The Easiest No-Bake Cheescake

Ready for the Easiest No-Bake Cheesecake recipe?

This cheesecake is always a hit when I serve it and since it’s so easy to make, I can serve it to guests often.

Ingredient Info

I buy cream cheese at Aldi by the case because it is a great price for great cream cheese (not all off-brand cream cheese is good). So there’s my cream cheese recommendation. :)

Meanwhile, I have learned the hard way that higher-quality whipping cream does not work as well in this recipe. :(  When I used Horizon Organic Whipping Cream, I couldn’t get this mixture to thicken and set up. But when I used regular whipping cream from Walmart, it worked like a charm. So there you go. For this recipe, use low-quality whipping cream. Ugh, who even am I anyway??

The Easiest No-Bake Cheescake

Ingredients
  • 2 sleeves honey graham crackers
  • 2 sticks butter
  • 2 8-ounce packages cream cheese, softened
  • 1 cup raw sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla
Instructions
  1. In a gallon sized Ziploc bag, crush graham crackers with a rolling pin.
  2. Melt butter in a small saucepan.
  3. Pour crushed graham crackers and melted butter into a 9 x 13 inch pan.
  4. Stir ingredients together and pat it down to create crust. Set aside.
  5. In a high power blender or using a hand mixer, blend together cream cheese, sugar, whipping cream and vanilla until mixture is combined and thick.
  6. Smooth mixture over the crust. Chill for at least two hours before serving.

This cheesecake is great as-is, but you can also add fresh berries to make it fancier. Or, you can top it with candy bars for a fun treat! (One week, I had a package of a variety of candy bars that I wanted to get rid of so I used them up for a college student lunch. It was a huge hit!)

If you study the above picture, you’ll see that on the left, I used the cheapo whipping cream that actually thickened. On the right, I used good whipping cream and the mixture remained runny. I served it to our guests anyway and it all tasted great. But now you can see what I was talking about regarding whipping cream above. :)

Easy Cheesecake Topped Treat Recipes

After you read this list of Easy Cheesecake Topped Treat Recipes, you will most definitely need to stock up on cream cheese. Most of us would agree: cream cheese makes everything better. And usually, it is on sale this time of year.

Why make treats topped with cheesecake? Do I even need to explain this?

You see, the treats in and of themselves are wonderful. Muffins, cookie bars, you can’t go wrong. But then if you whip up a cheesecake mixture and bake it on top of the already wonderful treat? Well, this is where we all sing and dance and shout for joy. Cheesecake-topped muffins! Cheesecake-topped cookie bars! SERVED FOR BREAKFAST!!!! With a cup of coffee or a glass of milk. This is the most delicious.

We just shared the latest and possibly the best, our Whole Grain Chocolate Chip Cheesecake Bars. These are a favorite because of the chocolate chips sprinkled over the cheesecake.

 

That recipe came about by tweaking our Whole Grain Raspberry Cheesecake Bars recipe. We simply switched the raspberry jam for chocolate chips. I personally like the raspberry variety better. AND, you can switch out the raspberry jam with any flavor you like!

Say yes to these Easy Pumpkin Cheesecake Bars and you’ll be happy you did. They are perfect for an autumn treat!

Of course, we tweaked the bar recipe and turned it into a pie. And then we added chocolate chips. It’s the same recipe, just “fancier” so we highly recommend this Pumpkin Cheesecake Pie.

Now it’s time to talk about muffins. All of these are basic, wholesome muffin recipes with the same cheesecake topping baked on to add amazingness!

How to Make Cheesecake in a Crock Pot (Crustless! Low Sugar!)

You know how I eat these Fat Bombs every day? Well, I also eat one of these Low Sugar Mini Cheesecakes every day.

They are lightly sweet, filling, and full of good fat and protein.

So what’s a girl to do when she runs out of her Mini Cheesecakes on a hot day in the summer? She certainly doesn’t want to turn on the oven to bake more for herself. And I think we all know the waffle iron just won’t work for something like this (but don’t think I didn’t at least consider it for one insane moment).

