Cinnamon Nectarine Muffins

I am well aware that I feed an army each day. But sometimes, the reality of how much food it actually takes to feed this army leaves me with my mouth hanging open.

Take, for instance, the fact that we got 20 pounds of nectarines last week in our Azure Standard order. Within only 5 days, our family had polished off 15 pounds of them. Do you know how many nectarines that is? Neither do I. But it was a lot of nectarines.

As the box was emptying, I decided to get a little bit creative. Some of the nectarines were getting pretty soft – a little too soft to slice nicely. Therefore, into the food processor they went, skin and all. (I did remove the pit. I thought I’d mention that for those of you who were considering throwing the entire piece of fruit directly into the machine. Don’t do that.)  The food processor turned out a very nice nectarine puree, which when stirred into other fine ingredients, turned out a most deliciously moist muffin.

Feel free to sub peaches for nectarines in this recipe. :)

Cinnamon Nectarine Muffins

Cinnamon Nectarine MuffinsYum

1 1/2 cups whole wheat flour
1/4 cup sucanat
3/4 teaspoons baking powder
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1 3/4 cups nectarine or peach puree (4-5 peaches or nectarines)
1/3 cup sour cream
1/4 cup melted butter
1/2 teaspoon vanilla extract
1 egg

In a large bowl, mix together flour, sucanat, baking powder, salt, and cinnamon. Stir in pureed fruit, sour cream, melted butter, vanilla, and egg. Once mixed, scoop batter into well buttered or paper-lined muffin tins. Bake in a 400° oven for 25-30 minutes or until muffins are golden brown. Makes about 15 muffins.

I found that these muffins required a little more baking time than a typical muffin. You may want to prick one with a toothpick to make sure it comes out clean so the muffins aren’t doughy.

Whole Wheat Pizza Swirls ~ The Make-Ahead Lunch Box

The Make-Ahead Lunch Box

I’m excited to kick off our new Make-Ahead Lunch Box series with a fun new recipe I recently tried for my family. We all love these Whole Wheat Pizza Swirls.  Here are my favorite perks to this recipe, and why I think this is perfect for your Make-Ahead Lunch Box:

  • You can make Pizza Swirls ahead of time, wrap them individually, and store them in the freezer until you need them.
  • You can fill the Pizza Swirls with any of your favorite toppings, making this recipe versatile and ideal for accommodating food preferences.
  • These taste great both hot and cold.
  • Pizza Swirls are simple to make.
  • Pizza Swirls are filling and easy to eat.

Whole Wheat Pizza SwirlsYum

1 recipe of Whole Wheat Pizza Dough
1 cup pizza sauce
2 cups shredded cheddar or mozzarella cheese
3 Tablespoons grated parmesan cheese
variety of pizza fillings – your choice – like meat, olives, and veggies
2 Tablespoons olive oil (optional)

Mix Whole Wheat Pizza Dough as directed. On a clean, well floured surface, roll dough into a long oval until it is about 1/4 inch thick. Spread pizza sauce over the dough. Sprinkle with cheeses and your favorite pizza toppings. Roll the dough up, beginning on the long side. Tuck the ends under. Place on a cookie sheet. Spread olive oil over the top if you like. Bake in a 375° oven for about 15 minutes or until the top is golden brown. Slice and serve. Makes about 8-10 Pizza Swirls.

Bonus Tips:

  • Want to pack these Pizza Swirls to go? Once the swirls have cooled completely, wrap them individually and place them in an air tight container in the freezer. Set frozen wrapped Pizza Swirl in the fridge overnight to thaw to pack in a lunch box the next day.
  • Need to eat Gluten Free? Copy the idea and use your favorite gluten free dough recipe.
  • Tired of pizza? Skip the sauce and use turkey or chicken with cheese to make Meat and Cheese Swirls.

Great to Serve with Pizza Swirls:

  • Fresh fruit like apple slices, orange slices, peaches, cantaloupe, pineapple, or pears
  • Carrot sticks, sliced cucumbers, celery, or sweet peppers
  • Olives or pickles

I double, triple, or quadruple this recipe so that I can make lots at once to make my getting-ahead efforts worthwhile. This also means I can make a variety of different Pizza Swirls to have on hand. Our favorites are:

  • Pepperoni and Cheese
  • Combination (meat, cheese, green peppers, mushrooms, olives)
  • Hamburger and Green Pepper
  • Pepperoni and Olive

