Gratituesday: Moms Vs. Girls

March 19, 2012 by Laura 26 Comments

As our home school basketball season came to an end, we celebrated last Friday with an awards night with players and their families. It was wonderful night filled with recognition of players’ accomplishments, an ice cream social, a highlights video, and oh yes – basketball games.

But not the regular basketball games we’d been watching our kids play all season. Nope, this time, the siblings and parents got to be involved. There was a short game for all younger siblings to play against each other. Then dads and sons played a game against each other – and moms and daughters played a game against each other.

Most of the moms weren’t too excited to get out there and play, but many of them did it anyway. I can’t tell you how much fun it was – even if I was about to pass out after the first half. (I was having so much fun that I sort of forgot to pace myself…)

I’d like to offer my heartfelt apologies that I have no pictures to share of the event. Okay, sorry – that’s a lie. Even if I did have pictures, I’m very sure I would not be sharing them with you here. Having documentation of me out on the court might scare you away permanently from ever coming back to my blog.

All the gals were great sports about this and guess what?! The moms won!! (Okay, okay – they gave us a 10 point lead going into the game. But stillllll.)

I’m grateful for a super fun night celebrating with our teenagers. And I’ve got to say – I’m thankful I could still walk the next day. ;)

Flaky Cream Cheese Pastry – The Healthy Way

March 15, 2012 by Laura 94 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

Back in my former life – the one in which I innocently and cheerfully ate Chillsbury* dough from a can – I loved making a cream cheese pastry dish that always got rave reviews. It was simple. You spread a can of Whillsbury* crescent dough on the bottom of a pan, throw in some cream cheese filling, top it with another round of Gnillsbury* crescent dough, bake it, and eat. I loved that stuff, as did everyone else who ate it with me.

Gone are my days of eating biscuits or crescents from a can. Oh, and can I just pause to say this:  I do not miss that vulnerable and insecure feeling that always came from never knowing when the can would pop open and dough would ooze out. Maybe it is just me, but waiting for the biscuit can pop always put me slightly on edge. Yeah, it was probably just me. I have can-popping-biscuit-bursting-forth issues, I think.

Anyway, I had forgotten all about this delicious dish, which is crazy, because hello? It does have cream cheese in it. It occurred to me recently that the perfect replacement for Billsbury* crescent dough would surely be my go-to whole wheat yogurt dough. Why I hadn’t thought of using it to figure out a new Cream Cheese Pastry dish, I have no idea. But I finally thought of it, tried it, and here it is. My family devoured it for breakfast this morning, which means that next time, I have to double it for sure!

*name changed to protect the innocent guilty

Flaky Cream Cheese PastryYum

Dough:

1 3/4 cups whole wheat flour
1/2 teaspoon sea salt
1/2 cup melted butter
1/2 cup plain yogurt

Filling:

1 – 8 ounce package of cream cheese, softened
1 egg
1/2 cup real maple syrup (sugar, sucanat, or honey would work too)
1 teaspoon vanilla extract
1-2 Tablespoons lemon juice (optional)

Mix together all four dough ingredients and knead lightly to form a nice ball. Divide in half. Press one half of the dough into an 8×8 inch baking dish.

Whip together the cream cheese filling ingredients. Pour filling over the bottom crust.

Roll the second half of the dough into a square and place it on top of the cream cheese filling.

Bake in a 350° oven for 30-40  minutes, or until crust is golden brown.

Allow pastry to cool slightly before slicing and serving.

Tell me – am I the only one here with can-popping-biscuit-bursting-forth issues? I’ll admit it right now, it makes me jumpy just thinking about it. ;)

I Can’t Find Healthy or Organic Foods Where I Live! {No More Excuses}

March 13, 2012 by Laura 26 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I live in a small town in rural Nebraska. I am surrounded by smaller towns, and tiny towns, and lots and lots of big, huge corn fields. We can drive to Lincoln to a Trader Joes in one hour, or to Omaha to a Whole Foods store in two hours. Neither of those options is convenient since we don’t make trips to Lincoln or Omaha very often.

Therefore, I just assumed that eating healthy foods would be out of the question for our family. Where was I supposed to buy high quality food without having to drive 100 miles to go shopping? And then, would I even be able to afford the food at those specialty stores?

For our family – thinking outside the box when it comes to finding healthy food resources has been a very good idea. There are healthy food options all around us – we just had to go about our grocery shopping adventure a lot differently than what we considered to be “normal”. We do purchase a few items at our local grocery stores and at Walmart – like bananas, clementines, and a few other organic produce items that they might carry occasionally. Otherwise, here is how our family now purchases groceries:

We order from a health food co-op.

Azure Standard has been wonderful for us. We order online once a month, then pick up our food when it is delivered right here in town. Their prices are unbelievably good. I encourage you to look into joining a health food co-op as a way to find whole foods at a reasonable price. If Azure Standard doesn’t deliver to your area, look through all the comments on this post to learn of a health food co-op option that might be available where you live.

azure_standard

Here’s a sample of what our food co-op order looks like.

