Matt only knew my paternal grandmother for a few years before she died. One of his favorite memories of her is the response she gave after being told that extra people were coming to join us for a meal. “Great! I’ll just add more water to the soup,” she said with a chuckle. Seeing as we weren’t having soup that day, he then watched in amazement as she “added water” to stretch the meal she had prepared.

Grandma seemed to make more food appear out of no where, and in record time, too. The table was soon filled with all varieties of goodness. The little bowls of this and the small dishes of that didn’t look like they would feed the number of people we were anticipating. But sure enough, just like the loaves and the fish, Grandma had enough to fill us all with twelve (give or take) baskets left over.

What was Grandma’s secret? Well, she just always had a good supply of food on hand. And not just frozen meat that would take hours of time to thaw and prepare. I’m talking about home-canned fruits and vegetables, homemade bread and cookies – food that she could pull out and feed people in a moment’s notice.

This Sunday, I was blessed with the opportunity to “add water to my soup.” We already had plans for another family of 6 to join us for lunch after church. Their 6 plus our 6 would equal 12. (Thank you, Laura, for stating the obvious.)  I was making a roast, carrots, potatoes, and gravy. My friend was bringing rolls. It would be a simple, nothing-fancy, but tasty meal.

Then, at the last minute, a friend of my brother’s family needed a meet-up place here in Nebraska. The friend would come here, my brother’s family would drive up from Kansas and pick him up, and guess what? They’d make it in time for church. Bliss! I got to worship with my brother and his family of 6 and feed them all afterward!

So let’s see here. Six plus six is twelve, plus six more – that’s 18. Then there was my brother’s friend who was meeting us by lunchtime. Did I mention he was a 6’8″ college athlete? And last but not least, a friend of Elias’ needed a place to hang out after church while his family headed out of town. That made a total of 20 people. Super fun.

Thankfully, I had decided to make two roasts instead of just one – just in case. I had loaded the roasting pan with potatoes and carrots. I caught my friend (the one already planning to come over with her family) between class and worship, filled her in on the crazy, and asked her to pick up extra rolls – plus maybe a bucket of ice cream? She was happy to help stretch our meal.

Once I got home after church and started making gravy, I also started a big pot of green beans and another big pot of corn. Our simple meal remained simple, yet because there were so many different foods to choose from (roast, potatoes, carrots, gravy, rolls, green beans, corn, ice cream), it looked like a feast. We had plenty to go around and even a little bit left over. Phew!

How to Stretch a Meal for Extra Company

All of that to say, when it comes to hospitality and being able to say, “The more the merrier!” always try to have a few key foods on hand to help stretch your meal. Here are a few items I’ve thought of that you might have on hand to pull out and serve quickly, or that you can grab at the store if you have time/accessibility:

  • Frozen food that cooks quickly like green beans, peas, or corn
  • Applesauce
  • Canned peaches, pears, or mandarin oranges
  • A jar of pickles
  • A can of olives
  • Quick breads or muffins you might have in your freezer
  • Fresh fruit like strawberries, sliced apples, oranges, or grapes
  • A fruit salad, mixing several different fruits you have on hand
  • Canned or fresh pineapple poured into a nest of cottage cheese
  • Raw veggies like carrots sticks, celery, sweet peppers, or cucumber slices
  • Crackers and sliced cheese
  • Tossed salad
  • Grape or cherry tomatoes
  • Chips and salsa
  • Dessert such as cookies or ice cream

If you’re opening a can or jar, I suggest pouring its contents into a nice serving bowl to make your “spread” look tasty and welcoming for your guests. Did you grab a bag of prepared salad on the fly? Pour it into a bowl and throw in some grape tomatoes to make it pretty.

Don’t hesitate to ask your guests to pick something up at the store on their way to your house (especially if they offer or ask what they can bring). Most of the foods on the list above take little to no prep time, but will stretch your meal and offer your guests a delicious variety.

Gratituesday: The Girls In My Life

“So Laura, don’t you ever wish you had little girls?”

People ask me that question quite often as they observe my boy-filled life. My answer is always “no.” God knew what He was doing when He gave me all sons and no daughters. Plus we snatched up little Gladis, who gets to be our daughter/sister/friend/delight in Honduras.

I didn’t have any sisters when I was growing up either – just one brother. You know what I have now? All kinds of sisters! My brother’s wife, Matt’s sister, Matt’s brothers wife, plus all the Christian sisters God has put in my life. So, do you know what I might have someday? Four daughters, if God sees fit that all of our boys get married.

Guess what else I have? Several nieces. Precious, sweet girls who give me excuses to buy pink, giggle, and talk about fingernail polish. Girls who tell me, “Hey, cute jeans” and “I like your sweater.”

I do sometimes wonder what my daughter might have looked like had I actually had one. I usually look no farther than my brother’s girls. If I had a daughter, I’m pretty sure she would look a lot like this:

This niece of mine looks so much like I did when I was little. 

I got to see two of my Kansas nieces briefly this weekend. My oldest niece, who is 12, and also a lot like I was when I was her age, spent some time in the kitchen with me, helping me and chatting as we worked on lunch.