Easy, Healthy, Delicious ~ Zucchini Recipes

Zucchini Recipes - Easy, Healthy, Delicious

We never plant zucchini in our garden any more. Why? Because about this time of year, friends, family, and people we’ve never met are begging us to please take 3 or 4 or 19 extra zucchini off their hands. Everyone who has zucchini growing in their garden seems to have more than they need. We save our garden space for other great produce, and are happy to “help” others by taking some of their excess fresh zucchini. Servant-hearted, that’s what we are. ;)

If you are someone who has lots of zucchini in your garden, or someone who lovingly takes zucchini from other people’s gardens – here are some of our favorite zucchini recipes:

1. Easy Fried Zucchini

Simply slice zucchini, and lightly stir-fry it in a little olive oil, coconut oil, or palm shortening. Cook until lightly brown, salt, and serve. Unbelievably delicious!

2. Zucchini Brownies

Yes, brownies with zucchini. Does life get any better?

3. Cheeseburger Zucchini Boats

These are easy to make and fun to eat. Perfection.

4. Zucchini Cake

With cream cheese frosting. You’re welcome.

5. Whole Wheat and Honey Zucchini Bread and Muffins

This is what we always think of when we have extra zucchini, right? Made with whole wheat and honey, this is super moist and wholesome at the same time.

6. Chocolate Chip Zucchini Cookies and Bars

No one even knows these have zucchini in them. :)

7. Easy Noodle Stir-Fry

This is one of our favorite “throw-together” meals. You can add any veggie you want, so why not zucchini? You won’t believe how delicious this is.

8. Teriyaki Chicken and Veggies

This is tangy and full of flavor, perfect for fresh zucchini.

9. Chocolate Zucchini Muffins

It doesn’t get any better than chocolate muffins that have a hidden vegetable inside! :)

How to Adapt a Recipe to Make it Healthier

I’m often asked how much Sucanat to substitute for white sugar, or if whole wheat flour can be substituted one for one with white flour. I decided to share a little bit about how I adapt “regular recipes” to make them healthier! Please know that when I say “healthier”…I’m not talking low fat. To me, healthier means real, whole food. Fats


  • If a recipe calls for vegetable or canola oil I switch it out one for one with melted coconut oil or melted palm shortening. It’s a little bit tough to measure out solid coconut oil to an exact needed amount. I just kind of “eyeball it”. If a recipe calls for 1/4 cup of vegetable oil, I make my best guess at how much 1/4 cup of coconut oil (or palm shortening) is while I’m scooping it out…then I melt it down in a small saucepan on the stove. If you are new to cooking/baking…you may prefer to melt it, then pour it into a measuring cup to be sure you  have the correct amount.
  • If a recipe calls for margarine (I gag and then) I switch it out one for one with real butter. This means that if the recipe calls for 1/2 cup margarine, I use 1/2 cup of butter.
  • Usually butter and coconut oil can be used interchangeably. For instance, when I make muffins…sometimes I use coconut oil and sometimes I use butter. It depends on what I have on hand and what sounds good at the moment (coconuty goodness, or rich buttery flavor). If you are unable to eat dairy, you can substititute coconut oil for butter in most recipes.
  • I almost always use melted palm shortening to fry foods (like french fries, onion rings, homemade corn dogs, etc.). Palm shortening does NOT create the same freaky effects from frying that vegetable or canola oils create. This means that foods fried in palm shortening (or coconut oil) are NOT unhealthy!
  • I use olive oil if a recipe calls for just a few teaspoons or Tablespoons of vegetable oil.

Sugars


  • Sucanat (or Rapadura, which is the same thing…just under a different name) can be substituted one for one with white or brown sugar. This means that if a recipe calls for one cup of white sugar…you can instead use one cup of Sucanat. However, I generally cut the Sucanat down just a hair because the flavor is stronger…and because it is more expensive…and because wow…do we really need that much sugar? :)  Sucanat, by the way, is dehydrated cane sugar juice and the healthiest form of cane sugar I’ve found.   • Honey can be substituted for white or brown sugar, but I usually use 1/2 to 2/3 the amount the recipe calls for. This means that if a recipe calls for one cup of white or brown sugar, I only use 1/2 to 2/3 cup of honey. Honey has a rich flavor and is sweeter than sugar. I have not found that substituting honey causes much difference in the consistency of a recipe, even though honey is a liquid and sugar is not. If anything, I find that honey makes quick breads, muffins and cookies more moist…and that’s never a bad thing if you ask me!
  • Real Grade B Maple Syrup can be substituted for white or brown sugar, but I don’t often bake with it (ooh, except for Coconut Macaroons!). I use maple syrup for liquid treats like Chocolate Milk and Smoothies and Ice Cream. If a recipe calls for corn syrup, I use Grade B Maple Syrup instead, substituting it one for one.

