Cranberry Biscuit Mix {Gifts in a Jar ~ Day Two}

You will not believe how simple these biscuits are to make, and how tasty they are to eat! This mix is very nice to have on hand, and of course, it makes a very fun gift to put into a jar.

By the end of this series, I bet you’ll begin to think that I say that about everything. Not so. I promise that even though I love jars and think that food in jars is beautiful and makes a great gift…I will never suggest that Cheesy Salsa Enchiladas would make a great Gift in a Jar. Nor would I encourage you to give Angeled Eggs in a jar. See? Even I have my limits. ;)

Have fun and be creative with this biscuit mix idea! You can switch out the dried cranberries for raisins and throw in some cinnamon just for fun. Or you could include a variety of dried fruit – cherries maybe? This recipe is definitely not limited to cranberries – although cranberries are really good at Christmastime. (And in April. And September. Dried cranberries rock.)

Cranberry Biscuit Mix

6 cups whole wheat flour (I used freshly ground hard white wheat)
6 Tablespoons sucanat
4 Tablespoons baking powder
1 teaspoon sea salt
1 1/2 cups dried cranberries

Mix ingredients in a large bowl. Divide the mix into two separate quart jars.

To make Cranberry Biscuits:

Place contents from one quart jar into a food processor or bowl. Cut in 1/3 cup cold butter or palm shortening. Add 3/4 cup of milk and mix well. Roll dough onto a well floured surface and cut into 12 large biscuits. Place on a baking sheet and bake in a 425° oven for 15-20 minutes or until biscuits are golden brown.

I have even found that it works well to mix up the entire batch (both jars) of biscuits – bake the amount we want for one meal, then freeze the remaining biscuits (unbaked). Then, I thaw the prepared biscuits overnight and bake them as directed in the morning!

I freeze the cut out biscuits on a parchment paper lined cookie sheet.
Once they are frozen, I transfer them to a freezer bag until we are ready to thaw and bake them.

Pumpkin Pecan Pie Squares – In Case You Need Another Dessert for This Weekend

Yeah, I know. There are likely to be plenty of desserts at your table this weekend.

But just in case you wanted one more idea, I wanted to remind you of my Pumpkin Pecan Pie Squares dessert. We love the combination of pumpkin and pecan. And it is fairly simple to put together.

Using Stale Homemade Bread To Make Bread Crumbs

Well, if this isn’t the most boring blog post ever, I don’t know what is. 

Although, I suppose I could tell you how to fold wash rags. That might be even boringer. I mean – more boring. I was just trying to sound like the seven year old in my household, who is just now finally getting the hang of some of those grammatically correct statements. But I tell you what – he could not be more cuter if he tried. :)

I’m warning you now that the above paragraph was one of the most excitingest in this whole post. Making bread crumbs is seriously a no brainer. I guarantee that finding something else to do besides reading this would be much more funner.

Oh look at me, getting carried away. And you thought you came here for a little bit of grown-up conversation. ;)

Anyway, as I cleaned out my fridge a few days ago, I found several bags with a few straggling pieces of my Honey Whole Wheat Bread. No one was ever going to eat them because they were dried out and stale. What to do? Feed the birds? Sure, maybe. But I find that having bread crumbs on hand for making Meat Loaf or Salmon Patties is very handy.

Therefore, I got out my food processor, obliterated the stale bread, and within 30 seconds I had a jar of bread crumbs in  my freezer.

I bet after reading this, you feel so enlightened and encouraged, you’re going to search high and low in your kitchen until you find some stale bread – just so you can try this incredibly exciting and useful tip.

Pizza Boats – A Quick Throw-it-Together Meal

Apparently, it’s pizza week around here. :)

It’s great to have homemade Whole Wheat Pizza Crusts in the freezer. But if you don’t, or if you’re wanting just a little something different…might I recommend Pizza Boats?

(Warning to children:  These Pizza Boats don’t float. Do not take these into the bathtub.)

