Bake Strawberry Shortcake in the Crock Pot

Want to learn how to bake strawberry shortcake in the crock pot? It’s an awesome method!

A few weeks ago, I shared how to bake cake in a crock pot. Why would we do this?? After all, it doesn’t save time!

Why it’s nice to know how to bake a cake in the crock pot:

  1. If it’s hot outside and you want to avoid using the oven, this is a great option!
  2. If you don’t have an oven for some reason, it’s fun to know that you can still do some baking in non-traditional ways!

Since this worked, I decided to use the same idea and try making my Strawberry Shortcake Recipe in my crock pot. It turned out amazing!!

Ingredients
  • 2⅔ cups whole wheat flour (I use freshly ground whole wheat)
  • 1 teaspoon baking powder
  • 4 eggs
  • ½ cup honey or 1 cup sugar
  • ⅔ cup oil (I use coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 4-5 cups of fresh, sliced strawberries
  • Whipped cream (fresh cream whipped to form soft peaks, with a bit of stevia added for sweetness)
Instructions
  1. Mix together flour and baking powder.
  2. Add in eggs, honey, oil, vanilla and milk.
  3. Stir well (or mix well with mixer).
  4. Pour into a well buttered7-8 quart crock pot.
  5. Lay paper towels to cover the top of the crock.
  6. Place a wooden spoon between the paper towels and the crock pot lid to allow for venting.
  7. Cook on Hi for two hours or until a toothpick inserted in the middle comes out clean.
  8. Once completely cooled, gently work the cake out of the crock with a spatula.
  9. Allow cake to cool completely. Top with fresh strawberries and whipped cream.

Quick Crock Pot Spicy Pasta Dinner

This Quick Crock Pot Spicy Pasta Dinner came about on a day I was cleaning out leftovers. Therefore, this recipe is a winner that happened by accident!

Have you made my Cream Cheese Salsa Dip? It’s incredible, super easy, and our entire family loves it!

However, one of the recent times I made the dip, it somehow got shoved to the back of the fridge and forgotten. I’d just gotten back from a big grocery run, so I was in major “make lunch with whatever food I find tucked away” so that I could make room for all the fresh food.

And there I found Cream Cheese Salsa Dip.

Aha, thought I. This is going to somehow turn into our lunch.

I was just about ready to take our littles out for a long walk, so I dumped some pasta and this dip into the crock pot to see what would happen while we were gone. Sure enough, the results were just like I’d imagined. The pasta was soft and ready to eat in just three hours without any effort from me! I added a shot of cream and stirred in some cooked meat, and we had our meal!

Here’s the easy recipe:

Ingredients
  • 10-ounces uncooked pasta, any variety
  • 8-ounces softened cream cheese
  • 32-ounces salsa
  • ½ cup heavy whipping cream
  • 1 pound cubed ham or cooked hamburger meat (optional)
Instructions
  1. Empty package of uncooked pasta into a crock pot.
  2. In a blender, whip together cream cheese and salsa until smooth.
  3. Pour salsa mixture over the pasta in the crock pot.
  4. Cook on low heat for 3 hours.
  5. Stir in heavy whipping cream and meat if desired.
  6. Serve.

The Easiest Spicy Ham and Potato Soup (Crock Pot Recipe)

I wanted to call this easy Spicy Ham and Potato Soup “Dump Soup.” But that didn’t sound appealing. So I took out the “dump” – good call, right? Still, you should know that all we have to do to make this soup is “dump” the ingredients into the crockpot. SO EASY.

This Spicy Ham and Potato Soup is basically this soup remade. I cut out some steps and made it in the crockpot. You’ll love how much easier the revisions make this recipe!

Also, you should know that I’m obsessed with this soup. I almost never eat seconds of any meal. But when I make this soup, I eat thirds. Aren’t you proud?