Flours

  • I substitute my freshly ground whole wheat flour (made from hard white wheat) one for one in recipes that call for white flour. However, freshly ground whole wheat flour is often lighter in texture, making a one to one substitution possible.
  • If you are using store-bought whole wheat flour, I find that this seems to be a heavier flour. Therefore, I recommend using a lesser amount than the white flour that is called for in a recipe. You may find that this is even true with my recipes that call for whole wheat flour, since I am using freshly ground flour. I receive quite a few comments, particularly on my Honey Whole Wheat Bread from people using King Arthur’s whole wheat flour or another store bought flour that they didn’t need to add in all of the flour the recipe called for. I suggest just adding flour until the dough is the correct consistency…then stop.

Sweet Pecan French Toast Casserole, Basic Cream Muffins, and Poptarts ~ Freezer Cooking Challenge

I was planning to share part of this yesterday, but my website server was down most of Wednesday (ack!). Therefore, I’m sharing the rest of my freezer cooking challenge results all in one post. Actually, since I couldn’t work on my website Wednesday, that ended up being great kitchen time in which I experimented with new recipes and knocked out the rest of the baking I needed to do for this challenge. Sometimes, not being able to work on the computer is a good thing. :)

Tuesday, I made two dishes of Sweet Pecan French Toast Casserole (recipe in {Healthy} Make-Ahead Meals and Snacks eBook). We ate one that morning, and I froze the other one. My freezer is beginning to be super full. Love this!

Yesterday, I rolled out a double batch of dough and made tons of Poptarts. It’s been a while since I’ve made these, so everyone was very excited to have these for breakfast. It’s a good thing I froze half before serving them, otherwise I think the boys would have just eaten them all!

Once the Poptarts were in the oven, I mixed up a double batch of Basic Cream Muffins (recipe in Let’s Do This! eCourse, Lesson 4). I had plans to divide the dough in half, and add in different fruits. But then I got lazy and just dumped blueberries into the bowl. Eh, we like blueberry muffins.

I froze the batter, unbaked, and will simply pull them out some night before bed to bake the next morning. If you haven’t tried freezing muffin batter, you must! I love how easy this is! Here are all the details.

Quick and Easy Shortbread Recipe

High Five Recipes 2

Three ingredients. A super quick snack. Amazing deliciousness. Supplies you always have on hand…

Wait, you do have butter on hand, right? Okay. I mean, we can still be friends even if you have run out of butter, but don’t let it happen again. This has nothing to do with me and my butter obsession. I’m just looking out for you, that’s all. I have your best interests in mind. Opening the fridge or freezer to find that there is no more butter waiting – well, it is reason to panic. It’ll send a woman into a crazed frenzy, causing her to frantically toss a whole frozen chicken and eight packages of hamburger meat off a freezer shelf, hoping in vain to locate a forgotten pound of butter buried in the back under some frost.

It could be that I got going on that paragraph and couldn’t find a logical time to stop. Just save yourself (or me, apparently) the emotional trauma of running out of butter by always keeping a nice supply on hand.

So butter. You’ll need it for this recipe. You’ll also need flour and sugar. Plus a bowl, a spoon, and a pan. That’s it. Could it be any easier?

Quick and Easy ShortbreadYum

1 1/2 cups whole wheat flour (I use freshly ground hard white wheat for this)
1/4 cup sucanat (or brown sugar if you prefer)
3/4 cup melted butter

Blend all ingredients well. Press mixture into a 9×9 inch baking pan. Bake in a 350° oven for 12-15 minutes or until golden brown. Cook and cut into 12 squares.

Quick and Easy Shortbread

As you can see, this is a no-brainer recipe. I discovered it as I’ve been working on a brand new healthy snacks eBook. This shortbread can be stirred up and put into the oven within just a few minutes. We love it because it is just lightly sweetened, and deliciously buttery. It is awesome with a cup of coffee or tea in the afternoon.

It is worthwhile to note that this is not a snack you’ll want to hand your kids while they are running into the living room you’ve just vacuumed. This shortbread is a bit crumbly and needs to be eaten while holding ones head directly over a plate while sitting at a table. Trust me. I know these things.

And one more thing. Go check your butter supply. We’ll all sleep better tonight knowing you’re well stocked.

