Hope you all had a Merry Christmas! We had a wonderful day with Matt’s dad…although our plans were changed a bit because of a crazy blizzard! We had planned on spending Christmas morning at our house, then making a quick drive to Kansas to see my side of the family, then driving home so Matt could work on Saturday. We ended up having a relaxing and snowed-in Christmas at home instead. It was nice, but I was a little weepy about not going to see my family in Kansas.
Here’s a shot of the drift on our porch, right outside our front door (I was staying warm, taking the picture from the inside!).
I’d estimate that the drift was almost up to my waist.
Gotta love 50 mile per hour winds.
Once we realized that we couldn’t travel…I decided I’d better figure out some kind of Christmas Dinner menu…FAST! I ended up roasting a big chicken with carrots, made some scalloped potatoes and a green been casserole. It ended up being very nice, even though I only had about four hours notice!
I have yet to leave the house since the storm started Thursday (church services were even cancelled this morning), but Matt has been working long hours at the restaurant, which is a part of a motel, which is full of stranded travelers. What a way for them to spend Christmas! Boo.
Hope you’re all staying warm and safe! Here’s our menu for this week!

We got rain, that washed the inch of snow we had, away. This weather is crazy. Sorry you were snowed in. Glad you were all together though.
Wow, did you ever get some snow. We’ve had cold temperatures but no more snow than we’d had a week or so ago. I’ve been having fun playing with my new grain mill! I’m about to make some graham crackers, which is actually why I’m on your site at the moment. Looking for that recipe…
Hope you’re all staying warm and doing well!
The exact same thing happened to us last week…we were snowed in and we couldn’t get to church.
Blessings to you and your family. I will be trying out some of your recipes and letting folks know how great they turned out.
Thanks
Tara McMillan
trying hard not to be jealous of the snow. i would love snow like that
We thought we were something special here in Virginia because of the lovely blizzard that blew through…leaving us here with around 28 inches of snow. We spent two days just snowed in together! It was lovely really!
Sometimes being snowed in can be a good thing. I remember having some fun times playing card and board games, popping popcorn and laughing.
The Recipe Quick Clicks are awesome – thank you!!