How to Make Cheesecake in a Crock Pot

How to Make Cheesecake in a Crock Pot

Ingredients
  • 2 8-ounce packages of cream cheese, softened
  • 2 eggs
  • 2 Tablespoons maple syrup
  • 2 full droppers of liquid stevia
  • 1 teaspoon vanilla extract
Instructions
  1. Blend all ingredients together until smooth.
  2. Pour mixture into a crock pot.
  3. Cook on low for 3- 3½ hours or until the center of the cheesecake is no longer liquid.
  4. Turn off crock pot, remove lid, and allow it to sit for 1-2 hours to cool.
  5. Transfer cheesecake to the fridge to chill for 3-4 hours before serving.
  6. Cut into 12 slices.

I forgot to mention – this Crock Pot Cheesecake is crustless. (I’m so used to eating them this way, I forget cheesecakes are supposed to have crusts. Ha!)

Easy, Low Sugar, Mini Crustless Cheesecake Recipe (and an amazing Blendtec Giveaway!!)

This has got to be one of my most exciting giveaways to share with you! Why? Because ever since I invested in a Blendtec my kitchen life has become soooo much simpler! I wish I could give one to every person reading this.

I haven’t splattered cream all over my countertops and walls in months. Why? Because I don’t have to whip cream using my hand mixer anymore. Instead, I pour cream into my Blendtec and it whips it for me in less than 30 seconds. It is so, so easy.

I use my Blendtec for homemade applesauce now, throwing cooked apples in peel and all, and it makes beautifully smooth sauce. I use my Blendtec to mix muffin batters, cake batters, cheesecake, and so much more. Of course I use it for smoothies and all the normal blender needs. I use it at least once every day if not three times.

But about the cheesecake! Please allow me to introduce you to one of my favorite new recipes to make:

I throw the five ingredients into my Blendtec, whip it for a few seconds until it is smooth, pour it into muffin cups, and bake. The stevia sweetens it, the small amount of maple syrup takes away any stevia aftertaste, and I’m left with the most delicious treat!

  • 2 8-ounce packages of cream cheese, softened

  4. Turn off heat, open the oven door, and leave the cheesecakes in the oven for an additional 20 minutes. (Cheesecakes will puff up during baking but deflate while continuing to sit in the oven.)
  5. Transfer cheesecakes to the fridge and chill for at least two hours before serving.

Low Sugar Chocolate Cheesecake Parfaits

There is a really weird thing about my dad.

No, no – hear me out. I don’t mean weird like weird. Actually though, if you think about it we all have our own variety of weirdness, do we not? Oh, we do. We are who we are and we think that anyone who isn’t like us is weird. News flash: We are all weird. Weirdo.

So about my dad. He’s super picky about all things fruits and vegetables. He only likes canned green beans, canned peaches in corn syrup, and iceberg lettuce. When he comes to visit and I offer beautiful trays of fresh fruit and steaming bowls of vegetables and he’s like, “What is this broccoli stuff? Hmm, peaches with fuzz. You mean people actually eat asparagus?”

And when it comes to strawberries? I can’t even believe I’m related to him because he will not touch a strawberry. He says it’s the seeds. Oh but he is missing out on one of the finest pleasures of this life on earth.

None of this in and of itself is weird. The weird part is that somehow in a conversation about what we do and not not like, when the subject of beets came up, my dad said, “Beets? Oh, I like beets.”

What?!? He won’t eat a fresh strawberry, a peach off a tree, or about fifty other fruit and vegetable options – but he’ll eat a beet? So weird.

I don’t even like beets. I think they taste like dirt. (Not that I’ve actually eaten dirt.) I’ve tried but I just can’t like them. See, and this makes me weird to those of you who do like beets. I told you we are all weird.

Since my dad won’t eat strawberries, I will continue to eat his share and my share plus all the other strawberries I can get my hands on. They are my favorite.

Our family recently combined two of our favorite recipe ideas: Low Sugar Strawberry Cheesecake Parfaits with Chocolate Whipped Cream. The result is a delicious Chocolate Cheesecake Parfait. Of course, I used strawberries with the chocolate cheesecake to make these. But you could use blueberries, bananas, and whatever other fruit you might like.

Low Sugar Chocolate Cheesecake Strawberry Parfaits

Ingredients
  • 2½ cups heavy whipping cream
  • 8 ounces softened cream cheese
  • 3 Tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 Tablespoon real maple syrup
  • Liquid stevia to taste (I use about 20 drops) (Use a few Tablespoons of sugar if you prefer.)
  • 1 -2 pounds fresh, sliced strawberries
Instructions
  1. Place all ingredients (minus the strawberries) into a blender.
  2. Whip until smooth and creamy.
  3. Spoon mixture into bowls or cups – layering them with sliced strawberries.