Bacon Cheese Muffins

I believe bacon is the language of love when it comes to most males, and I happen to like bacon too. You want to know the best way I’ve found to get all of my men-folk out of bed in the mornings? Make bacon. Hoooah! <—that was me grunting out a manly sound, did you hear it? That’s the sound that typically follows the word bacon in our house. “Mmm, bacon. Hoooah!” Based on this idea, I created Bacon Cheese Muffins.

I usually stick with turkey bacon, but it really is hard to beat the taste of the pork bacon I can get from our local farmer. It’s a wonderful, occasional treat at our house – and yes, it does drive the boys out of bed in the morning.

These Bacon Cheese Muffins are easy and delicious – perfect for a holiday brunch. (You may remember seeing this recipe in our free Healthy Breakfast Made Simple eBook.)

Bacon Cheese Muffins

Ingredients
  • 1½ cups whole wheat flour
  • ¼ cup sucanat or brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ¾ cup milk
  • ¼ cup melted butter or coconut oil
  • ½ cup bacon
  • ½ cup shredded cheese
Instructions
  1. Using kitchen shears, cut bacon into bite sized pieces.
  2. Brown bacon pieces in a skillet until thoroughly cooked.
  3. In a mixing bowl combine flour, sucanat, baking powder, and sea salt.
  4. Add egg, milk, and butter. Fold in cooked bacon and shredded cheese.
  5. Scoop batter into 12 paper-lined muffin tins.
  6. Bake in a 400° oven for 15-20 minutes or until muffins are golden brown.

More Christmas Memories – Making Peppernuts

It seems like all week long, I’ve been traveling back in time to the days I was a little girl during the Christmas season. Listening to the Muppets Christmas CD has been such a fun blessing as I remember special Christmas traditions with my mom. And now, I’m thinking about my grandma. Why? Because every year she made oodles of little Peppernuts that we would munch on.

What are Peppernuts? Some of you likely eat them each year just like I did growing up. If not, allow me to introduce you to the best little cookies in the world:

These cookies are a little bit time consuming to make, but they make a large quantity for you to enjoy. They are also wonderful to package up in baggies to deliver to others.

Snickerdoodle Muffins ~ Having Breakfast With the Muppets

As I stated on Facebook yesterday:

I feel a tiny bit silly (but not silly enough to keep it to myself, apparently). Growing up, my mom and I always listened to the Muppets Christmas cassette, which featured John Denver. I loved it SO much. So I just bought the album for myself. I couldn’t hold back. I mean, if you haven’t heard Miss Piggy singing the 12 days of Christmas, you’ve really missed out. (Ah, the memories…)

I have played the songs over and over within the last 24 hours. All I can think about while I listen to this is hanging out with my mom while we wrapped presents and made Christmas crafts together during the month of December.

I had all but forgotten the album existed until my sister-in-law texted something about it yesterday. Memories flooded back. Now I can’t stop listening to it. And I can’t stop smiling. You would think that after over 9 years of being without her, I would realize that calling to talk to my mom isn’t an option. But as I listen to this music, I have had to stop myself several times from picking up the phone to dial her number. “Mom!” I want to shout, “Remember our winter nights together? Remember Miss Piggy singing ‘ba-dum-pum-pum’ in the 12 Days of Christmas? Remember how much fun we had? I just got the John Denver Muppets album on CD and I’m listening to it now with the boys, and they love it as much as we did!”

So since I can’t tell her, I’m sharing this with you. Of all my Christmas memories, I have to say listening to this music while preparing for Christmas with my mom might be my favorite memory of all. I really can’t stop smiling. And crying. And laughing (“mee-mee-mee-mee-mee-mee” – you have to know Miss Piggy to get that one).

This morning, I turned on the Christmas lights, cranked up the Muppets, and tried a new recipe. These muffins are simple, full of cinnamon, delicious, and perfect for Christmas time. My family and I had breakfast with Miss Piggy, Kermit, and John Denver.

Snickerdoodle MuffinsYum

1 1/2 cups whole wheat flour
1/3 cup sucanat or brown sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 egg
1/4 cup melted butter or coconut oil

Snickerdoodle Topping:

2 Tablespoons sucanat or brown sugar
1 teaspoon cinnamon

Stir together flour, sucanat, baking powder, cinnamon, and salt. Add egg, butter, sour cream, and milk – stirring until mixture is well combined. Scoop batter into 10-12 paper lined muffin tins. Stir together the sucanat/cinnamon topping. Sprinkle about a 1/2 teaspoon of the mixture onto each muffin. Bake in a 400° oven for 15-20 minutes or until muffins are golden brown.
