Gratituesday: A Change in Seasons

Now that soccer season is over, our family should now have all kinds of free time on our hands.

Haha, that may be one of the funniest sentences I’ve ever written.

But compared to the busyness of soccer season – now that Matt isn’t scheduling his life around college practices, games, and road trips – and now that our days aren’t dictated by which boy has a game to play or referee at what time – I find myself taking a relaxed sigh of relief.

Some of the projects that have taken a back seat to the soccer schedule can now be pulled out and worked on. Some of the ministries we have felt called to do can now be executed. The people we have wanted to have over and spend time with? We might be able to fit that in a little more easily now.

Soccer season is fantastic – and because of our involvement with soccer in the community and at our local Christian college – we feel that soccer in and of itself is a ministry that our family is blessed to be a part of. We love being able to be around so many families and college students. Matt’s ability to coach young kids and young adults alike  is quite a gift. (I love watching him coach.)

But today Matt was able to help an elderly friend pack his home to move – and since he didn’t have to be back in time for soccer practice – he could stay until the job was finished. Tonight we got to go to the college to support our men and women’s opening basketball games – just because we wanted to. This Sunday, we get to start hosting High School Huddle again.

I love how different seasons provide different opportunities. And I love how the changes bring refreshment. Are we going to be less busy now? Probably not. But our involvement with people will be a little different than it has been during the past few months, and I find myself looking forward to it.

And maybe, just maybe, I am just a little bit relieved not to have to make any more trips out to the soccer complex to drop off, pick up, or cheer on a team…until the spring season starts. Then I’ll be all over it!

Menu Plan for the Week

I have two things to tell you:

1. Soccer is officially over for the season. 
2. My kids are sick of oatmeal for breakfast on Sundays.

The boys had one last game today, and York College (where Matt coaches) finished yesterday. It’s been an awesome season, and now we can hang up our stinky shin guards. 

Actually, I’ll wash them and then we’ll probably play a pick-up game in the yard tomorrow. Soccer never really ends around here.

And about the oatmeal – Typically oatmeal is our standard Sunday breakfast. But every once in a while the kids decide they just can’t eat another bowl. I decided to give those spoiled kids my darling offspring a break, and serve them Breakfast Cookies on Sundays for a while instead. It will actually be an easier breakfast than making oatmeal (not that making oatmeal is the least bit difficult) – simply because I can make the cookies the night before. Then, everyone can just help themselves to cookies and a glass of milk once they are dressed and ready for church. :)

Warm Pumpkin Custard Drink (and my typo confessions)

I’m about to share my Warm Pumpkin Custard recipe with you, but…

Just so you know, it is very hard for me to type the word “pumpkin” without automatically adding a “g” to the end – making it “pumpking”. This is what happens when you type words ending with “ing” frequently.

For the record, because of my blog name, I also type the word “heavenly” so often that I can’t tell you how many times the word “have” first comes out “heave”. For instance, every time I’m sharing about my ebook “Have Your Cookie…and Eat it Too“? I almost always first type “Heave Your Cookie…” It is a huge problem. But you probably didn’t even want to know that, did you?

And ultimately, that was a terrible thing to write about when I’m posting a new, delicious recipe. Try not to think about heaving your cookies, and instead, focus on the pumpking. Um, pumpkin.

Warm_Pumpkin_Custard

We have a friend who absolutely loves anything pumpkin. Since he was coming for a visit on a cold, drizzly day – I was brainstorming as to what I could quickly mix up that would satisfy his pumpkin craving and warm us all up.

Turns out, I didn’t have to think very hard. I simply grabbed my trusty Warm Vanilla Soother recipe and pumkinized it. Easy and delicious! Our friend loved it and had two huge mugs full!

This is a great dessert – or because it’s so full of rich, hearty, nutritious ingredients – I think it will be great for breakfast. As a matter of fact, it would be heavenly. (See? Told you I use that word a lot.)

Warm Pumpkin Custard Drink

Warm Pumpkin Custard Drink (and my typo confessions)

Serves: 3-5
Ingredients
  • 3 cups whole milk
  • 4 egg yolks
  • ⅓ cup real maple syrup
  • 1 cup canned or pureed pumpkin
  • 2 Tablespoon arrowroot powder or corn starch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 teaspoon vanilla extract
Instructions
  1. In a medium saucepan, whisk together milk, egg yolks, maple syrup, pumpkin, arrowroot powder, and spices.
  2. Cook over medium heat, stirring constantly (I use a whisk) until mixture begins to thicken.
  3. Remove from heat and add  vanilla.
  4. Stir until creamy.
  5. Pour into mugs and serve warm.

Am I the only one with potentially embarrassing typo issues?