We order food online.

Ordering groceries online has been an incredible help and money saver for us. Not only has this been super convenient, it saves us money and gives us all kinds of wonderful whole food options – right at our fingertips. And having groceries delivered to our front porch – it does not get any easier than that! Tropical Traditions, VitaCost, Mountain Rose Herbs, Cultures for Health, and Amazon
are our favorite go-to online resources. We watch for sales and free shipping deals, and have learned the best way to get good prices while shopping online. Here is a detailed list of what food we purchase from each of these online resources.

We buy food from local farmers.

We are blessed to have friends and farmers around us who raise animals in a way we appreciate (grass fed, free range, no hormones or antibiotics, etc). Our eggs, milk, beef, lamb, and chicken all come from sources close-by. North Star Neighbors is located a bit far away compared to our milk and eggs sources, but our town happens to be right on their delivery route. Yep, for a small delivery fee, North Star Neighbors delivers meat right to our doorstep. We pick up our milk and eggs once a week from friends. In addition, we take advantage of our farmer’s market each summer and fall. If you’re looking for local healthy food options, I encourage you to check out LocalHarvest.org to see what resources are available where you live. Also, start asking around to others who you find are interested in healthy eating to see what their food sources are. You might get a few crazy stares from people, but hey, you might also find out who sells raw milk or grass fed beef in your area!

We grow food in our own garden.

Our garden provides us with green beans, tomatoes (for sauce and soup), peppers, potatoes, corn, and a variety of other yummy foods that are simple to preserve. Also, if we don’t have space to grow something, but others around us do, we aren’t afraid to make a trade or work out some sort of deal in exchange for picking some produce in their garden or on their fruit trees. Again, it never hurts to ask! Often, we get garden/tree produce for free when people have an abundance. Then, we get to work, canning, freezing and dehydrating all the produce. Here are all of my posts detailing what and how we preserve foods.

We work with our local grocery stores to special order food.

Have I mentioned that it never hurts to ask? In the past, we’ve talked to our local grocer about special ordering cases of food for us, and they’ve been happy to accomodate. They have even given us a good deal on these purchases since they know that since we’re buying the entire case, none of that food will spoil on the shelves.

grandcentralordersm.JPG

As always, remember that we are all different, our food sources are all different, and we all have different family sizes and budget amounts. We’re all on the same team here, just looking for ways to encourage one another on our healthy eating journeys.

What are the best healthy food options where you live? Have you found ways to think outside the box when it comes to whole food purchases?

Gratituesday: The Great Outdoors

March 12, 2012 by Laura 38 Comments

We have been experiencing some unusually wonderful weather lately in Nebraska.I don’t ever remember a winter this nice, nor do I ever remember experiencing such great spring like weather during the month of March. Recently, while our family should all be in the house cleaning and working on home improvement projects, we’ve instead been outside playing Air Soft and shooting hoops. Not only have we not been cleaning, we’ve been tracking in all kinds of extra dirt and leaves. It’s lovely – and it’s all over the house.

The boys have been asking for popsicles and have been hoping to soon turn the sprinkler on under the trampoline. I think it is a little early to be thinking about both of these, but hey, it never hurts to ask, right? While I can’t accommodate them on the sprinkler, sure, I can make popsicles. Why not? After all, I did ask my husband to grill steak the other night when it was a warm fifty degrees outside. Of course he was happy to oblige.

Over the weekend, I was able to go out and play a couple rounds of HORSE with my boys. Then because it was so lovely outside, and I couldn’t stand the thought of going back in to face the dirt and leaves (which were by that time joining forces to plan a party in every corner of my house), I stayed out even longer to continue to shoot baskets for another half hour with my teenager – just he and I. It just doesn’t get any better than that. And, you should be impressed to know that I got my hair caught in the nearby gangly weeds only twice while retrieving my ball. Not too bad, eh?

My personal trainer (aka, awesome friend Jen) and I have been able to take long walks outside for our work-outs lately. Walking outside in the sunshine for miles instead of walking lap after lap after lap (after lap, after lap…) on the indoor track – there is no comparison. There is just something about the sun and mild weather that is invigorating, making us want to stay out longer and work harder. It probably helps that the bugs aren’t out in full force yet. Seeing several centipedes on the sidewalk is almost endearing, as opposed to breathing in and having twelve gnats threaten to fly into your mouth and down your throat. Yes, this kind of weather totally works for me.

Now, I am Nebraskan enough to realize that this kind of gorgeous weather may soon be blown right down south while a freezing cold northern wind blows sheets of ice right down my pitiful and frigid neck – any day now probably. But as long as the sun is shining and providing ideal moments to spend outside with the people I love – I’ll be abandoning the vacuum and dishwater to catch some Vitamin D and to make some memories.

