When Legos and Learning Collide (Free Lego Learning Printables!)

If you didn’t already know about our family Lego obsession, let me remind you that not only do we have lots and lots of Legos, we have an entire room dedicated to Legos. (I am personally more obsessed with butter than Legos, but my boys love them, so I love them too.)

If only it was still this clean. At least it’s not as bad as it used to be though.

All of our boys have loved Legos through the years, but our youngest son Malachi, who is now eight, is our Lego King. Not only will he spend hours each day creating with Legos, he is actually saving his money to begin a Lego Business some day. Who knows but that it just might happen?

As I’ve been working to prepare our curriculum for when we begin school in a few weeks, I got super excited when I came across FREE Lego Learning downloads! Here is one for Lego Mini Figure Writing Prompts. Here is a Language Arts Lego Mini Figs Download. Both of these are perfect for Malachi (who will be a third grader). What a great and fun way for him to work through his English lessons this fall!

If those don’t work for you, or if you have younger kids, you’ll want to look at all of the Lego Learning options over at Homegrown Learners. I was so impressed with what she offers (for free!) that I had to share with you. :)

Menu Plan for the Week and Some Teenager Food Math

We continue to have houseguests, and have been having such a great time. Asa and Justus are at church camp, so while we are so proud of them and excited about what they are learning, we sure do miss them being home! Can’t wait to hear about their adventures. :)

As I have been cooking for our guests, but not cooking for my teenagers, I have really learned about how much my two oldest boys eat. Here is a little story problem for you:

The Coppinger family of 6 has 2 teenagers away at camp. They have welcomed 4 guests into their home while their boys are gone. If Laura continues to prepare the same amount of food she normally serves at each meal, what amount of food will she have leftover at the end of each meal?

Give up? Our family of 6 take away 2 equals 4 plus 4 guests equals 8…eating the same amount of food normally prepared for 6 and leaving leftovers.

Conclusion: My teenagers eat as much food as two or three people…each. I knew they ate a lot, so this has been eye opening to experience just how much they can put away. I love that they are such good eaters! You can bet I’ll be making their favorites when they come home. Have I mentioned that I miss them?

Crustless Pizza

Do you like how I cleaned up the crusty baked-on edges of the pie plate before snapping the shot?
Oh my bad. I was thinking of another picture I didn’t take.

Sometimes, I just don’t feel the need to have grains or carbs with every meal. I’ve been learning to listen more to my body and to give it what it needs – or to not give it what it doesn’t need.

I have especially become more aware of my body’s nutritional needs since I began working out regularly. There are times I find my body screaming for protein. Other times, I can tell that if I don’t get some carbs in me, I am not going to feel well. Later, I might be craving a huge salad or an orange.

I’m not sure how to explain away yesterday’s chocolate chip cookie. Cookies. Plural. Did my body need them? Yes I think so. But of course, not really.

One day recently, while making pizza for my family, I found that I was not hungry for the crust. That day, I was just in it for the meat and veggies. Therefore, I cooked up some hamburger meat with mushrooms, sweet peppers and onions, stirred in some sauce, spread it in a pie plate, and topped it with cheese. I put it into the oven with the regular pizzas I had made, just long enough to melt the cheese the way I wanted it.

In case you ever find yourself short on time and not able to make a crust, or if you simply don’t want a pizza crust on your pizza – I highly recommend the Crustless Pizza. So incredibly tasty.

Cake Boys Season One Finale

While there are already Season Two episodes in the works, this is the final episode of Cake Boys Season One recorded in 2012. Why yes it did take seven months to finish this (which is why you’ll see a Christmas tree in the background in one clip). That’s because the boys have too many ideas and not enough time. You should hear the commercial ideas they come up with. Be thankful they don’t make all of them for your viewing pleasure. I love their creativity though!

If you haven’t watched any of these episodes, I really encourage you to watch this one if you can. The boys have really improved their movie making skills over the past few months. We got them new software for Christmas and I love seeing them learn how to use it and try new things. They’ve made some pretty neat changes in how they put together their movies and I think this one is their best so far. (Proud mom? Yes.)

Bet you’re just dying to try that awesome food from a box my boys are advertising, huh? :)

Having Company? Prepare Food Ahead of Time. {And My Hostess Confessions}

Having Company Prepare Food Ahead of Time.

Little known fact about Laura:  I can start a load of laundry, brush my teeth, plan dinner, write a grocery list, and instruct four different children on six different chores all at the same time, but for all of my multi-tasking abilities, I cannot talk and cook simultaneously.

