Bacon Cheese Muffins

I believe bacon is the language of love when it comes to most males, and I happen to like bacon too. You want to know the best way I’ve found to get all of my men-folk out of bed in the mornings? Make bacon. Hoooah! <—that was me grunting out a manly sound, did you hear it? That’s the sound that typically follows the word bacon in our house. “Mmm, bacon. Hoooah!” Based on this idea, I created Bacon Cheese Muffins.

I usually stick with turkey bacon, but it really is hard to beat the taste of the pork bacon I can get from our local farmer. It’s a wonderful, occasional treat at our house – and yes, it does drive the boys out of bed in the morning.

These Bacon Cheese Muffins are easy and delicious – perfect for a holiday brunch. (You may remember seeing this recipe in our free Healthy Breakfast Made Simple eBook.)

Homemade Hot Chocolate Mix Without Dry Milk or Creamer {With Free Printable Gift Tags and a Dairy Free Option}

Hot Chocolate Mix

I can’t tell you (because I can’t remember) how many requests I’ve received through the years for a healthier hot chocolate mix. Non-dairy creamer and powdered milk are two ingredients in every homemade hot chocolate mix recipe I’ve ever found – and those are two ingredients I try to avoid if possible. I’ve had to keep telling people through the years that, sorry, I have no idea how to make a hot chocolate mix without those ingredients. I worried, fretted, and lost sleep over the fact that I was failing to provide a healthy hot chocolate mix recipe. (Not really, but shucks if I didn’t want one for myself too.)

Then I realized that I was making this way too hard. After all, what we’re all going for in this real food realm is simple, back to basics, whole food ingredients – right? Then why not mix together the basic, real food ingredients needed to make homemade hot cocoa – and keep the mixture on hand as a quick mix to stir into hot milk? Ladies and gentlemen, boys and girls – we now have a real food, real good, real easy Hot Chocolate Mix! And it’s here just in time for Christmas!

You’ll probably look at the simple recipe below and ask, “Really Laura? It took you six years to come up with this?” And I would have to shrug and say, “Uh-huh.”

Homemade Healthier Hot Chocolate MixYum

3/4 cup cocoa
1 1/2 cups sucanat or brown sugar

Place ingredients in a pint-sized jar and shake well. When you are ready for a cup of hot chocolate, here is what you’ll do:

In a small saucepan, whisk 2 1/2 Tablespoons of Hot Chocolate Mix with 1 cup of milk. Heat and stir on medium heat until warm and ready to serve.

This recipe makes about 12-15 one-cup servings, depending on how “heaping” your Tablespoons are when you stir it into the milk.

Want to make this dairy free? Simply add the mixture to a cup of coconut milk. It’s super delicious!

Malachi had a buddy over the day I was playing with this recipe idea. They were sweet enough to be my taste testers, and they both gave it a thumb’s up. Or at least I believe they would have if they weren’t so busy saying “yum” and guzzling it down.

Want to package this Hot Chocolate Mix up for a gift? Simply place a gallon-sized twist tie bag (like this one) down into a mug. Funnel the mix into the bag and tie it up with a bow. Attach a gift tag to the handle of the mug, describing how to make the mix into Hot Chocolate. You’ll find free printable gift tags below!

Now you tell me – is this exciting or what? How fun to have a real food Hot Chocolate Mix to have on hand and to give as gifts! Sometime within in the next six years, I hope to provide you with another recipe idea as simple as this one.

Free Printables: Christmas Gift Tags

I know many people don’t share this excitement with me, but I love wrapping presents! I lay all the gifts out, admire them, get excited about watching the recipient open them, then get to wrapping. I enjoy choosing the wrapping paper and gift tag that I think best matches the person I’m gifting. I’m not a perfectionist when it comes to wrapping, so the process goes fairly quickly for me. That may be part of why I don’t mind the job. :)

Just for fun, I created two pages of printable gift tags to cut out and attach to gifts. Feel free to download, print, and use them as you wrap gifts this year!

