less expensive than eating out. Because they are a fun, kid friendly (and apparently Laura friendly) food. And because you can make them ahead of time and put them in your lunch box.

I can’t take the credit for this great idea. When I posted my Taco Quesadilla recipe, “Busy Mom in AL” shared this:

Another of our “wraps” are some that we call Lazy Dogs! We boil some hot dogs to plump them up, roll them up with some cheese in a tortilla and heat them up in the oven until the cheese melts! Very good, even cold!

I loved the idea and made them for our soccer games and travel that very weekend. Once I had the tortillas made, the boys got in an assembly line to help put the Lazy Dogs together. Just like that, our to-go meal was ready.

Tortillas (I use homemade whole wheat tortillas)
Cheese Slices (I use Colby jack slices)
High Qualtity Beef or Turkey Hot Dogs (I found Oscar Meyer Angus Nitrite Free Dogs)

Boil the hot dogs just long enough for them to plump. ( <— what a weird sentence.)  Lay one slice of cheese on each tortilla, top with a hot dog, and roll it up. Bake in a 350° oven for about 10 minutes or until cheese has melted.

Make these ahead of time! Warm them in the oven, then serve.

We found that we preferred these warm instead of cold. Still, if you want to pack them to-go, simply bake, wrap, and pack. Easy and fun!

Hot pockets can actually be eaten cold. Who knew?

The Make-Ahead Lunch Box

When I asked you what you needed in a packed lunch, this is what you told me:

  • Quick and easy
  • Can be eaten cold
  • Hearty and filling

These Barbecue Beef and Cheese Hot Pockets are all that plus they are delicious. You can make them big or small, accommodating big or small appetites. They taste great hot or cold. You can make them ahead of time and pull them out as needed. They freeze well. What more do you need? Just the recipe I guess…

Barbecue Beef and Cheese Hot Pockets ~ The Make-Ahead Lunch Box

Ingredients
  • 2 pounds beef stew meat
  • 1 batch homemade barbecue sauce (more if you like)
  • 2 cups shredded cheese
  • 1 batch whole wheat pizza dough
Instructions
  1. Place stew meat and barbecue sauce in a skillet.
  2. Cook on low heat for about an hour, stirring occasionally, until meat is cooked and tender.
  3. In the meantime, mix the whole wheat pizza dough and set it aside to rise.
  4. Once both meat and dough are ready, remove meat from the heat.
  5. Stir in cheese until it is melted.
  6. Divide dough into about 16 pieces.
  7. Roll each piece of dough into a thin circle.
  8. Spoon meat mixture into the center of the circle, then gather up the edges of the dough and pinch to seal.
  9. Place pinched side down on a baking sheet.
  10. Once all dough is filled with meat, allow the pockets to rise about 15 minutes more.
  11. Bake in a 375° oven for 15-25 minutes or until pockets are golden brown.

This would be a great way to use up leftover roast beef. In addition, you can fill hot pockets with any variety of meats and cheeses. They are a great, versatile meal idea!
