Menu Plan for the Week

Menu planning in the summer is so much fun for me! Winter is fun too, with soups and such. But summer?! With all the fresh produce available? Mmmmm, I love this time of year. Bring on the watermelon, corn on the cob, nectarines and peaches, strawberries, tomatoes….

Sunday, August 10
Creamy orange cooler, toast
Pasta salad bar with lots of chopped veggies, cantaloupe
BLT wraps, watermelon, fried okra, carrot sticks

Monday, August 11
Chocolate chocolate chip muffins, sausage, strawberries
Sloppy cornbread muffins, cucumbers and carrots with ranch, nectarines
Grilled barbeque chicken, tossed greens, tomatoes, corn on the cob, zucchini

Tuesday, August 12
Crepes with cream cheese filling, strawberries and blueberries
Turkey ranch pinwheels, fruit and kefir smoothies
Cheeseburger macaroni, tossed salad, green beans

Wednesday, August 13
Cereal, fruit
Scrambled egg sandwiches, peas, nectarines
Cheesy beef and rice, green beans, zucchini, tossed salad

Thursday, August 14
Green machine milkshakes, scrambled eggs, toast
Pizza boats, carrots, cherries, sweet peppers, olives
Popcorn chicken, cheesy cauliflower cakes, green beans, watermelon

Friday, August 15
Fried eggs, hashbrowns, peaches
Black bean chicken nachos, grapes
Grilled burgers, lettuce and tomatoes, watermelon, zucchini

Saturday, August 16
Whole wheat donuts, raspberries
Leftovers
Chicken patty sandwiches, tomatoes, broccoli salad, cantaloupe

    Hey did your garden recover from the storm? How is it now? Is that where you are getting a lot of your produce!!

    Maybe when I grow up some day (I’m 27 lol) I’ll have a garden!!

      You know, our garden recovered amazingly well after that hail storm. We were shocked! But I guess we shouldn’t be since we know that God is the One who really grows our garden. :)

    Just got our annual pail of fresh (pitted:) Door County cherries. So I made cherry pie and vanilla ice cream for dessert of the week. We have also enjoyed the cherries in fruit salad and on whole wheat french toast drizzled with almond glaze and sliced almonds.

    Another fun food is corn on the cob, though half the fun lies in getting the corn. My girls love going to the farm to pick out the corn. My girls often get to pet the cat or dog, ride on the tire swing and feed goats or cows corn husks. When dinner time rolls around, my girls enjoy shucking the corn and even salting the corn before eating it.

    Fun summer foods abound at the farmer’s market. Marble tomatoes, mini persian cucumbers, purple peppers, fresh berries, squeaky cheese curds, not to mention free samples and often live music. My girls love coming with me to the market! I find that it is a great way to get my girls to try new varieties/eat more veggies.

    Blueberries! We have upick farm about 20 minutes away. We went Friday and got about 8 lbs of berries. By Sunday night, they were gone and I only froze a 1 gallon bag and used 1 cup for scones! The kiddos feasted on those things for 2-3 days. I will have to go back soon :)
