The Truth About Having a Productive Day

This spring, God gave our family a glorious opportunity to serve in an unexpected way.

It all happened quite suddenly, and before I knew it, there was a precious pink bundle in my lap. We rocked, we prayed, and we loved. We didn’t sleep much.

We made phone calls, had meetings, and did research. We constantly sought God’s best for this wee one and her family.

Day after day, I fell wearily into bed hoping to catch a few hours of sleep before a night-time feeding. I’d see unfolded laundry piled up nearby, reminding me of all I hadn’t done. I knew the dishes were waiting downstairs. I couldn’t remember what my family had eaten but I was pretty sure there were no vegetables involved. I hadn’t checked email, much less answered any inquiries. Bills stacked up on the counter-top and the registration forms for my kids’ prom were threatening to become past due.

Each night, I was very tempted me to say, “Wow, I didn’t get one thing done today.” But God stopped me, convicting me that was a lie the enemy wanted me to believe.

The truth was, I’d changed diapers, made bottles, and rocked, held and loved on a baby all day long. I’d shown my boys how to hold a baby, and maybe even how to lay down their lives for others in the midst of crisis.

I’d made phone calls and advocated for the future of this dear one. I’d gone to a WIC appointment. I’d picked up formula. I comforted, and cooed, and gave tummy time.

Most of all, I’d prayed.

Friends, there is nothing, not one thing, more productive than prayer.

In the midst of loving people, standing in the gap for those who have no voice, and serving the “least of these,” we must never look at the un-done chores and feel as though we’ve been unproductive.

A clean house means nothing when there are hurting and lost people in our midst. A scrubbed kitchen is meaningless when there are little ones to rock and faces to be wiped. Folded laundry is ridiculously overrated when there are naked to clothe and hungry to be fed.

As soon as my arms were free, I baked and I cooked and I washed and I typed. I scrubbed and I organized and I emailed. I felt so productive! I had accomplished so much! My check-list was complete and my chores were diminished!

But the truth had won out. A check-list is just a check-list. Chores are just chores. The true definition of productivity is love.

Loving people is always productive, whether it looks like a home-cooked meal in a clean kitchen or a store-bought pizza on paper plates. God’s love wins. When we listen, obey, serve, and trust, we are productive. When we let the Holy Spirit live through us, when we surrender and let God work, we have done the exact thing God had planned for us to do. This is perfect productivity.

Did you love people today? Then you were productive. Did you pray and trust God today? Then you chose the very best. Did you let God work while you listened to His voice and responded in obedience? You have been incredibly productive.

Put love on your list and check it off daily. You’ll be amazed at how productive you become.

P.S. I wrote and scheduled this post back in April after we’d been caring for a 3-month old girl. Just a few days later, God made us foster parents to a four-year old boy. It’s amazing how God prepares His people! I have to fall back on this Truth every day as I care for  this little boy.

Did I Ever Tell You We Became Foster Parents? (Plus, Final Hours to Build Your Bundle!)

If you’re on my email list, you’ve already been reading about all the latest our house. Indeed, five weeks ago, God made us foster parents.

We weren’t planning on this, but God was. It happened literally overnight, but we see how He has been preparing us for this. Right in the middle of preparing for a high school graduation party for our son #2, we welcomed an adorable 4-year old boy to our home. And here I thought I was busy. Ha!

So here we are. We’ve continued on with our normal high school and middle school schooling, schedules, and soccer games with our teenage boys – all while chasing and re-learning how to parent a little guy. I’m so much in the pre-school mode now that sometimes I forget and speak 4-year old language to my teens: “Justus, did you remember to wash your hands?” Ooops.

It’s all been beautiful and exhausting – a whole new experience in trusting God. He equips us for all He calls us to do, no doubt.

While I was planning to share the fun Early Learning printable books I found to use with B this summer, I realized I hadn’t taken the time to tell you about him in the first place! This is what happens when you’re busy, I guess. Phew!