Otherwise, I’ll stick with the other dozens of fruit and vegetable options I do like and I’ll eat strawberries like there’s no tomorrow. Low Sugar Pumpkin Cheesecake Cups

Pumpkin Cheesecake Bites

In preparation for Thanksgiving Day, I made a big Turkey, Cheesy Mashed Potatoes, Gravy, Stuffing Muffins, Green Bean Casseroles, Sweet Potatoes, Cranberry Sauce, Pineapple Fluff Salad , Pumpkin Pies, Pecan Pie Bites, Whipped Cream, and Apple Pies. I know what you’re thinking. You’re thinking the same thing I’m thinking. There may not be enough food! What will we do if we run out of food?

So I made more food. Just in case, you know?

Actually, I’m not worried about having enough food. But looking over that list, there is a definite shortage of cheesecake. It also occurred to me that I might enjoy a low sugar dessert on Thanksgiving day. That is why I took my Low Sugar Pumpkin Cheesecake recipe and adapted it to make fun these Pumpkin Cheesecake Cups.

We can all sleep better now knowing that along with the other 26 dishes on the Thanksgiving buffet, there will also be low sugar cheesecake. I’m not sure the day would have been complete otherwise.

Low Sugar Pumpkin Cheesecake Cups

Low Sugar Pumpkin Cheesecake Cups

Ingredients
  • Shortbread Crust:
  • 3 cups whole wheat flour (I use freshly ground hard white wheat for this)
  • ½ cup sucanat (or brown sugar if you prefer)
  • 1½ cups melted butter
  • Pumpkin Cheesecake Filling:
  • 2 8-ounce packages softened cream cheese
  • 1½ cups heavy whipping cream
  • 2 cups pureed pumpkin
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • Real maple syrup or liquid stevia to taste (I used 4 droppers full of stevia)
Instructions
  1. Make crust by stirring flour and sucanat together in a bowl.
  2. Add melted butter, combining well.
  3. Press mixture into 24 paper-lined muffin cups.
  4. Bake in a 350° oven for 10-15 minutes or until golden brown.
  5. Allow crust to cool completely.
  6. Blend all pumpkin cheesecake filling ingredients together until smooth.
  7. Scoop into prepared shortbread crust cups.
  8. Spread until smooth.
  9. Chill in refrigerator for at least two hours before serving.

I found it fun to use fall-colored muffin cup liners for the occasion. Come Christmastime, I’ll use red and green. :)

Low Sugar Pumpkin Cheesecake Cups

I made the filling with stevia and was concerned that others might not like them as a result. But since the shortbread crust has a little sucanat and is so buttery and yummy, that balances the taste out for others. As for me, I think they are perfectly sweetened. In fact, I’m having to hold back to save the majority of these for Thanksgiving day. After all, there would be a definite void on the table if there were only 26 food choices and no cheesecake whatsoever.

Chocolate Cheesecake Dessert

Not that you have to wait until Valentine’s Day to make this, but just in case you’re starting to think about hearts and chocolate and treats with the ones you love – I thought you might be interested in this recipe. You should probably make one now, then another early next week, then another on Valentine’s Day. Or would that be considered cheesecake overkill? (Is there such a thing?)

Remember this Chocolate Cheesecake Pie recipe I shared about this time last year? Here’s another similar idea using stevia to lightly sweeten. I also used my Shortbread recipe for the crust this time since I’ve discovered what a great, buttery crust it makes. It does not get any easier than this! (Here are Pumpkin Pie Bars with shortbread crust and Pumpkin Cheesecake with the same crust. Told you I love it.)

Easy Chocolate Cheesecake DessertYum

2 8-ounce packages cream cheese, softened
1/2 cup cocoa powder
1 teaspoon vanilla extract
Liquid stevia to taste (I use 30-40 drops)
2 cups heavy whipping cream
Baked and cooled Shortbread Crust

Cream together softened cream cheese, cocoa powder, vanilla, and stevia. Set aside. Whip cream until soft peaks form. Fold in cream cheese mixture until smooth. (I actually throw all ingredients together in my BlendTec and let it do all the work of whipping and blending at the same time.)  Spread mixture over cooled Shortbread Crust. Cover and chill for about two hours until set. Makes about 18 servings.

