Menu Plan for the Week ~ Lots of Apples and Dip

We are loving all the apples available to us right now! We are now completely stocked with homemade applesauce for this winter, plus we’re eating a lot of apples for snacks and with meals. One of our favorite ways to eat these apples is with Cream Cheese Fruit Dip. If you haven’t tried this recipe yet – do it. It’s amazing. My kids think it’s kind of like dipping your apple in cheesecake. :)

You’ll notice in my menu plan below that I am serving this dip twice today – once this morning for a college age Bible class Matt teaches at church; and again tonight for the teens who come to our home for Bible study and fellowship.

I always spend time over the weekend planning our meals for the upcoming week. I write down most of the specifics from main dish, to fruits and veggies. But I almost never stick with the menu plan completely. In fact, just last week there was a day I fed my family grapes even though I had planned to feed them blueberries. I bet you didn’t know I had that kind of crazy in me. Oh honey, you have no idea.

Once, I forgot to thaw chicken, so we had tuna. I was going to make Fruit Pizza on Monday, but in fact, I didn’t make it happen until…wait for it….

Tuesday.

So hi. Let’s all learn to have some sort of plan so we save money and time. But unless serving Wednesday’s Pasta Salad Bar on Saturday totally messes with you, ditch the idea that you have to follow your menu plan perfectly. It really is okay to pull out leftovers on Thursday if you don’t feel like making the planned Taco Corn Fritters. I have done this and lived to tell about it.

10 Easy Real Food Meals for Less Than $1 Per Plate

You’re excited to hit the restart button this fall. You’re making healthy changes in your kitchen and you’re likely finding the sticker shock to be a bit painful. (By the way, what is up with the price of butter lately?)

I feel ya. Healthy food costs more than processed “food.” That’s because real food is…real. It’s whole and it’s good, and it is the result of hard work and careful practices. (Go farmers!)  Chemicals and fillers in processed foods are cheap to make in factories. You get what you pay for. But ugh, must feeding our families eat up (literally) so much of the pay check?

Always remember that the food you buy is an investment in good health.  It helps to keep this in mind when you’re tempted to save money by filling your cart with cheap processed foods that won’t nourish.

Be encouraged! There are so many great meals you can make that are real, completely nourishing, and still very inexpensive. Phew! You’re not going to go broke. You just have to learn a few tricks to making this work.

I’m here to help. I am feeding teenage boys, after all. I really would go broke if I didn’t work to keep our real food costs down. After all, some of the darling children can eat half a casserole each. (And you wonder why I have so much Pyrex.)

Shaela sent in this one, which included none other than old episodes of our boys’ Cake Boys videos (a spin-off of the TV show, Cake Boss). Our boys were a few inches shorter and a few shoe sizes smaller when they made these. :)  They’ve moved on to other types of videos now, but if you haven’t watched the Cake Boys series, you may want to – just for fun!

Our kids love to watch Cake Boys episodes and I about die of laughter watching your boys’ commercials on the episodes (Asa’s elbow guard was hilarious). We decided to make Chocolate Peanut Butter Pudding Cake today and watch Cake Boys. I loved that the cake was done in the Crock Pot since it’s 95 degrees here in Colorado today. Thank you for sharing those Cake Boys videos, we enjoy them and your recipes.

Taco Quesadillas ~ The Make-Ahead Lunch Box

Have you ever made quesadillas, let them cool, then put them into the fridge or freezer for another day? You should do this.  They are perfect for your Make-Ahead Lunch Box.

Now you’re thinking, why would I do that? Quesadillas are already my easy go-to meal to make on the fly. How would it help to make them ahead of time?

Come closer. I have something to tell you. If you make quesadillas ahead of time, then they will already be made when you want to serve or eat them.  <— It has taken years of research, trial, and error to arrive at wise and knowledgeable comments such as these.

Okay fine. I just figured it out last week. It should have been obvious to me long ago, but I thought melty cheese should always be warm. Yes, somehow I forgot cold pizza was a food group for some people. Who knew cold quesadillas were also good? And if you don’t want to eat them cold, but instead want them warm again, simply warm them up at serving time. <—- Again, the brilliance of advice read here must continue to amaze you.

