Follow Me on PinterestI’m always one of the last people to get on board with something new and fun. There are so many neat things “out there” that one can participate in, therefore I typically make a very slow decision to join in – simply because I have to know for sure that it is going to be worth my time.

Many of you have shared how much you love Pinterest. You’re right – what a cool opportunity to find wonderful homemaking, cooking, and decorating ideas!

In case you’re new to Pinterest, this may help you understand what it is a little bit better:

“Pinterest lets you organize and share all the beautiful things you find on the web. People use pinboards to plan their weddings, decorate their homes, and organize their favorite recipes. Best of all, you can browse pinboards created by other people. Browsing pinboards is a fun way to discover new things and get inspiration from people who share your interests.”

Because of the urging of many, I finally asked my friend Emily, who happens to be a Pinterest expert, to help me get my site up and running with Pinterest. She’s been working hard to pin many of my archived recipes and tutorials (plus many other posts!), getting them all organized into categories to make it easy for you to follow me there and find what you are looking for. A  huge thanks goes out to Emily for all of her hard work on this.

Freezer Cooking During the Week of the Chicken

If you had any doubts that this truly was the Week of the Chicken, after this post, you will know for sure and for certain that I have encountered chicken madness at my house. I kind of had a hard time letting go of the fact that the chicken was such a good price at the store. Thus I kind of had a hard time not going back to the store multiple times to buy more chicken. Which means that I kind of had a big chicken party in my kitchen for several days in a row, working up some chicken recipes for the freezer.

In the meantime, we’ve been eating a lot of chicken too. So chicken crazed have I been, that when for lunch one day this week I actually fed my family something with leftover hamburger meat in it, my husband – supportive guy that he is – paused before taking a bite and said, “Wait! It’s the Week of the Chicken! Are you sure we’re allowed to eat beef this week?”

Ha! I love living with comedians.

Speaking of comedy…Why did the chicken cross the road?

I can’t even finish it. That joke is totally over-used and not at all funny. Oh, but my family made this one up a couple of years ago:  What do you get when you cross a brick with a chicken?

Bricken Nuggets!!!!

Okay, I’m done now. I’m sure I’ve got you all completely worried that I’ve lost my head this week while cooking and prepping pounds and pounds of chicken for the freezer, but truly, you can relax. I’m fine. I promise. And also, I’m out of chicken. It’s all socked away in the freezer. Now I’m planning to move on to asparagus!

Yes, next week will be the Week of the Asparagus.

Except for not really. ;)

Okay…chicken. I’m here to tell you about my Week of the Chicken.

Right after getting back home with my first round of chicken packages, I made loads of Chicken Nuggets. I cooked some up for lunch…

But more importantly, I put together oodles of pre-made chicken nuggets for the freezer. See – here’s my chicken-nugget-assembly-line. I filled cookie sheets with nuggets, froze them, then baggied them up to pull out in the future.

The following isn’t very exciting, but the next day, I cut chicken into bites, cooked it in olive oil, and baggied it up for salads.

Day Three:  Chicken cooked in bbq sauce. That will be great for sandwiches next week.

I grabbed one more round of chicken from the store (about 9 more packages), and put together several pounds of Crunchy Ranch Chicken. This is probably our favorite way to eat chicken. The recipe is not featured here on the site, but it is in the What To Do With the Chicken in Your Kitchen ebook – which can still be purchased for $1.50 if you hurry.

I am now officially ready to chicken out. What I mean is…I’m tired of chicken. I don’t want to look at chicken again for a long time.

Or at least until tomorrow.

Creamy Crock Pot Chicken and Rice

Hey, check it out! This is a chicken recipe AND a crock pot recipe! It’s as if the best of both worlds just came together for a lovely party, don’t you think? I mean, there is not much more exciting than combining the Week of the Chicken with a Crock Pot Recipes post, I’m pretty sure. (This makes it clearly obvious that I don’t get out much.)

And guess what else? Many of you have asked that I try to experiment and come up with some healthy alternatives to boxes of Rice-a-Roni – and I think this recipe might just meet that need for some of you. When it was all said and done, I thought this dish kind of looked and tasted rice-a-roni-ish. Try it and see what you think.

If you haven’t tried making my homemade Onion Soup Mix, I recommend throwing it together to use for this recipe. Store bought onion soup mixes typically have not-so-good for you ingredients in them that I avoid. The homemade mix is super easy and very inexpensive.

