Simple Summer Supper: Grilled Tortilla Pizzas

These Grilled Tortilla Pizzas are so simple and fast, you’ll hardly know what to do with yourself!

I suggest letting each person build their own Tortilla Pizzas to their liking. Put them on the grill until the cheese is melted, which takes just a couple minutes.

Just like that, your meal is ready! Grab the greens and other salad fixin’s out of the fridge (or out of the garden – even better!). Slice some fresh peaches or strawberries. Truly, your Simple Summer Supper doesn’t get any easier than this!

Grilled Tortilla Pizzas

Simple Summer Supper: Grilled Tortilla Pizzas

Ingredients
  • Whole grain tortillas
  • Pizza sauce
  • Shredded cheese
  • Your favorite pizza toppings (meats, peppers, olives, onions, pineapple, mushrooms, etc)
Instructions
  1. Top a tortilla with all your favorite pizza toppings.
  2. Grill on low heat for about 2 minutes or until cheese has melted.
  3. Serve with fresh fruits and veggies.

You can use flour or corn tortillas (corn if you need to eat gluten free). You can add sauce or no sauce. Perhaps my only caution is that you don’t over-cheese your Grilled Pizza Tortillas; otherwise your cheese might overflow onto the grill grates and create a mess!

Make Pizza Boats on the Grill ~ Fast and Easy!

Grilled pizza boats! Who knew!!?

Ever since I became a big girl and learned how to turn on our grill, a whole new world of summertime food opened up to me. I think I turned 38 that summer. I had always left certain tasks like that up to my husband – things like installing our window air conditioners, getting the oil changed in our car, and grilling meat.

Then one day I was like, dude it sure would be nice to get dinner cooked instead of waiting for Matt to get home and grill the meat. (The deep thoughts of a hungry 38 year old…)

So I prepared myself for a detailed lesson in propane and matches and safety and how to avoid setting the house on fire. Then Matt got home and showed me how to simultaneously turn a knob and push a button. Four seconds later, the grill was aflame.

Hmmm, thought I. I probably could have even learned that when I was as young as 37.

Don’t tease. Need I remind those of you who have been operating a grill since adolescence that some of us experienced trauma at age 17 which may or may not have involved a fire and the total destruction of a huge barn on my family’s property? Some of us have hated fire for a very, very long time. Some of us might have equated lighting a grill to lighting a barn on fire and watching it smolder for three to fourteen days. Some of us.

So now I’m 41 (and three quarters) and the grill is my best friend in the summertime. In my 3 years of grilling experience, I have not burned anything down – not our house, not someone else’s house, not even a barn.

Regarding food of many kinds: if I can grill it, I do. If I’ve never seen it grilled before, I try it. Anything to avoid turning on the oven on a hot day. Plus, grilled food is fun and special and it feels like a big deal to say, “we’re grilling chicken tonight” instead of simply saying, “we’re having chicken.” Right? Can’t you hear the difference?

So enter: Grilled Pizza Boats

Making pizza on the grill (the regular crust kind) is quite doable and very yummy. You can learn how to do that here. But that is a bit time sensitive and laborious (woe is me) so I rarely go to the trouble. Pizza Boats, however? Well this is absolutely too easy.

How to Make a Pizza BoatYum

Slice a loaf of French or Italian bread in half the long way (you know, like a boat). Top each half with your favorite pizza goodies. Bake in a 350° oven or on the grill until the cheese is melted (about 10 minutes).

It’s as easy as that.

In fact, it’s one of the easiest meals there is. Slice the pizza boats and serve them with salad and fresh fruit.

And then I just have to say it: Be sure you turn off your grill. I refuse to be the one responsible for any other fires, large or small. I’ve met my quota.

10 Oven-Free Summertime Meal Ideas

You know what’s great about summertime? Pretty much everything, especially the part about it being summer in the summertime.

Summer is my favorite season, mostly because this is when the sun is shining. I heart sunshine.  I also love heat, because here in Nebraska, I spend about 13 months out of the year shivering. Once summer hits, the sun shines daily, and my bones warm up – then I am in my happy place.

While sun and heat rock my world, dripping sweat down my nose and into my cooking pot is not a part of my summertime enjoyment. Well, don’t picture it. It’s just that I remember watching my grandma cook in her 115° kitchen, wiping away sweat before it salted the veggies she was preparing. She never learned to close up the house and use the window air conditioner properly, so all of us almost melted and died from the heat in their house every time we visited during the summer. Her kitchen turned us all into sweaty, sloppy…hold on. Why are we still talking about this? We’re here to talk about great food in the summer that does not heat up the house. Moving right along…

10 Oven Free Meals for Summer

I have so much fun preparing yummy meals for my family in the summer. Why? Because there are so many fresh food options available. Watermelon, peaches, corn on the cob – mmmmm I love the taste of summer. In the sunshine. On a hot day. (Yes, Laura. We get it. You like hot weather. Weren’t you going to tell us some good summer meal ideas?)

