Gratituesday: God is Stronger Than a Hail Storm

In early June, our garden looked like this:

A few days later, a hail storm came through, and our garden looked like this:

It seemed as if we had lost everything. Our rows and rows of green bean plants had no leaves left. Our pepper and tomato plants were completely broken down. It looked like nothing had survived. We decided to replant a few green bean seeds, and consider the rest of the garden to be a loss. It would be a small garden this year, and we would just make do.

But guess what? God is bigger than any of our gardening efforts, and He is most certainly bigger than a hail storm!! We left our broken, leafless plants alone. Within a few weeks, they had turned back into thriving plants again. Amazing!!!!!!!!!!!

Not only that, we had a lot of rain this summer and fall – so much so that our garden and all the fruit trees around this area have been kicking out the produce like I’ve never seen before. So now, our garden looks like this:

So many beautiful peppers!

Our green bean plants have provided bucket after bucket of green beans. We’ve eaten them to our heart’s content – 4 months of fresh-from-the-garden green beans!!! And we’ve frozen many gallon-sized bags of beans too. We’ll be enjoying them all winter!

Our tomato plants are still giving us many tomatoes every day. Plus we’re picking spaghetti squash and honey dew melon.

An orchard nearby has had the best “apple year” I’ve ever seen. These bags keep making their way into my kitchen (and the kitchens of my friends). We’re eating all we can hold, and making jar after jar of Homemade Applesauce.

All this to say – we thought we’d be done enjoying garden produce by June after the hail storm was so destructive. The joke’s on us.  We started canning and freezing produce in July. Here it is the end of October and we are still going strong. I usually have my canning supplies packed away by now. Not this year. There’s still applesauce to make and green beans to pick. I am amazed! I shouldn’t be though. Isn’t it just like God to show us in such mighty ways of His love and care for us?

Here’s a fun peek into our pantry and freezers. We have over 50 jars of applesauce, and I’ll be making more this week and next. This batch turned out so pink, it looks like I added food coloring! Nope, just straight empire apples. So pretty!

Some friends gave us cucumbers, so I made about 40 jars of dill pickles. It was a fun experiment and they turned out great!

We bought sweet corn at a road-side stand in August, and froze about a dozen quart-sized bags. Pay no attention to the fact that I desperately need to defrost my freezers. I would if I wasn’t so busy canning and freezing produce.

Our peach tree did pretty well this year, so we canned about a dozen quarts, and froze several bags of sliced peaches for smoothies.

Next you see a mixture of Sweet Pickle Relish (from the cucumbers our friends shared with us), Homemade Salsa, and more Applesauce.

As you can see from the above picture, I’m no longer organizing the jars as I fit them into my pantry. I’m at a point of simply trying to find room for it all. Dozens and dozens of full jars of produce! It is so exciting!!

I’m so grateful for the bounty and for God’s sense of humor. There may have been a hail storm, but that didn’t stop God from giving us one of our best garden years ever! Go God!

Menu Plan for the Week and Our Weekend Adventures

What do you do when you have tomatoes and green beans taking over your garden, peppers and squash all over your counter-tops, tons of website work you’re behind on, school books scattered all of the living room and kitchen, dirty dishes piled up, and laundry you can’t keep up with? You ditch it all and take a trip to Kansas, that’s what.

The deal is, there’s never really a good time to get away. This time of year seems even more difficult with garden produce demanding such immediate attention. But hey, if you don’t just make it happen, you’ll never get around to it. And that is why, when we found exactly one free (ha!) day in our schedule that was close to my dad’s 65th birthday, we made a quick trip south to celebrate. I’m so glad we did!

Our weekend adventures

One of the gifts we gave my dad was Matt’s announcement of, “We have a few hours before the birthday party tonight. What can the boys and I do around here to help?” I, on the other hand, had already made plans to visit my good friend Amy (from The Finer Things in Life). I got to hold her newborn while we talked a mile a minute trying to catch up. Upon arriving back at my dad’s place two hours later, this is what I found:

Apparently Malachi had already done his part, and was (safely) inside the house helping Grandma Tacy get lunch put together. Ah, life on the farm. I think the boys all enjoyed themselves very much.

After lunch, Malachi took me for a drive in Papa’s golf cart. I promise I really am smiling in the picture below. It was a selfie, the sun was in my eyes, and I wasn’t at all nervous with my nine year old’s foot on the gas pedal.

Ain’t she purty?

It was a fantastic time to be with family. The birthday party was fun, the cousins loved their time together, and we arrived home after midnight in time to catch some Z’s before getting up the next day and send our older boys off to a church youth event.

What have we been doing with all the tomatoes from our garden? Well, this time, I made a batch of Homemade Tomato Soup. I left some room at the top of each jar to allow for expansion as I put them into the freezer to have this winter.

No more traveling for our family for a while now – phew! We’re hitting Restart – and we hope you’ll be joining us! Settling into a routine (of some sort) sounds fantastic and refreshing.

Easy, Healthy, Delicious ~ Zucchini Recipes

Zucchini Recipes - Easy, Healthy, Delicious

We never plant zucchini in our garden any more. Why? Because about this time of year, friends, family, and people we’ve never met are begging us to please take 3 or 4 or 19 extra zucchini off their hands. Everyone who has zucchini growing in their garden seems to have more than they need. We save our garden space for other great produce, and are happy to “help” others by taking some of their excess fresh zucchini. Servant-hearted, that’s what we are. ;)

If you are someone who has lots of zucchini in your garden, or someone who lovingly takes zucchini from other people’s gardens – here are some of our favorite zucchini recipes:

1. Easy Fried Zucchini

Simply slice zucchini, and lightly stir-fry it in a little olive oil, coconut oil, or palm shortening. Cook until lightly brown, salt, and serve. Unbelievably delicious!

2. Zucchini Brownies

Yes, brownies with zucchini. Does life get any better?

3. Cheeseburger Zucchini Boats

These are easy to make and fun to eat. Perfection.

4. Zucchini Cake

With cream cheese frosting. You’re welcome.

5. Whole Wheat and Honey Zucchini Bread and Muffins

This is what we always think of when we have extra zucchini, right? Made with whole wheat and honey, this is super moist and wholesome at the same time.

6. Chocolate Chip Zucchini Cookies and Bars

No one even knows these have zucchini in them. :)

7. Easy Noodle Stir-Fry

This is one of our favorite “throw-together” meals. You can add any veggie you want, so why not zucchini? You won’t believe how delicious this is.

8. Teriyaki Chicken and Veggies

This is tangy and full of flavor, perfect for fresh zucchini.

9. Chocolate Zucchini Muffins

It doesn’t get any better than chocolate muffins that have a hidden vegetable inside! :)