Now, the best part about a quesadilla is that you can fill them with whatever you like. Cheese, obviously. But what about varieties of meat and/or veggies? Taco Quesadillas are my current favorite, dipped in a small bowl of fresh salsa. I will tell you from experience that these taste great warm or cold. Warm would be my top choice, but we threw a bunch of cold ones into a bag to take to a soccer game recently and they were delicious. This means you can make these ahead of time and throw them in your lunch box for work or school. Perfect!

Your favorite tortillas (we like my homemade whole wheat tortillas)
Shredded cheese (my fav is Colby jack or white cheddar)
Leftover cooked taco meat
Salsa

Place a tortilla in a skillet and top with shredded cheese and cooked meat. Top with an additional tortilla. (I do feel a little bit silly telling you how to make a quesadilla, as if you don’t know how to make a quesadilla. But hey, if you didn’t know before, now you do.)  Cook on medium heat for about 2 minutes on each side until cheese has melted.

Watch to be sure tortillas don’t burn. <—- Breaking out one more time with more never-heard-before, ground breaking advice. You’re welcome.

Gratituesday: Filling the Pantry

Gardening. Canning. Preserving. Freezing. Slicing.  It is so much work.

I really don’t have time for this. But I also don’t have time not to do it. So I make time, or somehow, as always, God provides the time. The family pitches in to help, and eventually we get it all done.

The beauty of working so hard to get garden veggies and orchard fruit preserved in the summer and fall is that this winter it will all be convenience food for our family! It will be super easy to pull these goodies out of the pantry or freezer and serve them quickly with our meals. That’s why I make the time – that and because it saves us hundreds of dollars. That’s pretty nice too. :)

It’s been a few years since we canned any peaches. We’ve only had enough to freeze some for smoothies. This year, we got ourselves set for smoothies, and filled several jars to eat plain or with cottage cheese. These peaches turned out so pretty!

We’ve made loads of applesauce. What you see below is barely a sampling. Thanks to cucumbers a friend passed along to us, we are all set with dill pickles and sweet pickle relish for the year. I also made a few jars of salsa (my mom’s recipe). Sometimes, I just open my pantry to stare at all the pretty jars full of food. That alone makes the hard work all worth it. :)

It was ironic that I was gawking at my jars of home-canned produce and taking pictures to share with you today. Just as I was doing that, the UPS man showed up on our porch with part of our Amazon Subscribe and Save order. FUN!! (See many of the specifics here.)

I snapped a picture of the packaged food (and household items) too. I thought it would be good to show you those along with my home-canned produce. Yep, sometimes I rely on packaged cereal on busy mornings. Sometimes we like chips for a treat. It’s all about balance, right?

I just LOVE a full pantry, and thank God that he has provided so much (mostly) free produce to preserve. I also thank Him for the great deals I find online that are delivered to my door. How fun that I got to stare at so many household blessings for my family today. Thank you, God for the bounty!

Menu Plan for the Week ~ And A Little Bit About Our Past Few Days

I hate to talk about the weather, but…

Is it cold at your house already? It’s been unseasonably cold the past few days here in Nebraska. Temps are supposed to creep up again, thankfully, but here it is mid-September and I’m already wearing wool socks. It’s a little early for that, but I’m kind of a cold weather wimp. ;)

We’re pulling in quite a bit from our garden since it’s been getting so cold at night. We probably won’t be getting many more fresh tomatoes (sniff). I chopped one up to go with a new recipe – Taco Dip. It was super, super easy and really delicious – two favorite qualities in a recipe at my house. Fresh pineapple (not from our garden, ha!) was a great side dish. And of course, I served a mountain of quesadillas too. We’re serious about our food.

One of the cold days last week, you would have found me wearing my wool socks…and drinking an iced coffee. Silly and counterproductive, I know. But the iced coffee was delicious, making the shivering episode completely worth it. I will say though, I stuck with hot coffee the rest of the week. I’m not completely crazy (just mostly).

5 Ways to Save Money While Becoming Healthier

Remember how my healthy living journey started?

