Low Sugar Pecan Cookies

It’s baking season! These Low Sugar Pecan Cookies are buttery and delicious!

You might remember our other Low Sugar Cookie recipes. Here are just a few of our favorites:

We adapted a few of those to create these Low Sugar Pecan Cookies because it’s so easy to make a tiny tweak to create a brand new recipe!

The “melt-away” cookies listed above are my favorites simply because they are so buttery. This truly makes them melt in your mouth! No one can tell that these are low in sugar OR that they are made with whole grain flour. And the toasted pecans give these such a delightful flavor and crunch!

Low Sugar Pecan Cookies

Ingredients
  • 1½ cups melted butter (3 sticks)
  • ½ cup sugar (sucanat, raw, brown)
  • 1 teaspoon vanilla extract
  • 3 cups whole grain flour (I use freshly ground soft white wheat)
  • ½ cup pecan pieces toasted in 2 Tablespoons butter
Instructions
  1. Toast pecans by stirring them in a small saucepan over low heat for 2-4 minutes. Set aside.
  2. In a mixing bowl, stir together butter, sugar, vanilla, and flour.
  3. Fold in toasted pecans.
  4. Scoop ½ inch sized balls of dough onto a cookie sheet.
  5. Press balls down with the end of a drinking glass.
  6. Bake in a 350 degree oven for 10-15 minutes or until cookies are golden brown.

Sweet and Simple Cranberry Cookies

You all know I’m not into anything fancy. The simpler the better when it comes to pretty much everything from food to clothes to schedules. So it probably doesn’t surprise you that I took my basic Sweet and Simple Butter Cookies recipe and added one tiny ingredient to make these Sweet and Simple Cranberry Cookies. Hmmm, I bet you can’t guess which ingredient I added. (Indeed, my ways are so mysterious.)

I’m not a big fan of raisins in my cookies. But adding dried cranberries to this simple butter cookie? Well, that takes them up a notch without adding any effort. Phew, no added effort? Well, that’s a relief. We cannot be expected to add effort to our cookie-baking endeavors. That takes all the fun out of eating a cookie.

Oh! But don’t you worry about me giving you permission to eat a cookie. These are low in sugar, with just a little extra added sugar when we toss in the dried cranberries. And check out how few ingredients these have? Just 5 simple items to grab to make these delights!

Sweet and Simple Butter Cookies (4 Ingredients)

If you know me at all, and I think you do, you know that if “butter” is a part of a cookie title, it must be a favorite of mine. Dear friends, allow me to introduce  you to these tasty melt-in-your-mouth delights: Sweet and Simple Butter Cookies.

Would you like to know what has been a favorite sentence of mine ever since I was a little girl reading recipes?

“Cream butter and sugar together in a bowl.”

That simple sentence always made me very happy. It still does. You want me to cream butter and sugar in a bowl?! I LOVE CREAMING BUTTER AND SUGAR IN A BOWL!!! There’s something so sweet (sure, literally, I suppose) about this simple instruction, and for some reason, it always brings up happy memories for me of times I spent baking with my mom or my grandma.

All of life would be better if we took a moment to cream butter and sugar in a bowl. Don’t you think?

The combination of butter and sugar in this recipe makes for a perfectly sweet and rich cookie that melts in your mouth. Don’t worry though. The ratio of butter to sugar is such that these are only lightly sweet, but deliciously buttery. I’d still consider these a dessert, but I think they fit in the “low sugar treat” category.

These stir together quickly and go into the oven easily. Enjoy this newest High Five Recipe, and most importantly, enjoy each time you get to “cream butter and sugar together in a bowl.”