Ingredients
  • 8-ounces cream cheese
  • 16-ounces pepper jack cheese
  • ¾ cup sour cream
  • 1 cup half-and-half or whole milk
  • 10-ounce can Rotel (diced tomatoes and green chilies)
  • 1 pound ham, diced or cut into small bites
  • 3-4 cups frozen hashbrown potatoes
  • 32-ounces chicken, beef, or vegetable broth
Instructions
  1. Put all ingredients into a crock pot.
  2. Cook on low for 8 hours or on high for 4 hours.
  3. Occasionally, stir the soup to help distribute the cheeses.
  4. Just before serving, use a whisk to smooth the melted cheese.

I love eating this soup just as it is. Some in my family love to added shredded cheese and fritos. The pepper jack cheese in this soup gives it a nice, spicy kick that is so amazing!

If you make this soup with frozen hashbrowns (I like Mr. Dells brand as it contains only potatoes) it is extra easy to put together!

Simple Honey Glazed Pork Tenderloin or Roast (Crock Pot Recipe)

Here we are with another super fast meal for summertime! This Simple Honey Glazed Pork Tenderloin will wow everyone!

There’s something about the combination of flavors poured over this pork tenderloin (or pork roast) that makes it so very good. It slow cooks all day, so that makes the meat extra juicy and the flavor extra amazing. Simply put a Pork Tenderloin in your crockpot (these are inexpensive, by the way!), stir together a few ingredients to pour over the top of the meat, turn on your crockpot, and walk away!

What’s great about a meal like this is that well, a Pork Tenderloin or Pork Roast just feels like a special meal. You can serve it with:

  • a salad
  • a steamed veggie
  • and some fresh fruit

and your meal will be amazing!! But you will have worked very little to pull it off.

Meals like this are my favorite. Or have you figured that out about me by now? :)

Tip for choosing a cut of pork:

  • Check for meat mark-downs! Our local grocery store often has a high quality brand of pork marked down when it’s getting close to the “freeze-by” date. When I see these, I grab them! They are usually between $2-3/pound at this point, making for some very affordable and delicious meat options for our freezer!
  • Pork Tenderloin, Pork Butt (he-he-he, Pork Butt…I’m in middle school), and Pork Roast are my favorites. They turn out tender and juicy every time with this recipe!

Ingredients
  • 2 pounds Pork tenderloin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 teaspoons garlic powder
  • ¼ cup honey
  • ¼ cup balsamic vinegar
  • ½ cup water
  • 2 Tablespoons soy sauce
Instructions
  1. Place the pork tenderloin in the crock pot.
  2. In a small bowl, whisk together the remaining ingredients.
  3. Pour the mixture over the pork tenderloin.
  4. Cook on low for 6-8 hours or until pork is tender and falling apart.

Paleo Southwest Crockpot Chicken Supper

Since when does Laura care about paleo foods? Oh, dear. Well, she doesn’t. But Tasha is trying a new thing with surprisingly great success. Paleo Southwest Crockpot Chicken Supper has been a favorite and it will definitely be added to the regular rotation.

I bet you’re wondering what’s with the trendy diet we’ve jumped on. Here’s the thing… I’ve never been inclined to jump on any type of diet because I didn’t believe in the idea of cutting out entire food groups. Let’s not even get into the details about how jumping is a high impact exercise and could be harmful if you are dealing with chronic achy joints and headaches. (I recommend yoga and stretching for beginners.) But elimination diets? I’m not here to argue the case of the paleo food choices. Except I will tell you, I paid a good amount of money to a doctor to get to the root of my achy joints and headaches and weird mood swings. He is making me eat paleo. At first, I was incredibly discouraged. I ranted and raved about how much I disagreed with the concept.

What is Paleo?

NO Dairy and NO Grains (including corn, oats, rice, quinoa, etc) and NO Legumes (including peanuts and soy) and NO sugar. WHAT IS LEFT!?!?!? BROCCOLI AND CHICKEN!? Poor Tasha. She can only eat broccoli and chicken. I was at Laura’s house (and we should have snapped a picture to document the momentous occasion) and I pulled a Laura and ate the spinach leaves directly out of the tub because I was so stinking hungry, but a few days later an amazing thing happened.

First, I must have gotten over the sugar craving hump because I wasn’t starving all the time anymore. Secondly, I discovered recipes that included a variety of flavors and foods I had never tried before. Dressing recipes with fresh squeezed orange juice, almond butter and garlic. Say whaaa? But it was amazing. I began making my own nut butters because all the ones I found in the store were too expensive and had added sugars.