Creamy Crock Pot Chicken and RiceYum

2 cups brown rice (uncooked)
Sea salt
3 cups water or chicken broth
1 cup heavy cream
1-2 pounds boneless, skinless chicken breast
2 Tablespoons Onion Soup Mix

Place rice in the bottom of a crock pot, and sprinkle it generously with salt. Pour water or broth and cream over the rice. Cut chicken breasts into serving sized portions and place on top of the rice and liquid. Sprinkle Onion Soup Mix over the top.

Cook on a low setting for 4-5 hours. Serves 6-8.

Gratituesday: Gardening Season Begins

I know it doesn’t look like it yet, but there will soon be lettuce and spinach in this garden plot you see here…

Talk about exciting! I didn’t even know Matt was planning to get started on our garden until he already had this space dug up and some seeds planted. With the weather being unseasonably warm for days on end, we are starting a little earlier this year.

We’ve begun making plans for the rest of our garden. Matt even found some asparagus to plant, which will be a fun new addition this year. Now we just have to work on not getting too hungry for the fresh produce while we wait for it to grow!

I’m so thankful that we have space to plant a garden – and that we were able to get started with our growing season already. Bring on the fresh salads!

Preparing My Kitchen for Soccer Season

Bring on the soccer games, the soccer practices, the soccer referee schedules (for our older boys), and the general soccer craziness at our house! While the spring soccer season isn’t as intense as the fall season (college soccer takes place in the fall on top of our boys’ soccer) – I still find myself running a little bit ragged trying to keep everyone in clean, matching soccer socks during these weeks of games.

Having a few extra food items ready to warm up quickly to feed the family is helpful during any time of the year. But during soccer season, I find it especially helpful. Therefore, last week, I spent a few hours each day working to get ahead. As a result, I’ve got a freezer packed with healthy, easy to grab and heat meals.

In case you’re interested in seeing a few photos to document my efforts (and some recipe links to motivate you toward getting some food in your freezer too!), here you go:

I made a double batch of Taco Corn Fritters for lunch one day. We ate half, then I froze half. These will warm up great in our toaster oven.

I made two Green Bean Casseroles (using a recipe in this holiday ebook), but I added some hamburger meat to make it an “all in one meal”. These will be perfect to throw into the oven before or after a game. (And by throw, I really mean “carefully slide”. Please do not throw casseroles into your oven, especially when they are in glass dishes.)

These Creamy Chicken and Rice Casseroles didn’t make it into my freezer, as I served them all for High School Huddle on Sunday. But since I put them together during my “extra cooking days”, I decided they would feel left out if they didn’t have their opportunity for a photo shoot.

I prepared seven pounds of Chicken Fried Steak Strips, froze them on parchment paper, then put the frozen strips into freezer bags. These are wonderful to have on hand to grab out and cook up quickly. I was lazy and put several layers on one cookie sheet just to see if it would work. Yay! It worked. (Good thing too, or I would have had seven pounds of chicken fried steak in one huge rectangular chunk!)

We all love these Raw Chocolate Chip Cookie Dough Bites – which sound like a dessert – but are really a high protein, healthy snack. They freeze well, or store well in the fridge.

The following picture is not meant to be motivating at all, but rather posted so that you can feel very sorry for me and say nice things about how awful it is that a mess like this happened in the middle of my hard working cooking time. (Woe is me.)  I had a pint of cream sitting on my counter that I knocked off with my elbow while grabbing a spoon. It was so very sad. :(  And for the record, cream really does splatter quite a long distance across a kitchen.

In happier news, I made Chocolate Chip Cookies for “just in case”. It’s always great to have a batch of cookies in the freezer to grab at a moment’s notice. However, these never made it to the freezer. I ate all 24 of them while consoling myself after I knocked the cream off the counter. Just KIDDING. I packaged them up and sent them with Matt to give to some college students. I think I did eat one or three first – just to make sure they tasted good.

I put my boys to work scrubbing 10 pounds of potatoes, which we baked and turned into frozen hashbrowns. Wow, it’s nice to have these in the freezer for a quick addition to meals.

I put together two big Lasagna Casseroles, which freeze very well and can be baked on a busy day.

Malachi was hanging out with me during one of my cooking times and asked me to take a picture of him doing his math. Hey, if a casserole dish is picture worthy, I’d say my seven year old deserves some camera time too. And no, we don’t require our children to wear fancy button-up shirts while they do their school work. But Malachi absolutely loves his shirt and tie combo and would wear it every day if we let him. Shucks, sometimes we do. Although I do try to wash it occasionally.