Delicious Candy You Can Make Yourself (with healthier ingredients)

December 11, 2013 by Laura 3 Comments

As you all know, I don’t mind the occasional healthy food compromise, especially on special occasions. Christmas qualifies as one of the most special occasions of all, doncha think? But when I turn over a package and see that the yummy contents therein contain hydrogenated oils or high fructose corn syrup – I just can’t do it. (I know, I know. It’s best not to even read the label. Wait. What?)

What I love is trying to re-create some our favorite treats so that we can have our Christmas candy and eat it too. These treats are best shared and in moderation though, because they are full of sugar! (I know, I know. It’s best not to even think about how much sugar is in them. Wait. What?)

Here are some goodies I make every once in a while for a very special treat:

Homemade Peppermint Patties

These call for none other than mashed potatoes. Weird, but true. And they also have tons of powdered sugar in them. Better than high fructose corn syrup, but wowza. You’ll be amazed at how much these taste like the “real thing.”

Peppermint Patties 2

Chocolate Peanut Butter Cups

This is my husband’s favorite. It’s super fun to make these for him every once in a while. We think they taste better than the packaged variety. It’s amazing how good peanut butter tastes when it’s only made with peanuts.

Chocolate Peanut Butter Cups

Chocolate Caramel Cups

These are ooey-gooey messy. But having a drop of caramel resting on one’s chin never hurt anyone.

Chocolate Caramel Cups

Peanut Butter Truffles and Chocolate Caramel Truffles

Making these truffles is easier than you would think. And the result? Amazing.

Delicious Homemade Truffles

Peanut Butter Honey Fudge

This is the easiest fudge you’ll ever make. It contains only three ingredients – peanut butter, honey, and chocolate chips. So good!

I’m not great at sending out Christmas cards anymore. I have zero guilt over this. I have found other ways to be in touch with loved ones and find that taking “Send Christmas Cards” off my holiday to-do list is a great relief.

However, I still often find that it’s nice to have a few Christmas cards on hand to add to gifts, to put with a plate of cookies we’re giving away, or to simply encourage someone. I had fun creating a few different cards that I printed off to grab when I need one. Then I made each of the files into downloads to share with you!

Snickerdoodle Muffins ~ Having Breakfast With the Muppets

December 4, 2013 by Laura 21 Comments

As I stated on Facebook yesterday:

I feel a tiny bit silly (but not silly enough to keep it to myself, apparently). Growing up, my mom and I always listened to the Muppets Christmas cassette, which featured John Denver. I loved it SO much. So I just bought the album for myself. I couldn’t hold back. I mean, if you haven’t heard Miss Piggy singing the 12 days of Christmas, you’ve really missed out. (Ah, the memories…)

muppets
I have played the songs over and over within the last 24 hours. All I can think about while I listen to this is hanging out with my mom while we wrapped presents and made Christmas crafts together during the month of December.

I had all but forgotten the album existed until my sister-in-law texted something about it yesterday. Memories flooded back. Now I can’t stop listening to it. And I can’t stop smiling. You would think that after over 9 years of being without her, I would realize that calling to talk to my mom isn’t an option. But as I listen to this music, I have had to stop myself several times from picking up the phone to dial her number. “Mom!” I want to shout, “Remember our winter nights together? Remember Miss Piggy singing ‘ba-dum-pum-pum’ in the 12 Days of Christmas? Remember how much fun we had? I just got the John Denver Muppets album on CD and I’m listening to it now with the boys, and they love it as much as we did!”

So since I can’t tell her, I’m sharing this with you. Of all my Christmas memories, I have to say listening to this music while preparing for Christmas with my mom might be my favorite memory of all. I really can’t stop smiling. And crying. And laughing (“mee-mee-mee-mee-mee-mee” – you have to know Miss Piggy to get that one).

Here’s a little blast from the past for ya that I found on youtube:

This morning, I turned on the Christmas lights, cranked up the Muppets, and tried a new recipe. These muffins are simple, full of cinnamon, delicious, and perfect for Christmas time. My family and I had breakfast with Miss Piggy, Kermit, and John Denver.