I try to fake it. I’ll stir together cookies while chatting with a friend in the kitchen, and attempt to sound intelligent when answering a question. This works not at all. She’ll ask how long we’ve lived in this house, and I’ll look lamely up from my cocoa powder and answer, “blue.” She’ll try again, asking where I got my lovely serving platter. I’ll blink a few times in an effort to pull myself into the conversation, and come up with “last week at a soccer game.” You think I’m kidding. God bless our house guests. 

Occasionally, I will actually answer questions correctly while cooking (and even ask a few brilliant ones) only to realize later that I forgot to stir important ingredients like oil or eggs into our breakfast muffins. We already know I struggle with remembering to put bananas in my banana bread – and that’s when I’m all alone in the kitchen holding only a conversation with myself (don’t ask). It’s rather scary and a wonder friends and loved ones still eat my food and declare it to be good.

Because I love extending hospitality, but I also love not looking and sounding like a dimwit, I work to prepare as much food ahead of time as possible before guests arrive. It is my number one hospitality survival tactic. This also helps insure that I will not be working in the kitchen the entire time my company is here. I love to cook, but when guests are here, I’d much rather play games, watch the kids play, or sit around and visit intelligently. (Eleven. We’ve lived in this house for eleven years. It was a wedding gift. The platter, not the house. Try to keep up.)

In addition, prepping food ahead of time means that the worst of the dirty dishes are cleaned up and put away. I’ve also found that when some of the guests are children who eat as much and as frequently as mine, having snacks and meals prepared is helpful in avoiding melt-downs and grumpiness. As we all know, a grumpy hostess melting down in the kitchen is ugly. (Right. You thought I was talking about the kids.)

One more thing to note:  Beyond preparing food ahead of time, I feel it is important to keep meals simple. Guests don’t need gourmet, they just need food served with love. They don’t need fancy, they just need tasty. A fruit platter is beautiful, nourishing, and delicious. A lettuce salad tosses together quickly. Veggies steam in no time. Put those together with a casserole or another main dish you’ve prepared ahead of time, and you’ve got a perfect, simple meal to serve to guests.

So just in case you find yourself like me, with the inability to cook and talk at the same time, do the best you can to prepare food ahead of time. If all else fails, remember to keep a smile on your face at all times. You might respond to your guest with “in the refrigerator behind the peanut butter” when asked where your bathroom is located, but at least you’ll look cute.

Can you talk and cook at the same time?  (If your answer doesn’t make sense, I’ll assume you’re adding spices to your sauce.)

Gratituesday: I Miss My Boys

It’s been quite the summer around here. We have had (and currently have) company. We are painting our house and getting other major projects done. We’ve traveled here and there. Through it all, our oldest two boys have been gone more than they have been home. We did have them home for two weeks in June and treasured every minute of it. (We also handed them a paint brush.)

When we signed them up for their activities this summer, we knew what we were doing. We knew that they were making big commitments and that they would be away from home quite a bit. But we also knew that what they were signing up for was exactly what they should be doing with their time. They went on a mission trip, and now will be at church camp either as a counselor/staff or as a camper for the next four weeks.

Our boys are growing up. They are becoming leaders and growing in their relationship with the Father. We are so proud of them.

As I was thinking of them this morning and praying for God’s protection of them and guidance while they are at camp, I realized how much I miss my boys. It occurred to me what a blessing it is that my kids are so great that when they are away from me – I really miss them. It’s not a relief to have them gone. I don’t welcome the break. I really miss them.

At the same time, I’m joyful and grateful for all they are blessed to experience this summer. I’m pretty sure this is God’s way of helping to prepare me to let them go in a few years. Oh but never mind. Let’s not talk about that yet.

God, take care of my boys and continue to draw them closer to you as they develop a more personal relationship with your Son. What a privilege it is to raise kids to love the Lord!

Menu Plan for the Week

For our company today, I made homemade brownies and hot fudge sauce so that we could make Brownie Fudge Sundaes for our dessert after lunch. Malachi insisted that we call them Brownie Fudge Saturdays, even though it actually is Sunday, because apparently, we can’t just be normal around here. I shrugged and told him that we could call them whatever he wanted, then I helped myself to another mouthful of chocolaty goodness. :)

Do You Have a Victorio?

Last week, as I was describing to one of our visitors how I make applesauce, I was reminded that I have an awesome new tool in my kitchen:  my Victorio food strainer.

