Time for a Vanilla Shake

Are you in the middle of making a batch of homemade vanilla extract? If so…might I remind you to get your jar down out of the dark cupboard where it is hiding and give it a shake? 

I always seem to forget to shake my vanilla during the months it is extracting. My husband reminded me this week that it is time for a “Vanilla Shake”. I thought maybe he was going to take me out for ice cream…but nope. It was really just time to get down our jars of “vanilla in the making” and boogy down. 

And so we did.

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ever noticed how tough it is to find dressings and sauces that don’t have MSG (Monosodium Glutamate) and HFCS (High Fructose Corn Syrup)? MSG, by the way, is a flavor enhancer that is made up of a bunch of chemicals I can’t pronounce and a bunch of scary stuff I don’t want to know about. You can read all the big words here.

I’ve been so excited each time I figure out how to make a new homemade salad dressing or condiment (see the whole list of healthier condiment recipes on our site)! Making your own condiments is not only much healthier, it’s often quite a bit cheaper too. And, lo and behold, these items are easy to make.

Shall we now all take a moment and enjoy a collective sigh of wonderment? Yes indeed recipes that are healthy, cheap and easy. All at the same time.

The beauty of homemade condiments too is how delicious and flavorful they are…all by themselves. We do not need to add MSG and HFCS or BGNJ to make our food taste good. (I made that last one up just for kicks and it was very fun.)

Well, apparently that was my little “rant” for the day. Try homemade condiments. They taste so good and pure.

And now for the Homemade Teriyaki Sauce recipe!

Teriyaki SauceYum

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ingredients
  • ¼ cup tamari soy sauce
  • 1 cup water
  • 1-2 teaspoons freshly grated ginger or dry ground ginger (more or less to taste)
  • 2 Tablespoons honey
  • 1 minced garlic clove
  • 2 Tablespoons organic cornstarch
  • ¼ cup cold water
Instructions
  1. Combine 1 cup water, soy sauce, honey, garlic and ginger in a saucepan and bring to a boil, stirring constantly.
  2. Dissolve cornstarch in ¼ cup cold water and add to sauce.
  3. Stir constantly and allow the sauce to thicken.
  4. If the sauce is too thick, add a little bit of water or soy sauce to thin.

(I use Organic Tamari Soy Sauce from OliveNation which is gluten and MSG free!) We LOVE this Teriyaki Sauce on chicken wings.

The Traveling Casserole

When we travel, I always pack quite a bit of food. This takes some effort when you’re getting ready to go on a trip, but we find the work is worth it as we save a lot of money on eating out. Plus, it’s a lot easier on our systems. (Don’t even get me started.)

Aside from good ol’ sandwiches, here are some other food items that we have found travel well:

  • Pizza
  • Burritos (either breakfast, meat and cheese or bean and cheese)
  • Quesadillas (just cheese or cheese with chicken)
  • Tuna Salad with Crackers
  • Corn Dog Muffins
  • Sloppy Corn Bread Muffins
  • Scrambled Egg and Cheese Sandwiches on English Muffins (at breakfast time)
  • Breakfast Cookies
  • Chewy Granola Bars
  • Muffins
  • Fruit
  • Carrot Sticks

In January, after our 3,800 mile road trip, you could say that we were just a little bit tired of traveling and eating in the car. We’d eaten packed food, fast food, snack food and well…a few too many beans. Vegetable soup and salad from the comfort of our own kitchen had never sounded better.

And yet, just three days after our return home, we needed to make a two hour (one way) trip to one of Asa’s basketball games. Matt and I tried not to groan as we discussed our food plan for the day. The idea of eating out or eating concession food made us turn green. Packing sandwiches didn’t appeal to us in the slightest. Nothing sounded good. Even the kids, who normally think eating out or having sandwiches and chips is a big treat, curled their upper lips at us.

What to do…what to do…because we did need food.

Enter….The Traveling Casserole:

I’ve gotta say…I’d never thought of this idea before. (I didn’t think of it this time either…it was Matt’s brilliant idea.)  He dug out the very cool Pyrex Dish with Insulated Carrier that someone had given us as a gift. Why couldn’t we just make a “real meal” and keep it warm in this until we were ready to eat?

Did I mention that my husband is brilliant?

One of the boys suggested Cheesy Beef and Rice…also brilliant. Cheesy Beef and Rice is not messy or runny or gooey or likely to cause stains on basketball uniforms.

I made it, baked it and packed it up just before time to leave. I grabbed a serving spoon, some paper plates and plastic forks….tossed in some yogurt and fruit and we were good to go.

