Easy Fruit Choices I Give My Kids Every Day

We go through a lot of fruit at our house! But I don’t have time or enough hands to cut up fruit for my kids. Here are the easy fruit choices I try to keep on hand to give my kids every day.

Currently, we have six little ones and four of them are in diapers. Therefore, I had to stop buying cantaloupe and fresh pineapple, simply because they would sit neglected on the counter and I would never, ever get around to cutting them.

Six minutes. Ten maybe. That’s how long it takes to prep a cantaloupe. And yet, there are not ten minutes to be found these days. Awww, these babies!

I have started to rely on other fruits that take no prep, or maybe just thirty-seconds of prep. Wash-and-serve fruit like berries. 100% fruit cups like peaches, pears, and mandarin oranges. Applesauce squeezies by the case! Bonus points if there are vegetables in them! (Like these.)

East Fruit Choices I Give My Kids Every Day

Here’s a quick list for us so that you and I can easily reference when we need ideas and inspiration for fruit we can grab and hand to our kids. Better yet, if they’re old enough, they can reach in and grab it themselves!

  • Bananas
  • Prepared Unsweetened Applesauce Cups (or applesauce scooped out of a jar into small bowls)
  • Applesauce Squeezies – with other fruits and sometimes vegetables included
  • Blueberries
  • Raspberries
  • Strawberries
  • 100% Peach Cup
  • 100% Pear Cup
  • 100% Mandarin Orange Cup
  • Canned Pineapple – tidbits or slices
  • Apples
  • Clementines
  • Pears

Some Fruity Tips

~ Usually my kids eat apples and pears better if they are sliced or cut into small bites. So if I have two hands-free, I’ll quickly prep those fruits to hand my kids for snacks or a side dish to our meals.

~ They really love apple slices dipped in peanut butter, so sometimes that turns into our lunch!

~ I usually drain the juice out of our fruit cups before serving them, simply because our toddlers will spill the juice everywhere while trying to eat the fruit.

~ I teach my little ones to peel their own clementines as soon as they are able. So even at their very little ages, if I get the clementine started, they can take over and peel it on their own.

~ I like to cut strawberries into small pieces to make them easier to eat, but when there’s no time, I try to make a big deal of how fun it is to eat a great big strawberry while holding onto the green part.

~ I keep a bowl of prepared 100% fruit cups in our kitchen for our kids to grab as needed.

~ Watch out for the prepared fruit cups labeled “no sugar added.” That’s code for “fake sweetener added” so I always avoid those. Go for the cups prepared in 100% fruit juice.

Some day, I’ll slice cantaloupe, pineapple, and watermelon again! As for now, these easy fruit choices work best for us!

Simple Snack Recipe: Creamy Chocolate Fruit Dip

When you eat Creamy Chocolate Fruit Dip you might find yourself pausing to say out loud, “Is there anything better than this dip with strawberries? Anything at all on this entire earth?”

Some of the children standing in the room might answer your rhetorical question and suggest that winning a soccer game, getting an A on a difficult test, or finally finishing Geometry for the rest of your life is better than the Creamy Chocolate Fruit Dip. But then he will pop a chocolate dip-covered strawberry into his mouth and remember quite clearly that indeed, this snack is better than almost anything in the entire world. And perhaps it goes without saying that eating this Creamy Chocolate Fruit Dip with strawberries immediately after winning a soccer game, getting an A on a test, or finally finishing Geometry for the rest of your life is the perfect way to celebrate all good things.

Far be it from me to ruin the strawberry-dipped moment by reminding said child that one day when he has a child of his own, he may encounter Geometry all over again as a dad who helps his kid try to understand linear equations and obtuse angles. This is not the time to speak of the Geometry of the future. Let the child enjoy this Geometry-Free Creamy Chocolate Fruit Dip pleasure, am I right?

I guess now you know how we all feel about Geometry at our house. Sorry, Mathematicians. We try. And we appreciate your care and concern about figures that are congruent. We realize that life as we know it is so much better because of your vast knowledge. But we would prefer to create fun videos and music to entertain you in your down time. And we like making delicious food to feed you. Dear Mathematicians. May we interest you in a Creamy Chocolate Fruit Dipped strawberry? We think it will give your protractor a run for its money.

Truly, isn’t it a joy that we all have interest in different things? This is what makes the world go ’round. But also, this Creamy Chocolate Fruit Dip!!!! Simple Snack Recipe: Creamy Chocolate Fruit Dip

Ingredients
  • 8- ounces softened cream cheese
  • 2 cups heavy whipping cream
  • 2 heaping Tablespoons unsweetened cocoa powder
  • Sweetener of your choice (30 drops liquid stevia, 3 Tablespoons real maple syrup, or ¼ cup sugar)
Instructions
  1. Blend ingredients together until smooth.
  2. Cover and store in refrigerator until ready to serve.
  3. Serve with fresh strawberries, bananas, raspberries, apples, or blueberries.