Snickerdoodle MuffinsYum

1 1/2 cups whole wheat flour
1/3 cup sucanat or brown sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1 egg
1/4 cup melted butter or coconut oil
1/2 cup sour cream
1/2 cup milk

Snickerdoodle Topping:

2 Tablespoons sucanat or brown sugar
1 teaspoon cinnamon

Stir together flour, sucanat, baking powder, cinnamon, and salt. Add egg, butter, sour cream, and milk – stirring until mixture is well combined. Scoop batter into 10-12 paper lined muffin tins. Stir together the sucanat/cinnamon topping. Sprinkle about a 1/2 teaspoon of the mixture onto each muffin. Bake in a 400° oven for 15-20 minutes or until muffins are golden brown. Here’s to tasty Christmas goodies, relishing wonderful Christmas memories, and creating new memories with our own families now.

Please tell me if you remember this Muppet Christmas album with John Denver so that we can talk about Piggy Pudding together! What are your favorite Christmas music memories?

Making Your Christmas Count

December 1, 2013 by Laura 4 Comments

It’s too easy to get caught up in the hype of a commercialized Christmas. This year, our family decided to work a little harder at working less hard. We’re drop-kicking the stress of Christmas time. We figured the best way to keep Christ in Christmas is to do what He did on earth. He served. He loved people. He cared. He took time to be still and pray.

Together, we sat down and made a list of how we could really make Christmas count this year. Here are just a few of our ideas:

Making Christmas Count Ideas 2

We continue to add ideas as we think of them. In fact, our page is almost full now. Will we get them all done? No, and that’s not the point anyway. We’re working hard at not working hard, remember? Our list is a brainstorm. We’ll pray about how God can use us during this season, and we’ll let the rest go.

We’d love for you to join us this year in Making Christmas Count! We made a free printable to share with you so that you and your family can make a list of your own. Let’s enjoy serving others this holiday season, remembering and appreciating the One who came to serve.

Making Your Thanksgiving Preparations Easier

Making Holiday Preparation Easier

Sometimes I wonder why I don’t make big turkey dinners more often. After all, the food is so delicious and basic:  Meat, potatoes, veggies, rolls, dessert. But each year as I’m prepping the food, I’m reminded why I only make it once or twice a year. It’s a lot of work compared to putting together a casserole and serving it with a salad!

You’ll be glad to know that along with my every day getting ahead tricks and recipes, I’ve figured out many ways to get ahead for the big Thanksgiving meal as well. I usually start a week or two in advance, making good use of my freezer. Does our Thanksgiving meal taste like I’ve frozen and defrosted it? No way. It tastes fresh, because I’ve learned tricks to get ahead and keep the food tasting great!

First, I make my turkey ahead of time. I love getting the big chore of cooking and deboning a turkey out of the way ahead of time.

Easiest Way to Cook a Turkey

Once I’ve got the turkey cooked, I then have several jars of rich turkey broth that I can use to make Turkey Gravy for the big day. I freeze the broth to be used Thanksgiving day.

How to Make Turkey Gravy

Potatoes? Well – I don’t make my mashed potatoes ahead of time. But, the day before, I wash a large amount of potatoes in the dishwasher so that they are ready to go. I also find that it works well to peel and cut the potatoes the night before Thanksgiving. I put the prepared potatoes in a pot of room-temp water. When it’s time to cook and mash them, all I have to do is move the pot of prepared potatoes to the stove and begin the cooking process. Such a Thanksgiving day time saver!

Wash Potatoes in the Dishwasher

How about homemade rolls? We have two favorite recipes, one of them being these Whole Wheat Butterhorns. They can be made ahead of time, then set out to thaw in the morning and baked at meal time. Easy!

Whole Wheat ButterhornsWhat do you do to get ahead of big holiday meals?

All of these tips, plus many more can be found in our Heavenly Homemaker’s Guide to Holiday Hospitality eBook. In addition, you’ll receive planners, printables, and lots of recipes! For one last day, this eBook is marked down to just 99¢! Get it now! (Holiday Hospitality for Kids eBook is available for just 99¢ as well.)  Sale runs through Tuesday, November 19.
