What Do George Muller and One Child Matters Have in Common?

Ever struggle with worry over God supplying all your needs? You need to read about George Muller. Ever wonder how God can be using you to serve, give, and care for others? You need to read about George Muller.

This is for sure one of my favorite books I’ve read to our kids. Geoff and Janet Benge do a fantastic job writing about the lives of missionaries, and their book about George Muller is no exception. What an inspiration!

George Muller was a man who dedicated his life to caring for orphans in England during the 1800’s. He relied completely on God to supply everything needed to care for his own family and for thousands of orphans. The two biggest lessons I came away with (and tried to impress on our kids) while reading this book are:

1. Ask God

Anytime a there was a need – and there were definitely plenty of needs with houses full of hungry orphan children – George prayed. He had complete faith that God would provide, and God always came through. George’s faith inspires me to pray with confidence and with trusting belief.

2. Listen to God

Each time George asked God for help, God used a person to meet the need. Time and again, people would arrive at the orphanage doorstep to say, “I couldn’t sleep last night. I can’t rest until I give you this _____________.” Oh how God worked through people who were listening and open to serve! Money, food, cloth, tools – whatever it was that George and the orphans needed, God used His people. Not only do we need to trust God to meet our needs, we also need to listen to His call for giving and service.

As the boys and I read this book, I was so inspired to get on a plane (um, boat? hello, 1800’s) and head to England to help George. What could I give? How could I help? What can I share out of our abundance? Obviously, helping George with his orphanages is no longer an option, but I have definitely felt challenged to seek more ways to be a part of a godly change for children.

This is Gladis, the little girl from Honduras we sponsor through One Child Matters. It barely costs us anything each month. It’s really not much of a sacrifice. I believe our family needs to continue to be open and listen for God’s call to serve and give in more ways than just this simple act.

But after reading George Muller, I’m so grateful for this simple opportunity offered through One Child Matters to bless a child in need. I’m grateful that Gladis is not an orphan, but rather a child with a hard working family who simply needs a little additional financial support. Our family can be a part of that. Us! The Coppingers! Just Today

Always the most profound truths are those that are the most simple. I am amazed at what God keeps teaching me based on scripture I’ve read and known my entire life.

Do not worry about tomorrow, for tomorrow will worry about itself. Each day has enough trouble of its own (Matthew 6:34). Ain’t that the truth? I know this, and you know this – but I believe that worrying about tomorrow (and today and yesterday and next week and 2016 and…) is one of our biggest battles as humans.

I’ve been wrestling tremendously with this the past few weeks. Mistakes of yesterday, fears about tomorrow, questions about the future, anger over what I can’t control – they threaten to take over my thoughts. Why, when I know better, do I let worry cripple me? Why, when I believe Jesus’ promises to take care of me, to provide for my every need, and to take care of all of my tomorrows do I still choose to let worried thoughts claim my heart?

Lord, I believe. Please help my unbelief.

I was led to return to the truth of the passage above and read it within its context. Matthew 6:19-21 say, “Do not store up for yourselves treasures on earth, where moths and vermin destroy, and where thieves break in and steal. But store up for yourselves treasures in heaven, where moths and vermin do not destroy, and where thieves do not break in and steal. For where your treasure is, there your heart will be also.”

Yep, I know. I’ve read that one my whole life too. Treasure in heaven, got it. I’m not much into material possessions. I don’t care at all about having lots of stuff. Thieves would roll their eyes and be bored in our house (unless, of course, they are interested in a loaf of homemade bread). Riches. Jewels. Nice vehicles and a bunch of flat screen TVs. That’s what the scripture is talking about, right?

Sure, if that’s what your struggle is. But who says treasure means stuff? The question I should be asking is, “What or who has hold of my heart?” because as the scripture says, “where my treasure is, that is where my heart is also.” If my heart is so caught up in the worries of this world that I fail to recognize that God is in control, that God is taking care of me, and that Jesus has already claimed the victory – then the treasure I’m claiming is my self. The thieves are the lies I am choosing to believe which hold me in bondage and steal my most prized possession:  The joy given to me by Jesus.

We can not serve two masters. Self cannot be our master, unless we desire to live a life of worry and fear. Our job is to lay ourselves down and eagerly seek first (not second or third) His kingdom and His righteousness. That’s it. God takes care of the rest. That is His promise to us.

So today? We choose to accept God’s gift of peace. He’ll give it to us tomorrow too, and the next day, and the next. Worrying about tomorrow (or 2016) offers us no answers – only misery.

Focus on today. Today only. Jesus is here, rescuing us from fear and frustration and replacing them with the greatest treasure to fill our hearts: His peace. Rest in this promise. Today. Tomorrow. Always.

Peppermint Cream ~ A Non-Guilty Pleasure in Coffee, Hot Cocoa, and Crio Bru

Peppermint Cream on Crio Bru

I super love this pick-me up and treat in the afternoons while I’m working at the computer. If you haven’t tried the Peppermint Cream recipe I shared at Christmas time, you really must take a few minutes to whip some up (literally). It has zero sugar, is all real, and it tastes delicious in hot drinks.