A decade ago, clipping and using coupons was one of my favorite hobbies. I got Hamburger Helper for 33¢ a box, Windex for 49¢, and cans of green beans for a dime. Cheap or free – that’s what I looked for when purchasing the food we ate, the cleaning products we used, and the tissues that wiped our noses. I was the Coupon Queen, and I rocked that job.

Then, our fourth baby was born with chronic eczema. Suddenly our poptart-filled lives needed to change drastically.

We recognized right away that we could no longer use regular (cheap) laundry detergents as they caused major break-outs for Malachi. Anytime a spray cleaner was used, he would be even more miserable. Before he was a year old, we realized that everything we brought into our home – from food to cleaning supplies to medicine – needed to be changed.

Dark Chocolate Almond Granola – Less Than $1 Per Serving

I’m thankful for the kick-start we received so that our whole family could become healthier, but it really was quite a difficult and discouraging time full of question marks.

A loving friend who knew I was trying to find better foods and cleaning supplies for my family handed me her health food co-op catalog. She said it helped her family save money. Excitedly, I started skimming the pages.

With one glance, I was soooo disappointed! These were the best prices to be found on healthy food and household products? Seriously? I was used to paying pennies for our food and cleaners. And what even was half of that stuff they listed in there? Kimchi, kombucha, coconut milk? Weird…and expensive.

Well, here we are, a million and a half life lessons and experiences later. Thankfully, I’ve learned the importance of investing in nourishing foods and non-toxic household items for our better health. I’ve also learned many new ways to save money – the healthy way. Isn’t God cool?  He always provides what we need – from finances to information to ideas to support.

Easy Chicken Pot Pie – Less Than $1 Per Serving

I still have a lot to learn. I don’t always practice these money saving methods perfectly. But I do my best to save money and be healthy at the same time. I’ll continue to share the great deals I find and the tips I come across. I know this journey can be hard, and I want to encourage you in any way I can!

Here are five of my favorite ways to save money while striving for good health:

1. Make it Homemade

You already know this about me, so I’ll just briefly say – it saves our family hundreds of dollars every month when I make most of our simple meals from scratch. Here are some of the highest money-saving foods I make:

  • Cereal like Homemade Grape Nuts and Dark Chocolate Almond Granola.
  • Bread products, like Honey Whole Wheat Bread and Whole Wheat Muffins. Occasionally I’ll buy a loaf of 100% whole wheat bread at the store, but typically, if I don’t have time to make bread, we just don’t eat bread. No worries – there are tons of other goodies to eat like fresh fruit and cheese!
  • Frozen convenience foods like Meat and Cheese Burritos and Calzones. This saves food cost, plus saves us from the high cost of eating out if I don’t have food prepared.

2. Skip it Altogether

While I used to have a specific cleaning product for every single cleaning need on the planet, I’ve found that it’s not necessary at all. Do I really need to spray chemicals from a can onto my dusting cloth before wiping down my furniture? Um…who knew a bit of water would work just as well if not better? (sometimes I amaze myself)

I use a great All-Purpose Cleaner from Tropical Traditions for tougher jobs. Otherwise, simple household items like baking soda, vinegar, and lemon juice are completely healthy, inexpensive, and pretty much amazing. A great way to save money is to make your own household cleaners (see #1 above).

3. Think Outside the Box

What if the way we’ve always done things isn’t necessarily the only way to do it? What if doing something different might be healthier and save money too? It’s hard to think outside the box sometimes – especially if anything outside of our norm seems foreign to us. But on your healthy living journey, you’ll find it’s great to save money by exploring new ideas.

For instance, I used to run my kids to the medical clinic for every sniffle or bump. The costs really added up, but what’s a mom to do? I am so thankful for what I’ve learned the past few years about treating my family at home when possible. Doctors and clinics are there for a reason, and we certainly use them when we need to. But home remedies, essential oils (I’m just digging into these and LOVE what I’m learning!), natural options for keeping on top of illnesses – these are keeping us healthier and saving us hundreds of dollars too.

4. Plan Ahead

While it isn’t possible to see into the future, there are a few constants in life we can prepare for. For instance:

  • You will always need toilet paper and laundry detergent.
  • We all need to eat three times a day.
  • Christmas is always December 25.