Super Moist Flourless Peanut Butter Brownies

Like the old saying goes, when life gives you Super Moist Flourless Brownies, switch the almond butter for peanut butter and turn them into Super Moist Flourless Peanut Butter Brownies.

I admit that I often get on recipe kicks at my house. We discover a new recipe we love and we make it thirty times in forty days because we can’t get enough. (Sometimes, but not always, I exaggerate.) So it is with both varieties of these Super Moist Flourless Brownies. They are so incredibly good that we have gone through a ridiculous amount of Almond Butter and Peanut Butter in the past month and a half.

There goes the grocery budget.

Well, only sort of. After all, both of these brownie varieties are super wholesome and full of protein. So I’ll put out a pan of these for breakfast (no one complains, mind you) and because they are so rich and filling, there’s no need for me to add meat to the meal. Therefore, we’re subbing nut butter for bacon on days like this. Money-wise, it’s kind of a wash. Taste wise, well, we love our bacon, but the trade off is brownies. So everyone is happy.

If you’ve tried the Super Moist Flourless Brownie recipe (only 5 ingredients!) you’ll look at this one and notice that the only difference is a direct exchange of peanut butter for the almond butter. It’s too easy!

But here’s the thing: The tiny ingredient switch makes for a significant flavor change. This Super Moist Flourless Peanut Butter Brownies recipe really turns out a treat with the awesome peanut-butter-chocolate taste so many of us love! The Super Moist Flourless Brownies recipe made with almond butter taste like regular, but amazing, brownies.

So we love both. A lot. Like, I’m buying cases of Almond Butter just so we can make brownies. I can’t help it.

Make Your Own Nut ButtersYum

I consistently make Homemade Peanut Butter, which does save a few pennies, but mostly just produces the most amazing peanut butter in the whole wide world. This one is super creamy and spreadable, our favorite. This one is made with straight peanuts, also incredible. Both are nourishing.

I have experimented with making Almond Butter but for the most part, I buy it already made.

Whether you make or buy your nut butters, I recommend using unsweetened, natural butters in these recipes.

Super Moist Flourless Peanut Butter Brownies

Super Moist Flourless Peanut Butter Brownies

Ingredients
  • 1½ cups (12-ounces) Peanut Butter
  • ½ cup honey
  • ½ cup unsweetened cocoa powder
  • 2 eggs
  • ½ teaspoon baking soda
Instructions
  1. Stir all ingredients together until well combined.
  2. Spread batter into a buttered 8x8 inch baking dish.
  3. Bake in a 350 degree oven for 13-15 minutes. (Remove them from the oven when they are just slightly underdone so they come out moist!)

Can you believe, these brownies have taken the place of my Fat Bombs for now? Depending on the day. I guess it’s apparent I really like my chocolate and my peanut butter, in all its healthy forms.

The Importance of One-on-One Time With Your Kids

One-on-one time with your kids? What’s that??

First let me say that I’ve learned that finding one-on-one time with my spouse during these intense parenting years is even more important than finding individual time with my kids. Both are needed, of course. But we are better parents when we’ve set our marriage on a firm foundation, together, on purpose.

So here we are, my husband and me, juggling lots of kids and lots of life and lots of God’s goodness. God has been teaching us how to truly “love our neighbor,” which has provided countless, beautiful opportunities to serve people while striving to keep in step with the Spirit and seek the will of God. Our kids join us in these endeavors and hmm, did I mention that we homeschool? We also work for a living. Details, details.

Instead of saying, “We are SO BUSY!” we like to say, “We live a full, blessed life!” God is perfectly good and faithful. I can’t stop being overjoyed about His provision in our lives.

In the midst of it all, we have two adult sons in college and two teens still living at home. There’s a lot of coming and going and going and coming. (I’m talking about both food and schedules, of course, as it all comes and goes at a rapid rate at our house.)

So one-on-one time with our kids?

How is it even possible? Why is it actually necessary?

