Simple Snack Recipe: No Bake Cookie Cups

This is a recipe in which my beloved Fat Bomb treat teams up with my dearest Honey Sweetened No-Bake Cookies to create No Bake Cookie Cups in perfect harmony.

Indeed, I’m talking about actual harmony as these No Bake Cookie Cups sing to me when I walk into the kitchen each morning. It’s like I have my very own Barber Shop Quartet sitting in my refrigerator. Just think of it! I open the fridge door at 6:30 am and these cookie cups take off their red and white striped hats to salute me. Then the singing begins.

I’ll spare you the song lyrics, but they are obviously all about how well I pull off the “just rolled out of bed” look with my mis-matched pajamas and fly-away hair.

Simple Snack Recipes Series

Why all the hoopla about this simple snack recipe? Because it truly is my very favorite. These No Bake Cookie Cups are a perfect mix of nourishment and deliciousness. They are super filling because they are loaded with good fat and protein. The oats make them seem more like a no-bake cookie, and well, oats are good. The fact that these are made in muffin cups makes them even easier to make and definitely easier to eat.

So basically, these No Bake Cookie Cups are perfection, which is why we can all break out in to four part harmony together as we rejoice over this snack.

Here’s why they qualify as a Simple Snack Recipe: These come together in about five minutes. Scoop all ingredients into a saucepan and stir together until melted (five minutes, tops). Add the oats. Pour into muffin cups. Refrigerate. Eat. Sing. Be happy.

No Bake Cookie Cups

Simple Snack Recipe: No Bake Cookie Cups

Ingredients
  • ½ cup coconut oil (I use expeller pressed so the coconut flavor doesn't overpower.)
  • 1 heaping Tablespoon cocoa powder
  • 4 Tablespoons butter
  • ½ cup natural peanut butter
  • Liquid stevia to taste (I use 1½ droppers full of NuNaturals Brand.) or 2-3 Tablespoons honey
  • 1 cup whole rolled oats
Instructions
  1. In a small saucepan, heat and stir together coconut oil, cocoa powder, butter, honey, and peanut butter. (If using stevia as sweetener, wait to add it until after ingredients are melted and you've removed the pan from the heat.)
  2. Stir until melted.
  3. Remove from heat.
  4. Stir in oats.
  5. Pour into 12 lined muffin tins. (I prefer to use silicone liners for these.)
  6. Freeze for 20 minutes or refrigerate for 2 hours.
  7. Store in fridge and enjoy.

Simple No Bake Cookie Cups

It’s worth noting that these taste best right out of the fridge and start to melt quickly if left out for longer than two minutes. Don’t ask me about the time I packed one to eat at a basketball game. Ok fine. I’ll tell you anyway. I once packed a No Bake Cookie Cup to eat at a basketball game, but by the time we arrived and I got it out to enjoy, it had turned to a baggie full of mush that required a spoon and five napkins. Good story, huh?

For a fun twist, during the next several weeks, we’ll be sharing all kinds of wonderful Simple Snack Recipes. After all, man cannot live on meals alone.

Well, I can’t. I mean, I can. Surely I can live on meals alone. But I really, really like good snacks. I tend to eat a little something every two hours. I’m basically like a newborn. At least I sleep through the night. But every two hours during the day I NEED SNACKS!!!! That is all.

Who else is a snack lover?

I think we can all agree that the simpler the snack recipe, the better. I’ve got a bunch of recipes to share that include just a few ingredients. They take just a few minutes to throw together. They make very little mess. They cost very little to make. They taste delicious. They are filling. They are fun.

Simple Three Cheese Spaghetti (On a Simple Budget)

I’ll tell you about this Simple Three Cheese Spaghetti in a minute. But first…

I’ve decided I need to write another cookbook. My Oh, For Real cookbook is almost out of stock, and I’ve learned a lot more about simple real food cooking since I wrote that one. My Best of Heavenly Homemakers book is selling well, but there are very few recipes included.