Planning for what I know will be needed saves my sanity and keeps us from spending money we don’t need to spend. Making meal plans each week has saved me so much money! You can see all my weekly menu plans here.

5. Use Online Resources

I continue to be amazed about the awesome deals I find online. Not only am I saving money on the items themselves, I’m saving all kinds of gas money and travel time. I love that I can shop at my convenience, and save time by having items shipped (usually, for free) to my door.

I decided it would make perfect sense for me to post about My Favorite Whole Wheat Recipes, and then follow it up the next day with a post about avoiding wheat and/or grains altogether. I like keeping you on your toes.

Seeing as the Ultimate Healthy Living Bundle includes an entire section on Special Diets, I thought this might be a good time to address my thoughts on eating a gluten free, grain free, or paleo diet. Let’s chat, shall we?

A few weeks ago, I got this email from Deb:

I am just wondering what you think about all the gluten free, etc. rage? Some of my friends truly have celiac, but most just seem to be trying this as more of a fad, way to lose weight, etc. Don’t you think that the reason that they feel better is because they give up processed junk and sugar, not so much because of the actual gluten?

We just had a missionary stay with us from Australia, she is originally from Taiwan and has lived in Kenya as well. She says that Americans are the only ones who take supplements and vitamins and have all these food allergies. She thinks it is ridiculous to eat at McDonalds, then buy vitamins. She stayed with us 2 weeks and it was very interesting, even if she was out and about, she would NOT get fast food, she would go to the grocery and buy fresh meat and vegetables and come home and cook it, even though it costs more and was more time consuming. Also, a lot of my friends that are on these EXTREME diets cheat half the time anyway, so what is the point?

Ah yes. I too have watched people go from eating a basic diet of donuts, chips, fast food, and skittles – to eating a low fat or low-carb diet. They lose weight, feel better, and swear that the key is to cut out carbs, grains, gluten, eggs, beef, or butter.

Hey, hey, hey. Them’s fightin’ words to this girl. Nobody better be blaming my butter or beef on their poor health! Especially when we’re talking about the kind that comes from cows who are raised in a healthy environment. But enough about my beloved bovines. What is the healthiest way for all of us to eat?

I hate to disappoint you, but I do not believe that there is a one-size-fits-all diet.  I believe real food, in balance, based on what your body can tolerate and thrive on is the right diet for you. Learn to listen to your body, and nourish it.

I love my beef, and in fact, I believe I personally need quite a bit of (grass fed, if possible) red meat in my diet in order to maintain a healthy level of iron in my body. You might not need much or any beef. You may not need much of any variety of meat. Okay by me – that means more cow for this girl. Learn to listen to your body, and nourish it.

While some can’t tolerate grains or gluten, I can. I can’t eat them in large amounts, and in fact, I believe most of us should cut back on the grains just to make more room in our diet for fruits and vegetables.  Learn to listen to your body, and nourish it.

Here are my Paleo, Gluten Free, and Grain Free thoughts in a nutshell:

  • When you give up processed foods and instead eat more wholesome, nourishing foods, you will feel better and look better. This has very little to do with the fact that the food might be gluten free, paleo, or grain free.
  • If you truly are allergic to a certain food or if a food makes you sick, by all means, you should not eat it.  You might want to check into NAET though. It is possible to re-program our bodies so that they no longer reject certain foods as allergens. My boys and I have experienced this, and it works. Where we used to have food allergies, we no longer do, praise God!
  • A Gluten Free label does not automatically make a food healthy.
  • Cutting down on grains is beneficial, especially if the majority of what you eat is grainy. Our bodies need a better balance, and grains can be difficult to digest. Bready foods should not be our main nourishment focus.
  • If we’re cutting down our grains, we should not replace them with loads of almond flour and coconut flour. I believe these flours are fantastic additions to our diets, and wonderful to use in baking – especially if your body can not tolerate grains. But to eat them by the pound every day? Well, what happened to balance?

Paleo, Gluten Free, and Grain Free diets can be healthy and beneficial. But if you’re focused on cutting out foods for the wrong reasons, and not focused on overall body nourishment – you’re right back where you started.