When we were ready to eat, I just served up paper plates and passed them to the back of the van. Not one bit of casserole was left at the end of the night…and not one of us was whining about having a stomach ache or about having to eat a sandwich…again.

So…all that to say…think outside the box just a little bit when packing food for trips. There is no limit to the traveling food ideas.

Except for I don’t think I’d ever want to pack spaghetti. Or anything you’d have to eat with chop sticks.

Like we ever even eat with chop sticks when we’re at home at the table?

I have no idea why I just said that.

The no-good flu bug has hit our house. Fever, body aches, coughing, no energy, no appetite, no good. Elias and I were down for several days last week and are just now starting to feel almost normal(ish)…just in time for Malachi to wake up with a fever today. :(  Matt’s been holding down the fort. What would I do without him?

Since Elias and I have been lying around together for days (being pitiful), he helped me with our menu plan for this week. Ah, it would appear that our appetites are coming back. :)

Breakfast Organization (With Some Great Giveaways!)

At the mention of my family’s Oatmeal Rebellion, many of you piped in with your ideas for quick and easy breakfast ideas. You shared some great suggestions, which made me excited to mention some more. You can NOT have too many helpful breakfast ideas in your back pocket. Although I don’t really recommend keeping your actual breakfast in your back pocket. That would be a bad situation on so many levels.

While Sunday mornings are a bit crazy as we all try to get out the door looking halfway presentable…I’m going to also venture to say that every day can be hectic at breakfast time if we don’t have a plan. My kids are hungry from the moment they wake up. One of my boys would actually eat my leg if I didn’t shove an egg in his mouth as he rolls out of bed. He is that hungry. You’d think I didn’t just feed him four helpings of dinner the night before (and a snack before bed).

One of my best recommendations for us to keep our Breakfast Time Organized is to plan ahead. But my best, best recommendation is that if at all possible…make breakfast the night before. 

If I can, I bake our next day’s breakfast muffins or bagels or quick bread while I’m making dinner the night before. Or, I’ll start my pancakes or waffles to soaking. Or, I’ll mix up a Breakfast Casserole to have ready to bake the next morning.

It’s easy really…to make breakfast the night before while I’m cooking dinner. I’m already in the cooking mode. I’m already making a mess. Might as well make a bit of a bigger mess and get breakfast baked up too, right?

Then, after dinner, we get the whole kitchen clean (LOVE our Kitchen Chore Chart!) and put our breakfast on the table for the next morning (unless it needs to go into the fridge because leaving out a raw Breakfast Casserole would be about as bad as putting your breakfast in your back pocket).

Homemade Tater Tots

If all of the recipes in the Heavenly Homemakers Recipe Challenge turn out to be this easy…I’ll whip through the list in no time. (But don’t get your hopes up.)

My first idea for and attempt at making Homemade Tater Tots turned out great. Then I tried them a second time…just to be sure. Even better. All six of us were so excited! These look like a tater tot, feel like a tater tot and well (if I do say so myself) taste better than a tater tot (funny thing about fresh potatoes and healthy oil).

My idea was to try the homemade hashbrown trick. Remember, I bake the potato, let it cool, shred it, then cook up the shredded potatoes into hashbrowns. SUCH a fabulous and easy way to make nice hashbrowns. And now…Tater Tots!!!!!!

Here’s how I did it…

Homemade Tater TotsYum

3-4 medium russett potatoes
Oil of choice (I used the very healthy and delicious Palm Shortening. I’d also recommend Expeller Pressed Coconut Oil because it’s flavorless yet healthy for frying.)  (You can read my research based opinions on healthy frying here.)
Sea Salt

First, scrub and bake your potatoes. Allow the potatoes to cool. Peel the potatoes (and save the skins to make Potato Skins as described in Katie’s Healthy Snacks to Go ebook!).

Chop the peeled and cooled potatoes and throw them in a food processor to shred finely. I’d recommend using the “pulse” setting if you have one. You don’t want your potatoes to turn to mush. Well, maybe you do, but I don’t. 

If you don’t have a food processor, you can always shred the potatoes
with a cheese grater…it’ll just take a bit longer.
And be careful to keep  your fingers away from the grater.
You don’t want fingers in your tater tots. Well, maybe you do, but I don’t.

Next, heat some oil in a skillet (medium heat). You  just need enough oil to barely cover the bottom of the skillet. You don’t want greasy tots. Well, maybe you do, but I don’t.