Gratituesday: Everything But Raspberries

You know how I mentioned that we’d been traveling and that my body is craving fruits and vegetables? And you know how I mentioned that I was really, really hungry for raspberries? Try as I might, I can’t find one decent raspberry in all of York, Nebraska.

Correction:  I can find a decent raspberry. But they are either in a package that also contains moldy raspberries, or they are in a teeny-tiny container that costs $3.48. As much as I’m craving raspberries – for that price, I just can’t do it.

Elias (our 12 year old) and I drove to our two grocery stores today, after striking out at Wal-Mart last night, on a mission to find raspberries. I guess it just isn’t meant to be. Maybe in a few days, after stores re-stock and sale prices re-set???

In the meantime, as the boys and I were unloading our other groceries and talking about all the goodies I bought yesterday on our way back into town, it occurred to me that while I don’t have any raspberries, I do have pretty much everything else delicious under the sun. I shall whine no more. We’ve found great deals on tons of summer produce, loaded up our kitchen once again with wonderful fruits and vegetables – and we are enjoying all kinds of deliciousness. Everything but raspberries? Well, I am just all kinds of blessed.

You can see all the yummy food I picked up last night in this post. Now take a look at what Elias and I found this morning at a local grocery store:

Grapes were on sale, plums were on sale, there were organic tomatoes and mushrooms to be had – and look at all those bags of frozen veggies! Those babies were on sale for just 80¢ each! We filled the cart…as you can see. :)  100% juice was on sale, so we stocked up so that we can make fun popsicles the rest of the summer. We grabbed sweet peppers and splurged on a loaf of bread so we could have an easy meal of sandwiches for lunch. Everything but raspberries? Blessed, blessed, blessed.

We got home from the store and set out this wonderful spread of food. After traveling and eating fast food, I can’t begin to tell you how delicious this all tasted.

What’s more? For breakfast we had big bowls of berries with Chocolate Whipped Cream. It was a perfect way to begin our day.

Well, I actually started my day with an awesome cup of coffee, too. :)  Asa brought back a bag of coffee for me from Ecuador. Oh my goodness: best coffee EVER.

This afternoon, Matt went to the garden and brought in a plate full of awesome lettuce. Remember how I shared that a big hail storm took out our garden a few weeks ago? Many of you suggested that it might perk back up. You were right! Much of our garden has bounced back. We are so thankful!

This afternoon, I enjoyed a generous serving of Chocolate Whipped Cream in a cup of coffee. Happiness in a mug, I tell ya.

Before dinner, we were “too hungry to wait.” Therefore, we sliced up a couple of peaches before I cooked dinner. These were the first peaches of the season we’ve had. Ahhhhmazing. Obviously, two was not enough so I had to slice up more. :)

We thoroughly enjoyed the lettuce from our garden with our dinner of Pasta Alfredo with steamed veggies tonight.

So what’s all this about wanting raspberries? We are so blessed with an abundance of delicious foods that I have absolutely nothing to complain about and absolutely everything to be thankful for. I’m sure I’ll find a nice package of raspberries for a decent price eventually. Maybe I’ll even find some fresh berries at the farmer’s market this week. But no matter. Today, my table is overflowing with goodness. I have everything I need and then some.

10 Oven-Free Summertime Meal Ideas

You know what’s great about summertime? Pretty much everything, especially the part about it being summer in the summertime.

Summer is my favorite season, mostly because this is when the sun is shining. I heart sunshine.  I also love heat, because here in Nebraska, I spend about 13 months out of the year shivering. Once summer hits, the sun shines daily, and my bones warm up – then I am in my happy place.

While sun and heat rock my world, dripping sweat down my nose and into my cooking pot is not a part of my summertime enjoyment. Well, don’t picture it. It’s just that I remember watching my grandma cook in her 115° kitchen, wiping away sweat before it salted the veggies she was preparing. She never learned to close up the house and use the window air conditioner properly, so all of us almost melted and died from the heat in their house every time we visited during the summer. Her kitchen turned us all into sweaty, sloppy…hold on. Why are we still talking about this? We’re here to talk about great food in the summer that does not heat up the house. Moving right along…

10 Oven Free Meals for Summer

I have so much fun preparing yummy meals for my family in the summer. Why? Because there are so many fresh food options available. Watermelon, peaches, corn on the cob – mmmmm I love the taste of summer. In the sunshine. On a hot day. (Yes, Laura. We get it. You like hot weather. Weren’t you going to tell us some good summer meal ideas?)

Indeed.

Here are 10 great summertime meals that won’t heat up your kitchen:

1. Hamburger patties with cheese, buttered green beans, and tossed salad

2. Grilled Italian chicken (recipe in Let’s Do This! eCourse), tossed salad, steamed broccoli, watermelon

3. Grilled barbeque chicken, tossed salad, sweet corn, grilled asparagus

4. Baked potatoes in the crock pot topped with slivered ham, shredded cheese, sour cream, and steamed broccoli – cantaloupe on the side

5. BLT wraps, sliced sweet peppers, carrot sticks and cucumbers with ranch dip, chocolate whipped cream on strawberries
