Cooking Days and Crazy Days: Freezer Cooking

Here’s what I am finding to be a pattern, which is not really a pattern at all, but really a random “take it as it comes and try to keep your head above water” lifestyle: 

Some days I have plenty of time to cook and be all kinds of “Little Miss Heavenly Homemaker”. And other days I am so completely busy with family/business/outdoor/appointment/tournament/travel/ministry/school/you-name-it responsibilities, that finding even a moment to breathe, much less put together a healthy meal, is much more than I am capable of. Those are the days you may as well call me “Little Miss Why Pray Tell Do These Children Think They Have to Eat Five Meals a Day and Where In The World Is My Other Shoe?” This is when having healthy meals already prepared in my freezer are a life saver.

(Side-Note:  Being a “Heavenly Homemaker” is something I believe you and I always are, whether we’re grinding flour and making bread from scratch, or whether we’re chucking a store-bought snack toward the back of the mini-van to your kids on the way to an event. As long as our tasks are done with love and with God’s purposes in mind, I believe that sometimes we just have to splurge in an effort to stay sane. But because I love being home, and I love being productive in my kitchen preparing healthy foods, I do feel more “Heavenly Homemaker-y” when there isn’t raisin gunk stuck to my hard wood floor and when I have time to stop and smell the butter melting on the stovetop in preparation for baking.)

During the last few weeks, as I’ve grabbed some hours of time in the kitchen as I’ve found them available, trying to get as much done as possible to make up for the crazy days when I don’t have as much time to cook. I have taken some pictures of the food to share with you. As for the dirty dishes these cooking times have created, I have no pictures. You will just have to imagine those in your head. Imagine the worst, then double it, then drizzle some pickle juice and sour milk over them, and that’ll be just about right. :)

One particular day a few weeks ago, I had several hours to spend in the kitchen. I sort of forgot to stop once I got going. I made a triple batch of Whole Wheat Tortillas (recipe in our Totally Tortillas eBook), a double batch of Granola, four loaves of Honey Whole Wheat Bread, one batch of Chocolate Chip Cookies, and two Green Bean Casseroles (recipe in our Holiday Hospitality eBook). I added ground hamburger meat to the casseroles to make them a one dish meal. 

After I made all the tortillas, I made three gallon sized bags full of Meat and Cheese Burritos. And then I passed out.  Not really. But almost. 

Several days later after I had recovered when I had an extra couple of hours, I made a double batch of Whole Wheat Calzones. We ate half of them on our way to a soccer tournament that weekend, and the others are still in the freezer for me to grab and serve on another busy day.

Last but not least, I wanted to show you a Pod Racer that I made with Legos. Just kidding. I really just made some pizza crusts for the freezer, and Malachi made the Pod Racer. But since they were both on the counter at the same time, I just took the picture of both. Be glad it was a Lego creation that happened to be on the counter in my kitchen at picture time and not a dirty sock or a dead bug that one of the boys brought in. Not that either of those would ever be found on my countertop…

I’m excited about these pizza crusts (using the dough recipe here), which I rolled thin and used for Grilled Pizza. I’ll share more about that experience soon. I’m super excited to have prepared crusts in the freezer for future grilling!

Gratituesday: Garden Beauty

Several have requested to see pictures of our garden this year. I figured what better day to share them than Gratituesday?!

I can take very little credit for our beautiful plants this year. Matt and the boys have been working hard with little help from me out in the garden. Matt does such a good job keeping up with it and has some great veggies planted. 

He planted quite a bit of okra, so we’re hoping to get a nice crop so we can eat a bunch and freeze a bunch. Okra sliced and fried in a little olive oil is the best!

Here’s a shot of part of our peach tree, which is loaded with fruit this year.

Our tomato plants aren’t very big yet, but they are starting to get little yellow flowers all over them, and you know what little yellow flowers means on a tomato plant right? (BLTs – of course.)  ;)

Here are Matt’s babies, the sweet bell peppers, which he planted in a raised garden bed that he built. We can’t wait until these are ready to pick and eat!

This is kind of a funny shot, so let me explain. Matt planted four long rows of green beans. For whatever reason, one row is doing awesome, as you can see. The other three rows decided to be rebellious. However, we ate our first picking a few nights ago and they were so delicious I thought I might pass out. Here’s hoping the one long row that actually grew will continue to provide lots of beans!

Malachi planted one pumpkin plant, and is very excited to see a yellow blossom growing. He has plans to grow the biggest pumpkin ever, but hopefully he’ll settle for a regular ol’ pumpkin when the time comes. :)

I’m so grateful for my family’s hard work in the garden, and so very grateful for God’s goodness in how he always provides for us!