Here you see 48 Pigs in a Blanket. They are put together, but unbaked and now in freezer bags waiting for a day when I need something fast to throw into the oven. Oh dear – there I go throwing things into the oven again. Disclaimer:  No pigs will be thrown into my oven at any time during soccer season. After soccer season is over, no guarantees. Kidding. I’m kidding.

Last, I made a double batch of Chewy Granola Bars. These are awesome grab and go snacks. Shucks, if you need to throw these, it’s perfectly fine. Throw them into your purse or a bag, or even throw them across your mini van at your kids. Carefully, of course. Here is a picture of the bars right after I poured them into a pan, before refrigerating and slicing them.

Gratituesday: All Ribs in Alignment

It began last Thursday afternoon.

I was doing a good deal of extra cooking that day, and as the hours ticked by, I began to feel more and more tightness in my right shoulder. This was strange, as typically, stirring and pouring are pain free experiences for me. (That’s a good thing, otherwise my family may never have food to eat!)

By that evening my right shoulder was tied up in a big, huge knot. We likened it to a large potato in my shoulder. I know – we’re weird. But that’s what it felt like. Gradually, the pain started shooting down toward my back bone – or was it actually shooting from my backbone up to my shoulder? By Friday, I really wasn’t sure. All I knew was that everytime I took a deep breath, it hurt. And I couldn’t really figure out where the pain was coming from any more.

I kept thinking that the pain would eventually just go away. Matt worked on my muscles, trying to ease the soreness. A friend worked on me, trying to release the knots. Saturday, I felt quite miserable and had a very hard time not being grumpy. Ice seemed to help, as there was definitely quite a bit of inflamation. But Saturday night, I hardly slept because I was hurting so badly.

Sunday, I finally decided that something needed to be done. (Yes, I know – it did take me too long to figure this out. I guess I just thought it would eventually all go away, you know?)

I called on my wonderful friend who is a massage therapist, just on the off chance that she might be able to work on my pitiful self that afternoon. Joy upon joy, she was available right when I called. I went over, explained my situation, and she said, “It sounds like you’ve got a rib out of place.”

Hmm, well that made sense. After just a few minutes, she discovered that I had not one, but two ribs out. Well, no wonder I’d been hurting so badly with every breath I took.

She worked her magic (which is absolutely a gift from God) and by the time she was done with me – I could tell a big difference! I was still sore, but I’ll take sore any day over sharp shooting misery.

By today, I am feeling much, much better. In fact, I was able to go on a long walk this afternoon and felt great afterward!

I’m so thankful to be feeling better and to be on my way toward healing. What a blessing to have a friend with such a gift, and that she was willing and able to use her gift to help me.

Menu Plan for the Week

Soccer season has started up this spring for our boys. I even have a slight sunburn to prove it. Justus had his first games this weekend, and although we lost both games, it sure was great to be back out at the field again. (This is easy for me to say since the weather was gorgeous!)

Last week, I spent some time filling our freezers with some healthy convenience foods to help keep me sane during soccer season. I’ll share more about my experiences in a few days. Ah, but I love a full freezer!

What Gratituesday Is All About (and how I plan to keep the focus on gratitude)

I began writing Gratituesday posts when my blog was just a baby – I believe back in January of 2008. I loved the idea of focusing one post each week on God’s work in my life – plus it helped keep my thoughts focused on what I was thankful for.

A few months after I began writing my own Gratituesday posts, I opened it up for my readers to also participate in this weekly blog post theme. I added a “Mr. Linky” so that other bloggers could write a Gratituesday post and then link up here. Over time, more and more people began joining in, and soon, we were able to click over and read many Gratituesday blog posts which shared about God’s provision and care. I found it to be inspiring, and a huge dose of God-focused encouragement every Tuesday.

Hey, guess what? I still do. I LOVE reading your Gratituesday posts.

Except for when they aren’t really Gratituesday posts.

I have to say that I can find it a bit discouraging to click on your Gratituesday link and instead of reading about what God is doing for you and your family, I find a tip about how to clean purple sharpie marker ink out of my carpet. As wonderful as it would be to learn this information, this does nothing for my spiritual walk. Nor do your recipe tips or your ideas for decorating on a budget. Again, these are some great posts and wonderful tips, they just don’t really fit with the Gratituesday theme.

Somehow over the course of four years of Gratituesday linking, gratitude got lost. Don’t get me wrong – many of your posts do share what God is doing in your life. Many of you are writing specific posts about what you are grateful for – keep it up!! I love it!

But I’m finding it hard to find the grateful posts among all the posts that tell me how to organize my sock drawer.

