31 Days of Praise – Join Me! {With a Fairly Cheesy Illustration That May Inspire You to Vacuum}

Last night I dreamed about the biggest vacuum cleaner ever. You’ve gotta love the dreams of a homemaker. Yes, sometimes I dream of blenders, too. And also occasionally of butter.

In my dream this time, the huge vacuum came down from the sky and began to hover (no, not Hoover) over my yard. I watched in awe and wondered what exactly it was planning to do. After all, it did have a miracle to work in my home after a lively Christmas holiday in which we had taken several days off from cleaning.

because it was a dream and they don’t make vacuums like that in real life.
 

The enormous contraption continued to hang out in the air above me, as if waiting for me to do what I was supposed to do so that it could perform its duty. But I was preoccupied with several other matters that were making me uneasy. Worry about my kids had been creeping in as I was trying to figure out how to handle each situation. What to do, what to do? And now I had the problem of a giant vacuum buzzing over my yard.

I finally decided that I would need to stop worrying about all the other matters so that I could instead deal with the monstrous vacuum. Since I couldn’t deal with them both at once, this meant that I had to let go of all the worried thoughts floating around in my head. So I did. And umm (this was a dream, remember), when I let go of the yuck that I was anxious about, it all scattered all over my yard. Don’t try to picture it. 

Burden released, I then turned to the vacuum that I was now ready to deal with. But the vacuum ignored me because it already knew what it was supposed to do, and could now get down to business. It lowered it’s powerful hose, and with its amazing suction force, it quickly sucked up every last bit of my yuck and worry. Then it went away. Eureka!

I saw my problems disappear along with the vacuum as I woke from the dream. And I also remembered that we had watched Despicable Me 2 last night (while eating nachos) and the big vacuum thing that sucked up all the Minions is probably partly where the lovely visual in this dream came from.

So what does any of this have to do with 31 Days of Praise? Well, it’s time to learn to let go of what worries us, and to instead embrace Truth, resting in the peace we receive through Jesus. We can not hold on to both at the same time. 

It’s obviously also time for me to vacuum my house.

I had two books on my Christmas list this year. Yay for me – I received them both! I spent a relaxing afternoon yesterday reading the introduction to both books, and decided I absolutely needed to recommend them to you. I love them already. These books are full of TRUTH!

The Bible is our ultimate source for Truth, right? So keep on diving into the Word. Take time to chew on the words, savoring the words of Jesus and the lessons to be learned.

I believe 31 Days of Praise: Enjoying God Anew, by Ruth Myers, and Jesus Calling: Enjoying Peace in His Presence, by Sarah Young, are wonderful additions to our growth and encouragement as we seek God and learn to listen to Him, praise Him, worship Him, and live a life of peace in Him. I read Day One of 31 Days of Praise: Enjoying God Anew this morning, along with all the scriptures that went along with the truths she shared. It was powerful. And I want to say more, but really, I just want you to read it. This stuff is rich.

Jesus Calling: Enjoying Peace in His Presence, by Sarah Young, includes a short devotional thought for us to read each day of the year. I’m waiting until January 1 to start reading through this book. But a few months ago when I was having a difficult few weeks, a friend of mine who owns this book, shared some of the thoughts she had been reading from this. I was incredibly encouraged to read these truths and to be pointed to scripture that applied to my struggles. I love it.

You may also be encouraged while reading through a series I wrote this fall called Raw. It’s a story of my journey during the past year of truly accepting the peace Jesus longs to give us!

I also plan to begin a series in January to encourage simplicity in eating a Real Food diet. Watch for more info coming soon. But starting the new year at the feet of Jesus is most important of all.  Join me in this journey to Truth!

Merry Christmas, Gladis!

We began sponsoring this little darling through One Child Matters back in May. While I know that our $34 donation each month blesses Gladis in so many ways, it has been wonderful to experience the gift she is to us. We have her picture hanging on our tree – another visible reminder to pray for her.

I obviously have nothing to do with this, but I’m still proud.

I wish you could see my boys’ faces when they talk about her. Let’s just say there’s a softness there that one doesn’t normally see when they are talking about their typical boy subjects. They love her as much as I do. (Although they weren’t as impressed with the fact that her hair now goes back into a pony-tail. Whatever.)

We made and sent her a bracelet several months ago, but I’m not sure if it will arrive in time for Christmas. Still, I know that because of our sponsorship, our family is giving our little girl Gladis the best of the best: The opportunity to learn about Jesus.

Gratituesday: I’ll Be Home For Christmas

I think this post is going to sound selfish, as if I’m happy this year because I get to celebrate Christmas my way. But shucks and all that…yeah for me! This year we’re celebrating a relaxed Christmas at home!!