My favorite use for Peppermint Cream is in and on a hot mug of Crio Bru. What is Crio Bru, you ask? It is ground cocoa beans, which you brew just like coffee. Yup, straight chocolate, no sugar. Sounds bitter? Actually, it really is delicious all on its own without sugar. (You can also doctor it up with maple syrup and milk and make it into the most delicious hot chocolate you’ve ever had.)  I love it all by itself – but topped with this Peppermint Cream? Well, it is amazing. Rich, hot, creamy, and all real. Delicious!

I order Crio Bru from Amazon, iHerb, or Azure Standard. It’s a little pricey, so I definitely consider it a treat. But it’s a no-sugar treat that warms me from the inside out. Love it!

Gratituesday: Kitchen Time

Many people assume that since I love to cook and since I focus on feeding my family healthy food, I must spend hours and hours in the kitchen.  Quite the opposite.  Sometimes days go by and I’ve barely found time to pull out a freezer meal and throw down some vegetables. (That’s okay though – that’s what the freezer meals are for!)

As I talked about in the Let’s Do This! eCourse, I have to grab any spare moment I have to try to get ahead in the kitchen. Working ahead is the only way I’m able to keep up with all these big appetites and our full schedules.

After several weeks of barely keeping up because of basketball game travel, colds and flu we’ve been passing around, and just life in general – I finally found some time this morning to get a few extra recipes whipped up. Wow, that felt good!

I got out my cookbook (so handy to flip open and use quickly instead of running back and forth to the computer) and made two batches of Whole Wheat Quick Mix. I made a double batch of Oatmeal Chocolate Chip Cookie dough balls for the freezer. I made two batches of Homemade Instant Oatmeal. I made a big mess. I cleaned it up. The short time it took to make these simple recipes will save me a lot of time during the next couple of weeks.

Hooray for time in the kitchen! It’s therapeutic for me and productive too. :)

Easy Ways to Eat Plenty of Fruits and Veggies ~ and Our Fruit and Veggie Challenge Check-In

How is the Fruit and Vegetable Challenge going for you? Here’s hoping you loaded up your kitchen with lots of fresh and frozen produce and you’ve been enjoying a wide variety the past few days!

Easy Ways to Eat Plenty of Fruits and Veggies

To encourage you on this journey, I wanted to share a few tricks I’ve learned to help my family get plenty of colorful, nutrient-filled, fruit and vegetable variety. It’s obvious that you should be serving side dishes of fruits and/or vegetables at every meal. But sometimes, that’s still not enough servings each day. We often eat them for snacks, so that gives us bonus fruits and veggies. But how about these ideas to get a wide variety and a large quantity:

1. Make Stir Fry

Our favorite recipe is this one: Easy Noodle Stir Fry. All four of my kids gobble this down, and there are usually three or four different vegetables included.

2. Eat Salads Often

There are so many different variety of greens, and so many fun and delicious add-ins to a salad. Homemade dressing makes salads amazing.

3. Make Smoothies

There’s no limit to what you can toss into a smoothie. (Okay, fine. I wouldn’t blend in a piece of steak. Tuna, maybe. Kidding! I’m talking fruit here.)  You can get several servings of fruit and even veggies (by adding spinach or other fresh greens) in a smoothie.

4. Make Soup

Vegetable soup is an obvious way to get several servings in one meal. But any soup can be a great veggie source if you just add them in.

Menu Plan for the Week

How’s the Fruit and Vegetable Challenge going for you? I’ll post an official check-in tonight, but in the meantime, I thought I’d share that my goal for this week’s menu is to plan at least two veggies and/or fruits for each lunch and dinner. We always have fruit with breakfast and more fruit and veggies for snacks. But if I’m intentional about scheduling plenty in for meals too, we should be getting all kinds of goodness. What’s fun is that many of my soups and casseroles have veggies in them already, so if I plan two more, we’re getting three to five servings of vegetables and fruits in one meal!

On an unrelated note (well, still on the topic of food, of course) – my jars of Instant Oatmeal are officially empty. Making more has been on my to-do list as I’ve watched my supply getting lower and lower, but I just haven’t found the ten minutes to get some made. This week, it will happen! If you haven’t taken the time to make Instant Oatmeal yet, do it! It’s such a great food to have on hand for healthy breakfasts and snacks.

I’m also completely out of Whole Wheat Quick Mix. While I’ve got out my big mixing bowls, I plan to get a double batch of that made too!

