How to Bake Cake in a Crock Pot (with spinach, of course)

Too hot to turn on the oven? Here’s how to bake cake in a crock pot!

I’d like to say there was a day that “we needed cake” but did we actually need cake? Meh. Define “need.”

But on this day that we “needed cake” it was 101 degrees outside. So baking was a silly idea. “I wonder if my spinach in a cake situation would work in a crock pot,” thought I. With this in mind, I looked on the internet a bit and sure enough, it seemed quite doable.

Look at all the spinach that I blended into our cake. So did we need cake? Yes, because of the spinach.

This is what you need to know about adding spinach to cake:

  • You can’t taste it.
  • You can’t see it.
  • It makes the cake extra moist, which is actually better than eating a cake without spinach. True story.

I buttered my crock pot. It looked like this. And now you can see my crock pot stains. This thing is well-used.

I blended the cake ingredients along with the spinach, and poured in the batter which looked like this. See, you can’t tell there’s spinach in there:

Next, we worked a little crock-pot-cake magic. This calls for a paper towel, a wooden spoon to prop the lid, and then a lid placed cock-eyed over the paper towel and spoon. This lets the crock pot vent a bit while it bakes. We all need to vent sometimes.

At one point when I checked on my cake’s progress, my paper towels fell and got chocolatey. I share this picture with you to make you feel better about your messy towels if and when this happens to you:

After about an hour and a half, our house smelled amazing and our cake looked like this. The kitchen was still nice and cool while the oven sat alone and unused.

The babies were up from their naps at this point and it was time for dinner and an outing for the evening. So I left the cake sitting all night in the crock pot (lid on after it cooled). The next morning, I carefully loosened the edges and worked it out of the pot, turning it out like this:

Then I frosted the cake, which made the kids sing “Happy Birthday to Nobody” because why would Mom be making a fancy cake like this since it wasn’t anyone’s birthday?

Would you look at this amazingness? What spinach? I don’t see any spinach.

Listen, you have got to try this! Use a cake mix, use your favorite wholesome cake recipe, just add spinach to cake and then bake it in a crock pot to avoid the oven. We are huge fans! This cake is so moist and good!

How to Bake Cake in a Crock Pot (with spinach, of course)

Serves: 16-24
Ingredients
  • 1 chocolate cake mix
  • 1¼ cups water
  • ½ cup olive oil
  • 3 eggs
  • 3-4 cups fresh spinach
Instructions
  1. Blend everything up in a high power blender.
  2. Pour the batter into a buttered crock pot.
  3. Lay paper towels to cover the top of the crock.
  4. Place a wooden spoon between the paper towels and the crock pot lid to allow for venting.
  5. Cook on Hi for one to one and a half hours or until a toothpick inserted in the middle comes out clean.
  6. Once completely cooled, gently work the cake out of the crock with a spatula.
  7. Frost and serve!

How to frost your cake

I recommend this Chocolate Fudge Frosting (though I no longer make powdered sugar from sucanat like I used to, eeee).

My favorite-favorite is actually Cream Cheese Frosting.

And if you want to cut way back on the sugar, here’s a Stevia Sweetened Cream Cheese Frosting that is really good. Add a pinch of sugar to take away the bitterness without adding much sugar.

Last idea: Simply whip some cream like this and plop it on top. Super good!

But wait, there’s more. What if we topped it with Peanut Butter Cup Whipped Cream??!

How to Feed Your Family When Your Oven is Broken

How is it that I feed my family all summer without turning on the oven, but right now I’m like, “Oh no! My oven is broken! What will we eat? How will I cook?”

I’d grill but it’s been rainy and drizzly for several days. This rain makes me want to bake. Of course. Poor me. I’m stuck with only my stove-top, electric skillet, fryer, blender, food processor, and crock pot. As you can see, I’m practically without any options.

The good news:

I think I’m getting my dream stove/oven out of this!!!

When the oven went out on Sunday, producing banana bread that was crispy on top but more like tepid, stringy banana pudding in the middle (so yum), Matt spent some time (once again) trying to fix it. Could he fix it? Yes. But after a while, he was over it. He surprised me with an offer. “How would you like to go shopping for a new oven?”

I thought he was kidding. We always just make do. If it breaks, we fix it. If it’s barely hanging on, we hang on with it. Therefore I kidded back with, “Yes! I want it to be a double oven! Also, I want to get rid of the electric hook up and instead hook up gas! Let’s go shopping for a gas range with a double oven!”

And Matt was like, “Hmm. Sounds good.” {Laura passes out.}

I’d never shared these dreams with him before. But knowing how much I cook and bake (which of course benefits him greatly), and how lame our stove/oven have been for so many years, I think Matt decided it was time to fork it out for a quality appliance.

I might have started acting like a five year old who was getting a double oven for Christmas. Sure, it was hard for me to think about paying extra for my dream range. But we were going to have to drop some money on a new range anyway. Might as well get the one that benefits our family and guests the most.