Use a small cookie scoop and pack in the shredded potatoes to make a nice firm ball. (If you don’t really pack it in, the potatoes will just fall apart when you place the ball in the skillet.)  Gently set the ball into the skillet. Allow it to cook thoroughly on one side before carefully turning it over. Press the ball down slightly when you turn it. Each side takes about 3-4 minutes to cook.

Remove tater tots once they look nice and crispy and golden brown. You don’t want blackened tater tots. Well, maybe you do, but I don’t. Sprinkle with desired amount of sea salt.

You should eat these right away because you don’t want cold tater tots. Well, (say it with me now) maybe you do, but I don’t.

If you can possibly keep your family out of them…we discovered that these freeze and reheat very well!! We used our toaster oven to reheat some leftover tater tots a day or two after I initially made them, just to test and see if these can be made ahead of time and YAY…it can be done!!

Just for fun, you may also want to check out the Homemade Tater Tot recipe at Finding Joy in my Kitchen. She came up with a different way of making tater tots that looks pretty tasty!

Overall, I’d say making Homemade Tater Tots is easy. Is it as easy as opening up a package and throwing the contents onto a cookie sheet? No. But it sure doesn’t take a lot of effort overall. And then, if you make several batches and freeze some…you’ve got easy, healthy tater tots ready to reheat for a quick side dish or snack!!

Okay…one recipe down…fourteen to go. Unless you count all the other ideas you challenged me with.

Now, go bake some potatoes so you can hurry up and make some tots. You don’t want to miss out on the delicious taste of fresh, Homemade Tater Tots.

Menu Plan for the Week

Every Sunday morning for the past…I don’t know…forever or so, I’ve been making oatmeal for breakfast. It’s one day out of seven that I know exactly what I’m making without having to think…and it’s the easiest, most filling breakfast I can make on a Sunday morning. Sunday  mornings are a little bit nuts, are they not? Or maybe they’re just nuts at my house. Somehow making it out the door on a Sunday to get to church by 9:15 with hair combed and shoes on the right feet for all six people (myself included) is quite a chore. Therefore, oatmeal has been my go-to meal on Sunday mornings. 

Suddenly though, there seems to have been A Big Oatmeal Rebellion. Okay, I’ve got to admit…it’s not actually come on all that “suddenly”. The Rebellion has been coming on slowly…I’ve just been working very hard to pretend it’s not there in hopes that it will all go away. In other words, I’ve been ignoring the more and more frequent whiny oatmeal complaints and have lovingly replied to any oatmeal rebels that THIS is breakfast so hurry up and tuck your shirt in and get downstairs and eat some of it so we can try to be on time to church for once.

This week, I decided that before this Rebellion gets ugly I should do something really shocking and make something completely different from the traditional Sunday Oatmeal.

So check me out. I changed our normal Sunday breakfast plan…

Cheeseburger Macaroni (A Hamburger Helper Make-Over!)

I’ve been meaning to share this recipe with you forever!!! It’s really become one of my favorites because it tastes so good and is SO easy to make. When I threw out the Heavenly Homemakers Recipe Challenge, a few of you mentioned Hamburger Helper make-overs. Isn’t there one that’s like a “Lasagna Skillet” or something like that?? You might want to try Lasagna Casserole as a very tasty alternative. And now…this Cheeseburger Macaroni!

Here’s the background information (that you may or may not care about) for my Cheeseburger Macaroni recipe:

Back in my good ol’ Coupon Queen days, I used to buy oodles of boxes of Hamburger Helper anytime they went on sale for 99¢ and I had a coupon to get them for less than that. Sometimes I’d have cabinets full of them that I’d found for just a few pennies each. I’d enjoy them for a quick and easy meal (and I’d drink a Pepsi or two with it, you can be sure).

My favorite variety of Hamburger Helper was Cheeseburger Macaroni. I LOVED it. I’d save it for special nights. Yes, special nights with Hamburger Helper, Cheeseburger Macaroni style. Wow.

Gone are the days of having a stockpile of Hamburger Helper (and my beloved Pepsi)…and I’ve gotta say that now that I’m used to eating more whole foods, the idea of either one makes me feel a little bit woozie in the tummy. But I still crave that hamburger-cheesy-noodly taste, you know?

So one day, I had some leftover taco meat and just for fun, I stirred it into the Creamy Mac and Cheese I was making for lunch. Wowza!!! My Cheeseburger Macaroni days were back…only better! Here’s how I make it:

Cheeseburger MacaroniYum

1 Pound (give or take) Ground Beef or Turkey
1 Tablespoon Taco Seasoning
1 Recipe of Creamy Mac and Cheese (pasta, milk, cheese)
Sea Salt to taste

The directions are super complicated…are you ready? Make the Creamy Mac and Cheese. Meanwhile, brown the meat. Once the meat is fully cooked, sprinkle in the taco seasoning. Stir the seasoned meat into the Creamy Mac and Cheese. Done.