I think I need to write a cookbook filled with all these super simple real food recipes I’ve been sharing so we can help lots and lots of families put great, nourishing meals on the table without hassle or big expense. Hmmm…my wheels are now spinning with new cookbook ideas. What are your thoughts and ideas about this??!

Today’s Simple Three-Cheese Spaghetti recipe is super creamy and flavorful. We use Pepper-jack cheese for this, which gives it a nice kick. If your family doesn’t like spice, you can stick with Colby-jack, cheddar, or any of your favorites!

Simple Three Cheese Spaghetti

Simple Three-Cheese Spaghetti (On a Simple Budget)

Serves: 6-8
Ingredients
  • 16-ounces whole grain spaghetti noodles
  • 1 tablespoon olive oil
  • 1½ tablespoons minced garlic
  • 1 cup freshly shredded pepper jack cheese (or cheddar if you want to avoid the spice)
  • ½ cup freshly shredded Parmesan Cheese
  • 4 Tablespoons cream cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
Instructions
  1. Cook spaghetti noodles according to package; drain.
  2. While noodles are cooking, saute garlic and olive oil for 1-2 minutes in a medium sauce pan.
  3. Remove from heat and add remaining ingredients to the pan.
  4. Place back on the burner, and cook and stir sauce ingredients until cheeses are melted and sauce is smooth and creamy.
  5. Pour cheese sauce over the cooked spaghetti noodles and serve.

Beyond the Free Range Chicken

Many of you remember my God is Bigger Than a Free Range Chicken post, and fondly refer to it as one that was refreshing and life changing for you. It made the Best Of Heavenly Homemakers book as one of the top picks. Fun!

If I were to summarize that post, I would simply say: If you can’t afford free range chicken (or fill in the blank with any number of other great food options like grass fed beef or cage free eggs), you need not worry. God is bigger. He will provide. And at least serving your family a conventionally raised chicken is better than serving them highly processed boxed food filled with MSG.

So that’s that.

Beyond the Free Range Chicken

Today I’d like to share with you how far God has taken me in a different direction during the past few years in regard to the free range chicken.

Yes, I still prefer to serve my family grass fed beef and free range poultry. Yes, I love my organic greens. Truly, I can tell the difference in cage free eggs compared to regular store bought.

But none of this – not any of it – matters when I look beyond all that is physical and earthly into what I believe God asks us to focus on for His Kingdom purposes.

Perhaps I could restate this by re-writing my own version of 1 Corinthians 13: If I have a perfectly raised, free range chicken, but have not love, I am nothing but a conscientious cook whose meat is free of antibiotics. If I have dozens of cage free eggs, a refrigerator full of organically grown produce, and a freezer filled with grass fed beef, but have not love, I am nothing.

But then, of course, I’d need to switch back to the actual words from this passage once we get to verse four: “Love is patient. Love is kind. Love does not envy, it does not boast, it is not proud…”

A couple years ago, Matt and I asked God to show us what it really means to “Love God and love our neighbor.” He has been faithful to teach us and in short, we’ve learned that true love looks a lot different than inviting people into a perfectly clean house so that we can serve them grass fed pot roast with a side of organic carrots.

God’s love looks like seeing people who are often overlooked. It looks like listening to people who are lonely. As of late, for Matt and me, love looks like spending time with new friends who just got out of prison and are determined to make a new life for themselves in Jesus. It looks like forming relationships with recovering addicts who are letting God be at the heart of their transformation and healing. It looks like hearing people’s stories, sharing our own stories, and being completely open to letting the Holy Spirit lead our days.

As God has been gently changing my heart focus, the quality of my chicken matters less and less to me.

I absolutely do still care about nourishment and believe that we should be caring for our bodies well so that we can love others well. But if you’ve noticed an extreme shift in my recipes and food encouragement that has taken us from spending hours in the kitchen to keeping our food as simple as possible, this is why.

God’s people matter more than free range chicken. Loving others in the name of Jesus trumps all.

What should this love and outreach look like from one home to another? Only God has the answer to this question. Ask and you shall receive. This is guaranteed by Jesus himself.