I’ve been privileged to be with my kids for many hours of the day for their entire lives, thanks to the blessing of homeschooling and working from home. But even with that, it’s very easy to let busyness create a disconnect. Our schedules can be so hectic that sometimes we look back and realize we haven’t sat down as a family to eat a meal at the table together for over two weeks. Or maybe we have, but we’ve had guests and while that’s a beautiful thing, we still must take a few steps back in order to regroup and check in with one another.

One-on-one time with our kids? It’s a special zone. It’s extra comfortable. It’s relaxed. Fun.

It’s the place where no one has to wait their turn, share the attention, vie for position, or talk louder in an effort to be heard. Learning to share space is necessary for building character and preparing for a life of unselfish living. But sometimes, it’s truly good to be able to look one another in the eye and be heard without a, “Hold on, I’ll get to you as soon as I can.”

I’ve found that my relationship with each of my sons is better because of one-on-one time we’ve been able to eek out through the years. When they were little, it meant going out on special dates once every few months.

Sometimes it meant kicking everyone else out of the kitchen so we could bake something special together. After all, there’s no need to spend extra money – just extra time.

Sometimes it meant that only one boy got to go grocery shopping with me that day.


It always meant precious conversation. Undivided attention. A re-connection that couldn’t always happen in a house full of flying nerf bullets and full calendars.

As our lives evolve and our children launch, I’m more convinced than ever that being available for our kids and being open to one-on-one conversation produces rich and safe relationships.

So we’ll grab a cup of coffee together every chance we get, even if it’s in a chipped mug at our own crumb-covered table. This mom needs it and I’m pretty sure my long-legged sons do too.

Here’s to rich, precious, God-filled one-on-one moments with our kids, no matter their age, no matter our season.

The Day I Proved That Healthy Food DOES NOT Cost More

Today I thought it would be fun to explore whether or not healthy food actually costs more than…how should I say it? Unhealthy food? Would you believe me if I told you that I discovered that most healthy food does not cost more? Some healthy foods actually cost significantly less! Who knew?

I don’t even like to call it healthy and unhealthy food, simply because not every person’s dietary needs are the same. Sometimes what’s healthy for me might not be healthy for you.

So as we talk through this subject, let’s switch the word “healthy” with the word “nourishing.” I always encourage people to focus on eating food that offers nourishment. Don’t just eat edible stuff that fills a hole. Work to eat real food that offers nutrients and provides the body with goodness to thrive.

What is the Perfect Diet for Everyone?

Now back to our initial discussion about the cost of nourishing food vs. the cost of empty calories.

I’ve been crunching some numbers this week because after all my years of working to make a nourishing diet affordable for my family, I still hear so many people talk about how they can’t afford to eat good food. I always cringe at this declaration because I no longer believe it to be true.

Does Healthy Food ACTUALLY Cost More?

In an effort to get to the bottom of this debate, today I decided to compare the prices of basic, real foods to the price of a big box of Goldfish Crackers from Walmart.

Obviously this comparison doesn’t factor in coupon use or off brand options. But spoiler alert: Would you believe me if I told you that an ounce of Goldfish Crackers costs only a little bit less than an ounce of Grass-Fed Organic Hamburger Meat?? This blew me away! Is it possible that we’ve been wrong all these years about the high cost of real food?

Check this out! You’ll be amazed at my findings!

Goldfish Crackers = 30 ounce box for $6.46 = $0.22/ounce

Keep this price point in mind as we look at the costs of other basic, real, nourishing foods most of us love. We’ll start by comparing average costs of favorite fresh fruits and veggies.

Cost of Fresh Fruits and Vegetables

Here’s the breakdown of produce price points I usually shoot for. NOTE: These are the prices I pay. Prices will vary from city to city.

  • Grapes = $2.50/pound or less = $0.16/ounce
  • Apples = $1.50/pound or less = $0.09/ounce
  • Strawberries = $2.30/pound or less = $0.14/ounce
  • Bananas = $0.59/pound or less = $0.04/ounce
  • Carrots = $0.99/pound = $0.06/ounce
  • Cuties = $1.50/pound or less = $0.09/ounce
  • Peaches/Nectarines/Plums = $1.50/pound or less = $0.09/ounce

These are all much lower in cost compared to Goldfish Crackers. How fun is this?!