Beefy vegetable soup, tossed salad, cornbread muffins

Tuesday, February 11
Crock pot breakfast casserole, oranges
Cheddar ranch burgers, potato wedges, roasted asparagus, kiwi
Calico beans, fruit salad, carrot sticks

Wednesday, February 12
Poptarts, blueberries
Grilled cheese sandwiches, tomato soup, raw veggies
Cheesy salsa enchiladas, tossed salad, avocados, olives, applesauce

Thursday, February 13
Warm pumpkin custard, toast, bananas
Sloppy cornbread muffins, peas, sweet peppers, apples
Three cheese garlic chicken pasta, tossed salad, steamed broccoli and carrots

Friday, February 14
Heart shaped pancakes, raspberries
Pizza soup, applesauce, cucumber slices, sweet peppers

Saturday, February 15
Justus’ 14th birthday! He’s still thinking through his meal choices. All we know for sure is that Cheesy Turkey Sausage Stromboli is definitely on the list. :)

How We Are Eating Lots of Fruits and Vegetables This Week

How is the Fruit and Vegetable Challenge going for you so far? Hopefully you’ve been adding plenty of the good stuff to your shopping cart and to your plate.

We’ve had fun taking pictures the past two weeks of some of our yummy, fruit and veggie filled meals. Chicken Salad on a One Hour Whole Wheat Yeast Roll with lettuce, cucumbers, sweet peppers, and grapes was such a delicious lunch several days ago! It made me feel like it was summer time – except for the fact that it was below zero outside. Details, details.

Once the kids saw me taking pictures that day, they decided to get in on the act! Justus (age 13) decided to “build a masterpiece” with all the fresh goodies available for our lunch that day:

Not to worry, he had seconds, thirds, and fourths before leaving the table.
He is almost 14, you know.

Malachi (age 9) saw what Justus was doing and said that he would make a masterpiece too. It is with much excitement that I present to you…The Grape:

After Malachi took his masterpiece picture and ate his enormous serving of grape, he created another pretty plateful:

I think we’ve been grape deprived. Our family ate almost the entire bag I bought during this one lunch. Why am I shocked? Two teenage boys, a 12 year old boy, a 9 year old boy, and a hard working dad? Of course we ate the whole bag.

One great way I find to include additional veggies in a meal is to add plenty of onions, carrots, and leeks in our homemade chicken broth. Then, I blend them all up into the broth, making it smooth and rich in veggies. It is so flavorful this way! For one of our meals, I cooked rice in this kind of broth, which turns it orange (from the carrots blended in). I added chicken and cream, much like this Creamy Chicken and Rice Casserole, and called it dinner.

Here’s another meal we had last week with this good broth, Potato Soup. There are veggies in the broth (not to mention all the other wonderful nutrients from the chicken bones), veggies in the soup, plus we all had a bowl full of salad before we filled our bowl with soup.

A great way to encourage my kids to eat fruit for snacks is to set out a huge bowl of options on our table. Not only is it tempting, it really brightens up the kitchen! Because I think that fruit on a table is a decoration (as well as food to be eaten, of course), I obsessively remove all produce stickers once I bring it home from the store. A sticker on my kiwi is not cute or appetizing, in my opinion.

A few days ago I burned us some grilled cheese sandwiches for lunch. Yep, I burned them all. The phone rang, someone came to the door, I have no idea what else happened when it was sandwich flipping time. Oh well, we all still ate them. I put out a plate of fruit, plus we had tomato soup to dip our burnt sandwiches in. Looks like we had about 20 left to go on this fruit plate. Nice!

Usually I steam broccoli and carrots, but for fun, I decided to roast them to go with our meal of spaghetti. Delicious! I’m making it a goal to serve salads with almost every evening meal. This is such a great way for us to get plenty of raw greens.

Pizza Soup

Pizza Soup: One of the best inventions in my kitchen so far this winter. Not including the Super Creamy Peanut Butter, of course. I can’t get enough of this soup. Plus, it’s super easy to make. I love this!

In a freaky, way less artificial, and way more wonderful sort of way, this soup tastes kind of like Spaghettios. I only mention this for those mothers who have kids they are trying to break from Spaghettios. If you hate Spaghettios, trust me, this soup tastes nothing like Spaghettios. Really. Okay then.

You’ll notice this recipe is similar to my Cheeseburger Soup recipe. One night as I was making Cheeseburger Soup, I realized I didn’t have enough chicken broth. I decided to add some tomato sauce to the soup for more liquid. Then I added a few different spices and some pasta. Then I fell in love. Don’t worry. I still love Matt best.

1/2 pound ground beef
1/2 cup chopped onion
3/4 cup shredded carrots
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon oregano
1/2 teaspoon garlic powder
3 cups chicken broth
4 cups tomato sauce
salt and pepper to taste
1 1/2 cups milk
8 ounces whole wheat or rice pasta
2 cups shredded cheddar cheese
1/4 cup sour cream (optional)

In a large pot, brown hamburger meat with onions, carrots, basil, parsley, oregano, and garlic powder. Once thoroughly cooked, add chicken broth and tomato sauce, then bring to a boil. Salt and pepper to taste. Add pasta, then reduce heat to medium while pasta cooks, about ten minutes. Add milk, stirring and cooking until bubbly – about two minutes. Remove from heat.  Add cheese and sour cream, stirring until melted. Serves 4-6.

Make this dairy free by simply substituting coconut milk and leaving out the cheese. Add chopped green peppers to the meat, onion, and carrot mixture for a more flavorful soup.

Is it super cold at your house like it is at mine right now?  Soup is rockin’ my world as I work to keep us warm and fed!