While we worked, she asked me, “Do you ever wish you had girls, Aunt Laura?” It was a moment I had not planned, but it was the perfect opportunity to stop my work and look right into her eyes. “Not even a little bit, Kailey,” I told her, “because God gave me nieces like you instead.”

You should have seen her smile. She’s old enough and mature enough to hear my heart. I’ve said it to others, but there was something pretty special about sharing it directly with her.

I’m so thankful for all the girls God put in my life to love on. Bring on the shopping trips, hair styling, and shared smiles as we watch the boys race through the room at lightening speed.

Making Whole Wheat Quick Mix

On my agenda this week:  Get out the Whole Wheat Quick Mix and make use of it!

I decided to scrap our Friday night menu plan last week and make Quick Mix Pancakes, eggs, and fruit instead. Easy, and perfect for a laid back Friday night. My guys love it when I make breakfast for dinner. Since I used my Quick Mix, which meant that making dinner took only a few minutes.

I have some strawberries and kiwi in the fridge so I think I’ll also make a Quick Mix Fruit Pizza. Click on the picture below to grab the Quick Mix recipe, plus many recipes you can make with the mix!

Because “You’re Worth It”

The commercials that tell me to buy something, do something, go somewhere, treat myself, or indulge because “I’m worth it” really turn me off. In fact, for years, they actually made me rebel against the idea of doing anything for myself. After all, I’m called to serve my family and others selflessly – not spoil myself, take lots of “me time,” and spend money on stuff to make me feel pretty and vivacious.

I still agree with my old way of thinking when it comes to being called to serve my family and others selflessly. Indeed I am. Feelings are fickle, so while I could spend money on something to make me feel pretty, that very same item might make me feel fat and ugly five minutes later. “Me time” can be wasted and unproductive, leaving me more hesitant to serve, instead of refreshing me.

However, I’ve discovered that the me that rebelled against taking time, energy, and even money to care for myself was not actually always being selfless. Much of the time, I played the role of a martyr. With a sigh, I’d tell myself things things like, “Maybe someday when the kids are older, I’ll have time to exercise/write/play games/craft/relax. I must give to my family and others until I drop – but it’s okay. I’m called to serve. I’ll eat healthy when I have more time. I don’t really feel like drinking water or eating fruit. I’ll just grab these five cookies and a Pepsi to pick me up. I hate to leave the kids with anyone else, they really just need me. Someday I’ll have time to myself.” And on and on my thoughts would take me.

While I was deceiving myself into thinking I was being selfless, I was truly feeling sorry for myself and the role I played in our family. More than that, I neglected my spiritual, emotional, and physical health in the name of selflessness.

Because You're Worth It

Ladies – I’m here to tell you that there is nothing selfish about taking good care of yourself. Stop listening to lies and feeling guilt over what God calls you to do for yourself and your health. You are so very worth it! God says so. Your physical, emotional, and spiritual health are vitally important – no matter your season in life. You can not effectively care for your family when you are exhausted, under-nourished, sluggish, sleep deprived, unhappy, dehydrated, moody, out of shape, or depressed.

You know what I discovered after years of believing that I didn’t have time to spend in the Word each day? That I don’t have time not to spend time in the Word each day. That my time is more effectively used, more productive, and more focused when I take time out to sit with Jesus each day. So what if there are dishes to do?  I can do them cheerfully later, after I’ve let Jesus refresh my spirit.

You know what I discovered once I stopped thinking I didn’t have time, energy, or desire to exercise? I found that I love exercise, need exercise, and that regular work-outs give me more energy and help me get more done each day.

You know what I discovered once I stopped eating and drinking so much sugar? I think more clearly, sleep so much better, don’t have sugar crashes, and crave more water and nutrient filled foods.

You know what happened when I started listening to and obey God instead of the world or myself? I became a more loving wife, a more patient mother, a more cheerful person, and a more Christ-focused servant.

I still struggle sometimes. I fight anxiety. I get angry. I don’t always get enough sleep. Life isn’t perfect for any of us. Puke happens. Kitchens explode. Laundry piles multiply. Kids disobey. Husbands aren’t perfect. I fail.

But His strength is made perfect in my weakness. I only recognize this truth when I am taking care of myself.

This might mean I’m spending money on health care, good food, exercise classes, or going to my massage therapist. This might mean I’m taking a few minutes to dress in a cute outfit and fix my hair. This might mean I close my door while I’m writing so that I can enjoy uninterrupted time doing what I love to do.

Then, I come before my husband, my children, my church family, my community, and any stranger I run into with a godly focus, a more peaceful heart, a more energized body, and with a clear and alert mind.

Am I worth it? Oh yes, I am. And so, my friend, are you.

Menu Plan For the Week

Today has been so much fun! We already had plans for several to come over for lunch after church. Then, out of the blue, it worked for my brother and his family of six to drive up for the day. Suddenly, I had 20 people at my house for lunch. It was loud, crazy, and awesome. I love it when God gives us bonus blessings we weren’t counting on!

Have You Tried Making This Amazing Peanut Butter Yet?