I have been ordering Alvarado Sprouted Sourdough French Bread from my health food co-op, Azure Standard. In a pinch, I grab one out, slice it and quickly put together two big Pizza Boats. These are perfect for an easy lunch, or for a quick supper before we run out to soccer games.

You’ll need 2 cups (16 ounces) of pizza sauce. Simply slice the french bread in half the long way.

Top any way you wish.

Bake in a 375° oven for 10-15 minutes or until cheese is melted and bubbly.

I’m telling you. Healthy eating does not have to be difficult or take a lot of time. And it can be a lot of fun. Who wouldn’t want a Pizza Boat for dinner?

But don’t take them into the bathtub.

Why yes. I have been raising boy children for 15 years.

Apple Muffin Throw Down

Remember the Boxed Brownies vs. Homemade Brownies experiment I did? And the Boxed Mac and Cheese vs. Homemade Creamy Mac and Cheese experiment I did? How about my Sunday Dinner Challenge, which took a whopping one minute, forty eight point nine seconds to make? My boys love that I keep making them bring the stop watch into the kitchen for these “races”. It’s that male competition thing they have going on. 

I finally got around to completing another “boxed vs. homemade” experiment in an effort to prove that making homemade food from healthy ingredients doesn’t take a lot of time. I figure that some might still be having a difficult time believing me when I say that it truly doesn’t take a long time to prepare healthy foods. So I’m having fun trying to “prove” my case, and my family is having fun eating the results of my experiments. ;)

This time, I decided to see which took longer to prepare: boxed muffins…or muffins made from scratch. I found some great looking “healthier” boxed muffin mixes from Vitacost. While these were organic, they were still made from white flour and white sugar, although at least I could control the oil I put into them. None of that has anything to do with the experiment necessarily, except just to say that these muffins really didn’t hold much in the way of nutrition. Anyway, back to the point, which I know that those of you who haven’t fallen asleep while reading this post are waiting on pins and needles to hear… 

From the time I opened the boxes, to the time I put the muffin pans into the oven, 6.25 minutes had passed. 

A few weeks later, I mixed up my Applesauce Bread recipe and made the batter into muffins. How long did it take? Right at 7 minutes.  And these had whole wheat flour, honey, and real, unsweetened applesauce in them. Nutrients! For my family for breakfast! What a concept.  This, because I spent about 45 seconds longer making muffins from scratch. 

What other thoughts do you have about what I could experiment with?  My boys are waiting with their stop watch…

Oh Beautiful Jars!! Stocked and Ready For Gawking

One of the jobs on my “To Do” List was to refill all of the jars in my pantry so that I’d have easy access to all of the staple ingredients I reach for so often. Since I typically purchase these ingredients in 25-50 pound quantities, I store them big buckets, and pour a smaller portion into easy-access jars in my kitchen, refilling as needed. (Read more here about where I purchase most of my food, and scroll through these posts to learn more about my bulk shopping and storage.)

My favorite part of this system, besides the fact, of course, that this just makes my life easier and saves us money while we strive to eat a whole foods diet is this:  I love staring at my jars full of pretty food.

It’s a slight obsession. A major obsession? Yeah, probably something like that.

Well, after just a few minutes of going back and forth from storage room to kitchen, lugging buckets and bags of dry goods (a great upper arm work-out!), all of my jars are re-stocked and ready to go. Pasta, sucanat, wheat, salt, beans, corn, and rice. Oh so beautiful.

 This is the part of my pantry I stare at when I most need a fix:

Air Soft, Chocolate Cake, and Movies

Our boys have been all about making fun plans with their friends this summer. I’ve loved watching them take initiative by making the phone calls themselves, setting up baseball games, soccer games, and basketball shoot-arounds. They’ve even “written and directed” several movies and invited friends over so that they could “shoot footage”. One mom commented, “It sure has been great for Justus to be the Activities Event Coordinator for all of our kids this summer.” :)

Today, the choice event was a game of Air Soft. As they were making the phone calls yesterday to prepare for this, the idea came to them that maybe they could also do some baking so they would have something tasty as a surprise to serve to their guests. After all, it’s always a great idea to serve cake to your friends after you’ve spent an hour and a half shooting at them, right?! 