Crustless Cheesecake Cups

High Five Recipes 2

Cheesecake is one of my favorite desserts. In fact, I believe I will have my boys make these for my birthday on Saturday. Since I’m turning 40, perhaps I could have them double this recipe so we can have 40 little cheesecake cups. (Why, so I can gain 40 pounds as I celebrate?)  Yeah, we’ll just stick with a single batch.

Crustless Cheesecake CupsYum

2 – 8 ounce packages cream cheese, softened
1 1/2 cups heavy whipping cream
1 teaspoon vanilla extract
3/4 cup real maple syrup or 1 1/2 cups unbleached powdered sugar

In a medium sized bowl, whip the cream until soft peaks form. In a separate bowl, beat together cream cheese, maple syrup, and vanilla. Fold whipped cream into cream cheese mixture. Scoop cheesecake mix into about 20 paper-lined muffin cups. Refrigerate or freeze until ready to serve. Top with fresh fruit.

These Crustless Cheesecake Cups are so easy to make and since they freeze well, they can be made ahead of time. You can even serve them frozen. Delish!

Healthier Cheesecake Brownies

Warning: The following post is full of calories, sugar, and rich gooey chocolate. Reading this post will not result in any weight gain, neither will you have a sugar crash when you are finished looking at the pictures. However, baking and actually eating these Cheesecake Brownies in real life is a different story – especially if you struggle (like I do) with over-indulging in such things as cheesecake or brownies or a fantastically incredible combination of the two. These are made with healthier ingredients such as whole grain flour and unrefined sugar, but it’s not like these are made of green leafy vegetables. Oh how I wish. Therefore, I recommend that if you make these Cheesecake Brownies, you should plan to take them immediately to a potluck or otherwise heavily populated event where there are many servant-hearted people to help you consume them. Participating in a short time of “quality control” before taking them to an event is acceptable, as long as you don’t feel that you need to test the quality of the entire pan of goodies.

Trust me, I am offering this warning from the botom of my sugar-loving heart. I am the girl who, when asked, “Which do you like best? Brownies…or Cheesecake?” I always answer with an definite and enthusiastic, “Yes!!!” I love them both, but put them together and that pan of Cheesecake Brownies and I could have a fine party, just the two of us. But I’m also working hard to get in shape and to eat a healthy diet. Cheescake Brownie binges and my running shoes just don’t go together.

In other words:  Share the love, people.

Cheesecake Brownies

Brownie LayerYum

1 cup melted butter
2 cups sucanat
2/3 cup cocoa powder
2 eggs
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour

Cheesecake Layer

2 – 8 ounce packages of cream cheese, softened
2 eggs
1/2 cup sucanat
1/2 teaspoon vanilla extract

Mix together melted butter, sucanat, and cocoa powder. Add eggs and vanilla, stirring well. Mix in flour and stir until thoroughly mixed. Spread the brownie batter into a 9×13 inch baking dish and set aside.

In a separate mixing bowl, cream together all cheesecake layer ingredients:  softened cream cheese, eggs, sucanat and vanilla. Once it is well mixed and creamy, spoon the mixure into about twelve “plops” over the top of the brownie batter.

Use a butter knife to “cut” and swirl the cheesecake mixture through the brownie batter.

Try not to hyperventilate while you anticipate how good these will taste once they are baked. Good luck.

Bake in a 350° oven for 30-40 minutes or until a toothpick inserted in the middle comes out clean. Allow the Cheesecake Brownies to cool completely before slicing. Makes 24 servings.

I will say it again:  This recipe makes twenty-four servings. These cheesecake brownies are not to be consumed by you alone – not even in 24 different settings. Not even if you first ate a good dinner. These are to be shared. Do not forget this important information.


Oh, but when you do indulge in your Cheesecake Brownie, I give you full permission to thoroughly enjoy yourself. Savor each rich, chocolaty, cream cheesy bite of gooey goodness. Put your feet up, turn on some music, and make it an event. And if you think of it, call me. I like events that include brownies and cheesecake.

What would you answer to the question of:  “Which do you like best? Brownies…or cheesecake?” (“Yes” is an acceptable answer.)