I guess it’s not really new anymore, but it feels new because I don’t get new “toys” very often and I only found out about the amazing Victorio last summer. How in the world did I ever make applesauce or tomato sauce without it?? Whichever of you wonderful ladies told me about this last year – thank you! Because of it, I can not wait to make sauce this year. It has simplified my canning process so much.

Our tomato plants are loaded with small green tomatoes, which means that soon, it will be loaded with big red tomatoes!

The Victorio is discounted right now to at Amazon, so I wanted to be sure you knew about it and could take advantage. With the amount of money I save making our own apple and tomato sauces, and the amount of time I save making them with the Victorio, I would have to say that it was one of the best ways I’ve ever spent $$!

Your Home is Beautiful

Your Home is Beautiful

Do you live in a house? Apartment? Duplex? Trailer?

Then you are very, very blessed.

Do you have a bed with a pillow? A kitchen with a skillet? A chair to sit on? A shower with running water?

Wow. Then you really have it made.

I’m guessing you might have more than a backpack to hold your clean clothes? Blessing upon blessing.

Since going to Colorado with my family a few weeks ago, serving alongside those who minister to the homeless, feeding families who don’t have enough food to nourish their children through the week, and learning more about those who have no place to call home – I can’t quite see my house the same as I did before.

It’s been easy for me through the years to find fault in the house we’ve lived in for the past eleven years. Our abode is well over 100 years old. That means it has a lot of “character” right? Yes. If by “character” you mean that the toilets don’t flush well, the basement looks like the Adam’s Family lives there, and the dust from the Dirty Thirties is still stuck in crevices around each of our fifty drafty windows.

That’s how I look at my house when I have a self-focused perspective. The world tells me I need new, shiny, perfect, better, best, improved, highest quality, and spotless. Pinterest tells me I need my home and the contents therein to look like as though they climbed out of a magazine – completely unique, yet altogether trendy (which is oxymoronic, yet true). We must have the right color scheme, a lovely furniture arrangement, and classy wall decor. Otherwise, we must feel guilty, deprived, and less than.

What if we just decided to be thankful instead?

We don’t have central air in our house. Below is a picture of our kitchen window air conditioner, sporting white cardboard and clear packing tape to seal off the window. (Which I felt was better than brown cardboard and silver duct tape, yes?)  I used to be embarrassed by this. Now I just appreciate that we have air conditioning on 100 degree days.

Go ahead. Pin this. I dare you. You know you want one just like it in your window.
Perhaps we could start a unique trend.

Undoubtedly, God gave each of us our home and has called on us to use it for Him as we raise our family and offer hospitality. We need to keep it clean, take care of it, and create a space that will tell all who enter that our home is a place of peace and joy.

But beyond that, should we really lose sleep over the fact that our “to-do” list of needed home improvements is as tall as the pile of clutter in the corner? I’ve come to realize that having a foundation, walls, a floor, and a roof is more than many people have. Even if some of our furniture is old, worn, and stained – at least it’s furniture.

Look at your home through the eyes of the homeless. Your home is perfect – a gift. It is beautiful, and truly, you are blessed.

Strawberry Shortcake Muffins

It’s no secret that I like to serve fun treats for breakfast. If it’s made with whole grains, is low in (natural) sugar, can be served with fruit and/or eggs, and will keep my family nourished and full for at least two hours before they start asking for a snack or lunch, I consider it a breakfast food. Don’t get me started on my frequent rant of “who decided store bought donuts, honey buns, fruit loops, or other sugar-filled negative calories are a part of this balanced breakfast????”

You’ve already been informed of my Giant Breakfast Cookies, Breakfast Cake, and Homemade Poptarts. I’ve also shared that I occasionally serve homemade apple pie or peach cobbler for breakfast. Filling and wholesome, less sugar than drizzling syrup over a pancake = breakfast of champions. (Or at least of my boys, who I consider to be champions, without a doubt.)

While strawberries have been in season, from time to time, I have served Strawberry Shortcake for breakfast. It’s made with whole wheat and honey, and topped with fresh strawberries and whipped cream. If that’s not breakfast, I don’t know what is. My boys agree, of course.

Recently, I decided to bake my Shortcake batter in muffin cups for a fun twist. It was super easy. I made them the night before, and had a great breakfast to present to my family the next morning.

Find the recipe here. Instead of spreading the batter in a pan, scoop it into 10-12 well greased or paper-lined muffin cups. Bake at 350° for about 20 minutes. Serve with fresh strawberries and whipped cream.

(And by the way, we enjoy the occasional Krispy Kreme when we’re visiting family or friends. It’s fun -just not a regular occurrence at our house. )  :)