Paleo supper isn’t always simple . . . so far.

Because I’m still in the newish phase of this paleo food thing and I’m following a lot of other people’s recipes, food prep has been a priority of my life lately. Slowly I have been adapting the recipes I like to fit the simple standard that Laura has been teaching us. But the amount of chopping and sautéing that I’ve been doing the last 45 days is more than I would prefer. One important thing I’ve been learning is to start seeing onions and peppers as a solid filler, not a seasoning. Many of the paleo recipes call for a hefty amount of vegetables.

Southwest Crockpot Chicken Supper

From start to finish this recipe took 5 hours. 10 minutes of chopping (but I use my nifty food processor for onions and garlic), leave it in the crockpot for four hours. Another 10 minutes of work to shred the chicken, chop the peppers and then let it simmer together for a few minutes. Work time for this paleo chicken supper? Perhaps 15 minutes. I served with avocados on top and ate it as-is. You could serve on top of a bed of greens or if you’re not on a restrictive diet, then you can add chips or tortillas and sour cream.

Ingredients
  • 4 pounds boneless skinless chicken breasts or thighs
  • 2 red onions, chopped
  • 4 cups salsa
  • 6 garlic cloves, minced
  • 3 Tablespoons homemade taco seasoning
  • 2 jalapeño peppers (optional)
  • 4 bell peppers, chopped
  • 2 avocados, chopped
Instructions
  1. In a crockpot, combine everything except the bell peppers and avocados.
  2. Cover and cook on low for 6-8 hours or high 3-4 hours.
  3. Remove chicken and shred with a fork and return to pot.
  4. Chop peppers and sear in a skillet for 4 to 5 minutes until roasted.
  5. Add peppers to crockpot.
  6. Stir and cover.
  7. Let simmer on high for another 20 minutes, adding water if needed for desired consistency.
  8. Top each serving with chopped avocados.
  9. Reheats well for left-overs.

Paleo tricks

Did you know Laura already had a ton of paleo recipes on her blog? Or at least ones that are easily made paleo by adjusting only a few ingredients. Here are three treats that I have returned to a few times this year.

Chocolate Peanut Butter Cups (subbing almond butter and I use double the cocoa powder and a pinch of salt)

Simple Almond Flour Muffins (either cheat and use the butter or sub coconut oil)

Vanilla Pudding (Sub coconut milk and top with fruit and nuts for a full breakfast)

It’s time for me to get organized. Back to school at our house means much more than “get your pencils sharpened.” I usually consider this time of year “Back-to-Soccer” season and brace myself for the crazy that comes with it. Matt coaches our York College women’s team so usually in August I smile at him and say something like, “Whelp, see ya in November.”

Elias (who moved into the college dorm over the weekend; I’m not ready to talk about it, ha) will be playing on the YC men’s team. Malachi (15) will referee as many rec-league and club team games as he can. And Brayden (6) will play on a rec-league team. I try to pack everyone up and go to as many home YC games as I can, plus of course, I’ll be Brayden’s biggest cheerleader.

Awwww. There’s Malachi, back in his baby-soccer days. Now here we are again with our new set of Littles!

I’ve done this soccer-mom-wife life for so many years now that I know full well what it’ll be like. And as much as I know that it will be challenging as it always is (especially now that we’ve got so many little ones again!), may I just say this very loudly:

I AM SO THANKFUL SCHOOL IS STARTING and that WE GET TO HAVE A SOCCER SEASON!!!!

Last spring, we weren’t sure, you know? In early March, we sent all of our beloved college students home with barely a good-bye. We trudged through quarantine like so many of you did, wondering when or if life would ever be back to normal.

I’m not sure we can call everything “normal” yet, but praise God, students are moving back and soccer season is happening.

Simple Cheeseburger Noodle Crock Pot Dinner

Ready for a deliciously easy Crock Pot meal? This Simple Cheeseburger Noodle Crock Pot Dinner is a hit for everyone at our table. But mostly it is a hit with me because it’s so very easy to make!