You will love how delicious this Homemade Super Creamy Peanut Butter is. If you haven’t tried it yet, do it! Our family eats it by the spoonful. :)

Here’s what D’Ann said about the peanut butter this week:

I am truly in love with this recipe! I simply scoop the palm shortening into the food processor with an ice cream scoop that equals 1/4 cup, add the maple syrup, salt and lastly the nuts. I whirl it for 5 minutes, and the end result is pure yummy magic! I make 3 jars at a time and just store them in my pantry. I’ve never had an issue with it going or tasting bad. I also store mine in the cabinet, and it spreads and acts like brand name pb. My family is in love. :)

Gifts You Can Include In a Letter To Your Sponsored Child

Just yesterday we received a postcard from Gladis, the little girl we sponsor through One Child Matters. I keep falling in love with her. Her card was so sweet. She’s too little to write herself, and you could tell that she was telling someone what to write.

…I am happy for the present you sent and will take care of it. I like to color and draw and I like books with pictures in them…

What was the present we sent? Last fall, Malachi and I made her a bracelet. We went all out with pinks and purples. I couldn’t help myself.  Malachi was so sweet and loved making this for his “little sister-friend” in Honduras.

One Child Matter Gifts

Writing and sending letters to your sponsored child is such a meaningful way to connect with them. Including little gifts is also a lot of fun and always blessed the child, not to mention, it always gives us such joy to share what we have.

What items are okay to send along with a letter to your sponsored child? One Child Matters does have strict guidelines. Rightly so. They know what ships well and what doesn’t. They don’t want your gifts to become damaged on its way to your child. Here are some great suggestions:

  • Photos of your family
  • Colored or painted pictures your children have created
  • Flat paper items – like bookmarks, stickers, or postcards

The gifts need to fit inside a standard business sized envelope. Always make sure you include your child’s ID number with the enclosure. The bracelet we sent wasn’t flat, but it did fit the other guidelines, so it was okay. Here are items you need to avoid sending:

  • Bulky items and used gifts
  • Seeds, cash, coins, and magnets
  • Crayons, chocolates, and candies (these can melt along the way and ruin your letter)
  • Electronic items and musical greeting cards

When our family was blessed to spend a day at the One Child Matters in Colorado Springs last year, we got to spend several hours sifting through sponsor correspondence. We checked to make sure ID numbers were on enclosed items, and readied them all to be sent overseas. It was so much fun (and a little tear-jerking to me) to see all the sweet love going out from sponsors to their children.

With our newest letter heading out to Gladis, I plan to print off some coloring pages for her – seeing as she likes to color. :)  That should ship well and be fun to receive.

Homeschoolers Always Never

Homeschoolers are brilliant, hard working, and mature. They always do well on standardized tests. They each play at least one musical instrument, beginning at the age of three. They can each speak at least two languages fluently. They always graduate early and become neurosurgeons at the age of 22. They always come from huge families.

Homeschoolers never get enough social interaction. They never have opportunities to participate in group projects or have class parties. They never eat Doritos.

Homeschoolers Always Never

I always cringe inside and I never feel like conversations like this build anyone up or glorify God. So can we stop with stereotypes and generalities already? Statements about what homeschooled kids always or never do is painful, ignorant, and downright silly. I’m not just talking about what those who “don’t get homeschooling” say. I’ve heard some of these statements from homeschooling families too.

Is it true that public schoolers always get into trouble, do drugs, disrespect their teachers, and slough off during high school? Of course not.  Just like there are all varieties of students in the public school – ranging from scholarly to bully to godly to needy to athletic to healthy to highly intelligent to drama queen – so it is with homeschoolers.

Can I tell you a homeschooling truth? Some students are only “average” (which, for the record, is defined as normal, typical, and common – and therefore nothing to be ashamed of). Some of them struggle to read and write. Some knock the socks off the ACT and other standardized tests, but some do not. Some are musically inclined, while some are completely tone deaf. Some love learning foreign languages and some barely master speaking the English language using complete sentences. (Like, yeah. I know right? Totally.)

Homeschooling does not ensure that kids will grow up to follow the Lord. Public schooling does not turn out robots. Homeschooling does not make kids anti-social. Public schooling does not provide more opportunities. Raising kids, no matter how you choose to do it, takes work, patience, and an immense trust and reliance on God – the One who created all of us uniquely for His glory. I am raising four boys in the same house, feeding them the same food, passing down jeans from one boy to the next, reading them the same books, teaching them the same math, and talking the same talk daily to all of them at the same time. Would you believe that all four of them are all very different in their talents, interests, learning styles, and personalities? I’m fairly certain that none of them have any interest in becoming a French speaking, cello playing, neurosurgeon. Thankfully, I realize that this doesn’t mean I have failed as a homeschool mom. I see their God-given talents shining in other ways.

Homeschoolers, public schoolers, private schoolers, adults, children, men, and women are individuals with unique talents, abilities, strengths, and weaknesses. Each one of us is always never anything less than God created us to be. Let us never make a generalized statement that might belittle that truth.

P.S. I thought it may be of interest to note that last night, our family ate a meal with a group of homeschoolers. We all shared a bag of Doritos.
