Low Sugar Frosted Christmas Cookies

Some might say that Christmas desserts are treats that should not be messed with. Perhaps whole wheat flour does not belong in a Christmas cookie. Maybe “low sugar” should not be included in a Christmas cookie title. It’s a treat, right? Can’t we just leave it well enough alone?

Sure.

But the more I experiment with cutting down the sweetener in my baked goods, the more I’m discovering that treats still taste like treats even with the sugar cut in half or more.

Wait. I don’t know how to write that. “…with the sugar cut in half or more.” Or should it be “…with the sugar cut in half or less.” I’m talking about cutting out even more than half of the originally called for sugar. Less sugar. Cut it by more than half, so that it’s even less. That is what I’m trying to say. Sometimes writing good sentences is so hard. Who decided that fractions would be smaller every time their bottom number gets bigger? Do you know how hard it is to explain to a small child that 1/8 is bigger than 1/16?? It’s the fraction inventors that are making my sentence writing so complicated right now.

Just for that, I’m not giving the fraction people any of my cookies. They can figure out their own half or more or less sugar fraction in their own cookie recipes. Merry Christmas, fraction people.

Well, there’s no good way to segue after this slightly embarrassing but mostly justified outburst. All any of us really needs to know is that we can cut the sweetener in most baked good recipes and not taste the difference. Truly this sugar cookie is still so sweet I can barely eat it. My kids – who love sugar-covered-sugar just like all the other kids – cannot tell that these cookies are low in sugar. I daresay that if we left these on a plate for Santa, he’d be like, “Wow, these are the best cookies I’ve had all night, but without the sugar crash. This mother must have used half or more (or less) of the sugar called for in the recipe.”

Good ol’ Santa. He totally gets it.

Low Sugar Christmas Cookies (That Don't Taste Low Sugar)Low Sugar Christmas Cookies

Low Sugar Christmas Sugar Cookies

Ingredients
  • 1 cup melted butter
  • ½ cup sucanat or raw sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3½ cups of whole wheat flour (give or take)
Instructions
  1. Stir together melted butter and sugar.
  2. Add eggs, vanilla, and baking powder.
  3. Stir in flour until a solid ball of dough forms.
  4. Cover the bowl and place it in the refrigerator to chill for about an hour.
  5. Roll chilled dough on a well-floured surface and thin or thick as you like.
  6. Cut with cookie cutters and place them about a half inch apart on a baking sheet.
  7. Bake in a 350° oven for about 12 minutes or until cookies are lightly browned.
  8. Makes 20-30 cookies depending on the thickness and size.

If you’d like to frost your cookies but keep them low sugar, I recommend this stevia sweetened frosting.

Stevia Sweetened Cream Cheese FrostingYum

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Frost cookies just before serving.

This frosting is not like regular powdered sugar icing. It’s delicious on these cookies, but does not harden or hold up well for the long term. I recommend only frosting a few cookies at a time, as needed. I use the term “as needed” loosely because we are talking about cookies here. Although these are low in sugar so the half or more or less sugar fraction does the lessen the guilt.

Whole Wheat Quick Mix “Very Vanilla” Cookies {Sneak peek into our upcoming Oh, For Real! book}

I have to say thank you for giving my younger two boys a bit of educational entertainment this evening. I called them in to help me count the “votes” to determine which Whole Wheat Quick Mix recipe I would share with you first. They made a list of the options, and then made tally marks as I called out “cookies”, “fruit pizza”, “pancakes”, etc.

You know boys. Everything is a competition. As we went through each of your comments, the excitement grew. Who knew that counting recipe votes would be so much fun? At one point early on, Malachi shouted, “Muffins are in the lead!!” And so it went.

Ah, it’s the simple things in life that are the most fun, right?

Malachi and Elias are excited to share that Very Vanilla Cookies won the vote, with Fruit Pizza and Pancakes trailing in very close behind. They personally each wanted to vote for Fruit Pizza. I think they thought I was going to drop everything and immediately make the recipe that won the vote. Sorry boys. Cute as you are, your vote doesn’t count this time. Besides, I don’t have any fresh strawberries on hand. ;)

So here you go – a very easy and delicious cookie recipe that you can stir together in no time using your Whole Wheat Quick Mix. If you happen to have homemade vanilla extract to use in this recipe, yay! But even if you don’t, I bet you’ll still be able to choke these down. :)

Very Vanilla CookiesYum

3 cups Whole Wheat Quick Mix
1 1/4 cup sucanat
3 eggs
2 teaspoons vanilla extract

Mix all ingredients together. Scoop 1 ½ teaspoons of dough onto a cookie sheet, about 3 inches apart. Bake in a 375° oven for 12-15 minutes. Makes about 2 dozen cookies.

Whole Wheat Chocolate Crinkle Cookies

Typically, I am a regular ol’ chocolate chip cookie girl. I began making chocolate chip cookies when I was about eight years old, and made them almost daily in the summer when we had hired hands helping us on the farm. I can make chocolate chip cookies in my sleep. I don’t have to even think about the ingredients or the measurements while I make chocolate chips cookies. And shucks, if I do say so myself, my chocolate chips cookies taste pretty good.

Lately though, my boys have been asking for something a little different. What!? They don’t want the same chocolate chip cookie over and over and over? C’mon. Change is hard for me. And if I really care to admit it – thinking is often hard for me as well. I’d rather make something that is a no-brainer, thank you very much. Don’t they understand?

Okay, fine. A change of pace in the cookie department every now and then is nice. Which is why I played with a chocolate cookie recipe to make it healthier. We all loved the way it turned out. And if you throw some homemade white chocolate chips in these, you’ve got a fantastic “healthy-ish” cookie.

By the way, if you don’t feel like taking the time to make homemade white chocolate chips, I completely understand. Just know that regular store bought white chips typically have hydrogenated oils and corn syrup in them, which I recommend avoiding if at all possible. I did find some healthier white chips at Whole Foods a few months ago that were “clean”, and I noticed that VitaCost and Amazon had some too – so hey, all is not lost!

Whole Wheat Chocolate Crinkle CookiesYum

3 eggs
1/3 cup unsweetened cocoa powder
1 1/2 cups sucanat (or brown sugar)
1/2 cup  melted coconut oil (butter would also work)
1 teaspoon baking powder
1 teaspoon vanilla extract
2 cups whole wheat flour (I use freshly ground flour from hard white wheat.)
1 cup white chocolate chips (optional)

Whip together eggs, cocoa, and sucanat. Stir in melted coconut oil, baking powder, and vanilla. Mix in flour until a nice dough has formed. Fold in white chocolate chips. Spoon teaspoon sized balls of dough on to a cookie sheet, about 2 inches apart. Bake in a 350° for 8-10 minutes. Allow the cookies to sit on the cookie sheet for about five minutes before removing. Makes about 24 cookies.

The dough just looked too yummy, so I had to take a picture. Kind of makes you want to reach into the computer with a spoon, doesn’t it?

These cookies are soft, sweet, and slightly coconutty if you use virgin coconut oil. (Use expeller pressed coconut oil of you don’t prefer a coconut flavor.)

Fun {healthier} Holiday Baking

What with all the butter I hear you’ve been going through lately, it sounds like there’s a lot of fun Christmas baking going on out there! I actually haven’t even started doing my baking yet, but I will start soon. Oh yes, the butter and sucanat are going to start flying around here.

As I began to make my baking plans, I put together a list of some of my favorite holiday cookies and treats. All of these are made with healthier flours and sugars (usually honey or sucanat). I won’t be making all of these treats, but  I’m really hungry right now, so I just kept adding to the list.