Cost of Fresh Meat, Milk, Eggs, and Cheese

This was a little bit more difficult to measure as we don’t calculate eggs or milk in pounds. Still, it was interesting to note some price breakdowns of these nourishing foods. Notice how many of these prices are significantly less per ounce compared to Goldfish Crackers! NOTE: These are the prices I pay. Prices will vary from city to city.

  • Free Range Eggs = $2.50/dozen or less = $0.21/egg
  • Cheese = $4.00/pound = $0.25/ounce
  • Raw, Grass Fed Milk = $5.00/gallon = $0.04/ounce
  • Grass Fed Beef = $5.50/pound = $0.34/ounce
  • Naturally Grown Boneless Chicken Thighs = $3.00/pound or less when I see mark-downs = $0.19/ounce
  • Naturally Grown Chicken Legs or Whole Chicken = $2.50/pound or less when I see mark-downs = $0.16/ounce

Wow! Bring on the nourishing, real foods!

Cost of Whole Grains

I typically purchase my grains in bulk through Azure Standard. (Curious how many cups of flour in a pound of wheat? I did the math for you here.)

  • Freshly Ground Organic Wheat Flour = $1.00 per pound = $0.33/cup = $0.06/ounce
  • Organic Brown Rice = $1.10/pound = $0.07/ounce
  • Organic Rolled Oats = $0.87/pound = $0.05/ounce
  • Organic Whole Wheat Pasta = $2.55/pound = $0.16/ounce

Healthy Food Does Not Cost More

With the exception of fresh cheese and grass fed meat, which is only a few cents more per ounce than Goldfish Crackers, we see a lower price on all real, whole foods compared to this empty calorie snack. I am so encouraged by this!

This isn’t to say that we should never eat a goldfish cracker. Some moments in our life call for fun convenience foods! But we should never feel discouraged or defeated about the cost of purchasing wonderful, nourishing food for our family!

I can do it! You can do it!

16 Lessons I’ve Learned After 16 Years of Homeschooling

Here we are again, wrapping up another school year! As I reflect on the past 16 years, I thought I’d share a few lessons I’ve learned after 16 years of homeschooling.

16 Lessons I’ve Learned After 16 Years of Homeschooling

Technically, I’ve learned at least 16,000 lessons since I started homeschooling. I’d share them all, but whether you homeschool or not, you have probably already learned that at the very moment you finally have all the children gathered so you can enjoy reading a book together, someone will have to poop. This is inevitable.

I narrowed the lessons learned down to what I declare to be the most important. Here’s my heart as I share the top 16 lessons I’ve learned about homeschooling during the past 16 years:

1. Time spent with my kids is invaluable.

It wasn’t until my kids became teens and adults that I began to truly realize how valuable our time together has been in creating solid, safe relationships with them. Homeschooling has given us time to work, serve, learn, and grow together and for all the energy and effort it takes to homeschool, I would absolutely chose it again based on the bonded relationships God has provided for us because of it.

2. Breaks are necessary.

As incredibly blessed as I feel at having so much beautiful time with my children for all these years, I will admit to you that for the love of my sanity, sometimes I just need a bit of quiet. There were actually times I got jealous of the moms who sent their kids to school and didn’t “have” to teach, parent, feed, and guide her children all the live-long-day. Homeschooling can be taxing and I’ve sometimes felt like I might go a little crazy as an introvert who was almost never alone in the quiet.

I’ve had to often remind myself of the gift of time I had with my kids (see #1). And I had to learn to be wise with my own time and choose rest and refreshment away from my kids as needed. God always provided, and the truth is, sometimes sending them all upstairs to watch a movie for two hours so I could have a little uninterrupted quiet time was good for all of us. Indeed, I never killed any of my kids, not even once.