Don’t even ask me about the time I accidentally left out the “r” when I was writing about how I store bulk grocery items in my “pantry”. Worst typo ever. Kinda makes you want to heave your cookies, doesn’t it?

Sometimes I Don’t Feel Like Working Out (Until After I’m Done)

Most of the time I crave it, love it, and can’t wait to hit the pavement and/or the weight room to get in a good workout!

But every once in a while, I just don’t want to do it. Not even a little bit. The very idea reminds me that I might just feel hip pain. And truly, there are days when I just don’t feel like I can add one more item to my to-do list. Working out? Is it really necessary? After all, I ran up and down the stairs four times this morning to switch out laundry. Doesn’t that count for something?

This week I had one of those days. I was tired, my muscles were sore, and I was crazy busy. I had two hundred things to do (which, of course, is not an exaggeration or an overstatement at all because I would never do that in a million years). The thought of leaving my house for even a short workout just made me feel stressed out. One more thing to do? I don’t want it!

But Jen, my workout buddy and trainer, showed up to my house as planned anyway.  The nerve. ;)

I smiled (sort of). I stretched. I put on my running shoes. And we went for a short, but fast paced walk for 30 minutes. It wasn’t long. It was certainly not the hardest workout we’ve ever had. But it was a good workout nonetheless. I worked up a good sweat, got my heart rate up, and burned off some stress. But I really thought nothing of it.

Once we got back, I continued with my afternoon, finishing some of Malachi’s school work with him, then running Asa up to the soccer complex so he could referee a game.

It wasn’t until I was pulling out of the complex that I realized:  Wow. I feel really, really good.

It was amazing actually. Before the workout, I had been sore, tired, and discouraged thinking about all the work that loomed before me – wondering how I would ever get it done.

After the workout, I felt relaxed, energized, and ready to tackle the to-do list. I was breathing deeply, smiling, and well, I kind of needed a shower…but that’s beside the point. :)

The moral of this story:  If you don’t feel like working out? Do it anyway. You’ll feel better, and you’ll get more done than you would have if you would have skipped the workout to do something else.

Disclaimer:  Obviously, you shouldn’t workout if you don’t feel like it because you are puking, have a broken bone, or are otherwise bedridden and under doctors orders to stay immobile. I think you knew that, but in the effort to cover my tracks, I felt as though I ought to say it anyway.

How To Have a Hot, Healthy Meal Waiting For You When You Get Home From Church (or From Wherever)

On Sunday, we got home from church at 11:55. We were eating lunch by 12:02. It was a hot meal of Lasagna Casserole, green beans, and sweet corn.

How did we do this? Oh, it is my most favorite trick I’ve come up with for eating a healthy meal in a timely manner. Why have I not been doing this forever?

But I’ve got to warn you. If you…

1. Don’t like the thought of leaving the oven on in your house while you are away, or
2. Feel like there is a food safety issue with leaving a casserole in the oven for a little extra time…

You will not like this tip. And I’m okay with that.

But I’ve done it over and over this fall and it has saved my neck, provided healthy meals for my family, and been a huge time saver!

Plus, our house hasn’t burned down even one time. Nor have we gotten sick from practicing this method. 

We have experienced an episode of extra crispy cheese on top of our Cheesy Beef and Rice. I apologized to my family, and they said, “Do it like this every time!” Apparently crispy cheese is a great addition to our culinary experience.

Here’s what I’ve been doing:

I make a casserole on Saturday and put it in the fridge. On Sunday morning I either:

  • Bake it for an hour before we leave for church, then turn off the oven before we leave, letting the casserole sit in the oven while we’re gone. When we get home, I turn the oven back on for a few minutes to rewarm while I make veggies. Or I
  • Put the casserole in the oven at 200° right before we leave for church, letting it cook slowly while we’re gone. It is hot and ready to eat immediately when we get home.

I have also grabbed a frozen casserole out of the freezer, put it directly into the oven, turn the oven on to 200°, and when we come home it has thawed and cooked and is ready for us to eat. (Always be sure to put a glass casserole into the oven and THEN turn the oven on. This prevents the glass dish from cracking as it heats slowly as the oven heats.)

This meal prep method has worked well for me with the following dishes:

  • Lasagna Casserole
  • Cheesy Beef and Rice
  • Cheesy Salsa Enchiladas
  • Creamy Chicken and Rice Casserole
  • Beefy Enchilada Bake
  • Bbq Brisket and baked potatoes  (cooked on low heat all morning while we’re gone)

I’ve also done this successfully with a Roast Beef Meal or a Roast Chicken and Veggies. 