So where does this leave our beloved free range chicken? It all depends on what God provides for each day. His ways are perfect, His provision is flawless, and we can rest peacefully knowing that we can trust Him completely.

Simple Noodle Soup on a Simple Budget

Did you save your bones from the Simple Lemon Garlic Chicken Legs so you could use them to make broth? You’ll need that great broth in this Simple Noodle Soup recipe!

See how orange my broth is? That’s because I always cook a lot of carrots and other veggies with my chicken or beef bones when I make broth. Then I blend up the mushy, cooked veggies and stir them back into the broth. I’m telling you, this tip makes our broth super delicious and obviously very packed with nutrients!!

I store my broth in 1/2 gallon jars in my fridge to pull out and use as needed. Usually when I make soup, I add more veggies so we’re getting veggies upon veggies and our soups are very nourishing!

This particular Simple Noodle Soup recipe I’m sharing today can really be made according to your family’s preferences. I simply cook sliced carrots and whole wheat noodles in the broth, salt it liberally, and call it a meal. If I serve it with salad then we’re getting even more nutrients and if I throw some fruit on the table we’re golden.

The best part is that this soup is comforting, warm, tasty, and quick to put on the table. It costs very little to make, especially if you’ve kept chicken bones from past meals like these Simple Lemon Garlic Chicken Legs.

Simple Noodle Soup

Simple Noodle Soup on a Simple Budget

Serves: 4-6
Ingredients
  • 4 cups of your favorite broth
  • 2-3 carrots
  • 1½ cups of your favorite whole grain pasta, any shape or variety
  • Salt and pepper to taste
  • Additional veggies your family likes in soup
Instructions
  1. Pour broth into a large cooking pot.
  2. Slice carrots (and other veggies if you like) and add to the pot.
  3. Bring broth and carrots to a boil.
  4. Add pasta, salt, and pepper.
  5. Cook until pasta is tender, about 8 minutes.

There’s no meat in this soup, but if you’ve got some leftover chicken hanging around, feel free to stir it in for extra nourishment and protein!

30 Real Food Money Saving Tips

I couldn’t have done it without you. I asked what YOUR best real food money saving tips might be, and oh did you come through!

It was so fun to put all of our heads together and put together this great (FREE!) resource full of Real Food Money Saving Tips! There truly are many great ways to save money on real food groceries!

I love it when high quality meat is marked down!

Sure, I know some great ways I’ve learned to save money on real food through the years. But so many of you have different experiences and ideas from what I’ve learned. Putting so many of your tips together into this little booklet means we all get just that much smarter! (Just when we thought we knew everything about buying apples…)

Ready to get started? You’ll find all 30 tips detailed in this absolutely FREE resource. Here are some of my favorites:

