Easy, Low Sugar, Mini Crustless Cheesecake Recipe (and an amazing Blendtec Giveaway!!)

This has got to be one of my most exciting giveaways to share with you! Why? Because ever since I invested in a Blendtec my kitchen life has become soooo much simpler! I wish I could give one to every person reading this.

I haven’t splattered cream all over my countertops and walls in months. Why? Because I don’t have to whip cream using my hand mixer anymore. Instead, I pour cream into my Blendtec and it whips it for me in less than 30 seconds. It is so, so easy.

I use my Blendtec for homemade applesauce now, throwing cooked apples in peel and all, and it makes beautifully smooth sauce. I use my Blendtec to mix muffin batters, cake batters, cheesecake, and so much more. Of course I use it for smoothies and all the normal blender needs. I use it at least once every day if not three times.

But about the cheesecake! Please allow me to introduce you to one of my favorite new recipes to make:

I throw the five ingredients into my Blendtec, whip it for a few seconds until it is smooth, pour it into muffin cups, and bake. The stevia sweetens it, the small amount of maple syrup takes away any stevia aftertaste, and I’m left with the most delicious treat!

Easy, Low Sugar, Mini Crustless Cheesecake Recipe (and an amazing Blendtec Giveaway!!)

Ingredients
  • 2 8-ounce packages of cream cheese, softened
  • 2 eggs
  • 2 Tablespoons maple syrup
  • 2 full droppers of liquid stevia
  • 1 teaspoon vanilla extract
Instructions
  1. Blend all ingredients together until smooth.
  2. Pour into 12 muffin cups.
  3. Bake in a 350 degree oven for 20 minutes.
  4. Turn off heat, open the oven door, and leave the cheesecakes in the oven for an additional 20 minutes. (Cheesecakes will puff up during baking but deflate while continuing to sit in the oven.)
  5. Transfer cheesecakes to the fridge and chill for at least two hours before serving.

    I’m definitely going to be making this recipe. But I’ll probably skip the stevia and use more maple syrup, because everyone in my family absolutely hates the taste of stevia. But I wish we liked it! And I’d love to win a Blendtec!

    Just received my copy of your book and was so excited!
    Then just found out for health reasons for a couple of us at my house we have to go complelty gluten and dairy free!
    How do I change your recipes to fit our new diet?

      Gluten and dairy free is tricky! I think most of the recipes will still work if you sub a gluten free flour for wheat flour and use coconut milk or coconut cream for the milk. Hope that helps!

    If I was to win I’d give to a friend who could really use it. I have one and LOVE it. I make refried beans in it, knead my bread, make biscuits & scones, laundry soap, lotion, and mostly smoothies and grind my wheat. I’ve used it to make strawberry jam, applesauce, and blended soups. Not sure I could survive without it now that I have one.

    I have gone through a lot of blenders, cheap ones, that just don’t get my green smoothies smooth enough and constantly break. I would love something more powerful that won’t break down so easily. And since we live in East Africa most of the time, it would be great to have something that will last us a long time.

    Man, those cheese cakes look delicious. We usually do a cheesecake for Thanksgiving but I use Vanilla wafers and pipe the filling on to them so they can be perfect bite sized nibbles :) I’m not saying they all make it to Thanksgiving Dinner though. That’s a statement I doubt will ever be true.

    Sounds great. My mom makes a cheesecake sort of thing, but with cottage cheese blended in instead of cream cheese. I’m wondering if half each would be a good compromise. And a blendtec would sure make it easier than doing it parts at a time with an immersion blender.

    I always love recipes like your cheesecake one; they look so tasty and easy, but we’ve never had a good blender (and have come to realize that it really doesn’t make sense to take up the precious shelf space with a low power one; they just aren’t useful for much).     What a great recipe, I love that it’s crustless as I’m always eating just the inside of cheesecake anyways. I love that it uses Stevia, I have the stevia drops in vanilla so this should work great. Can’t wait to try it. Thanks for the recipe and the great giveaway.

    Just made this today (thanks Laura, for the help with an incentive for my kids to finish their lentil soup.) Am out of vanilla extract, so just scraped the insides of the (mostly) spent beans and added to the blender. I also added a few drops of lemon extract. Found a box of forgotten waffle cones in the pantry & whirred those up with some coconut oil, butter, & a tiny bit of sugar to make a crumble to put on top of the cheesecakes. Well received! Just saw the brownie ones to try next. Maybe will add mint EO if we are in a chocolate mint kind mood some time.