I’m telling you, with just a little work ahead of time, we have been able to walk through the door and be greeted with delicious smelling food – hot and ready to eat. I not only do this every Sunday now, but I’ve been doing it in the evenings when we leave for soccer games. We get home from a game, wash our hands, steam some veggies or get out a salad we’ve made ahead of time, and we’ve got dinner.

Healthy, convenient, easy, inexpensive, quick – I’m pretty sure this method of making a meal on the fly covers it all.

Gratituesday: The Completed Living Room

Remember two years ago when Matt and his dad tore into our living room so that they could insulate our walls?

After they tore out the lath and plaster, they sprayed in some awesome foam insulation, and then put up dry wall. And of course, they got all that mess cleaned up and put the living room furniture back where it was supposed to be. 

At that point, the project kind of came to a halt. That’s because all Matt does is sit around all day watching TV.

I am so totally big fat kidding. 

The guy is an extremely hard worker and finds himself with more to do in a day than he typically has time for. Plus, the outside of our house has needed painting, so in the warm months, he works on that project instead of indoor projects. 

Slowly but surely, Matt textured all of the walls, then painted all of the walls, then put up and painted the trim. It has been a work in progress for quite some time. But a couple of weeks ago, we were finally able to hang curtains and call the room “finished”. 

Now, just for added “aaaahhhh” effect, go back up and look at the “during” pictures. 

And now…

Isn’t it beautiful!!!

I love the wall colors we picked (gold and raspberry). Those colors were actually picked by a great friend of mine who has the decorating gift. I clearly do not have that gift. If it were up to me, the wall would have been a very exciting shade of…off white. ;)  We found a great new rug that is a perfect match. And another friend helped me pick out sheer curtains.

Now, the laptop isn’t a living room decoration, but if you look over to the right of the picture, you will see that Asa, our 15 year old, was doing his Algebra 2 lesson this afternoon when I snapped this shot. I’m sure he’s pleased to have his feet in the picture. 

I can’t tell you how great it feels to have this project completed! Each time I walk into the room, I just have to stop and stare for a moment. (Not at Asa’s feet – but at the warm, pretty colors.)

I’m thankful for my hard working husband and my beautiful living room – and sure – even for Asa’s feet. :)

Menu Plan for the Week {And My Four Pound Hamburger Meat Dilemma}

This weekend I got out four pounds of hamburger meat to thaw. “What are you doing with all the hamburger meat?” was the question I was asked several times during the morning as different family members went into the kitchen and saw the meat thawing. My answer? “I really have no idea.”

You’ve got to love it that my plans are always so clearly laid out and organized. ;)

What can I say? All I knew was that I had a few hours between soccer games to get some cooking done, and that our supply of convenience foods in the freezer was getting low. Therefore, I grabbed out the meat to thaw so that I could make something with it when I actually had time.

As I stood watching my boys play a soccer game in the late morning, I watched and cheered and memorized every move my children made so that I could talk through the game in detail with them later I mentally made a plan for the cooking I would do in the three hours I had at home before the next game. Going by what sounded good, what I had in my pantry, and what would work best to get me ahead for this week – I ended up making two Lasagna Casseroles and two pans of Cheesy Salsa Enchiladas.

Don’t worry. I can multi-task. I really was watching and cheering while I thought about browning hamburger meat and making tortillas.

Pizza Boats – A Quick Throw-it-Together Meal

Apparently, it’s pizza week around here. :)

It’s great to have homemade Whole Wheat Pizza Crusts in the freezer. But if you don’t, or if you’re wanting just a little something different…might I recommend Pizza Boats?

(Warning to children:  These Pizza Boats don’t float. Do not take these into the bathtub.)

I have been ordering Alvarado Sprouted Sourdough French Bread from my health food co-op, Azure Standard. In a pinch, I grab one out, slice it and quickly put together two big Pizza Boats. These are perfect for an easy lunch, or for a quick supper before we run out to soccer games.

You’ll need 2 cups (16 ounces) of pizza sauce. Simply slice the french bread in half the long way.

Top any way you wish.

Bake in a 375° oven for 10-15 minutes or until cheese is melted and bubbly.

I’m telling you. Healthy eating does not have to be difficult or take a lot of time. And it can be a lot of fun. Who wouldn’t want a Pizza Boat for dinner?

But don’t take them into the bathtub.

Why yes. I have been raising boy children for 15 years.

How Much Does Nice Handwriting Really Matter? (And Other Thoughts About Standardized Standards)

Did I ever tell you about the time I came home from a well baby check up with one of our boys when he was an infant? He was off the charts when it came to weight and height! I was so proud.  However, his head circumference was “only in the 50th percentile”. I worried and worried about that – until I finally had a chance to share what I’d learned with Matt. His response? “Oh, okay. So his head is average. Why exactly does that worry you?”