If you feel like it, you can mix in about 4 ounces of cream cheese, 1/2 cup of sour cream, or 3/4 cup of tomato sauce…this recipe is very flexible. It’s super kid friendly, and very easy to throw together on a busy night.

Now, it’s been several years before I’ve made a “convenient” box of Hamburger Helper, but I’m going to venture to say that this healthier variety of Cheeseburger Macaroni doesn’t take any longer to fix than making a box of Hamburger Helper. How ’bout that?

I’ve been having fun the last few days working on some new recipes for the Heavenly Homemakers Recipe Challenge!! Some of you added Homemade Barbeque Sauce to the challenge list…so I thought I’d post the link here and say, guess what? I already have a Homemade Barbeque Sauce recipe on the site! It’s incredibly easy to make. Now, if I could just figure out a good ketchup recipe to use in the Homemade Barbeque Sauce (I’ve been just using an organic, no high fructose corn syrup variety) to make the BBQ Sauce even better!

Compromising Our Whole Foods Diet

Tonight we’re hosting Elias’ 9th birthday party. 

You know how our house is always full of boys? Tonight there are even more of them. Right now they are all running around shooting each other with laser guns and Nerf guns and somehow I think there is a hallway basketball game going on at the same time. Now that takes talent.

We always let the birthday boy choose his party food. He usually takes into consideration what he thinks his buddies will like. And, surprise – surprise, he usually doesn’t choose “Tossed Salad” or “Spinach Smoothies”.

I was recently asked by one of you (but for the life of me I can’t find the comment to quote it exactly):  “Laura, can you tell us what foods you will occasionally buy at the store for convenience…and which foods you will NEVER buy?”

This probably doesn’t answer that question as specifically as the commenter was wishing for, but well…here’s what I bought for Elias’ birthday party dinner tonight…

If that’s not a compromise I don’t know what is.

I have to say that it was more than a little bit painful pulling them off of the freezer shelf and paying actual money for them. Incidentally, I also had TWO GALLONS worth of vodka in my cart on this shopping trip as we’re getting ready to start yet another big round of Homemade Vanilla Extract. Yep, it looked like one BIG party in my shopping cart tonight. ;)

The pizza rolls were Elias’ choice and while the ingredient list is longer than my hand (I am not even kidding), I have to say that it was a nice relief to just throw them in the oven and put out some paper plates and call it dinner. Besides, I was in the middle of baking his birthday cake and getting Whole Wheat Cinnamon Rolls ready for tomorrow’s breakfast for all the boys. The ease of dinner (if we can actually call it dinner) was really nice.

Here’s why I feel okay (not great, but okay) about buying and feeding my family these pizza rolls tonight:  We eat a really healthy diet about 357 days of the year. On those other few days or moments of the year when we are traveling, eating with others, hosting parties, going to parties or attending any event that has a meal comprised of chips and candy…we go with the flow. We don’t act all “weirded out” about the fact that we’re being served food that doesn’t meet our normal healthy eating criteria. If I’m offered Nacho Cheese Doritos at a get-together, you better believe I’m going to have a few and I’m going to enjoy myself.

We try not to go over-board and pig out because yikes…our tummies aren’t used to eating that kind of stuff. But we really cannot be enslaved by healthy eating.  Being paralyzed by these fears can be unhealthy in and of itself.  Compromising used to be a huge fear of mine, especially when I was first learning about what was healthy and what was SCARY and unhealthy. But I’ve “come down off the ledge” and realized that a few crazy junk foods here and there are not going to kill us. Especially when we follow it up as soon as possible with good, wholesome, nutrition-filled foods.

Which we will, by the way…tomorrow.  Those spinach smoothies will be making their appearance.

And for the record, while there are many things I just close my eyes and compromise on occasionally…I will never, ever knowingly or willingly purchase or eat margarine. Can’t do it. Won’t do it. Can’t even think about it.

Blech. Helgpaht. Mliiegylk. Pgvughhha.

Eeek, I get very gaggy when it comes to the thought of the yellowed tub of chemically created fatty-fattness spread that we’re told is better than rich cream whipped into golden goodness…otherwise known as REAL butter.

But a pizza roll or a Dorito…yeah…I’ll eat one here and there. That doesn’t even make sense does it?

So what types of “food” will you compromise on sometimes?  And which “foods” make you screw up your face and say Helgpaht-blephln?