Chocolate Peanut Butter Pie

Chocolate Peanut Butter Pie
This recipe was given to me many years ago by my dear friend Jill. I typically make this pie once a year, on Father’s Day, as it is one of Matt’s favorites. I would make it more often, but it is a dangerous item to have in our refrigerator. It is rich, incredibly tasty, and I have a hard time controlling myself when it is around.

And here Matt thought I made this pie for him on his special day…

Chocolate Peanut Butter PieYum
1/2 cup butter
1/2 cup natural peanut butter (I used homemade creamy peanut butter.)
4 squares of unsweetened chocolate
1 1/4 cup sucanat (or sugar)
1 teaspoon vanilla extract
4 eggs (I trust free range, organic eggs for this pie.)
1 baked pie crust (Here’s my whole wheat pie crust recipe.)

Bake a pie crust. I recommend this recipe. Allow crust to cool.

In a small saucepan, melt butter, peanut butter, unsweetened chocolate, and sucanat together, stirring frequently. Pour melted mixture into a mixing bowl. Beat in vanilla and eggs – ONE LITTLE EGG AT A TIME.

It is very important that you add eggs one at a time, allowing time for each egg to thicken the mixture and to help the mixture to become creamy. I got lazy once and just threw all the eggs in at one time and I can assure you, my laziness did not pay off. Take the extra few minutes to follow directions. We make our kids do it, right? Set an example to your children and for Pete’s sake, follow directions. Your chocolate peanut butter happiness depends on it. ;)

Once the mixture is thick and creamy, pour it into the pie shell. Chill for at least two hours before serving. Lick the bowl before anyone comes into the kitchen to fight you for the beaters.

Oops, did I just say that out loud? ;)


FYI – If you whip some fresh cream and plop it on top of your piece of pie, this amazing dessert, if it is actually possible, becomes even more amazing.

I feel as though I should now give some sort of disclaimer about eating raw eggs, so here is my smallish attempt at it. Because of the research I’ve done, I completely and totally trust the organic, free range, farm fresh eggs that we are able to obtain, and I do not hesitate to eat them raw in our smoothies, milk shakes and this pie. Not only do I not fear that they will harm us, I love them for their wonderful health benefits. I do not feel the same way about conventional, store-bought eggs, but that’s just me. I’m not a risk taker, but neither do I have one little hesitation about eating this pie when I make it with our good eggs. (Trust me, you should have seen me eating this pie, without hesitation, on Father’s Day, with a big chocolaty grin on my face.)  Feel free to make your own decisions about this, and we can all still be great friends. :)

Family Pictures!!!

Remember how I told you about meeting up with friends at Soul Quest last week? One of those friends was Tracy who is a wonderful mother of three boys, and as you will soon see, is also a wonderful photographer.

When I saw Tracy the first night of Soul Quest, she whispered, “Hey, I brought my camera. Do you think you can pull Asa away from camp for an hour sometime this week for a family photo shoot?!” Wow, I’d seen her work before, so this was an offer I couldn’t refuse. 

Now that we have our pictures back, I can’t stop looking at them. I have five of the most handsome men in my life. God is so good.

Aw, how sweet is this, all of my men looking at me in admiration (yeah, yeah, they are all just doing what Tracy told them to do). :)

Will you just look at all of us, standing still in one place with arms intertwined and looking like a calm, peaceful, little family…

Oh here we go – now this is more like our crazy family reality…

This has got to be my favorite shot.  :)

Grilled Barbeque Chicken

Grilled BBQ Chicken
This meal could not get any easier. (Especially if you hand it over to your husband to cook it on the grill…you know…while you sit down, put your feet up, and read a book – ha!)  ;)

We made this for Father’s Day, for the first time – go figure. Why in the world we haven’t made this before I will never know. It’s not like it’s any kind of mysterious, hard to come by recipe. You marinate your chicken in barbeque sauce and then you grill it. The end. Make a salad and cook up some veggies and you’ve got the easiest, healthy meal ever.

Our boys, who are typically pretty good eaters anyway (except for when they’re not, of course), devoured this chicken and declared it to be the best they’d ever eaten.

We had exactly one drumstick left at the end of the meal. Then, on “leftover night” a few days later, everyone was left on their own to warm up whatever they wanted from the fridge. When Matt found out the meal plan for the evening, he said, “You guys can have whatever you want, but I call dibs on that last piece of Father’s Day chicken.”

Oops, too late. Elias, our ten year old, looked up with a guilty grin, with bbq sauce on his face as he finished off the coveted chicken leg. :)  I guess we’ll need to make this again very soon so Daddy can have more.