Indeed.

Here are 10 great summertime meals that won’t heat up your kitchen:

1. Hamburger patties with cheese, buttered green beans, and tossed salad

2. Grilled Italian chicken (recipe in Let’s Do This! eCourse), tossed salad, steamed broccoli, watermelon

3. Grilled barbeque chicken, tossed salad, sweet corn, grilled asparagus

4. Baked potatoes in the crock pot topped with slivered ham, shredded cheese, sour cream, and steamed broccoli – cantaloupe on the side

5. BLT wraps, sliced sweet peppers, carrot sticks and cucumbers with ranch dip, chocolate whipped cream on strawberries

6. Chicken tacos, spicy avocado dip, pineapple cream dessert

7. Pasta salad bar with chicken and lots of veggies, blackberries and fresh peaches

8. Taco salad, fresh pineapple

9. Turkey ranch pinwheels, olives, sweet peppers, honey glazed carrots, watermelon

How To Make Pizza on the Grill

I’ve always left the grilling up to Matt. He would head outside and cook the meat, I would be in the kitchen making the side dishes, and all was well.

But one day several weeks ago, I felt like cooking something on the grill for lunch. It just sounded good, you know? But Matt wasn’t home. It was then that I realized that I had no earthly idea how to even turn on the grill. Duh. But it’s true.

Why, yes I do feel ridiculous admitting that to you. And hey, if you want, I could list off all kinds of things I have no clue about.  Nah, how about we save that list for another day?

Well anyway, when he got home later that day, I asked my loving husband to teach me the fine arts of turning on a grill, which involved, as most of you probably already know, the push of a button and the turn of a knob. Wow, do I ever feel so much smarter than I did before.

With my newly found knowledge, I have become a little bit addicted to the grill. It is as if a whole new world has opened up to me. And this is why, after mastering burgers, hot dogs, bbq chicken legs, Italian chicken breasts, and several other varieties of meat,  I decided to try making pizza on the grill. I had heard it was great, so why not?

The good news:  Pizza on the grill tastes incredible and my whole family loves it. The bad news:  Pizza on the grill takes more time and effort than a hot dog or even chicken on the grill. Shucks. But hey, it sure beats heating up the house by baking it in the oven. And well, it tastes so good that I think it is worth the effort. 

How To Make Pizza on the Grill:

1. Make pizza crust – I used my favorite Whole Wheat Pizza Dough recipe. Roll it thin, and keep it small.  Individual sized pizzas are best for the grill.

2. Freeze the unbaked pizza crusts on a cookie sheet lined with parchment paper. This will make your crusts much easier to work with on the grill. 

3. Prepare all pizza toppings. It is important to have this done before you begin cooking your pizzas. Really, really important.

4. Get your grill hot and ready. (If you need my husband to come show you how to turn on your grill, he is very nice and I’m sure he would be happy to walk you through this step.)

5. Place crusts on the grill on low heat, as many as your grill will hold. Close the lid and allow the crusts to cook on one side for about three minutes.

6. Remove the crusts from the grill. Turn them cooked side up and fill with sauce and toppings of your choosing. Go easy on the sauce, unless you want soggy pizza. 

7. Place the topped pizzas back on the grill, close the lid, and cook for another 3-5 minutes or until cheese is melted.

Not that I personally experienced any moments of absolute insanity my first time making these, but be aware that you may be forced to deal with a bit of craziness while feeling like everything needs to be done at once and everyone needs to get out of your way and not ask you any questions while you are trying to grill the crust, top the crust, grill the pizza, and not burn anything along the way. Just so you know. (It does get easier after you’ve done it once.)

And that is why it is very important that your pizza toppings are prepared and ready ahead of time. I am so not kidding. ;)

The Recipe

Back when I threw out the question about grills, Christy left a comment about how she makes Apple Crisp on the grill. I asked her for the recipe…and she kindly sent it to me. Doesn’t this sound SO good?

Apple Crisp on the Grill

In a bowl, mix together the apples, cinnamon and flour. Coat well, and add apple juice and sugar/or honey. Mix in with apples and fold in until mixture is combined. Place in an old metal bread pan or two disposable pie plates.

5-6 apples diced w/skins on (Adds color and extra vitamins)
2 T Sugar or honey
2 T. Apple juice
1 t . cinnamon
2T. whole wheat or AP flour

Topping:
1/4 c. whole wheat flour
1/4 c. rolled oats
1/4 c. butter (cold is good)
3 T . Brown Sugar
1 t. cinnamon

Mix topping ingredients together, and crumble evenly to the top of the apples! Wrap tightly in foil.

Christy says, “I put the crisp on the BBQ on low, at the same time as I I put on my potatoes, followed by the vegetables, then the burgers! When our main course is ready I turn off the heat, and let the crisp finish, and let the juices get nice and thick. The smell is amazing and brings a touch of fall to the air” :)