3. We accomplish more during our school year than we think we do.

I hear from homeschool moms all the time who feel that they can never “get it all done” in every area from school work to house work. Seeing as “getting it all done” doesn’t have an actual definition, and the fact that there is always laundry, I’ve learned that yep, we can’t get it all done. Truth: We are still all giving our kids an incredible amount of education during a school year.

Never, ever should a homeschool mom feel like they aren’t getting enough done. You can’t do it all, but you can do enough. You do and you are, I promise. Just believe it.

4. Homeschool allows our kids extra time to explore their gifts, passions, and talents.

I can’t sing loud enough about how great it has been that homeschooling has allowed our kids the time and ability to discover what they love and then to spend time developing their gifts. Our oldest studied, learned, and experimented with videography all through his high school years. As a result, he discovered his passion and great talent, which has now become a profession and career for him.

Our second oldest followed his passion for music and began creating sound tracks on software at a young age. Now he’s pursuing a career in Music Production. We’re watching boys #3 and #4 find their gifts and explore what they love, and to see God reveal their talents while watching them use their time to develop them has been incredible.

5. Homeschooling has given us flexibility.

This one ranks up there as one of my favorites. While we’ve needed to establish a general routine in our days so we can actually get through our curriculum, we’ve also realized the value of the flexibility that homeschooling has offered.

When my mom was sick and dying, we were able to make frequent trips to Kansas to visit. When a need for serving people comes up, we are able to load up and help. When sickness hits our house, we are able to adjust our school routine as needed. When a job comes up that would allow our boys to make some extra money, they are able to jump on it and finish their school work later in the day.

Flexibility has been an incredible perk to homeschooling!

6. Homeschool is a real thing.

What I mean is, homeschooling isn’t just a cute little educational option for people. It’s the real deal, with real opportunities.

At our homeschool basketball tournament this year, I looked around at the thousands of other homeschool athletes from all across the Midwest and marveled at what homeschooling has become. (One of the teams we played against is ranked in the nation. I didn’t know homeschool teams could even be ranked, did you? Incredible.)

We have prom, competitive sports, choirs, PE, drama, tournaments, debate teams, robotics, speech meets, science fairs, and field trips. And sometimes we actually read books, you know, when we have time.

7. If it used to work, but it doesn’t work anymore, it’s okay to make a change.

This applies to every aspect of life, but in regard to homeschooling, I’ve had to learn that what works for one kid might not work for another. And what worked when my kids were little might not work now that they’re older. This is why all my kids do all of their own laundry now. Amen.

Our youngest went through a phase where he only wore suits.
Now he is taller than me and he shaves. 

8. Our homeschool doesn’t have to look the same as your homeschool.

I used to hear about the cool things other homeschool families were doing and feel inferior or begin to worry that I wasn’t doing enough. This is rubbish. We do what works best for us, you do what works best for you, and we can share resources if it is a blessing to us both. Cheers.

9. It’s okay if some people don’t understand homeschooling.

Each of us only knows what we know, so if someone is unfamiliar with homeschooling, they might assume or say something that makes you cringe. It’s not worth your brain energy to worry about this. Homeschooling isn’t for everyone, and if God led you to homeschool, then walk that path confidently. Answer peoples’ questions with a smile; share what you are doing without apology.

Once I took one of my kids on an errand to the bank during school hours, which of course, invited the inevitable question from the bank teller, “No school today?”

Me: We homeschool.
Bank Teller: Oh, taking a break this morning?
Me, with a smile: Nope, we’ve found that taking our kids to run errands like this is a great part of their education, so we consider this to be part of our school day. Thanks for helping teach our son about bank deposits this morning!
Bank Teller: Oh, wow. Well, sure! I’ve never thought about that. It makes so much sense. Here, would you like a sucker?