Grilled Barbeque ChickenYum

10-12 chicken legs (or other chicken pieces that you may prefer)
1 batch of homemade barbeque sauce (or your bbq sauce of choice)

Place thawed chicken in a glass dish. Spread barbeque sauce over all sides of each piece of chicken. Cover and refrigerate for 1-24 hours – depending on what works best for your schedule. Grill slowly and on very low heat for 45 minutes to one hour, or until chicken is cooked thoroughly. Spread additional barbeque sauce over the chicken as it cooks if you like.

Grilled BBQ Chicken

I do recommend making homemade barbeque sauce so that you can avoid MSG and/or high fructose corn syrup that many bottled sauces contain. And I also recommend making sure the ten year old offers the chicken leg to his dad before inhaling it on leftover night. ;)

Gratituesday: Long Awaited Visits

First, let me say that I’m so disappointed that I have no pictures to document what I am about to share. :(  I guess I was thinking about that hugs instead of the camera.

There is a big camp, called Soul Quest, hosted by our local Christian college, which took place last week. We always love being a part of this, making a point to go each evening to worship with the hundreds of youth and adults that are on campus. (Asa, our oldest, goes as a camper and loves it!)  One of the best parts of Soul Quest is seeing many friends that we rarely get to see. It’s like a big reunion and it’s wonderful. :) 

Then on Saturday we picked Asa up from Soul Quest and dropped him off at church camp where he is serving as a counselor this week. (Yes, Asa is just a little bit busy this summer. Ah to have the energy of a 15 year old!) 

I had heard that my friend Donna, whom I haven’t seen for way too long, was going to be at camp this week with her boys. Therefore, I hoped that when we dropped Asa off I might have just a small chance to hug her neck and catch up for a little while. Well guess what? Donna was the first person I saw when we arrived at the camp ground. And then guess what else? We actually got to visit for over an hour while as our boys played (and got filthy) together. :)  And then guess what else? (Why yes, I am excited about my weekend.)  After I had visited with Donna for a while, her mom showed up and I got to hug and visit with her too! Donna’s mom has always been a lovely encouragement to me.

I left camp with my cup overflowing. 

(I also left with a few ticks, but let’s definitely not talk about that…)  ;)

Menu Plan for the Week

I hope you’ve had a great day honoring the important men in your life. I had a nice phone chat with my dad this afternoon. (I caught him before his Sunday afternoon snooze. Aren’t I such a nice daughter?!)  The boys and I have been trying to spoil Matt today, and based on his reaction at lunch, I’d say we’ve been successful.

Before church, I started marinating some chicken legs in barbecue sauce so that they were ready to grill when we got home. While they were grilling, Justus picked lettuce from our garden for a salad, and I made some sweet corn (the last of what we froze last summer) and some okra (also frozen from last summer). Matt loved the feast, but then I reminded him to save room for his dessert… :)

I typically make Chocolate Peanut Butter Pie about once a year – on Father’s Day. Wowza, this is a rich treat only to be had on rare occasions! But hey, it sure was fun to honor Matt and you know…participate in sharing in his Father’s Day treat with him. And here Matt thought I made the pie especially for him. ;)

I’ll post both this pie recipe and our Grilled Barbecue Chicken recipe later this week.

Fat and Calories – How Much is Too Much?

Typically I let Jen, from Getting Fit With Jen, help me out with answering questions in these posts. However, this time I wanted to speak from my own experience. Rest assured, Jen and I talk about all of this quite frequently while she’s working my tail off engaging in a long, lovely stroll with me as we work to get into shape….

I often receive questions about fat and calorie intake, so I thought it might be nice to address Crystal’s question here in case the rest of you have similar questions:

I also weight train like you do, but have just began eating this way. I was on a high protein, low fat diet, but have switched to raw milk, butter, and all the other good stuff you use. Could you share with me how you balance your calorie intake with the high fat food? I feel great, but am concerned I am taking in too many calories.

This is a bit of a tricky question, simply because everyone is different, and there is not a “one-size-fits-all” nutrition plan that will work for everyone. However, I will share with you what is working for me..

First of all, I have to say that I haven’t counted calories since I was a newly-wed, almost 18 years ago. This isn’t because I am one of those people who can just eat anything and not worry about weight gain. If only.  I simply found the process of counting calories to be tedious and frustrating. I have since learned more about listening to my body. I now work to be intentional to only eat when I’m hungry, and then to stop eating when I’m full. This has been the most successful method I’ve found to help me maintain a healthy weight. If I get into a habit of over-eating (which would, of course, mean that I am consuming more calories than I need), or if I’m eating a lot of “empty calories”, I definitely start noticing my pants getting tighter. But if I am disciplined to eat only what my body is truly asking for, I find that counting calories is not necessary for me.