We actually had a calm, stay-at-home weekend. I’m not sure the last time that’s happened. Well, I guess I should interject here that our boys are preparing for Leadership Training for Christ (LTC) in April, so there’s always a lot of running back and forth to practices on Sunday afternoons. Therefore, I’m sure if Matt or the boys read that statement, they’d think I was nuts to call this weekend a calm one. I just mean that we didn’t travel anywhere. We were home more than we were away. We got a little laundry caught up. We had friends over. Busy is relative, right?! :)

Homemade Vanilla Extract For Sale – While Supplies Last! (SOLD OUT!)

March 10, 2012 by Laura 13 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

It’s vanilla time! We have been “brewing” a big batch of homemade vanilla extract for six months, and it now bottled and ready to send to you!

Our vanilla is absolutely pure, with nothing added. Read how we make (and how YOU can make) homemade vanilla extract in this post. Because we use a large number of vanilla beans in each batch and allow our vanilla to sit for six months, this vanilla is double strength, which means that you can use half the amount called for in a recipe. Yes, that means that each bottle of our vanilla will last you twice as long as a typical bottle of vanilla!

To cut down on cost, we’d love to encourage you to look into making your own vanilla extract. It’s easy, it’s fun, and it’s a big money saver. Plus,  you’ll find that homemade vanilla extract makes a great gift.

For those of you who do not desire to make homemade vanilla, or if you want a quality vanilla on hand to get you by until your own vanilla is ready to use, we are happy to offer our Heavenly Homemakers Vanilla Extract!

If you are interested, I advise you to act fast. Our supply usually sells out within 24 hours – last time, it only lasted for five hours!

The cost of shipping is included in the price. The price you see is the total price you’ll pay. Matt and the boys will package and send your vanilla to you right away, so you should receive it within a week to ten days. Quantities are limited – sales made on a first come, first serve basis…thanks for understanding!

This vanilla is available to U.S. purchasers only.

Easy Tuna Casserole

March 7, 2012 by Laura 60 Comments

Once you try this Tuna Casserole recipe you’ll be asking, “Who needs Tuna Helper?” Although, for the record, I used to really like Tuna Helper and would buy it anytime I had coupons to purchase it at a great deal. I used to also really like Hamburger Helper – which is why I came up with this Cheeseburger Macaroni recipe to make myself feel like I was eating Hamburger Helper. Shock upon shock, my fix for Tuna Helper uses the same basic Creamy Mac and Cheese recipe, only instead of adding seasoned hamburger meat, I add tuna. See how fancy I am? (snore)

If you haven’t tried my trick for making Creamy Mac and Cheese – cooking the pasta in the milk – you really need to give it a try. We love this, and it really has made for some great recipe combos! (Cheeseburger Macaroni, Three Cheese Garlic Chicken Pasta, Baked Three Cheese Chicken Pasta, and yes, the very exciting Tuna Casserole.)

Easy Tuna Casserole

I’m not sure why, but I absolutely love tuna casserole served with frozen peas. Well, I cook the peas – I don’t serve them frozen. You knew that, right? Okay, just checking.

This Tuna Casserole is THE PERFECT go-to meal if you don’t have meat thawed for dinner or for the times you need something quick and wholesome. Easy as this is, it’s one of our family’s favorite meals!

Are you a fan of tuna? Do you like tuna casserole? Don’t you just love frozen peas? (The cooked kind, of course.)

Healthy Desserts!! (And Great Ebook Sales!)

March 6, 2012 by Laura 17 Comments

I’ve told you about my sweet tooth. You know I love my desserts. I seem to think I can’t live without chocolate. Daily. At least once. If not twice. It can be a problem.

That’s why I like to have fun experimenting with natural sugars and whole food ingredients to put together tasty treats that are better for us. Does making these natural sugar treats give me permission to eat the entire pan? Um…no. Unfortunately, I still have to use some self control. Unless it’s chocolate. Oh wait, no – even if it’s chocolate. Especially when it’s chocolate.

Here’s an example of one of our favorite natural sugar treats:  Coconut Macaroons. They are easy to make, use real maple syrup to sweeten them, and hey look at that – this recipe doesn’t even contain grains!

Coconut Macaroons

4 egg whites
1/4 teaspoon sea salt
1/2 teaspoon vanilla
2 Tablespoons arrowroot powder
1/2 cup real maple syrup
2 cups unsweetened, shredded coconut

Separate eggs, putting the whites in a mixing bowl and the yolks in the fridge for tomorrow’s breakfast. Beat the whites and salt with a hand mixer until soft peaks form. Continue to beat and add vanilla, arrowroot powder and maple syrup, one at a time. Fold in the coconut. Drop by spoonfuls onto a cookie sheet lined with parchment paper. Bake at 300 degrees for 30 minutes, then turn the oven to 200 degrees for one hour to let them crisp up.