10. Homeschoolers are socialized.

It had to be said. Never can I discuss this topic with a straight face. I totally can’t even. Roll on the floor laughing. God bless us everyone. My homeschooled kids are friends with and can have intelligent conversations with public school kids, church camp kids, younger kids, older kids, elderly people, other kids’ parents, handicapped people, and of course, other homeschooled kids. It’s a joy to watch the interactions. Socialization? This is totally a non-issue. XOXO

11. My house will almost always be messy-ish.

We live here, work here, and school here. Therefore you will walk into my house and see books all over the floor, computers on the couch, hoodies thrown over the backs of chairs, and wadded up socks on the steps. The front closet smells like feet and I promise we do dishes at least twice every day but you probably can’t tell.

Nobody needed to see that.

12. There are resources for everything!

When people hear we homeschool, frequently they say something like, “How do you know how to teach all the subjects like Algebra and Biology?” Oh goodness, I don’t, but not to worry. There’s a book for that. Or software. Or a CD. And, “Hey Alexa. What’s the population of India?” Yeah, she’s helpful to have around.

You should see how fat some of the homeschool resource catalogs are. There is no shortage of items to order to fit every family, every preference, every kid, and every learning style, from classical to traditional to textbook to literature based and everything in between. You can spend a lot or you can spend a little. You can find oodles of freebies and you can trade and share with friends.

So thankfully, I don’t have to be an expert on everything before educating my kids. All I need is the heart and desire to help my kids learn how to learn. The rest is readily available.

13. Homeschooling gives us more time to spend talking with our kids about Holy Living.

I can’t scream loudly enough about how important it is to spend time together with our kids in the Word, in prayer, and in discussion. We have had to be intentional to make this a priority through the years, especially as our kids have gotten older and busier. Because we are together so much of the day, our kids have shared in all of our daily adult struggles, which has helped them learn about real life application to scripture. I am exceedingly grateful for this.

14. Jesus is more important than school work.

#13 leads me to share #14, which says that while the year 1776 is important and preparing our kids to take the ACT is unavoidable, helping our kids understand and seek a relationship with the Father is more important than anything on this earth. Learning about God’s Kingdom always trumps learning specifics about the Kingdom Animalia. As a matter of fact, when asked what is the most important for the Kingdom, Jesus said, “Love me. Love your neighbor.” We still do all the school work but it’s not a hill we die on. As we wrap up our years of parenting, we refuse to spend hours prepping for an ACT score which will matter for five minutes. Instead, we prioritize a focus on Christ’s character and service for the Kingdom which matters for eternity.

15. Bible time isn’t a part of school time.

What I mean is, we used to work our family Bible time into our school day routine. But we stopped doing this after the first few years of homeschooling because it became too much a part of a check-list. We didn’t want our kids to associate learning about God’s Word with just another assignment in their notebook. We “do math” but we don’t “do Bible.” We live Jesus. So family Bible time evolved into something separate from the school list. This works much better for us.

16. Homeschool kids struggle with the same things all kids struggle with.

Temptation presses in from the enemy on all sides. Drugs, drinking, sex, pornography, depression, peer pressure, disrespect, relationship drama – no matter where a teen gets his or her education, they fight similar battles.

I praise God that we are privileged to be so available to guide our kids through the challenges they face. When one of our son’s friend’s attempted suicide, he came to us for advice and prayer. When another of our son’s friends ran away from home, we prayer-battled together. Our kids face the world’s pain just as any kid does. We’re thankful to be able to navigate the pain and temptations together while we join forces in seeking solutions.

Continuing to Learn

We’ve got five more homeschooling years ahead of us so no doubt, the learning will continue. Hopefully our kids will learn a little something too. ;)

How to Make Roast Gravy

If you saw my recent “Easiest Way to Make Beef Roast in the Instant Pot” post, you saw that I promised to share How to Make Roast Gravy. Where there is roast, there must be gravy. There is no other way.

While I shared that I struggled with making a good roast for over 20 years before figuring it out, I perfected my gravy-making skills long ago. I guess that’s a good thing, seeing as my roasts weren’t great. At least we drown the dry meat in gravy.

Making gravy truly isn’t difficult, though in my case, it took some practice. Did I ever tell you about the first time I made gravy for Matt? He had to spread it onto his potatoes with a knife. Good times. (That was in our dating days. Praise God he saw gravy-making potential and still chose to marry me. It was probably because of how I rocked the big hair. Or the high waist pants, which are somehow now back in style. Why, girls? Why?)