  1. Crystal: I only have a family of 3, but because of prices of grass fed beef and organic chicken, I only use half a pound when I make spaghetti or a casserole and I use 1 chicken breast when I make a noodle dish or casserole that calls for chicken. I’m always using less meat than called for as a way to stretch it. That way I can afford higher quality meat. It works for us!
  2. Nicole: Last year I switched around how I menu planned instead of finding recipes then going shopping for those ingredients I now hit the produce & meat area buying what’s on sale (and good quality!) then I come home and find recipes that contain those items. Now I don’t feel obligated to buy the higher non sale item because of the time I already have invested in menu planning.
  3. Melody: We have meatless Mondays, tuna recipes for Tuesdays, and I “shop” my pantry and fridge/freezer first, then the on-line ads, and make my menu plan from that. I make out my grocery list for just the items I will need to make the items on my menu. We also use less meat than a recipe calls for and add beans to stretch out the meat in meals like tacos or casseroles.
  4. Susan: My best money saving advice is the skip fancy recipes that require you to buy ingredients you don’t have on hand or use often. I often leave out or substitute a fancy ingredient for a more economical or practical ingredient. I can’t be a 5 star cook on my budget and some days I wish I had fresh herbs or a fancy vinegar, but running out to buy them for 1 recipe isn’t the best use of my funds. I have been sticking to simple real food recipes with basic cost effective ingredients. I make menus based on my own pantry and sale items. Also, I use leftovers for casseroles or soups (freezing them if I am not using them right away). Leftover or stale bread is used to make croutons.
  5. Christy: Twice a year we clean out the pantry and freezer. We buy only milk, eggs and bread until we are down to almost nothing in the pantry. The meals get interesting, but it is great for the budget and can be as healthy as what you originally put in there.
  6. Mary Beth E: Right now–and tomorrow– I am waiting for UPS and/or FedEx to drop off packages of grocery staple items I buy in bulk. Because I cook whole foods at home, this will cover all our bread, rolls, tortillas, rice, pies, cakes, spices, seasonings, and much more, even toilet paper. I will place another order about mid-year. When I see almost any recipe, I have on hand the basics. When I go to the grocery store–every other week–I mainly buy fresh or frozen produce, eggs, and dairy. Buying in bulk and thinking of your budget in terms of a year rather than a week, really saves a lot of money.
  7. Birdie: Garden and can, however you are able. A small plot in your yard, partner with others on a shared plots, help a neighbor with a plot, encourage your apartment/duplex owner to allow some of you to garden in the yard (check bylaws), talk to the college in your area to see if they would be interested in allowing community gardens. Even create a raised bed so you can sit and garden from a chair or wheel chair if you are not as mobile. Container garden on a balcony or deck (remember to water often).If you can’t garden, buy meat, fruits and vegetables in super sales, can, freeze, and dehydrate. Approach a few farmers and see if you can have shares in their live stock. Participate in butcher time and you may receive a great deal on meat. If you can get your hands on garden herbs and spices from others, dry and add lots of flavor to your cooking.

  8. Nedrda: One way I save money on quality meat is to partner with my sister and mom to buy a grass-fed/pasture raised cow or hog. We can buy those meats at $4.00 a pound and then split the meat between the three of us. We also do this for the bulk coconut oil through Tropical Traditions and other items through Azure Standard and Amazon. By doing this, I do not have to come up with total amount myself to buy the beef/pork/oil and I can enjoy the quality for a great price. It also helps with storage issues to split the order!
  9. Crissi: For most of our grains, frozen fruits, some fresh fruits, and odds and ends we use Azure Standard. We’ve purchased foods from them for well over a year now, I’d highly recommend them. They have excellent customer service.
  10. Cassondra: One thing I do when I run out of something like a spice or condiment or anything else is look online to see if I can make it from scratch with items here at home. For example, I make our taco seasoning but was out of chili powder…so I went online and found a recipe for chili powder, had all the ingredients for it and it turned out great. So now I have one more from scratch recipe on hand.

Dark Chocolate Almond Granola

(This recipe cuts the cost from $2.00/serving with store-bought granola to only $0.50/serving. Yep. The store-bought version really is that expensive!)

Serves: 10-12
Ingredients
  • 4 cups rolled oats
  • ¾ cup shredded, unsweetened coconut
  • 1 cup slivered almonds
  • ¾ cup honey
  • ¾ cup coconut oil
  • ½ cup dark chocolate chips or chunks
Instructions
  1. In a small saucepan, melt coconut oil and honey together.
  2. Stir oats, shredded coconut, and slivered almonds together in a large bowl.
  3. Drizzle on the honey/coconut oil mixture and stir well.
  4. Pour mixture onto a large, parchment paper-lined baking sheet (or two 9x13 inch dishes).
  5. Bake at 300° for 35-45 minutes, stirring after the first 20 minutes.
  6. Allow mixture to cool.
  7. Stir in dark chocolate chunks.
  8. Store granola in an air-tight container.
  9. Makes 10-12 servings.

Simple Lemon Garlic Chicken Legs (on a Simple Budget)

These Simple Lemon Garlic Chicken Legs will make everyone think you are a gourmet chef. Which, of course, you are. No one has to know your secret. The secret about how you spent five minutes making the chicken. Let’s just keep that between us.