As a side note, now that I’m working out regularly, I find that I definitely need more calories, but I have no idea how many. I’m simply listening to my body, eating when I’m hungry, stopping when I’m full, eating protein when I crave it, eating vegetables and fruit in larger portions as I need them, etc.

But now let’s get to the fat of the matter. :)  If you’ve been reading here long, you likely know that our family eats a fairly very high fat diet. I don’t hold back on the butter, cream, whole milk, meat, or eggs. I trust our food sources, and I know that whole foods are best for us, even if they may be higher in calories. These high fat foods, when balanced with fruits, vegetables, and other whole foods, are filling, satisfying, and delicious. (Except for those times I eat more food than I should and my pants start getting tight. But let’s avoid bringing that up again, shall we?)

I believe that God made a lovely balance of foods -some which are  naturally high fat/calorie foods (like cream) and some which are naturally low fat/calorie foods (like carrots). I believe that all of these foods, in their whole form, have nutrients in them that our bodies need. 

I also believe that we have stripped many nutrients out of what was originally a whole food, creating “empty calories” (like white pasta) which do little to nothing to nourish our bodies. These foods may be lower in calories than some, but they provide nothing for us, making them a waste of calorie consumption. (And yes, I do still occasionally splurge and eat empty calories, knowing that the majority of the time I make better food choices.)

I believe that eating too much of anything will make you gain weight, whether it’s good for you or not. If all you eat is carrots, and you consistently over-eat them, you will gain weight, even though carrots are low in calories and fat free. (You’ll also turn orange, but that’s beside the point.) ;)

I certainly don’t claim to be an expert on the matter, but these are my thoughts based on my research and experience. I’d love for you to share your experiences with eating a whole foods, nutrient rich diet and how you work to acheive a healthy weight.  (In addition, if you’d like to talk about the times your pants get tight, feel free. Stinkin’ cookies.)

Whole Wheat Calzones

We have some lovely friends in town that make delicious homemade pizza. Their last name is “Tandy”, and because they have made their awesome pizza for so many, most people around here who know and enjoy their pizza lovingly call it “Tandy Pizza”. If you say, “We’re going to have Tandy’s Pizza for lunch,” everyone will get excited. This family has turned their pizza into a ministry, feeding loads of teenagers each week, making their pizza for large groups, baking it for kids at church camp, and the list goes on. Everyone loves the Tandys and their pizza ministry.

Well, a few weeks ago, I finally perfected my own homemade whole wheat pizza crust, and then adapted it to make calzones for a quick, grab and go meal. Malachi, our seven year old, took one bite of his and excitedly declared it to be “as good as Tandy Pizza!”. Now that is quite an honor. Ever since, Malachi has been calling these calzones “Tandy Pockets”. It seems as though the Tandys are getting the credit for allllll my hard work, but hey, I’m okay with that. (And P.S. it doesn’t really take a lot of hard work to make these. I just wanted to sound momentarily pitiful.)  ;)

How to Make Whole Wheat Calzones

Whole Wheat Pizza DoughYum

5 cups whole wheat flour (I use freshly ground flour from hard white wheat)
1 teaspoon sea salt
4 1/2 teaspoons active dry yeast (or 2 pouches)
2 cups warm water (The water should feel warm to the touch, but  not burn your finger. How’s that for a specific temperature. This is how thorough I am…)

Mix all ingredients together, knead for 3-4 minutes, then allow the dough to “rest” for about 10 minutes (give or take). Use the dough to make two pizzas, baking for about 25 minutes each. (More specific pizza instructions coming eventually). :)

To make Calzones:

Prepare filling ingredients your family enjoys (sauce, shredded cheese, meat, peppers, olives, veggies, etc.).

Divide prepared dough into 18 balls. Roll each on a well floured surface. Top with pizza filling of choice.

Fold pocket in half and pinch ends together. Place each calzone on a baking sheet until pan is full.

Bake the pan of calzones at 375° for about 25 minutes or until calzones are golden brown. Makes about 18 calzones. Serve immediately. Or, allow the calzones to cool completely, then refrigerate or freeze them to serve another time. To reheat, place cold or frozen calzones in an oven or toaster oven for 8-15 minutes or until they are heated through.

You can also freeze these before baking if you prefer. Simply place the raw, shaped calzones on a baking sheet and freeze immediately after forming. Transfer frozen calzones into a freezer bag. Bake directly from frozen state in a 375° oven for 25-35 minutes or until golden brown.

Making these Tandy Pockets Whole Wheat Calzones is super easy, and a perfectly wonderful “Make Ahead Meal“. What are your family’s favorite pizza pocket fillers? And oh yes, these would be perfect for meat and cheese pockets, breakfast pockets, and what else can you think of?