Ingredients
  • 1-2 cups beef broth/drippings from a roast
  • ¼ cup cold water
  • 2 Tablespoons corn starch or arrowroot powder
  • Sea salt to taste
Instructions
  1. Pour the drippings from a cooked roast into a small sauce pan.
  2. Heat to boiling.
  3. Meanwhile, whisk together water and cornstarch in a small glass or jar.
  4. Slowly pour water/cornstarch mixture into the boiling beef broth, stirring/whisking constantly.
  5. Continue to cook and stir over medium heat until the mixture has thickened into gravy.
  6. Salt liberally as desired.

Need to thicken your gravy? Make another mixture of water/cornstarch and whisk it in to the boiling broth little by little until you’ve reached the desired gravy consistency you want.

It is important that you mix the water and cornstarch together before stirring it into your drippings/broth! Sprinkling cornstarch directly into the hot drippings will only give you lumpy gravy. Ask me how I know.

The Easiest Way to Make Beef Roast in the Instant Pot

My mom used to be the queen of perfect Sunday roasts. But for some reason, it’s taken me over 20 years to figure out how to get my roast to fall apart and taste delicious. Today I’ll share what I’ve learned about making beef roast in the Instant Pot. Aha! Now we’re on to something.

After years of trial and error, I finally learned to make a Melt–in-Your-Mouth Beef Roast in the Crock Pot. This is all well and good except for the days I don’t have 12 hours to wait for my beef roast to cook to perfection. A recent Sunday morning, “What can I make for lunch before we leave for church in ten minutes?!” panic led me to investigate how to make a beef roast in my Instant Pot.

Wait. You don’t have an Instant Pot? Trust me. I understand. It took me years of hearing about them to get on the Insta-Train. Now that I’m on board, I’m declaring it to be one of my favorite appliances. Is an Instant Pot worth your investment? I give an emphatic, “Absolutely!” (I have this one.)

So anyway, back to my pot roast. I discovered that there are many Instant Pot roast-making instructions out there. But I have to admit what you already know about me: I really do not like recipes that instruct me to take several steps before walking away from my food to let it cook. After all, what good is using a Crock Pot or Instant Pot if I have to spend 30 or more minutes prepping the food?

Therefore, while most recipes I found instructed that I sear both sides of the roast and sing it a lullaby before allowing the Instant Pot to work its magic, I decided to do what I do best: Throw the food into the pot, turn it on, and walk away. After all, I don’t have time to sear meat on a Sunday morning, nor am I interested in going to church smelling like caramelized onion. And all my fellow worshipers said amen.

I figured the worst that might happen if I took a few shortcuts is that my roast would be mediocre, something my family has dealt with for most of my roast-making life. This is why God invented gravy.

So into the Instant Pot went the roast. I dumped on some sea salt, worchestershire sauce, water, onion, and carrots. We went to church and came home to this:

The meat fell apart. The flavor was incredible. Continue to sear your roast if you must, but as for me and my house, I will continue to throw in the food and let the appliances do the work.

Serves: 6-8
Ingredients
  • 3 pound beef roast
  • 2 Tablespoons Worcestershire sauce
  • 1 medium-sized onion
  • Sea salt and pepper to taste
  • 5-8 medium-sized carrots
  • 1 cup water
Instructions
  1. Place roast on the metal trivet in your Instant Pot.
  2. Pour 1 cup water into the bottom of the pot.
  3. Cut onion into fourths and place in the pot.
  4. Peel carrots, cut them in half, then place them on the roast.
  5. Salt liberally, pepper as you like.
  6. Place the lid on the Instant Pot and seal it.
  7. Cook it at High Pressure, Manual Setting, for 70 minutes.
  8. I do natural release as I'm usually still at church during this time.
  9. Shred meat and serve!

Add 3ish pounds of scrubbed and cut potatoes to the pot if you like. :)