The more I put my mind to learning simple, real food cooking methods, the better my kitchen life has become! I’ve stopped peeling potatoes (Yukon Gold, baby). I’ve quit thawing meat (I’ve stopped trying to remember). And if at all possible, I’ve stopped boiling noodles (life’s too short). What kind of lazy cook have I become, anyway? Ah, no. I prefer to call it being a smart cook!

I think it is delightful to drop dried pasta into my crock pot along with a few other ingredients, then come back a few hours later to a dinner that’s ready to be served. The creaminess of this recipe is what makes it so popular. And if you want to save a few dollars, skip the meat in this recipe. It’s delicious either way!

  • 1 pound hamburger meat

Simple Creamy Chicken Soup for Crock Pot or Instant Pot

This Simple Creamy Chicken Soup is the definition of comfort food.

Hmmmm. Actually, the definition of comfort food (I just looked it up) is: food that provides consolation or a feeling of well-being, typically any with a high sugar or other carbohydrate content and associated with childhood or home cooking.

I believe I have just re-defined comfort food. No longer must it be associated with a high sugar or carb content. Certainly not in the case of this Creamy Chicken Soup. We can associate it with home cooking (because we will be at home, cooking it) and it is likely that your children will someday associate it with their childhood.

But there is no pasta or potato involved in the making of this soup to make it high in carbs. Add some if you like. I’m personally in it for the chicken and the cheese. I find it delightfully comforting.

Simple Creamy Chicken Soup

Simple Creamy Chicken Soup for Crock Pot or Instant Pot

Serves: 4-6
Ingredients
  • 1-2 pounds boneless chicken thighs or breasts
  • 10-ounce can Rotel
  • 32-ounces (4 cups) chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 8-ounces softened cream cheese
  • 1 cup heavy whipping cream
  • 2 cups shredded Colby jack or cheddar cheese
Instructions
  1. Place chicken, Rotel, broth, salt, and paprika into an Instant Pot or Crock Pot
  2. For Instant Pot: Seal and cook on manual at high pressure for 15 minutes. Quick release.
  3. For Crock Pot: Cook ingredients on low for 6-8 hours or until chicken is no longer pink.
  4. Remove chicken from Crock Pot or Instant Pot. Shred it and put it back into the pot.
  5. Stir in cream cheese, cream, and shredded cheese until smooth.
  6. Serve with frozen corn sprinkled in if desired

I added a carb by sprinkling frozen corn into our soup to cool it and sweeten it. So I guess this meets the definition of comfort food after all!

I shared this Simple Crock Pot Chocolate Peanut Butter Lava Cake with you many years ago! Christmas is the perfect time to bring it back, don’t you think?

This recipe looks rather involved, but would I be sharing it if it was difficult? Of course not. :) Putting this together is very simple, and worth every bit of your (small amount of) effort!

Simple Crock Pot Chocolate Peanut Butter Lava Cake

Ingredients
  • 1 cup whole wheat flour
  • 2 Tablespoons unsweetened cocoa powder
  • ½ cup sucanat or brown sugar
  • 1½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 2 Tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla
  • ½ cup natural peanut butter
  • ½ cup semi-sweet chocolate chips
  • TOPPING:
  • 3 Tablespoons cocoa powder
  • ½ cup sucanat or brown sugar
  • 1½ cups boiling water
Instructions
  1. Combine flour, cocoa, sucanat, baking powder, and salt. Mix well.
  2. Make a well in the center and add milk, butter, and vanilla.
  3. Stir well, until batter is smooth.
  4. Stir in peanut butter (heat if needed, to thin).
  5. Stir in chocolate chips.
  6. Spread the batter evenly into a well greased slow cooker.
  7. Make the topping:
  8. Mix cocoa and sucanat, whisk in boiling water until smooth.
  9. Gently pour over batter in crock pot, but don’t stir.
  10. Cover and cook on HIGH until puffed and the top layer is set, about 2- 2¼ hours.
  11. Turn off crock pot and let stand, covered for at least 30 minutes.
  12. Serve the cake (which is now on top) with ice cream or whipped cream and drizzle the fudgy pudding from the bottom over both.
