Bacon Ranch Hashbrown Casserole

Bacon Hashbrown Casserole

A friend had just stopped by when I was pulling this dish out of the oven for lunch earlier this week. It smelled quite amazing. She asked what it was, so I went down the list of ingredients our lunch included, “bacon, ranch dressing, sour cream, cheese…” Then this is when she said,

“Bacon? Ranch? Cheese? With all that in it, you know it’s going to be good!”

Yep, pretty much. What’s not to love?

You might also love knowing how easy this is to make. Cook the bacon, stir in the other ingredients, spread it all in a cooking dish, put it into the oven. Easy. It does help if you have premade frozen hashbrowns and a jar of homemade ranch dressing mix ready to go. Just please put the lid on your ranch dressing before you shake it up. Please. I’m only here to help.

A big thanks to Plain Chicken for the idea for this recipe! I’m excited to think about possibilities of ways to continue tweaking this. Maybe add some cooked chicken to the mix? What else can you think of to add to this dish?

Bacon Ranch Hashbrown Casserole

Ingredients
  • 1 pound bacon
  • 2 cups shredded cheddar or Colby jack cheese
  • 3 cups sour cream
  • 3 Tablespoons Ranch Dressing Mix
  • 1 bag of frozen shredded hashbrowns (about 8 potatoes worth of homemade)
Instructions
  1. Cut bacon into bite-sized pieces and cook.
  2. Drain grease.
  3. In a large bowl, stir together cooked bacon, shredded cheese, sour cream, and ranch dressing mix.
  4. Fold in frozen hashbrowns until all ingredients are well combined.
  5. Bake uncovered in a 350° oven for 45-60 minutes or until casserole is lightly browned and bubbly.

Lately I’ve been finding really great deals on packaged hashbrowns at the store, so I’ve picked up a few to save me some time. I much prefer homemade, but busyness doesn’t always allow me the luxury. It’s good to be relaxed and flexible about healthy eating, right? Right.

So far I’ve only served this casserole for lunch or dinner. But I also think it would be great for breakfast or brunch!

Want to make Bacon Ranch Hashbrown Casserole ahead and freeze it for later? Here’s how:

Make the casserole as directed. Before baking, cover well and freeze for up to three months. To cook and serve – thaw and bake as directed. Or, cover frozen casserole and place it into a cold oven. Turn the oven on to 225° and bake for 2-3 hours or until casserole has thawed, baked, and is heated through.

Note: This recipe is naturally gluten free. Hold onto this one if you have to avoid gluten – or so that you can bless friends who eat gluten free!

I’ll definitely be making this casserole often! Since it’s freezer-friendly, I’ll likely be making two or three at once so I can have no-brainer meals on hand for busy nights. After all, why dirty up more dishes tomorrow when tomorrow will have enough dirty dishes of its own? Right??

What is Up With the Price of Butter?

Remember that one time I almost ran out of butter, and I was like, “eh, no biggie” and then I took a nap?

Yeah, nobody remembers that – because butter, buttttttter, BUTTER, but-ter. Laura loves butter. Running out is not okay. (Also, I rarely have time for naps.)

I love butter so much that once for my birthday,
my boys made and decorated me a cake shaped like a big stick of butter.

Also, those Cake Boys sure were precious.

I have always watched for sales on butter and stock up when I find one. I almost always have 10-20 pounds in my freezer and about 8 sticks in my fridge. When I need more in my fridge, I send a boy to the freezer to get a couple of pounds for me. My butter needs are always met.

But the rising cost of butter is messing up my bulk purchase, never run out, always have plenty, butter is never a problem, there will always be butter situation.

This favorite of mine hasn’t been on sale for way too long around these parts. Wait – I take that back. It was sort of on sale three weeks ago, but when I went to the store to stock up, they only had three pounds left, which is like a 4-day supply for me when I’m baking and inviting people over to eat. Apparently everyone else in town had already been there and stocked up, thinking nothing of my needs. There was plenty of margarine on the shelves but absolutely not, I don’t think so, no way.

Much ado about butter

So is this what it has come to? Is this what it’s going to be from here on out? Is the cost going to continue to hover at $3.50-$5.00 a pound, or worse, keep rising from here? Ouch.