We almost always travel at Christmas time, which is great in and of itself because it means we get to see many loved ones and spend great time with family. I love this, and we’ve made many a wonderful memory through the years. But this year, it worked out for us to be home. We’ll make a short trip later this week to see my side of the family, but for the most part, we’ll be home. Home. Home!!!

Because we’re not traveling, I can focus my energy on many of the fun Christmas ideas I haven’t always had time to do when planning and preparing for a trip. I’m having a blast in the kitchen, making fun Christmas snacks. I took my time wrapping presents – because it’s something I love to do, and I had time to enjoy it this year.

The six of us have planned fun meals for this week, and have a big stack of games we’ve already started playing. Matt and I have had a wonderful time planning the gifts we’re giving to the boys and all the great ways we’ll use these gifts on Christmas day and beyond. I’m keeping our Christmas dinner as simple as possible so that I can relax and enjoy the day with my men. Lasagna for Christmas dinner? Yep. It’s already made and ready to be baked. The boys thought this was a perfect idea.

Ahhhhhh…I am overjoyed with thanks to God for this gift of time at home this Christmas. Let the celebration begin!

White Chocolate Peppermint Popcorn

I got the wonderful idea for this recipe when I was at a friend’s house recently for a baby shower. It’s so simple, yet turns popcorn into an extra special treat.

White Chocolate Peppermint PopcornYum

16 cups popped popcorn (about 1 cup kernels)
1/2 cup melted coconut oil
sea salt
1 cup white chocolate (this works great)
1 Tablespoon butter
1 teaspoon peppermint extract

Stir melted coconut oil into the popped popcorn and sprinkle with salt according to your taste. Pour prepared popcorn onto two cookie sheets or two 9×13 inch pans. Set aside.

In a small saucepan, melt white chocolate and butter together until smooth. Remove from heat and stir in peppermint extract.

Drizzle melted chocolate over the popcorn and stir immediately to coat. Allow chocolate to harden on the popcorn for 30 minutes to an hour. Or just start eating it right away because it’s too hard to wait.

You might think I’m on a bit of a peppermint kick since I’m posting this recipe right after the Peppermint Cream Cocoa recipe. What can I say? I think of peppermint when I think of Christmas.

If peppermint isn’t your thing, you can definitely skip the peppermint extract in this recipe and just enjoy yourself some White Chocolate Popcorn.

Menu Plan for the Week

I’m thankful that I got a little freezer cooking done last week. Over the course of four days, I made a batch of Instant Oatmeal, a double batch of Chocolate Chocolate Chip Muffins, a batch of Peanut Butter Chocolate Chip Muffins, two Bacon Cheeseburger Casseroles, two Cheesy Beef and Pasta Casseroles, four pounds of Sloppy Joe Meat, and a partridge in a pear tree. It feels good to have healthy convenience in my freezer again! (The two casserole recipes are from the {Healthy} Make-Ahead Meals and Snacks eBook.)

Don’t you love how I re-use my freezer bags over and over? I label them, but I’m pretty sure at this point, no one can read them but me.

In other news, it’s Christmas break!! We don’t have plans to travel until later in the week, so we’ll be enjoying a few relaxed days of playing games, eating, eating, playing games, eating, and enjoying Christmas together. I asked Matt and the boys what they’d like to eat this week, keeping in mind that I kinda wanted a break too. We chose easy meals that would be fun and special for Christmas time.

Bacon Cheese Muffins

I believe bacon is the language of love when it comes to most males, and I happen to like bacon too. You want to know the best way I’ve found to get all of my men-folk out of bed in the mornings? Make bacon. Hoooah! <—that was me grunting out a manly sound, did you hear it? That’s the sound that typically follows the word bacon in our house. “Mmm, bacon. Hoooah!” Based on this idea, I created Bacon Cheese Muffins.

I usually stick with turkey bacon, but it really is hard to beat the taste of the pork bacon I can get from our local farmer. It’s a wonderful, occasional treat at our house – and yes, it does drive the boys out of bed in the morning.

These Bacon Cheese Muffins are easy and delicious – perfect for a holiday brunch. (You may remember seeing this recipe in our free Healthy Breakfast Made Simple eBook.)

Bacon Cheese Muffins

Serves: 12
Ingredients
  • 1½ cups whole wheat flour
  • ¼ cup sucanat or brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ¾ cup milk
  • ¼ cup melted butter or coconut oil
  • ½ cup bacon
  • ½ cup shredded cheese
Instructions
  1. Using kitchen shears, cut bacon into bite sized pieces.
  2. Brown bacon pieces in a skillet until thoroughly cooked.
  3. In a mixing bowl combine flour, sucanat, baking powder, and sea salt.
  4. Add egg, milk, and butter. Fold in cooked bacon and shredded cheese.
  5. Scoop batter into 12 paper-lined muffin tins.
  6. Bake in a 400° oven for 15-20 minutes or until muffins are golden brown.
