Our Favorite Lightly Sweetened Cookie Recipes

Since I just shared a list of fun ways to enjoy coffee, I thought it was fitting to share a list of lightly sweetened cookie recipes to go with your coffee. Or your tea. Or water. Or milk. Choose your cookie – choose your beverage!

I love a barely sweet treat with my coffee. The recipes listed below are made with whole grains, wholesome fats, and have low sugar content. I have simply adapted our favorite cookie recipes through the years to make them lower in sugar while still keeping them delicious!

  1. Sweet and Simple Butter Cookies – Only 4 ingredients!
  2. Low Sugar Cream Cheese Cut-Out Cookies – My favorite to make for holidays!
  3. Buttery Almond Cookies
  4. Simple Oatmeal Cookies
  5. Honey Sweetened No-Bake Cookies – Just like when you were a kid, only less sugar!
  6. Easy {Low} Sugar Cookies
  7. Low Sugar Lemon Melt-Away Cookies – You must try all these Melt-Away varieties!
  8. Low Sugar Almond Melt-Away Cookies
  9. Low Sugar Orange Melt-Away Cookies
  10. Low Sugar Lime Melt-Away Cookies
  11. Low Sugar Chocolate Fudge Cookies
  12. Low Sugar Flourless Peanut Butter Cookies – Only 3 ingredients!
  13. Low Sugar Flourless Chocolate Peanut Butter Cookies
  14. Pumpkin Spice Cut-Out Cookies – These are a must in the fall!
  15. Low Sugar Chocolate Brownies
  16. Low Sugar Chocolate Chip Cookie Bars – The sugar in these is cut down from 1 1/2 cups to just 1/2 cup!
  17. Sweet and Simple Cranberry Cookies
  18. Low Sugar Chocolate Cookie Cut-Outs

As a bonus, it is worth sharing my favorite flourless brownie recipes!

These are also low in sugar, and are completely grain free. I can’t get over how delicious these are. The trick to keeping them moist is to remove them from the oven BEFORE they appear to be done. If you leave them in the oven too long, they’ll get dry. But remove them when they are still a bit gooey and you are golden!

  1. Super Moist Flourless Peanut Butter Brownies – Only 5 ingredients!
  2. Super Moist Flourless Brownies – These are the same as the Peanut Butter variety, but they’re made with Almond Butter instead.
  3. Flourless Brownie Muffins – Use the above two recipes, and bake the batter into muffin cups. If it’s possible, that makes the brownies even better!

How to Make Fun and Easy Sparkling 100% Juice

I’m in it for the bubbles. Easy Sparkling 100% Juice is so very perfect.

I shared all kinds of thoughts (that didn’t necessarily make sense) about “how much I love drinks” in this post. I guess with warmer weather coming, I’ve been thinking more about fun drinks (not that warm drinks aren’t fun in the colder months too, of course).

One of my boys’ favorite things to splurge on is Martenelli’s (and by boys’ splurge, I should clarify that they prefer it if we parents do the splurging, because it is much easier to enjoy something if someone else has paid for it).

Have you tried Martinelli’s? It’s a very tasty sparkling cider that is 100% juice, made especially fun because it comes in a cool bottle and pours out nice and bubbly. I find it in the juice aisle at Wal-mart.

Martinelli’s is great for a special occasion, like New Year’s Eve, when I might not mind spending close a few extra dollars for each of us to have a sip of sparkly bubbles. But for a random Tuesday, I’m a little more selective about where I put my grocery money.

Soooo, we’ve found a way to have our sparkling juice and drink it too. We call it “Mom-inelle’s” because I invented it and we are all quite proud. The boys are especially happy because this invention means they can enjoy this fizzy drink more often than every December 31.

This has become the drink we enjoy when friends come over, and it always receives rave reviews. Note that you can add any 100% juice that you choose. We’ve discovered that our favorite is 100% Cranberry. Who knew? 100% Grape is a close second.

You may also find it fun to make this with combo-juices like 100% Cran-Raspberry or 100% Cran-Grape or 100% Apple-Raspberry.

It may just be us, but we have also found that this Sparkling 100% Juice tastes best with Mexican food or Pizza. There’s just something about fizzy drinks with food that has a bit of a spice. Try this!

How to Make Fun and Easy Sparkling 100% Juice

Serves: 4-6
Ingredients
  • 11.5 ounces of frozen juice concentrate (thawed, butnot diluted)
  • 33.8 ounces Seltzer water (carbonated water)
Instructions
  1. Pour the juice concentrate into a ½ gallon jar or pitcher.
  2. Slowly pour in the seltzer water (if you pour it too quickly, it could bubble over).
  3. Stir slightly so as to mix the two liquids but not release too much fizz.

P.S. If you’re having a hard time giving up soda (pop/coke/whatever you call it where you live) – I recommend this fizzy juice as a great alternative. :)

15 Delicious Dips for Your Super Bowl Party

As is always the case this time of year, I have absolutely no idea who is playing in the Super Bowl. If it mattered to my husband it would matter to me. But it doesn’t, so it doesn’t. Make sense?

What does matter to me is the fun night of fellowship we will have at our friend’s house during the game. Matt and I actually do enjoy watching the occasional game of football. The big buffet of fun foods never hurt my feelings either. I’m all about the dips at a Super Bowl party. I have several I’m thinking of making to share. Here are some of our favorites:

Black Bean Salsa
 – Five healthy ingredients, it’s like a flavorful meal all by itself.

Cream Cheese Salsa Dip – This is the easiest dip on the planet (2 ingredients!) and everyone loves it.

Easy Veggie Dip – Oh my cucumbers. This is the very best way to enjoy raw veggies. It stirs together in about two minutes.

Healthier Cheese Dip (a Velveeta/Rotel Knock-Off) – Who needs “processed cheese product” when you can have the real deal?!

Hot Spinach and Artichoke Dip – Just like the kind you pay too much money for at a restaurant.

Nacho Cheese Pretzel Dip – Just do it. This is amazing.

Spicy Avocado Dip –  My family devours avocados when we quickly mix this up. Hello, healthy goodness.

Easy Cheesy Bean Dip – This also only includes five delicious ingredients. Easy and healthy – that’s how I roll.

Hamburber Sauerkraut Dip – Even if you don’t like kraut, you will love this. It is incredibly good.

Cream Cheese Fruit Dip – This is like whipped heaven in a bowl, perfect with apples and strawberries.
