Menu Plan for the Week

I suppose it goes without saying that we’ll be eating a lot of strawberries and salad this week. I’m experimenting with a healthy strawberry shortcake recipe today that I can hopefully share soon in the Healthy Celebrations series!

And speaking of healthy…um…or not so healthy…take note of what we’re having for lunch Tuesday. It’s Asa’s birthday, which means he gets to choose everything we eat that day. He hesitantly asked if we could please have ramen noodles.  Blech.  Okay, since it’s your birthday. Can’t be worse than hot dogs. I find it funny that he thinks of ramen noodles as a treat! And um…$0.18/pack? WHAT is this stuff made of? Never mind.  I don’t want to know. 

In other news, we have an extra little boy “moving in with us” for a few weeks off and on all summer. Remember the red head? We love having him here! Plus, some friends from out of town arrived last night to stay for the week. We’re in for some busy, fun days!!

Here’s what we’ll be eating:

Sunday, June 6
Strawberry bread, bananas
Pizza casserole, tossed salad, strawberry shortcake
Grilled cheese sandwiches, strawberries and cream, carrot sticks

Monday, June 7
Scrambled eggs, turkey sausage, creamy orange cooler
Taco salad, fresh pineapple
Grilled hamburgers on whole wheat buns, potato salad, peas

Tuesday, June 8 (Asa’s birthday choices)
Whole wheat cinnamon rolls, fruit
Chicken strips, ramen noodles, pineapple, strawberries
Southside Grille, lemon pound cake, ice cream

Wednesday, June 9
Strawberry crepes with whipped cream
Picnic lunch at the park – sandwiches, fruit, chips
Fried chicken, mashed potatoes, gravy, green beans

Thursday, June 10
Chocolate chip pancakes, applesauce
Creamy mac and cheese, steamed broccoli
Homemade pizza, tossed salad

Friday, June 11
Strawberry peach slushie, peanut butter honey toast
Tuna salad on crispy cheese crackers, cantaloupe
Tacos on homemade tortillas, watermelon

Saturday, June 12
Whole wheat donuts, fruit
Chicken quesadillas, apple slices
Rice and veggie stir fry with chicken, zucchini, carrots and broccoli

Snacks to have on hand or to make for our guests:

  • Chocolate Chocolate Chip Muffins
  • Chewy Granola Bars
  • Soft Pretzels
  • Strawberry Milkshake

    That all sounds sooooo good. I am still amazed that you eat all that and still stay so fit!! Kudos!

    I am now saving for the grain mill, found a nutrimill at a great price!! Getting a dehydrator later this week and while I am here at my booth in the flea market, I have found a few supplies, nothing major…but I would love to go g-salin to find jars…

    Wow Ramen noodles lol. I haven’t had them in YEARSSSSSSSSSSSSSSSSS. I think I got tired of them… and pringles lol.

    How does Asa even remember what Ramen noodles are? The salt content is astronomical.. just a little bit of the season packet.. or none of it. They also have ones w/dehydrated veggies in them… so maybe that would be a SLIGHTLY healthier choice lol.

    Hi Laura. I always love looking at your menu plan for new ideas. I too was surprised by the ramen noodles! Of course, with taking on some new family members I hope you take it easier. Do you make your own seasoning? We, sadly, lived off them for a couple years while I was in college. Okay, that’s an exaggeration, but we did eat them a few times each week. My husband made up a ramen noodle casserole even in which he would crack a couple eggs on the hot noodles. Oh, those were the days…

      Since we have these once every five years…I went ahead and used half of the seasoning packet. Blech. I couldn’t bring myself to eat them, but the birthday boy enjoyed them. :)

    Happy birthday to Asa on Tuesday! It’s not fair that he’s growing up so fast….He was just a little kid when we left Colorado… as usual, the food sounds wonderful! Jesse likes ramen noodles as a treat too. I confess I still will eat them now and again despite knowing I’ll get a mondo headache.

    Laura, you are a great mom. It is easy to place too much importance on healthy eating, and ignore our family’s wishes and desires. But nutritious eating can be an idol just like anything else. Enjoy Asa’s birthday Ramen Noodles, and remember that our bodies are fearfully and wonderfully made, they can handle a little junk every now and then :-)