I can’t find any recent information about dairy prices. An article written about a year ago said that prices were up, but expected to go down. Ironically, the “up” referred to in that article was lower than the prices I’m seeing a year later. That article did make me a little bit more sympathetic to the farmer, helping me recognize that I should probably never complain about food prices because farmers work really hard. God bless the farmer. But also God bless my grocery budget. God bless us everyone. Please pass the butter.

So spoiled American here, working to feed her family well, while appreciating the farmer and staying within budget, and trying not to gasp in fear that there is only one pound of butter left in my house. Apparently I’m going to have to go to the store and pay full price. Wha?!

I am very interested to know what you are paying for butter these days. Has the price gone up here, there, and everywhere? Any dairy farmers among us who can shed some light? How many pounds of freezer do you usually have in your house on a regular basis?

Homemade Applesauce Cups To-Go ~ For Just a Few Cents

Homemade Applesauce Cups

Typically I make a boat load of canned applesauce each year. Still, there are always times I end up buying the little packaged applesauce cups to take on the road with us to soccer or basketball games. It feels so silly to spend money on the pre-made applesauce cups when I have home-canned applesauce in the pantry. Still, I do it. We need food for the road, after all.

This year, I got a brilliant idea. (My one and only of 2015. We’ve been waiting ten months for this.)

I checked online for little cups with lids to fill with applesauce to take on the road.

Small jars with lids work great for to-go applesauce, but those make our cooler weigh 380 pounds. Plus, I wanted to give some to Asa for his dorm fridge but didn’t want him to have to mess with saving all the jars to bring home. The cups with lids are a great solution!

~~Let us all pause here to say nice things about avoiding plastic and disposables in general. Plastic disposables are not our friend. I agree and I know there are strong opinions about this. Right now I’m the mother of many teenage boys who are active, hungry, and on-the-go frequently. It was either compromise and buy these plastic cups in an effort to save us money and help us eat well on the road – or spend more to buy them pre-made – or buy junk from concessions or McDonalds. I chose the plastic disposables and I am excited about what this provides for my family right now. Now, back to the cute applesauce cups.~~

Organic 100% fruit applesauce cups cost around 74¢ each. Non-organic are around 33¢ each. My homemade organic applesauce cups just cost me 15¢ each. This makes me very excited. Plus if it’s okay that I say so, my homemade applesauce tastes better than store-bought. :)

This batch of applesauce turned out such a pretty shade of pink because I used a variety of dark red apples with very white flesh (Empire, I believe). No one who eats this can believe I didn’t add sugar. No need for sugar, my friends. Not when God made apples this good and sweet.

The cups with lids I chose are a perfect 5.5 ounce size. I filled them about 3/4 full, put the lids on top, then froze them. (I tested one to see if it froze/thawed well. It did. Now I have a freezer full!)

Next time we need travel food, we’ll grab several homemade applesauce cups from the freezer. I am so excited about this!

Company is Coming This Weekend! Here’s What We’ll be Eating…

I super love when people come to visit us! I love planning the meals and preparing the meals and serving the meals and doing all the food up right in an effort to bless our guests while we visit. And of course, I love to visit with our guests.

In summary: Would one of you please come clean my house for me?

Man, I do not like to clean. I do like my house to be clean, but the act of cleaning is low on my fun list. Actually, it’s not even on my fun list. It’s on my do it because it has to be done so get over it list.

Hiring regular cleaning help is not in the budget right now, but I’m seriously thinking about seeing who might want to trade cooking for cleaning. Some people like to clean but not cook, right? Yes, I hear that this is true.

My boys are very helpful with their assigned cleaning chores, which is another reason I’ve not wanted to outsource this task to hired help. But sometimes my idea of clean differs from my boys’ idea of clean. (I probably don’t need to explain this.)

Well anyway. All this talk about cleaning is starting to make me upset. Let’s talk about food!!!! Aaaaahhh yes. Now I’m happy again. :) :) :) :)

Family is coming to town this weekend for our York College Homecoming festivities. I can’t wait to feed see them! This is always a wonderful weekend with people we don’t get to see often enough.

In order to enjoy my guests and avoid having to talk very much while I cook (this is a serious problem for me) – I’m making most of the food ahead of time or at least planning very simple, no-brainer dishes (like this Stir-and-Pour Bread).

