Spoiler: All I did to create this cookie recipe was add oats to the Simple Butter Cookies. It’s too easy. And super delicious.
Simple Oatmeal Cookies
- 1½ cups melted butter
- ⅓-1/2 cup sugar (raw, white, brown, or sucanat)
- 1 tablespoons vanilla extract
- 1½ cups whole rolled oats
- 3 cups whole wheat flour (I use freshly ground soft white wheat)
- Cream butter and sugar together in a bowl.
- Stir in vanilla.
- Mix in flour and oats until well combined.
- Scoop Tablespoon-sized balls of dough onto cookie sheets.
- Press the dough down with your fingers or a fork.
- Bake in a 350 degree oven for 8-12 minutes or until cookies are golden brown.

So what’s the difference in this recipe compared to the Best Oatmeal Chocolate Chip Cookies recipe I shared a couple weeks ago? You mean besides the chocolate chips?
Well, this recipe is much lower in sugar. This one is great for a snack or on-the-go breakfast, whereas the Oatmeal Chocolate Chip Cookies are definitely a dessert. I make this Simple Oatmeal Cookie recipe as a low sugar treat for myself and my family. I make the Oatmeal Chocolate Chip Cookies to serve guests.

Does using hard in place of the soft whole wheat matter? I only have the hard that I grind.
Hard wheat will work just fine!

I just want to double check the recipe before I make it. Is it really 1.5 cups of butter or 1.5 sticks of butter?
1 1/2 cups. Seems like a lot, but that’s what makes these cookies so good!! They are super buttery, so less sugar can be used and they still taste incredible!

I have been reading it for many years and always walk away encouraged. The verses sticking in my mind these days are Psalm 90:12 and Acts 17:26-28. I think the connect to the one you shared as well!

I believe that leaving the eggs out of this recipe makes the cookies crispier and butterier!! :)
What happened? i mixed these up and they would not come together so i kept adding butter and i ended up adding 3 sticks and still would not stick together. i put it in casserole dish to try to save so hopefully i will end up with bars? what did i do wrong, i did recipe exactly except i used the hard whole wheat like i ask earlier in the week.
So strange, I don’t know! Do you mean you added 3 sticks in addition to the 3 sticks the recipe calls for?? I can’t imagine that using hard wheat would make that big of a difference!