More good news:

You guys, not only am I going to have a double oven – I’m gonna have gas. I’m also going to say it like that to everyone I meet because it catches people off guard and makes us all giggle. I’ll say, “I haven’t had gas for years, but Matt is awesome and surprised me. So now I have gas. Finally!!” And then my friends will say, “Laura has gas! We are so happy for her.”

Won’t that just be so much fun? 

In the meantime, I still don’t have an oven.

One doesn’t drop that much money without first doing research to decide which is the best option for purchase. (We’re looking at one like this. It’s one of the least expensive, if you can believe it. Cha-ching!) While I’m waiting for the range to come in and be installed, I decided to make a list of non-oven great food options. There are hundreds. I’ll just make a list based on what I have on hand and what is on sale this week.

Funny, by the way, that since I know I can’t bake, all I can think of are foods I want to bake. That’s the main reason I’m making this list. I have to get my mind off of cake.

Meals You Can Make Without an Oven

Food I Can Make While My Oven is Broken

  • Lasagna Casserole on the Stove-Top (this is totally doable and saves dirtying another dish anyway)
  • Chicken Tacos (the crock pot is my friend)
  • Real Food “Velveeta” and Rotel Dip (which we will use for Nachos and then Spicy Mac and Cheese another day)
  • Whole Wheat Tortillas since I can’t make bread.
  • Taco Salad
  • Spanish Rice
  • Cheddar Ranch Burgers
  • Crepes with Cream Cheese Filling and fresh berries
  • Granola ~ 5-Minute Stop-Top Version
  • Instant Oatmeal Packets
  • Quick Mix Pancakes
  • Whole Wheat Donuts
  • Low-Sugar Strawberry Cheesecake Parfaits
  • Whole Wheat Waffles
  • Any of my crock pot recipes

I had decided that breakfast is the trickiest, but as I look through this page of Breakfast Recipe Ideas, I’m finding quite a bit to work with. I have no idea why I’m making this hard. I’m just spoiled, that’s all.

In case you’re interested, this is what I have in my kitchen. These will all be used double time this week, you can be sure!

  • My Crock Pot
  • My Electric Skillet 
  • My Cast Iron Griddle (Also being offered a huge discount right now if you need one. Only $22!)
  • My Blender (Pricey but worth it)
  • My Waffle Iron (It’s a cheapo)
  • My Fryer (Mine is actually a little different than that, but they don’t seem to make mine anymore.)
  • My Toaster Oven (I do NOT recommend this one. It’s cheap and burns toast. I had one like this before but when we broke the door I was too stingy to pay that much again. I regret the “money savings” – something I’m trying to keep in mind while shopping for a double oven.)

As you can see, I’ll still be able to make huge messes in my kitchen and my children won’t even starve while I am without an oven. There are loads of options.

As soon as I have gas, I’ll let you know. If that isn’t something to look forward to, I don’t know what is.

10 Oven-Free Summertime Meal Ideas

You know what’s great about summertime? Pretty much everything, especially the part about it being summer in the summertime.

Summer is my favorite season, mostly because this is when the sun is shining. I heart sunshine.  I also love heat, because here in Nebraska, I spend about 13 months out of the year shivering. Once summer hits, the sun shines daily, and my bones warm up – then I am in my happy place.

While sun and heat rock my world, dripping sweat down my nose and into my cooking pot is not a part of my summertime enjoyment. Well, don’t picture it. It’s just that I remember watching my grandma cook in her 115° kitchen, wiping away sweat before it salted the veggies she was preparing. She never learned to close up the house and use the window air conditioner properly, so all of us almost melted and died from the heat in their house every time we visited during the summer. Her kitchen turned us all into sweaty, sloppy…hold on. Why are we still talking about this? We’re here to talk about great food in the summer that does not heat up the house. Moving right along…

10 Oven Free Meals for Summer

I have so much fun preparing yummy meals for my family in the summer. Why? Because there are so many fresh food options available. Watermelon, peaches, corn on the cob – mmmmm I love the taste of summer. In the sunshine. On a hot day. (Yes, Laura. We get it. You like hot weather. Weren’t you going to tell us some good summer meal ideas?)

Indeed.

Here are 10 great summertime meals that won’t heat up your kitchen:

1. Hamburger patties with cheese, buttered green beans, and tossed salad

2. Grilled Italian chicken (recipe in Let’s Do This! eCourse), tossed salad, steamed broccoli, watermelon

3. Grilled barbeque chicken, tossed salad, sweet corn, grilled asparagus

4. Baked potatoes in the crock pot topped with slivered ham, shredded cheese, sour cream, and steamed broccoli – cantaloupe on the side

5. BLT wraps, sliced sweet peppers, carrot sticks and cucumbers with ranch dip, chocolate whipped cream on strawberries

6. Chicken tacos, spicy avocado dip, pineapple cream dessert