Here are the meals we’ll be having:

(The Crock Pot Roast Beef recipe was originally written to be used for Roast Beef and Melted Cheese Sandwiches, but we love the flavor of this one so much, and it only takes about 30 seconds to prepare {seriously!!!!}, so we make it frequently to eat as a main dish without the cheese and buns.)

5 of My Favorite Ways to Use Coconut Oil

In my opinion, if there was a be-all-and-end-all item, coconut oil would have to be it. It has so many uses and so many health benefits. Truly, I say “use coconut oil for that” at least once a day. (And also, “go take a sip of water.” My kids love how predictable I am.)

Below are five of my favorite uses for coconut oil, in no particular order…

1. Sunburns

We try very hard not to let ourselves get sunburned. But we were on the soccer field all last weekend, which was very sunshiny even if it is October. Our faces all turned pink. We all slathered cheeks, foreheads, and noses in coconut oil. So soothing and healing!

2. Popcorn

We pop corn in an air popper, then stir in melted coconut oil and sea salt. It is the best popcorn in the world.

And then after you’ve popped your corn and stirred in the coconut oil,
you should make this White Chocolate Peppermint Popcorn.

3. Skin Issues

Whenever any of us has something weird going on (any variety of weird) with our skin – the first thing we always try is coconut oil. It can’t hurt, and it almost always helps.

4. Frying Food

Most oils become hydrogenated (aka terrible for the body) when heated to high temps for frying. But coconut oil and palm oil are an exception to this. They can withstand high temps and remain stable. Hallelujah french fries! I prefer frying food in palm shortening or expeller pressed coconut oil because they are both flavorless. (The above mentioned coconut oil that is on sale this weekend has coconut flavor.)

5. Baking

Every muffin, quick bread, or cake I make with melted coconut oil is amazing. It’s also wonderful in my Whole Wheat Waffles. And Chewy Granola Bars. Here are some of my favorite recipes made with coconut oil:

A Cat Update. I Don’t Even Know How To Say This.

Several of you warned us. Many of you suggested that we do it sooner rather than later. But truly we don’t know what we’re doing here, and we didn’t know that sooner really meant, “No really. Soooooooner!” Like several weeks ago sooner.

Don’t mind me. I’m going to ramble on for a bit. I’m simply avoiding the issue. I’m hanging my head and peeking up at you sheepishly. I can’t quite come right out and say it. I’m trying. Really.

So it went something like this:

Malachi and I were outside together a few days ago. Wiggams walked up as she usually does, ready for a little snuggle. Suddenly, I gasped in shock. Malachi looked at me like I was crazy. In a weird little high pitched voice I said, “Wiggams. Whoa. Wiggams! Say it isn’t so. Wiggams, what in the world??” Malachi was like, “What, Mom? What?”

I told Malachi my suspicions. We asked Wiggams to spill it. “Out with it, Wiggams! Is it true? Is it??” Wiggams just purred and rubbed up against my leg. For a woman, she sure doesn’t add much to conversation around here.

I was in denial for the rest of the day. (I still can’t say the words.)

We showed her to Matt when he got home. We all circled around her, eyeing her with scrutiny. Together we decided resolutely that Wiggams had simply eaten an entire rabbit (family). Indeed. That had to be it. There was no other possible explanation for her widening belly.

Asa and Brittany came by later that evening. We told them our suspicions and asked Brittany what she knew about cats. She knew significantly more than we, and also she might be a little bit better at living in reality. She looked Wiggams over thoroughly, and said something like, “Well, your suspicions were correct. She did not eat a rabbit.”

So my friends. I guess it’s time to officially announce that Malachi is going to be a grandpa.

I’m just. I can’t. It’s so…

I can’t help but think that Bob Barker would be so disappointed in us. (If you’re in the Drew Carey generation, this makes no sense. Unless he says it too. I haven’t watched the show in a while. Does he say it too? Again, I’m rambling.)

My research tells me that 1-8 kittens should arrive….umm perhaps as soon as within the next couple of weeks?? (Apparently by the time a cat begins to widen in the middle there are only a couple weeks left. Help me out here, cat lovers. I only know about human babies.)

But speaking of cat lovers, so what if I am one now? Maybe I recovered from my shock and got really excited about seeing baby kitties on our place soon. Maybe I even sometimes let Wiggams crawl up on my lap while I’m having a cup of coffee in the sunshine.