No one has to know how little you spent on this meal either. We can let everyone think you went all out with time and money.

Want to know how much it cost me to serve this entire meal to my family? There were five of us home the last time I made this. My husband and me, our 17-year old son, our 15-year old son, and our 13-year old son. We ate a full pan of these chicken legs with mixed greens, grapes, and green beans. Total cost for all of us to eat?

$5.61

Total. For the entire meal. For five of us to eat a plate full of nourishment.

Indeed. I’m so glad I did the math!

I always watch for chicken legs to be marked down at the store, which is a huge money saver! This time I used two packages which had been marked down to a tiny $1.27 and $1.34! So total for my meat this meal was just $2.61. Incredible! Add in the greens, veggies, and grapes and I’m estimating that our total for this meal was just $5.61.

Now, not to geek out too much, but this breaks down to just $1.12 per person for this meal. Man, I am loving this Simple Meals on a Simple Budget series! It is challenging me to see what meals pack the most punch to stretch our grocery budget!

Oh! And I saved the chicken bones after we cleaned up all the meat and threw them into my Instant Pot for a small batch of chicken broth. Waste not, want not, right? :) Remember that little tip because the next Simple Budget recipe I plan to share will use that broth!

Simple Lemon Garlic Chicken Legs

Simple Lemon Garlic Chicken Legs (on a Simple Budget)

Ingredients
  • 10-12 chicken legs
  • 1 large-sized lemon
  • 2 teaspoons garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
Instructions
  1. Lay chicken leg in a 9x13 inch baking dish.
  2. In a medium-sized bowl, juice and zest the lemon.
  3. Add remaining ingredients to the lemon juice/zest and stir.
  4. Pour the mixture over the chicken.
  5. (Do this ahead of time and refrigerate for 2-24 hours to marinate if you wish.)
  6. Bake, uncovered, in a 425 degree oven for 35-45 minutes or until juices run clear.

Simple Veggie Fritters (on a Simple Budget)

With these Simple Veggie Fritters, you can present your family with a satisfying meal made entirely of fruits and veggies!

I will admit: I wasn’t sure how well this recipe experiment would go over with my family. I was prepared to get out the Ranch Dip for them, assuming these Simple Veggie Fritters would taste extra good that way. But guess what? I didn’t even need to get out the dip.

My kids at the Veggie Fritters without coaxing. And here I had an entire speech prepared.

What I’m loving most about all these Simple Meals on a Simple Budget recipes is that it’s teaching us ways to go meatless a little more often. We definitely still love our meat around here, but there really are many ways to fill my family without killing the fatted calf. This is a great budget saver, something we can all be very grateful about!

As you can see from the pictures, I served these Simple Veggie Fritters with a fun variety of other fruits and veggies that filled us up and offered us great nourishment! I dug garden okra out of our freezer from last summer and fried it in oil with salt. I cut a fresh pineapple. I got Homemade Guacamole out of the fridge. We ate like kings (and queen).

I’m sure we had meat with our evening meal later that day. But for lunch? We ate all the veggies and fruit and felt great!

Simple Veggie Fritters

Simple Veggie Fritters (on a Simple Budget)

Serves: 12 patties
Ingredients
  • 2 small zucchini
  • 2 medium-sized carrots
  • 2 Tablespoons dried minced onion
  • 1 cup grated cheese (we like Colby jack or cheddar best for these but any variety will work)
  • 1 cup flour (we use freshly ground hard white wheat for these but you can use your favorite!)
  • 1 cup milk
  • 1 egg
  • ½ teaspoon cayenne pepper (optional)
  • Sea salt and pepper to taste
  • Oil for frying (I recommend palm shortening or refined coconut oil as they are flavorless and remain stable at high temperatures.)
Instructions
  1. Grate the zucchini and carrots into a bowl.
  2. Add remaining ingredients and mix well.
  3. Heat about 3 Tablespoons of oil in a skillet.
  4. Scoop veggie mixture into hot oil, pressing down to make patties.
  5. Fry until each side is golden brown, about 2 minutes each.