Huh, good question. Good grief. As if being in the top 95% of his weight class somehow proved that my four month old was outstanding? And since his head was “only at 50″, that somehow meant I had failed him? What in the world do those numbers mean anyway? 

After much consideration, and a few more years of mothering experience, I have concluded that chart, schmart – God makes beautiful babies in all shapes and sizes – glory, glory, hallelujah, the end.

And well, isn’t the same true when we talk about all of our capabilities, strengths, and weaknesses?

Whether you home school, public school, or private school your kids, I think it’s easy to let educational pressures and “the norms” get the best of us. Shoot, apparently the pressures to have an over-achiever can begin long before our kids are in school – as is proven by my insecurity that my child’s head was  perfectly normal in size. ;)

The books say a child should be doing such and such by a certain age. There are specific standards that judge what is “average”, what is “below average”, and what is “above average”. I appreciate these standards in some ways because they do give us all some great guidelines to reference. 

But after having taught in the public school for a few years, and now having taught our four boys at home for over 11 years (well, really 15 years, since technically we started teaching them from birth) – I have come to the conclusion that while a standard is a nice generalized overview, it certainly isn’t something I need to stress out about, lose sleep over, or laminate and put on my refrigerator. 

Everyone is unique, with different strengths and weaknesses. (Fore the reccord, I am a teribble speller.)  (Obviously.)

These particular “let’s all stop worrying about standards and simply enjoy teaching and learning with our kids” thoughts came to me once again as I was watching our fourth son, now a second grader, do his handwriting lesson last week. I have tried and tried to teach that kid the correct way to form his letters. No matter what I try, he just won’t form his letters following the little arrows as his book directs. He’s not being disobedient, he simply has his own way of doing it. And guess what? His B still looks like a B. Can you even believe it?

Come to think of it, I was also taught a certain style of handwriting, and I also form my letters in a completely different way now. But my handwriting is legible and even kind of pretty if I take my time. (Just don’t look at the shopping lists I typically scrawl onto the back of whatever junk mail envelope that is the closest to me when I remember that we need toilet paper.)

And while I’m on the subject, do you know anyone in the world who makes their cursive Q’s the way they teach in most textbooks? Freakiest letter formation I have ever seen. My apologies to Mr. Zaner-Bloser for bluntly sharing my opinion, which, in my opinion, is correct.

So all of this to say:  Lovingly push your kids, enlighten your kids, and challenge your kids. Give them the very best education you can possibly give them.

But if they still make their letter B’s kinda funny, or if they don’t add their math facts the way the book tells them to and they still somehow get the correct answer, or if they aren’t quite meeting the official standards for their grade level in all subjects… Or if your third grader is working really hard but still isn’t reading chapter books, even though your neighbor’s four year old just finished reading the entire Chronicles of Narnia series… Or if your child couldn’t spell the word kat if her life depended on it… 

Or, shock upon shock – if you have a child whose head circumference measures perfectly average… 

I give us all permission to relax and appreciate that our kids are working hard and learning at the level they are each capable of. 

It is a fact that I know a lot of doctors who are really, really brilliant and clearly have fantastic educations…and their handwriting is terrible.

Or maybe it’s just that they are all actually writing their cursive capital Q’s in the funky way I despise and I am really the one with the problem.

No-Bake Peanut Butter Pie – To Eat or Not to Eat? {UPDATED}

I found this recipe for Easy No-Bake Chocolate Peanut Butter Pie over at Diva Entertains (which is a great blog if you haven’t checked it out already). I was super excited that I could make the recipe just as it stated. No adaptations necessary. (Although I did use sucanat instead of brown sugar – no biggie.)

Matt loves chocolate and peanut butter, so I’m excited to surprise him with this when he gets home from soccer tonight. 

Easy No-Bake  Chocolate Peanut Butter Pie

The question is, do we sample it before he gets home – you know, just to make sure it’s good? Or should we wait and enjoy it together once he gets here?

It may be a reallllly long afternoon if we choose to wait. And depending on how late the game goes, we may all need to go to bed before he gets home. And what if the game goes into overtime? That will make it even later.

Maybe we could each just take a small slice. And we’ll save him a really big piece. I promise. 

Don’t you just love being privy to the wrestling matches inside my head? What to do, what to do…

*UPDATE*  (approx. 4 hours later)

Hi.

I thought maybe I should inform you of my decision, so that you weren’t all worried about me crying beside the fridge trying to stay away from the pie until Matt got home.

But don’t worry. We saved not one, but three pieces for Matt.

This pie was so incredibly good that we all almost passed out. (I’m sure the sugar had nothing to do with that.)

And we have also ruined our dinner, so I think we will be waiting to eat until after church tonight. ;)