As soon as there is kitten news to share, you’ll be the first (few thousand) to know. We’ve already promised one kitten to our neighbor. Any other takers? And yes, Bob, Drew, and everyone else who told me to do this sooner rather than later – after the kittens are born and have been enjoyed, weaned, and shared – we will really and for real get Wiggams fixed.

Hamburger Pot Pie Recipe – Nourishing Comfort Food

Oh comfort food. You are so…comforting.

If you love Chicken Pot Pie, you will love this Hamburger Pot Pie. I actually think I like this one even better. (No surprise there. I’m a beef-loving girl.) Pin this recipe so you can use it to keep yourself warm all winter long.

For the record, if you need to eat gluten free – or if you’re like me and you’re more into meat and veggies than bread – you can skip the topping on this and just eat it in a bowl like Hamburger Soup.

Ingredients
  • 1 pound hamburger meat
  • 1 small chopped onion
  • 6 cups beef broth
  • 4 large carrots, peeled and cut into bite sized pieces
  • 6 medium potatoes, peeled and cut into bite sized pieces
  • 2 cups frozen peas
  • Sea salt and pepper to taste
  • ⅓ cup cold water
  • 2 Tablespoons organic corn starch, arrowroot powder, or wheat flour
  • 1 cup milk
  • 1 cup mayonnaise (I use Hain Safflower Mayonnaise)
  • 1 cup whole wheat flour (I use freshly ground flour from hard white wheat)
Instructions
  1. In a large cooking pot, brown hamburger and onion together.
  2. Stir in broth and prepared veggies.
  3. Cook until veggies are tender.
  4. Mix cornstarch with water until smooth. Stir mixture into the broth/veggies, cooking for about one minute on the stove to help the mixture thicken.
  5. Pour contents into a 9×13 inch baking dish.
  6. In a separate bowl, stir together milk, mayo, and flour.
  7. Spread mixture over the veggies in the baking dish.
  8. Bake in a 350° oven for about 45 minutes or until the crust is golden brown.

5 {Easy!} Real Food Dinners for About $1.00 Each

Remember our $1.00 Real Food Breakfast ideas? I promised then that I would share some lunches and dinners too.

Undoubtedly, lunches and dinners are trickier than breakfasts if you want to eat on the cheap. And just to be clear – I’m not into cheap. I’m into nourishing. But it’s always great when cheap and nourishing collide, don’t you think? (I actually prefer the word inexpensive. Cheap sounds so…cheap.)

As I stated in my $1.00 Breakfast post, the following dinner servings are my size, not my teenage boys’ size. They usually eat what I eat multiplied times four or five. Technically, these dinners still cost about $1.00 per plate. It’s just that my kids eat 3-5 plates. Each. But who’s counting?

Ooh, good news not entirely related to food but about the cost of teenage boys! We just learned how to lower our 18-year old son’s car insurance bill. So now we shall proceed with allowing our 15-year old son to pursue his license. Hey, it was “you can either eat or you can drive, which do you want?” I’m kidding. Mostly.

5 Real Food Dinner Plates for About $1.00

5 Real Food Dinners for $1.00Yum

Each of the following meals can be made for approximately $1.00 per plate. They are all made with real food ingredients. They are all served with 2-4 fruits or veggies (which ups the bill, but it’s worth it by a million).

1. Chili or Chili Mac

The trick to this one is to go easy on the hamburger meat. Let the beans offer the protein. Stretch it with a little whole grain pasta. And if you happen to have home-grown, home-canned tomato sauce all the better on the money savings.

2. Chicken Pot Pie

The best thing about this recipe is that it is a one-pot meal. It comes with veggies baked right in. Serve a salad on the side. Maybe a fruit. It is so good.

3. Pasta Alfredo

This is so delicious and tastes even better than a restaurant version (which you get for about twelve bucks a plate). Serve this with salad and steamed veggies. Adding some chicken will add to the cost, but it sure does taste delicious. If you have a little leftover chicken, stir it in, and you’ll still be keeping this low in cost.

4. Creamy Chicken and Rice Casserole

This casserole is super nourishing because you’re cooking your rice in veggie-rich broth. Plus there are carrots in the casserole. Plus you can serve a salad on the side. Plus you can make extra and freeze it for another time. So convenient!

5. Garden Veggie Chicken Skillet

I love this recipe because you can use whatever veggies are on sale or that you have on hand. The potatoes help stretch this dish. Everything is flavorful.