I feel yucky writing this post today. I’m not trying to be the mean neighborhood lady who stands on her porch grouching at the kids who are just trying to have fun. I’ve not cracked down on this earlier because I don’t like to be the bad guy. Plus, enforcing that Gratituesday posts remain Gratituesday posts will take a lot of time that I really do not have each week. Do I really want to go in and analyze each post and then decide whether or not to go delete it? No ma’am. I sure don’t.

But enough already of the “how to avoid getting gassy when you eat a lot of beans” posts when Gratituesday is really about giving praise to our Father. (And for the record, I’m making up these non-Gratituesday related blog topics as I go. I don’t specifically remember anyone posting about gas or sock drawers or sharpie markers – just in case you did and you think I’m picking on you.)

The thought has occurred to my husband and me that it might be fun to add some sort of “Heavenly Homemaking Helpful Hints” link-up once a month, so that those of you who do want to link these other wonderful posts full of helpful hints have that opportunity here on our site. We’d love for you to share these homemaking type posts, when it is appropriate, and if we host a link-up for that purpose. What are your thoughts on us adding this feature to our site?? We’d appreciate your feedback on this.

In the meantime, I’m asking you to please join me in keeping the gratitude to God in Gratituesday. Write and share about what you are grateful for. And please thoughtfully link back to my blog on your post, saying something like Join us for Gratituesday at Heavenly Homemakers! – because that’s the kind bloggy thing to do when you link up with someone.

If I feel that a post is not in line with the Gratituesday theme that I know my readers are looking for, I will delete the link. I won’t enjoy myself, but I feel that I owe this to my readers. I’d be ever so, well…grateful…if you’d make this deleting job easier and not give me anything to delete. Simply write and link up a post about what God is doing in your life and we’re all good to go! Because I know that God is working all the time in all of our lives, I’m very sure you can think of something each week to share! And as always, for those of you who don’t have blogs, please continue to share what you are grateful for each Gratituesday in the comments section.

So there you go. Can we still be friends? I’ve been needing to, but not wanting to write this post for several months now. I love and appreciate you all and would like to hear your thoughts on this subject, and on the idea of beginning a new monthly feature/link-up allowing us to share homemaking tips.

Whole Wheat Chocolate Crinkle Cookies

Typically, I am a regular ol’ chocolate chip cookie girl. I began making chocolate chip cookies when I was about eight years old, and made them almost daily in the summer when we had hired hands helping us on the farm. I can make chocolate chip cookies in my sleep. I don’t have to even think about the ingredients or the measurements while I make chocolate chips cookies. And shucks, if I do say so myself, my chocolate chips cookies taste pretty good.

Lately though, my boys have been asking for something a little different. What!? They don’t want the same chocolate chip cookie over and over and over? C’mon. Change is hard for me. And if I really care to admit it – thinking is often hard for me as well. I’d rather make something that is a no-brainer, thank you very much. Don’t they understand?

Okay, fine. A change of pace in the cookie department every now and then is nice. Which is why I played with a chocolate cookie recipe to make it healthier. We all loved the way it turned out. And if you throw some homemade white chocolate chips in these, you’ve got a fantastic “healthy-ish” cookie.

By the way, if you don’t feel like taking the time to make homemade white chocolate chips, I completely understand. Just know that regular store bought white chips typically have hydrogenated oils and corn syrup in them, which I recommend avoiding if at all possible. I did find some healthier white chips at Whole Foods a few months ago that were “clean”, and I noticed that VitaCost and Amazon had some too – so hey, all is not lost!

Whole Wheat Chocolate Crinkle CookiesYum

3 eggs
1/3 cup unsweetened cocoa powder
1 1/2 cups sucanat (or brown sugar)
1/2 cup  melted coconut oil (butter would also work)
1 teaspoon baking powder
1 teaspoon vanilla extract
2 cups whole wheat flour (I use freshly ground flour from hard white wheat.)
1 cup white chocolate chips (optional)

Whip together eggs, cocoa, and sucanat. Stir in melted coconut oil, baking powder, and vanilla. Mix in flour until a nice dough has formed. Fold in white chocolate chips. Spoon teaspoon sized balls of dough on to a cookie sheet, about 2 inches apart. Bake in a 350° for 8-10 minutes. Allow the cookies to sit on the cookie sheet for about five minutes before removing. Makes about 24 cookies.

The dough just looked too yummy, so I had to take a picture. Kind of makes you want to reach into the computer with a spoon, doesn’t it?

These cookies are soft, sweet, and slightly coconutty if you use virgin coconut oil. (Use expeller pressed coconut oil of you don’t prefer a coconut flavor.)