Upon hearing their idea, I quickly squashed down my instinctive protests about them turning on the oven when it was 105° outside. If they want to treat their friends, who am I to argue? (Especially when they were leaning toward making something chocolate and I would get to be the taste tester.)  I did suggest, however, that they make their baking plan, prepare their ingredients, and then wait to actually bake in the evening when the temperature cooled to a more comfortable…98°. Ha!

Well, one brainstorm turned into another, until what had once been an idea to bake a simple treat turned into an elaborate plan to bake and decorate a layered Chocolate Fudge Cake. In addition, they decided that while they were making the cake, they should also make a movie such as they’d seen on Cake Boss on Netflix. Did I mention I had some produce I was in the middle of chopping and preserving during all of this? To suggest that my kitchen was a little bit of a (hot) hubbub of chaos may have been an understatement. Apparently, my family thrives on messy insanity.

Fantastic as they are, our boys don’t always work well together in executing a plan, but I’ve got to hand it to them:  The cake mixing and measuring went off without a hitch (with only a small amount of batter landing on the floor…twice). They took turns. They worked together. They even sort of cleaned up after themselves.

After the cake cooled (the next morning), they took turns decorating it with Fudge Frosting. As you can imagine, it was always a pity when they got frosting on their fingers. What could they do but lick it off?

 I was just pleased that the frosting bags didn’t explode. 

 They were so proud of the finished product. And so they should be.

Then, my yard and house became a center of excitement as a total of nine boys came in and out, making me wonder all morning long why in the world I was continuing to run my air conditioner. I’m pretty sure all of our guests must surely think that the only phrase I know how to say is, “Close the door please!” 

Oh, and how did the guests like the cake? Based on the fact that the only thing left in my kitchen when they were finished was a bunch of chocolate cake crumbs, I’d say they liked it just fine.

Then they headed right back outside to shoot each other again. You’ve gotta love it. :)

{Well, if you can believe it, after I had this post written and ready to go up, Justus showed me the finished movie they had put together. I got quite a chuckle out of it since 1) he said a lot of similar things in the movie that I said in this post, and 2)  It’s an awful lot like the actual show Cake Boss, with a Coppinger twist, of course. Therefore, I decided to post the movie to share with you, if you care to watch it. You’ll especially appreciate it if you’ve watched the actual Cake Boss show…or if you are an aunt or loved one who just can’t help but think that my boys are cute. This just features three of our boys since our oldest is at camp.}

How To Make Pizza on the Grill

I’ve always left the grilling up to Matt. He would head outside and cook the meat, I would be in the kitchen making the side dishes, and all was well.

But one day several weeks ago, I felt like cooking something on the grill for lunch. It just sounded good, you know? But Matt wasn’t home. It was then that I realized that I had no earthly idea how to even turn on the grill. Duh. But it’s true.

Why, yes I do feel ridiculous admitting that to you. And hey, if you want, I could list off all kinds of things I have no clue about.  Nah, how about we save that list for another day?

Well anyway, when he got home later that day, I asked my loving husband to teach me the fine arts of turning on a grill, which involved, as most of you probably already know, the push of a button and the turn of a knob. Wow, do I ever feel so much smarter than I did before.

With my newly found knowledge, I have become a little bit addicted to the grill. It is as if a whole new world has opened up to me. And this is why, after mastering burgers, hot dogs, bbq chicken legs, Italian chicken breasts, and several other varieties of meat,  I decided to try making pizza on the grill. I had heard it was great, so why not?

The good news:  Pizza on the grill tastes incredible and my whole family loves it. The bad news:  Pizza on the grill takes more time and effort than a hot dog or even chicken on the grill. Shucks. But hey, it sure beats heating up the house by baking it in the oven. And well, it tastes so good that I think it is worth the effort. 

How To Make Pizza on the Grill:

1. Make pizza crust – I used my favorite Whole Wheat Pizza Dough recipe. Roll it thin, and keep it small.  Individual sized pizzas are best for the grill.

2. Freeze the unbaked pizza crusts on a cookie sheet lined with parchment paper. This will make your crusts much easier to work with on the grill. 

3. Prepare all pizza toppings. It is important to have this done before you begin cooking your pizzas. Really, really important.

4. Get your grill hot and ready. (If you need my husband to come show you how to turn on your grill, he is very nice and I’m sure he would be happy to walk you through this step.)

5. Place crusts on the grill on low heat, as many as your grill will hold. Close the lid and allow the crusts to cook on one side for about three minutes.

6. Remove the crusts from the grill. Turn them cooked side up and fill with sauce and toppings of your choosing. Go easy on the sauce, unless you want soggy pizza. 

7. Place the topped pizzas back on the grill, close the lid, and cook for another 3-5 minutes or until cheese is melted.

Not that I personally experienced any moments of absolute insanity my first time making these, but be aware that you may be forced to deal with a bit of craziness while feeling like everything needs to be done at once and everyone needs to get out of your way and not ask you any questions while you are trying to grill the crust, top the crust, grill the pizza, and not burn anything along the way. Just so you know. (It does get easier after you’ve done it once.)

And that is why it is very important that your pizza toppings are prepared and ready ahead of time. I am so not kidding. ;)

Whole Wheat Calzones

We have some lovely friends in town that make delicious homemade pizza. Their last name is “Tandy”, and because they have made their awesome pizza for so many, most people around here who know and enjoy their pizza lovingly call it “Tandy Pizza”. If you say, “We’re going to have Tandy’s Pizza for lunch,” everyone will get excited. This family has turned their pizza into a ministry, feeding loads of teenagers each week, making their pizza for large groups, baking it for kids at church camp, and the list goes on. Everyone loves the Tandys and their pizza ministry.

Well, a few weeks ago, I finally perfected my own homemade whole wheat pizza crust, and then adapted it to make calzones for a quick, grab and go meal. Malachi, our seven year old, took one bite of his and excitedly declared it to be “as good as Tandy Pizza!”. Now that is quite an honor. Ever since, Malachi has been calling these calzones “Tandy Pockets”. It seems as though the Tandys are getting the credit for allllll my hard work, but hey, I’m okay with that. (And P.S. it doesn’t really take a lot of hard work to make these. I just wanted to sound momentarily pitiful.)  ;)

How to Make Whole Wheat Calzones

Whole Wheat Pizza DoughYum

5 cups whole wheat flour (I use freshly ground flour from hard white wheat)
1 teaspoon sea salt
4 1/2 teaspoons active dry yeast (or 2 pouches)
2 cups warm water (The water should feel warm to the touch, but  not burn your finger. How’s that for a specific temperature. This is how thorough I am…)

Mix all ingredients together, knead for 3-4 minutes, then allow the dough to “rest” for about 10 minutes (give or take). Use the dough to make two pizzas, baking for about 25 minutes each. (More specific pizza instructions coming eventually). :)

To make Calzones:

Prepare filling ingredients your family enjoys (sauce, shredded cheese, meat, peppers, olives, veggies, etc.).

Divide prepared dough into 18 balls. Roll each on a well floured surface. Top with pizza filling of choice.

Fold pocket in half and pinch ends together. Place each calzone on a baking sheet until pan is full.

Bake the pan of calzones at 375° for about 25 minutes or until calzones are golden brown. Makes about 18 calzones. Serve immediately. Or, allow the calzones to cool completely, then refrigerate or freeze them to serve another time. To reheat, place cold or frozen calzones in an oven or toaster oven for 8-15 minutes or until they are heated through.

You can also freeze these before baking if you prefer. Simply place the raw, shaped calzones on a baking sheet and freeze immediately after forming. Transfer frozen calzones into a freezer bag. Bake directly from frozen state in a 375° oven for 25-35 minutes or until golden brown.

Making these Tandy Pockets Whole Wheat Calzones is super easy, and a perfectly wonderful “Make Ahead Meal“. What are your family’s favorite pizza pocket fillers? And oh yes, these would be perfect for meat and cheese pockets, breakfast pockets, and what else can you think of?
